Let’s talk savvy summer treats for a minute. It’s hot and we’re in full swing of the dog days of summer. Summertime brings fun in the sun but also some summer boredom. So let’s shake things up in the kitchen and make a “lasagna” – but not any old lasagna. How about an ice cream lasagna?
This recipe is fun to make and even better to eat. If you can turn on the oven, you can make this recipe; it’s really that simple. Follow the recipe down to the last ingredient or jazz it up with your family’s favorite flavors and toppings to make your own customized version. This just might become your loved ones’ new summertime favorite. Now that’s what I call a savvy summer treat to beat the heat!

Ice Cream Lasagna

- 1 box vanilla cake mix
- 1/2 cup chopped milk chocolate chips, divided
- 1/2 cup chopped white chocolate chips, divided
- 1 gallon vanilla ice cream
- 1 tub vanilla whipped icing
- Preheat oven 350 F. In greased lasagna pan, bake cake mix according to package instructions, adding 1/4 cup chopped milk chocolate chips and 1/4 cup white chocolate chips to batter before baking.
- Once cake cools, remove from pan and set aside. In bottom of lasagna pan, spread 1/2 gallon ice cream. Add cake on top of ice cream and ice cake with vanilla icing. Add remaining ice cream on top of iced cake and spread evenly.
- Sprinkle remaining chocolate and white chocolate chips on top and freeze at least 4 hours.
