- 2 pounds ground chicken
- 2 tablespoons sesame oil
- 3/4 cup diced shiitake mushrooms
- 1 small onion, diced
- 2 garlic cloves, grated
- 1 1/2 tablespoons fresh grated ginger
- 1/2 cup hoisin sauce
- 1/2 cup water chestnuts, diced
- 3 green onions (both white and green parts), chopped
- 2 garlic cloves, grated
- 1/4 cup cilantro, chopped, for garnish
- 1/4 cup crushed peanuts, for garnish
- iceberg or butter lettuce, for wraps
Peanut Sauce:
- 3 tablespoons creamy peanut butter
- 2 teaspoons brown sugar
- 1 tablespoon fresh lime juice
- 2 tablespoons chili garlic sauce
- 1 teaspoon fresh grated ginger
- 1 tablespoon soy sauce
- In pan, saute ground chicken in sesame oil until cooked through. Drain if mixture is watery.
- Add shiitake mushrooms and onion; saute until mushrooms have softened and appear caramel colored.
- Add garlic, ginger, hoisin, water chestnuts and green onions. Let chicken mixture simmer on low.
- To make peanut sauce: In saucepan over medium-low heat, mix peanut butter, brown sugar, lime juice, chili garlic sauce, ginger and soy sauce until smooth, warm and thinned slightly.
- Fold into chicken mixture. Stir until combined and simmer on low until peanut sauce is evenly distributed.
- Garnish with fresh cilantro and crushed peanuts. Serve in lettuce wraps.
Broccoli and Edamame Salad with Peanut Dressing

Dressing:
- 1/2 fresh lime, juice only
- 1/4 cup toasted sesame seed oil
- 3 tablespoons honey
- 2 tablespoons tahini
- 3 tablespoons creamy peanut butter
- 1 teaspoon chili oil
- 1 garlic clove, grated
- 1 teaspoon fresh ginger, grated
- kosher salt, to taste
- 1 tablespoon hot water, plus additional for thinner consistency (optional)
Salad:
- 2 cups broccoli slaw
- 1 cup shelled edamame, cooked
- 1 1/2 cups chopped raw broccoli
- 1/2 cup English cucumber, quartered and chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup salted peanuts, roughly chopped
- toasted sesame seeds, for garnish (optional)
- To make dressing: In bowl, whisk lime juice, toasted sesame seed oil, honey, tahini, peanut butter, chili oil, garlic, ginger and salt, to taste. Add hot water, adding additional, if necessary, until dressing reaches desired consistency. Set aside.
- To make salad: In large bowl, combine broccoli slaw, edamame, broccoli, cucumber, mint, cilantro and peanuts. Toss with dressing to combine and garnish with toasted sesame seeds, if desired.
Peanut Butter Cottage Cheese Cheesecake

Crust:
- 2 cups pretzels
- 1 1/2 cups vanilla-flavored wafer-style cookies
- 1/2 cup peanuts
- 12 tablespoons unsalted butter
- nonstick cooking spray
Filling:
- 1/2 cup cottage cheese
- 1 cup heavy whipping cream
- 3 tablespoons sugar
- 3 tablespoons creamy peanut butter
- 1/2 cup roughly chopped dark chocolate
- 1/2 cup roughly chopped peanuts
- 1 pinch sea salt
- To make crust: In food processor, pulse pretzels, wafer-style cookies and peanuts until chopped but not powdery.
- In skillet, melt butter. Add pretzel mixture until combined with butter.
- Spray pie pan with nonstick cooking spray and spread mixture on bottom of pan and slightly up sides; press down until even.
- To make filling: In bowl using hand mixer, whip cottage cheese until lumps are smoother, 3-4 minutes.
- In separate bowl, use hand mixer to whip heavy cream and sugar until stiff peaks form.
- Add cottage cheese and peanut butter to heavy cream mixture; whip until combined, about 1 minute.
- Top pie with chopped chocolate and peanuts and freeze 2 hours. Remove from freezer 15 minutes before ready to serve.
- Before serving, sprinkle with sea salt.

Peanut Butter Jelly Ice Cream

- 1 cup whole milk
- 1/2 cup Premier Protein Strawberries & Cream Protein Shake
- 1/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 2/3 cup creamy peanut butter
- 2 cups heavy whipping cream
- 2 teaspoons vanilla extract
- 1/2 cup sugar-free strawberry jelly
- In large, heavy saucepan, heat milk, protein shake, brown sugar and salt until bubbles form around sides of pan. Whisk small amount of hot mixture into egg. Return to pan, whisking constantly.
- Cook and stir over low heat until mixture thickens and coats back of spoon. Remove from heat; whisk in peanut butter. Quickly transfer to bowl; place in ice water and stir 2 minutes. Stir in cream and vanilla. Press wax paper onto surface of custard. Refrigerate several hours or overnight.
- Fill cylinder of ice cream freezer 2/3 full; freeze according to manufacturer's directions.
- When ice cream is frozen, spoon into freezer container, layering with jelly; freeze 2-4 hours before serving.

- 1 large sweet potato
- 1 bag (10 ounces) dark chocolate chips, plus additional for topping (optional)
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon fine sea salt
- 1/4 cup coconut sugar
- 1 Premier Protein Chocolate Protein Shake
"Caramel" Sauce:
- 3 tablespoons coconut oil (measured when solid)
- 3 tablespoons real maple syrup
- 1 1/2 tablespoons almond butter
- 1/8 teaspoon fine sea salt
- 1/4 teaspoon pure vanilla extract
- Wash and scrub sweet potato. Pierce with fork several times. Place on microwave-safe plate and microwave 5 minutes; flip and microwave 5 minutes. Allow to cool.
- In microwave-safe bowl, microwave chocolate chips in 20-second increments, stirring between each increment until smooth and melted. Set aside.
- Remove sweet potato skin and thoroughly mash. Pack into 3/4 cup measuring cup. Place in large blender.
- Add melted chocolate to blender along with vanilla, sea salt, coconut sugar and chocolate protein shake.
- Place lid on blender and blend on high at least 1 minute, or until ingredients are smooth and incorporated.
- Transfer to ice cream maker and prepare according to manufacturer's directions then transfer to airtight container and freeze 2-3 hours.
- To make "caramel" sauce: In microwave-safe bowl, microwave coconut oil and syrup 30 seconds. Stir and microwave 30 seconds, or until melted and smooth. Stir in almond butter and whisk until smooth. Add sea salt and vanilla extract; whisk to combine.
- Set "caramel" sauce aside at room temperature about 30 minutes. Top ice cream with sauce and additional chocolate chips, if desired.

Apple Ricotta Crepes
Crepes:
- 1 cup flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1cup whole milk
- 2 eggs
- 1 teaspoon vanilla
- butter, for cooking
Apple Topping:
- butter
- 2 tablespoons brown sugar
- Envy Apples, sliced or cubed
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- salt, to taste
- maple syrup
Ricotta Filling:
- 1 cup ricotta cheese
- 1 lemon, zest and juice only
- 2-3 tablespoons sugar, or to taste
- To make crepes: In bowl, combine flour, sugar and salt. Add milk, eggs and vanilla then, using whisk, combine thoroughly. Mixture should be silky smooth. Refrigerate.
- To make apple topping: In pan over medium heat, heat butter and brown sugar until bubbly and golden.
- Add apples, cinnamon, nutmeg and salt, to taste; cook over medium-low heat until apples are soft. Turn off heat and finish with maple syrup.
- To make ricotta filling: Combine ricotta, lemon zest, lemon juice and sugar, mix well and set aside.
- In nonstick pan over medium-low heat, melt small amount of butter.
- Add one ladle crepe batter, cook until bubbles form, flip and cook until golden. Repeat with remaining batter. Stack crepes to keep warm and soft.
- Spread ricotta mixture thinly onto crepes and fold into quarters. Top with apple mixture and serve.
Apple, Tomato and Goat Cheese Frittata
- 6 eggs
- 1 teaspoon hot pepper sauce
- 2 teaspoons kosher salt
- 20 turns fresh cracked pepper
- 1/4 cup whole milk
- 1 Envy Apple, small diced
- 1/2 cup sundried tomatoes, chopped
- 4 ounces goat cheese, crumbled
- 2 tablespoons thinly sliced chives
- Preheat oven to 350 F.
- In large mixing bowl, whisk eggs, hot pepper sauce, salt, pepper and milk until well combined.

Vegan Apple and Black Bean Fajitas
- 1 bell pepper, sliced, seeds removed
- 1 zucchini, sliced
- 1 small jicama, sliced
- 3 Envy Apples, sliced
- 1 yellow onion, sliced
- 1 jalapeno, sliced, seeds removed
- 1 teaspoon garlic
- 1teaspoon ground cumin
- 2 sprigs fresh oregano
- 1 teaspoon chili pepper (optional)
- salt, to taste (optional)
- pepper, to taste (optional)
- 1 cup cooked black beans
- 1 lime
- 3 sprigs fresh cilantro
- 4 small flour tortillas
- In skillet over high heat, saute bell pepper, zucchini, jicama and half the apple slices. Set aside.
- In same hot skillet, saute onions, jalapenos and garlic until lightly caramelized. Combine with sauteed apple mixture. Season with cumin and oregano. Add chili powder and salt and pepper, to taste, if desired.
- Add cooked black beans to saute mixture. Top with squeeze of lime. Garnish with cilantro and remaining raw apple slices.
- Serve with tortillas.
Crisp Apple Tacos
- 1/2 pound pork tenderloin
- 3 tablespoons olive oil
- 1 teaspoon salt, plus additional, to taste, divided
- 1 teaspoon pepper, plus additional, to taste, divided
- 2 Envy Apples, divided
- 3 sprigs rosemary
- 1/2 cup shredded carrots
- 1/2 cup shredded red cabbage
- 1 cup shredded green cabbage
- 4 tablespoons honey
- 1 cup mayonnaise
- 1 tablespoon mustard
- 1 tablespoon white vinegar
- 12 soft taco shells
- 2 tablespoons sour cream
- 1 lime, cut into wedges
- Cut pork crosswise into 1-inch medallions.
- Coat pork medallions with olive oil, 1 teaspoon salt and 1 teaspoon pepper then add to saucepan over medium heat.
- Slice half of one apple into thick wedges and add to saucepan. Slice remaining half into thin wedges and set aside.
- Add rosemary to saucepan and heat 2-3 minutes. Flip pork and heat 2-3 minutes until pork is slightly golden and cooked through.
- Let pork rest 3 minutes then slice into strips.
- Thinly slice half of remaining apple into thin sticks around same size of shredded cabbage. Reserve remaining half.
- In serving bowl, toss apple sticks, carrots, red cabbage and green cabbage.
- In bowl, mix honey, mayonnaise, mustard and vinegar into dressing. Add additional salt and pepper, to taste.
- Mix dressing and cabbage; refrigerate at least 1 hour prior to serving.
- Cut remaining apple half into thin wedges.
- Top taco shells with pork, slaw, sour cream and squeeze of lime juice. Top with apple wedges.

Sheet Pan Cajun Shrimp Fajitas with Bell Pepper, Onion and Spicy Ranch

- 2 green bell peppers
- 2 yellow bell peppers
- 1 lime
- 1 medium red onion
- 2 tablespoons extra-virgin olive oil
- 1 1/2 pounds raw, peeled shrimp, fresh or frozen
- 5 teaspoons Cajun seasoning, divided
- 1 teaspoon salt
- 1/2cup ranch dressing
- 12 small flour tortillas
- Preheat oven to 450 F.
- Wash and dry green bell peppers, yellow bell peppers and lime.
- Trim, seed and slice bell peppers lengthwise into thin strips; transfer to large baking sheet.
- Peel, halve and slice onion lengthwise into thin pieces; add to baking sheet with bell peppers.
- Drizzle veggies with oil, toss to combine and spread in even layer. Bake until veggies have softened slightly, about 5 minutes.
- If using frozen shrimp, place them in colander and run under cold water to thaw slightly. Place shrimp on clean towel or paper towels and pat dry.
- Remove baking sheet from oven. Arrange shrimp over veggies then sprinkle with 4 teaspoons Cajun seasoning and salt; toss to combine and spread in even layer.
- Bake until veggies are tender and shrimp are cooked through, 5-7 minutes. Remove from oven.
- Cut lime into wedges.
- In small bowl, stir ranch dressing and remaining Cajun seasoning.
- Warm tortillas in skillet, oven or microwave, if desired.
- Divide tortillas between plates and fill with shrimp and veggies; drizzle with spicy ranch and serve with squeeze of lime.
Cheese Tortellini and Cauliflower with Creamy Spinach Marinara

- 2 bags (10 ounces each) cauliflower florets
- 18 ounces cheese tortellini, fresh or frozen
- 1/2 tablespoon salt
- 1 jar (24 ounces) marinara sauce
- 8 fluid ounces heavy whipping cream
- 1/2 teaspoon basil, dried
- 1/4 teaspoon black pepper
- 2 packages (5 ounces each) baby spinach
- Fill large pot halfway with hot water, cover and bring to boil. Uncover then add cauliflower, tortellini and salt; stir for a few seconds. Cook, stirring occasionally, until just tender, about 5 minutes, or cook according to package instructions.
- In separate large pot over medium heat, stir marinara sauce, cream, basil and black pepper to combine and bring sauce to simmer. Once simmering, reduce heat to medium-low and cook until slightly thickened, 3-4 minutes.
- Wash and dry spinach.
- When sauce has thickened, add spinach to pot in handfuls, waiting for spinach to wilt slightly before adding next handful. Remove from heat and cover to keep warm.
- When cauliflower and tortellini are done, drain and add to pot with creamy marinara sauce; stir to combine.
- To serve, divide pasta between plates or bowls.
Garlic-Parmesan Chicken Tenders with Green Beans and Honey Mustard Dip

- 2 tablespoons extra-virgin olive oil, divided
- 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon salt, divided
- 2/3 cup Parmesan cheese, shredded
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon paprika
- 1 1/2 pounds boneless, skinless chicken breasts
- 1 1/2 pounds green beans
- 1/2 cup honey mustard dressing
- Preheat oven to 450 F. Coat baking sheet with 2 teaspoons oil.
- In medium bowl, stir mayo, garlic powder and 1/2 teaspoon salt to combine.
- In separate medium bowl, stir Parmesan, breadcrumbs and paprika to combine.
- Pat chicken dry with paper towels and slice into 3/4-inch tenders. Add to bowl with mayo mixture and toss to coat.
- Working in batches, dredge tenders in breadcrumb coating, pressing to adhere. Transfer to baking sheet.
- Bake until tenders start to turn golden, about 10 minutes.
- On clean cutting board, wash, dry and trim green beans. Set aside.
- When chicken is golden, flip and bake until cooked through, 6-8 minutes. Remove from oven.
- Preheat large skillet over medium-high heat.
- Add remaining oil and swirl to coat bottom. Add green beans and remaining salt; cook, stirring occasionally, until tender-crisp, 4-5 minutes. Remove from heat.
- Divide chicken tenders and green beans between plates. Serve with dressing for dipping.

Tart Cherry Unity Pie

Pie:
- 1 pie crust (9 inches)
- 2 cups canned tart cherry pie filling
- 2 cups canned apple pie filling
- 1 egg, beaten (for egg wash)
Streusel:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 2 tablespoons granulated sugar
- 1/3 cup pecans, roughly chopped
- 1 pinch salt
- 4 tablespoons butter, melted
Pumpkin Spice Whipped Cream:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon pumpkin spice
- Preheat oven to 400 F.
- Fit pie crust to 9-inch pie dish. Crimp edges and use fork to poke holes in bottom. Place pie crust in freezer to chill.
- In large bowl, combine tart cherry pie filling and apple pie filling. Set aside.
- To make streusel: In bowl, use fork to mix flour, brown sugar, granulated sugar, pecans and salt. Pour butter over dry ingredients and mix until ingredients come together in clumps.
- To assemble pie: Pour cherry-apple filling into prepared pie crust and sprinkle streusel on top. Brush beaten egg onto exposed pie crust edges.
- Bake 25 minutes. At 10-minute mark, cover pie dish with foil to prevent crust from over-browning. After 25 minutes, lower oven temperature to 375 F and bake 30 minutes.
- To make pumpkin spice whipped cream: In large bowl or bowl of stand mixer, add heavy cream, powdered sugar and pumpkin spice. Use hand mixer or beater attachment on stand mixer to beat on medium-high speed 3-5 minutes until stiff peaks form. Refrigerate whipped cream until ready to serve.
- Let pie cool 2-3 hours then dollop pumpkin spice whipped cream on top, slice and serve.

Orange Juice Biscuits
Orange Butter Sauce:
- 1 1/2 cups Florida Orange Juice
- 2 1/2 tablespoons unsalted butter
Orange Biscuits:
- 1 1/2 tablespoons granulated sugar
- 2 teaspoons grated orange zest
- 2 cups bleached all-purpose flour, plus additional for kneading
- 1 2/3 tablespoons baking powder
- 3/4 teaspoon salt
- 1/2 cup shortening
- 1/2 cup whole milk
- 1/4 cup Florida Orange Juice
- To make orange butter sauce: Boil orange juice 5 minutes, or until reduced by half. Add butter and stir until melted. Remove from heat.
- To make orange biscuits: Preheat oven to 425 F.
- Use fingers to rub sugar and zest together until sugar is moistened and looks like wet sand.
- In large bowl, whisk orange sugar, 2 cups flour, baking powder and salt. Using two forks or pastry blender, cut in shortening to size of small peas.
- Combine milk and orange juice then stir into flour mixture to make sticky dough.
- Turn out dough onto well-floured work surface. Sprinkle top with flour and knead about six times while folding dough over in half and using more flour as needed.
- Pat dough out to 3/4-inch thickness. Cut out biscuits with round cutter by dipping cutter in flour then pressing into dough. Do not turn cutter while pressing.
- Place biscuits close together but not touching on baking sheet.
- Gather dough scraps and fold 2-3 times, pat out again and cut biscuits. Repeat until dough is used.
- Brush tops with orange butter sauce. Bake 15-20 minutes, or until lightly browned.
- Serve warm or at room temperature with remaining sauce.
Orange Juice Spicy Margaritas
- 2 cups Florida Orange Juice
- ice
- 2 cups simple syrup
- 8 ounces silver tequila
- 2 ounces triple sec or orange liqueur
- 2 ounces lime juice
- 4 ounces seltzer
- ghost pepper salt, to taste
- 4 Florida Orange slices, 1/4-inch thick
- In saucepan over medium heat, reduce orange juice to 1 cup and allow to cool.
- Fill cocktail shaker 3/4 full with ice. Add orange juice reduction, simple syrup, tequila, triple sec and lime juice.
- Shake and pour into four glasses. Top each glass with 1 ounce seltzer.
- Pour ghost pepper salt onto saucer and dip edges of orange slices in ghost pepper salt. Place orange slices on rim of each glass, if desired.

Easter Roast
Yield: 1 roast
- Salt
- pepper
- garlic powder
- 1 roast (3 pounds)
- 1 bag (1 pound) baby carrots
- 1 bag (1 1/2 pounds) trio potatoes or potato of choice
- 3 cups beef broth
- 1 can (10 ounces) cream of mushroom soup
- 1 tablespoon garlic pepper
- 3 tablespoons brown sugar
- 1 onion, roughly chopped
- 1 bundle asparagus
- Preheat oven to 350 F.
- Sprinkle salt, pepper and garlic powder over roast and rub into front, back and sides. Place seasoned roast in middle of large roasting pan.
- Place carrots on one side of roasting pan and potatoes on other side.
- In large bowl, mix beef broth and cream of mushroom soup with garlic pepper. Pour mixture over roast, potatoes and carrots. Sprinkle brown sugar over carrots and add chopped onion. Cover and cook 2 1/2 hours then remove from oven, add asparagus and cook uncovered 30 minutes.
- Serve from pan or place on platter for more formal presentation.
Refrigerator Rolls
Yield: 18 rolls
- 2 packages yeast
- 1/2 cup sugar
- 2 cups lukewarm water
- 6-7cups all-purpose flour, divided
- 2 teaspoons salt
- 2 eggs
- 1 stick softened butter
- oil, divided
- In large bowl, dissolve yeast and sugar in lukewarm water. When yeast is foamy, add 3 cups flour. Mix in salt, eggs and butter.
- Once mixed well, add remaining flour 1 cup at a time and knead dough into ball in bowl. Remove dough from bowl and place on clean surface.
- Wash and dry bowl then grease with drizzle of oil. Place dough in bowl and let rise 1 hour or store in refrigerator if making in advance.
- When ready to use, grease muffin pan with oil. Roll dough into hand-size balls and place in each muffin hole; cover 1 hour.
- Heat oven to 350 F. Bake rolls 30 minutes.
- Note: Dough can be made in advance and stored in refrigerator up to six days. If making ahead, punch down dough, cover and place in refrigerator. Punch down daily until ready to use.
Blueberry Crumble
Yield: 1 cake
- 1 can blueberry pie filling
- 1 box yellow cake mix
- 1 bag (4 ounces) chopped pecans
- 1 stick butter, melted
- 1/4 cup oil
- whipped cream, for serving (optional)
- vanilla ice cream, for serving (optional)
- Preheat oven to 350 F.
- Spread pie filling on bottom of 9-by-11-inch pan. Sprinkle cake mix and pecans on top. Do not mix.
- Drizzle melted butter and oil on top of cake mix and pecans. Do not mix. Lift pan and tilt from side to side until cake mix is completely covered in butter.
- Bake 1 hour until golden brown and bubbly.
- Serve with whipped cream or vanilla ice cream, if desired.

- 1/2 cup dark chocolate chips
- 2 cups tart cherry juice
- 2 ripe bananas
- 1 cup vanilla Greek yogurt
- 1/4 cup almond butter
- 1/4 cup granola
- 1/4 cup dried tart cherries
- 1/2 cup frozen tart cherries, thawed
- Place chocolate chips in bowl.
- In saucepan over medium heat, bring tart cherry juice to simmer about 20 minutes until reduced to 2/3 cup.
- Pour juice into bowl and mix until chocolate chips are melted and sauce is smooth.
- Cut bananas in half lengthwise and place on two plates. Spoon 1/2 cup Greek yogurt on each banana then drizzle with 2 tablespoons almond butter and 2 tablespoons tart cherry chocolate sauce.
- Sprinkle 2 tablespoons granola, 2 tablespoons dried tart cherries and 1/4 cup thawed frozen tart cherries on top of each banana split.

- 10 medjool dates, pitted
- 1/2 cup dried tart cherries
- 1/4 cup walnuts
- 2 tablespoons rolled oats
- 1/4 cup cocoa powder
- 1 tablespoon chia or hemp seeds (optional)
- 1/4 teaspoon salt
- 2 tablespoons peanut or almond butter
- 4 tablespoons tart cherry juice
- 1/4 cup mini chocolate chips
- cocoa powder (optional)

- In bowl of food processor, combine dates; dried tart cherries; walnuts; oats; cocoa powder; seeds, if desired; salt; and nut butter. Pulse 30-60 seconds until ingredients are ground into tiny pieces.
- Add tart cherry juice in 1 tablespoon additions, pulsing mixture after each addition, until crumbly dough forms.
- Transfer dough to bowl and fold in chocolate chips.
