Crab and Shrimp Sushi Burrito

- 1 bag Success Jasmine Rice
- 1/2 cup unseasoned rice vinegar
- 2tablespoons granulated sugar
- 2 teaspoons kosher salt
- 2 tablespoons mayonnaise
- 2 tablespoons Sriracha sauce
- 1/4 teaspoon sesame oil
- 1tablespoon black sesame seeds
- 4 sushi nori sheets
- 1/2 carrot, ribboned, divided
- 1/2 cucumber, ribboned, divided
- 6 crab sticks, shredded, divided
- 6 large shrimp, cooked, deveined, tails removed and butterflied, divided
- Rinse rice bag under cold water to remove starch. Prepare rice according to package directions.
- In small saucepan over medium-low heat, heat rice vinegar, sugar and salt until sugar and salt have dissolved, about 1 minute. Set aside.
- In small bowl, mix mayonnaise, Sriracha sauce and sesame oil. Set aside.
- Transfer cooked rice onto large baking sheet. Drizzle half the vinegar mixture over rice, turning until all rice is fully coated. Taste and add more vinegar mixture, if desired. Spread rice into thin layer and cool to room temperature. Sprinkle sesame seeds on top.
- Lay down one sushi nori sheet. Spread layer of rice on it. Place half the carrots and cucumbers on rice. Place crab and shrimp on top.
- Place another sushi nori sheet just under first one and roll. Repeat with remaining sushi nori sheets, rice, carrots, cucumbers, crab and shrimp. Wrap both burritos in plastic wrap. Let rest 10 minutes.
- Slice burritos in half and serve with spicy mayo.
Thai Red Curry Chicken and Rice Soup
Prep time: 10 minutes
Cook time: 20 minutes
Servings: 6
- 6 cups chicken broth
- 2 bags Success Basmati Rice
- 1 can (14 ounces) coconut milk
- 2 tablespoons Thai red curry paste
- 1 tablespoon soy sauce
- 1 teaspoon brown sugar
- 1 pound chicken breast tenders
- 2 tablespoons lime juice
- 4 green onions, thinly sliced
- In pressure cooker on saute setting over high heat, bring broth and rice bags to boil. Boil, uncovered, 10 minutes. Remove bags with fork and set aside.
- Add coconut milk, curry paste, soy sauce and brown sugar to pressure cooker. Turn off saute setting. Add chicken. Cover and lock to seal. Set to pressure cook setting over high heat about 10 minutes, or until chicken is tender. Carefully, manually or naturally, release pressure according to manufacturer's instructions before removing lid.
- Set pressure cooker to saute setting over medium heat. Remove chicken and shred with two forks; add to soup along with lime juice and green onions. Remove rice from bags and stir into soup. Simmer until rice is heated through.

Puerto Nuevo-Style Lobster

- Seafood seasoning, to taste
- 1 bottle Mexican beer
- 2 Maine Lobsters (about 3 pounds)
- black pepper, to taste
- 2/3 cup lard, vegetable shortening or olive oil
- 1/4 cup unsalted butter
- flour or corn tortillas
- 2 cups red rice
- 1 cup refried black or pinto beans
- 1 cup pico de gallo
- 1 cup salsa verde
- 6 lemon wedges
- Bring large pot of water to boil. Season with seafood seasoning, to taste, and a few splashes of Mexican beer. Boil lobsters 3 minutes.
- Remove and split lobsters in half down middle. Thoroughly rinse shell and lobster meat, discarding green intestines and black vein running down center of tail.
- Lightly season lobster halves with seafood seasoning and black pepper, to taste.
- In deep-frying pan, heat lard. Fry each lobster half 5 minutes on each side. Set aside to drain on paper towel-lined plate.
- To serve, scoop lobster meat onto tortilla with rice, beans, pico de gallo, salsa verde and squeeze of lemon.
Lobster Ceviche

- 1 Maine Lobster (about 1 1/2 pounds)
- 1 1/2 tablespoons fresh lime juice
- 1 small red or white onion, minced or sliced
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon jalapeno, seeded and minced
- 1-2 tablespoons extra-virgin olive oil or avocado oil
- flaky sea salt, to taste
- saltines, tortilla chips or plantain chips, for serving
- Bring large pot of salted water to boil. In large bowl, prepare ice bath with 2 quarts water and lots of ice.
- If using whole lobster, split lobster in half and use dish towel to twist off claws and tail. Discard body.
- Boil tail and claws 1 1/2 minutes. Remove tail from water and place in ice bath. Allow claws to boil 1 1/2 minutes longer. Remove and place in ice bath.
- On chopping board, shell lobster tail and claws. Discard shells. Roughly chop into pieces.
- In medium bowl, toss lobster and lime juice. Refrigerate 1 hour.
- When ready to serve, add onion, cilantro and jalapeno to bowl with lobster; toss to combine. Arrange on plate or in serving glass. Drizzle with oil and top with flaky sea salt, to taste. Serve with saltines, tortilla chips or plantain chips.

- 3 cups water
- 8 single-serving green tea bags
- 16 ounces frozen mixed berries (about 3 cups)
- 2 medium bananas, peeled, cut in half and frozen
- 1 cup fat-free plain Greek yogurt
- 2 teaspoons fresh-grated peeled gingerroot (optional)
- 2 teaspoons vanilla extract (optional)
- 2 teaspoons chia or flax seeds (optional)
- In small saucepan over high heat, bring water to boil. Remove pan from heat. Submerge tea bags. Steep 4 minutes. Discard tea bags. Let tea mixture cool 30 minutes. Pour into pitcher. Refrigerate 2 hours, or until chilled.
- In food processor or blender, process tea, berries, bananas and yogurt until smooth. Add gingerroot and vanilla, if desired, and process until smooth. Pour into four glasses. Sprinkle with chia seeds, if desired.

- 1 medium lime, cut into four wedges or lime zest twists (optional)
- In small saucepan over high heat, bring water to boil. Remove pan from heat. Submerge tea bags. Steep 4 minutes. Discard tea bags. Let tea mixture cool 30 minutes. Pour into pitcher. Refrigerate 2 hours, or until chilled.
- At serving time, add mint leaves to four glasses. Using muddler or wooden spoon, mash mint leaves several times to release juices. Don't mash into pulp. Add ice.

- romaine lettuce

- crushed tortilla chips
- In pan over medium heat, brown beef until cooked through; drain. Add black beans and corn. Stir in tomatoes with juices and half-and-half. Add onion powder, garlic powder, mesquite seasoning and pepper. Season with salt, to taste. Bring to simmer.
- Add lime juice; stir. Sprinkle with cilantro.
- Wash and chop lettuce. Place cheese and sour cream in bowls for toppings.
- On plates, top crushed tortilla chips with meat sauce, lettuce, cheese and sour cream, as desired.

Roasted Sweetpotato Mango Salsa

- 1 1/2 cups (2 medium) sweetpotatoes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 tablespoon chili powder
- 2 tablespoons olive oil
- 1 cup mango
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1/2 cup purple onion
- 1 jalapeno
- 1/4 cup cilantro
- 1 tablespoon fresh-squeezed orange juice
- 1 tablespoon fresh-squeezed lemon juice
- 1 tablespoon fresh-squeezed lime juice
- chips or crackers
- Heat oven to 400 F.
- Peel, rinse and cube sweetpotatoes 1/4 inch or smaller. Toss sweetpotatoes with salt, pepper, chili powder and olive oil.
- Spread on baking sheet and roast 20 minutes.
- Peel and cube mango. Seed and cube bell peppers. Dice onion. Seed and dice jalapeno. Finely chop cilantro.
- Once sweetpotatoes cool, mix with mango, peppers, onion and jalapeno. Cover with fresh-squeezed orange, lemon and lime juices.
- Chill and serve with chips or crackers.

Mangonada

- 1 cup fresh mango cubes, plus 5-6 cubes for garnish, divided
- 2 ounces fresh mango nectar
- 1/2 ounce lime juice
- 2 cups ice
- 1/2 ounce agave nectar
- 2 tablespoons Tajín Fruity Chamoy Hot Sauce, plus 2 ounces for garnish, divided
- 1 tablespoon Tajín Clásico Seasoning, for garnish
- 1 tamarind candy, for garnish (optional)
- Measure 1 cup mango cubes, mango nectar, lime juice, ice and agave nectar into blender cup. Blend until smooth.
- In separate small dishes, add 1 ounce hot sauce and 1 ounce seasoning.
- Dip rim of 14-ounce Collins glass into hot sauce then seasoning to coat. Drizzle remaining hot sauce along inside of glass.
- In glass, pour 1 tablespoon chamoy sauce followed by blended Mangonada. Top with remaining fresh mango cubes and sprinkle with additional seasoning. Add tamarind candy to glass, if desired.

- 2 pounds ground chicken
- 2 tablespoons sesame oil
- 3/4 cup diced shiitake mushrooms
- 1 small onion, diced
- 2 garlic cloves, grated
- 1 1/2 tablespoons fresh grated ginger
- 1/2 cup hoisin sauce
- 1/2 cup water chestnuts, diced
- 3 green onions (both white and green parts), chopped
- 2 garlic cloves, grated
- 1/4 cup cilantro, chopped, for garnish
- 1/4 cup crushed peanuts, for garnish
- iceberg or butter lettuce, for wraps
Peanut Sauce:
- 3 tablespoons creamy peanut butter
- 2 teaspoons brown sugar
- 1 tablespoon fresh lime juice
- 2 tablespoons chili garlic sauce
- 1 teaspoon fresh grated ginger
- 1 tablespoon soy sauce
- In pan, saute ground chicken in sesame oil until cooked through. Drain if mixture is watery.
- Add shiitake mushrooms and onion; saute until mushrooms have softened and appear caramel colored.
- Add garlic, ginger, hoisin, water chestnuts and green onions. Let chicken mixture simmer on low.
- To make peanut sauce: In saucepan over medium-low heat, mix peanut butter, brown sugar, lime juice, chili garlic sauce, ginger and soy sauce until smooth, warm and thinned slightly.
- Fold into chicken mixture. Stir until combined and simmer on low until peanut sauce is evenly distributed.
- Garnish with fresh cilantro and crushed peanuts. Serve in lettuce wraps.
Broccoli and Edamame Salad with Peanut Dressing

- 1 cup shelled edamame, cooked
- 1 1/2 cups chopped raw broccoli
- 1/2 cup English cucumber, quartered and chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup salted peanuts, roughly chopped
- toasted sesame seeds, for garnish (optional)
- To make dressing: In bowl, whisk lime juice, toasted sesame seed oil, honey, tahini, peanut butter, chili oil, garlic, ginger and salt, to taste. Add hot water, adding additional, if necessary, until dressing reaches desired consistency. Set aside.
- To make salad: In large bowl, combine broccoli slaw, edamame, broccoli, cucumber, mint, cilantro and peanuts. Toss with dressing to combine and garnish with toasted sesame seeds, if desired.
Peanut Butter Cottage Cheese Cheesecake

Crust:
- 2 cups pretzels
- 1 1/2 cups vanilla-flavored wafer-style cookies
- 1/2 cup peanuts
- 12 tablespoons unsalted butter
- nonstick cooking spray
Filling:
- 1/2 cup cottage cheese
- 1 cup heavy whipping cream
- 3 tablespoons sugar
- 3 tablespoons creamy peanut butter
- 1/2 cup roughly chopped dark chocolate
- 1/2 cup roughly chopped peanuts
- 1 pinch sea salt
- To make crust: In food processor, pulse pretzels, wafer-style cookies and peanuts until chopped but not powdery.
- In skillet, melt butter. Add pretzel mixture until combined with butter.
- Spray pie pan with nonstick cooking spray and spread mixture on bottom of pan and slightly up sides; press down until even.
- To make filling: In bowl using hand mixer, whip cottage cheese until lumps are smoother, 3-4 minutes.
- In separate bowl, use hand mixer to whip heavy cream and sugar until stiff peaks form.
- Add cottage cheese and peanut butter to heavy cream mixture; whip until combined, about 1 minute.
- Top pie with chopped chocolate and peanuts and freeze 2 hours. Remove from freezer 15 minutes before ready to serve.
- Before serving, sprinkle with sea salt.

Orange Juice Biscuits
Orange Butter Sauce:
- 1 1/2 cups Florida Orange Juice
- 2 1/2 tablespoons unsalted butter
Orange Biscuits:
- 1 1/2 tablespoons granulated sugar
- 2 teaspoons grated orange zest
- 2 cups bleached all-purpose flour, plus additional for kneading
- 1 2/3 tablespoons baking powder
- 3/4 teaspoon salt
- 1/2 cup shortening
- 1/2 cup whole milk
- 1/4 cup Florida Orange Juice
- To make orange butter sauce: Boil orange juice 5 minutes, or until reduced by half. Add butter and stir until melted. Remove from heat.
- To make orange biscuits: Preheat oven to 425 F.
- Use fingers to rub sugar and zest together until sugar is moistened and looks like wet sand.
- In large bowl, whisk orange sugar, 2 cups flour, baking powder and salt. Using two forks or pastry blender, cut in shortening to size of small peas.
- Combine milk and orange juice then stir into flour mixture to make sticky dough.
- Turn out dough onto well-floured work surface. Sprinkle top with flour and knead about six times while folding dough over in half and using more flour as needed.
- Pat dough out to 3/4-inch thickness. Cut out biscuits with round cutter by dipping cutter in flour then pressing into dough. Do not turn cutter while pressing.
- Place biscuits close together but not touching on baking sheet.
- Gather dough scraps and fold 2-3 times, pat out again and cut biscuits. Repeat until dough is used.
- Brush tops with orange butter sauce. Bake 15-20 minutes, or until lightly browned.
- Serve warm or at room temperature with remaining sauce.
Orange Juice Spicy Margaritas
- 2 cups Florida Orange Juice
- ice
- 2 cups simple syrup
- 8 ounces silver tequila
- 2 ounces triple sec or orange liqueur
- 2 ounces lime juice
- 4 ounces seltzer
- ghost pepper salt, to taste
- 4 Florida Orange slices, 1/4-inch thick
- In saucepan over medium heat, reduce orange juice to 1 cup and allow to cool.
- Fill cocktail shaker 3/4 full with ice. Add orange juice reduction, simple syrup, tequila, triple sec and lime juice.
- Shake and pour into four glasses. Top each glass with 1 ounce seltzer.
- Pour ghost pepper salt onto saucer and dip edges of orange slices in ghost pepper salt. Place orange slices on rim of each glass, if desired.

- 1 can (15 ounces) black beans
- 1 bunch cilantro
- 3 Roma tomatoes
- 2 jalapenos
- 1/2 red onion
- bell peppers (mix of green, red, orange and yellow, as desired)
- tortilla chips, for serving
Dressing:
- 1/3 cup olive oil
- 1/3 cup red wine vinegar
- 1 tablespoon honey
- 1 tablespoon paprika
- 1 lime, juice only
- salt, to taste
- pepper, to taste
- Drain and rinse corn and black beans; dry well.
- Finely chop and dice cilantro, tomatoes, jalapenos, onion and bell peppers.
- To make dressing: Combine olive oil, red wine vinegar, honey, paprika and lime juice. Season with salt and pepper, to taste.
- Mix vegetables with dressing. Serve with tortilla chips.

Servings: 4 (1 egg and 1/2 cup salsa per serving)
- Nonstick cooking spray
- 4 corn tortillas (6 inches each)
- 4 cups water
- 1 tablespoon white vinegar
- 4 large eggs
Salsa:
- 1 medium avocado, diced
- 1 medium Anaheim or poblano pepper, seeds and ribs discarded, diced
- 1 medium tomatillo, papery husk discarded, washed and diced
- 1/2 medium tomato, diced
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 medium garlic clove, minced
- 1/8 teaspoon salt
- Preheat oven to 400 F. Line baking sheet with aluminum foil. Lightly spray foil with nonstick cooking spray.
- Arrange tortillas in single layer on foil. Lightly spray tortillas with nonstick cooking spray. Using fork, pierce tortillas to prevent from filling with air. Bake 5-6 minutes on each side, or until golden brown. Transfer to serving plates.
- In large skillet over high heat, bring water and vinegar to boil.
- Once water is boiling, reduce heat and simmer. Break egg into cup then carefully slip egg into simmering water. Repeat with remaining eggs, avoiding eggs touching in water. Simmer 3-5 minutes, or until egg whites are completely set and yolks are beginning to set but aren’t hard. Using slotted spoon, drain eggs. Place each egg on tostada.
- To make salsa: In medium bowl, gently stir together avocado, pepper, tomatillo, tomato, red onion, cilantro, lime juice, garlic and salt. Serve with tostadas.

- 4 large eggs

- 2 medium poblano peppers, seeds and ribs discarded, chopped
- 2 cups frozen whole-kernel corn, thawed
- 2 medium green onions, chopped
- 1/4 cup finely shredded Cotija cheese or crumbled queso fresco
- 1 medium tomato, chopped
- 1/4 cup fat-free sour cream
- In medium bowl, whisk eggs, milk and cilantro.
- In medium skillet over medium heat, heat oil, swirling to coat bottom of skillet. Cook poblano peppers 3 minutes, or until browning on edges, stirring frequently.
- Stir in corn and green onion. Reduce heat to medium-low and carefully pour in egg mixture. Cook, covered, 10 minutes, or until mixture is just set on edges and still soft in center. Avoid overcooking. Remove from heat.
- Sprinkle with cheese. Cut into eight wedges. Place two wedges on each plate. Top with tomatoes and sour cream.

Sweet Potato Hash with Eggs
Servings: 4 (1 cup per serving)
- 2 teaspoons canola or corn oil
- 1/2 medium onion, chopped
- 4 medium sweet potatoes, peeled and cut into 1/2-inch cubes
- 1/2 medium red or green bell pepper, chopped
- 2/3 cup fat-free, low-sodium vegetable broth
- 2 teaspoons minced garlic
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon dried thyme, crumbled
- 1/2 teaspoon coarsely ground pepper
- 1/8 teaspoon salt
- 4 large eggs
- hot pepper sauce (optional)
- In pressure cooker set on saute, heat oil. Cook onion 3 minutes, or until soft, stirring frequently. Turn off pressure cooker.
- Stir in potatoes, bell pepper, broth, garlic, paprika, cumin, thyme, pepper and salt. Secure lid. Cook on high pressure 3 minutes. Quickly release pressure. Turn off pressure cooker.
- Remove pressure cooker lid. Crack one egg into small bowl. Using back of spoon, make small well in potatoes. Slip egg into well. Repeat with remaining eggs, making separate well for each egg. Secure lid with pressure vent open. Saute 2 minutes. Let stand on “keep warm” setting 2 minutes, or until eggs are cooked to desired consistency.
- Serve hash sprinkled with dash of hot pepper sauce, if desired.
