Whether it’s their angry names and tough exteriors, or simply a fear of the unknown about taste and preparation, dozens more diverse and exotic fruits and vegetables like dragon fruit, horned melon and Brussels sprouts are often the sources of produce paranoia.
An initiative from Dole, in collaboration with Disney and Pixar’s Monsters, Inc., is helping to take the scare out of specialty fruits and vegetables and widen America’s produce horizons. That’s because, like a good book or the characters in a beloved film, you can’t judge a fruit or vegetable by its appearance; nature’s true beauty often lies within.
The campaign offers character-inspired recipes, serving suggestions, digital and social activations, family-friendly activities, fun trivia and influencer partnerships that celebrate the not-so-scary world of the planet’s more unusual fresh bounty.
One easy way to introduce new flavors is by trying a variation of a familiar fruit or veggie. For example, there are more than 500 edible banana varieties in the world. You might sample a red banana or a Manzano, or even an ice cream banana, with a taste resembling vanilla custard.
These fun and kid-friendly Green Slime Nacho Cups feature plantains, for example, a member of the banana family with a different taste and texture than everyday yellow bananas – more firm and starchy like a potato. Chicken Stuffed Roz Heads
Prep time: 15 minutes
Servings: 3
- 1 cup cubed, cooked chicken breast
- 1/2 cup DOLE® Green Grapes, halved
- 1/4 cup chopped Dole Celery
- 1/3 cup nonfat plain Greek yogurt
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 Dole Avocados, halved, pitted and peeled
- 6 whole-wheat pretzel twists
- 18 whole-wheat pretzel sticks
- 1 Dole Strawberry, sliced
- 3 dried, sweetened blueberries
- In bowl, stir together chicken, grapes, celery, yogurt, salt and pepper.
- Scoop three equal portions onto serving plate. Shape each into oval.
- Top each with upside down avocado half.
- Decorate each avocado half to resemble Roz’s face. Using sharp paring knife, trim each pretzel twist to create horn-rimmed glasses lens by cutting off double loop section of each pretzel twist and discarding or enjoying as snack, keeping single loop portion, which will become one lens. Two lenses are needed per Roz Head.
- Place two pretzel lenses on each avocado to form glasses. Add pretzel stick to each side of avocado to form arms of glasses. Push four pretzel sticks into top of each avocado to form hair. Add strawberry slice, trimmed to look like lips for her mouth, and place blueberry on lower left side of face to form mole.
Green Slime Nacho Cups
Prep time: 5 minutes
Cook time: 20 minutes
Servings: 4
- 1 green starting to turn yellow DOLE® Plantain, peeled and thinly sliced on bias
- 1 1/2 teaspoons canola oil
- 1/4 teaspoon salt, divided
- 1 Dole Avocado, halved, pitted and peeled
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1/2 cup thinly shredded Dole Purple Cabbage
- Preheat oven to 375 F. Toss plantain slices with canola oil and season with pinch of salt. On parchment paper-lined baking sheet, arrange slices in single layer with no overlapping.
- Bake 18-20 minutes, or until crispy and lightly golden. Cool completely and set aside.
- Using spoon, scoop flesh of avocado into small bowl and mash, reserving one half avocado shell. Stir mashed avocado with lime juice, garlic and remaining salt. Stir in slaw, reserving some for garnish. Scoop into reserved avocado shell and smooth top with back of spoon. Stick reserved cabbage shreds out of avocado mixture to look like hair.
- Serve slime nacho cups with plantain chips.
Slippery Slimy Smoothie
Prep time:10 minutes
Servings: 2 (8 ounces each)
- 1/2 cup DOLE® Spinach
- 1 Dole Banana, peeled and frozen
- 1/2 cup Dole Green Grapes, frozen
- 1/3 cup cucumber, diced
- 1/2 cup Dole Pineapple
- 1/2 cup unsweetened vanilla almond milk
- 1/2 cup nonfat plain Greek yogurt
- 5 ice cubes
- In blender, blend spinach, banana, grapes, cucumber, pineapple, almond milk, Greek yogurt and ice cubes until smooth.
- Pour smoothie into two glasses and serve.

Sizzling Shrimp Fajita Stir-Fry

- 1 1/2 pounds large, raw shrimp, peeled and deveined (21-25 shrimp total)
- 2 tablespoons soy sauce, divided
- 4 teaspoons cornstarch, divided
- 1/4 cup NAKANO Roasted Garlic Rice Vinegar
- 3 tablespoons hoisin sauce
- 2 teaspoons grated fresh ginger
- 3 tablespoons vegetable oil, divided
- 1 red onion, cut into thin slivers
- 1 red bell pepper, cut into thin strips
- 1/2 pound shishito peppers, stemmed
- 6 warmed corn or flour tortillas
- 1/2 cup finely shredded red cabbage
- 1/4 cup thinly sliced green onions
- In medium bowl, combine shrimp, 2 teaspoons soy sauce and 2 teaspoons cornstarch; let stand 5 minutes to marinate.
- In separate bowl, whisk remaining soy sauce, remaining cornstarch, rice vinegar, hoisin sauce and ginger until blended.
- In large nonstick skillet over medium-high heat, heat 1 tablespoon oil until shimmering. Add half of shrimp; cook 1 minute on each side. Transfer to clean bowl; repeat with remaining shrimp. Wipe out skillet with paper towel.
- In same pan, heat remaining oil until shimmering. Add red onion, bell pepper and shishito peppers. Cook, stirring, 2-4 minutes until peppers begin to blister. Add vinegar mixture; cook, stirring, 1-2 minutes, or until sauce is slightly thickened. Add shrimp to pan. Cook, tossing well until shrimp and vegetables are coated with sauce.
- Fill tortillas with shrimp mixture, cabbage and green onions.
Spicy Steak and Broccoli

- 1 beef tenderloin (1 1/2 pounds), cut into 2-inch cubes
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 3 tablespoons avocado oil, divided
- 2 cups multicolored, mini sweet peppers, cut into thin rings
- 1/4 pound broccolini, cut into 3-inch sections
- 2 large shallots, chopped
- 1/4 cup NAKANO Seasoned Rice Vinegar
- 1 tablespoon sugar
- 1 teaspoon sambal oelek (Asian-chili garlic sauce) or sriracha
- 1/4 teaspoon kosher salt

- In medium bowl, combine beef, soy sauce, cornstarch, black pepper and garlic powder.
- In large nonstick skillet over medium-high heat, heat 1 tablespoon oil. Add peppers, broccolini and shallots; cook 3 minutes, or until tender crisp. Transfer to clean bowl.
- In same skillet over high heat, heat 1 tablespoon oil until shimmering. Add half of beef in single layer. Cook undisturbed 2 minutes, or until bottoms are browned. Stir. Cook 1 minute, or until outer surfaces are no longer pink. Transfer to bowl with vegetables. Repeat with remaining oil and beef. Return beef and vegetables to skillet over medium-high heat.
- In small bowl, combine rice vinegar, sugar, sambal oelek, salt and ginger. Add mixture to pan. Cook 2 minutes, or until sauce is slightly thickened.
Glass Jar Layered Taco Salad
Prep time: 10 minutes

- 1/2 avocado
- 1/4 teaspoon serrano pepper
- 1 tablespoon cilantro
- 2 tablespoons NAKANO Organic Seasoned Rice Vinegar

- 1 1/3 pounds lean New Zealand grass-fed ground beef
- 1 clove garlic, crushed
- 1 medium onion, grated or finely chopped

- 3/4 cup red kidney beans, rinsed and drained
- 2 tablespoons tomato paste
- 3 teaspoons dried oregano, chopped
- 2 teaspoons mild smoked paprika
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 cup Parmesan cheese, grated
- salt, to taste
- pepper, to taste
- olive oil
Jalapeno Salsa:
- 1 cup cucumber, thinly sliced into long ribbons
- 3/4 cup fresh cilantro leaves, chopped
- 1 red onion, finely sliced
- 1/2 cup pickled jalapenos, finely chopped
- salt, to taste
- pepper, to taste
- olive oil
- lime juice
Avocado Cream:
- 1 avocado, mashed
- 1/2 cup sour cream
- 1 lime, juice and zest only
- salt, to taste
- pepper, to taste
- 8-12 slider buns, halved
- 2-3 cobs sweet corn, cooked and sliced into shards
- 8-12 small bamboo skewers
- To make patties: In bowl, combine beef, garlic, onion, egg, kidney beans, tomato paste, oregano, paprika, cumin, coriander, Parmesan cheese, salt, to taste, and pepper, to taste. Shape into 8-12 small patties. Cover and refrigerate 15 minutes.
- Heat grill or frying pan to medium heat.
- Brush patties with oil on both sides. Cook 2-3 minutes on each side, turning once to brown both sides evenly, until cooked through.
- To make Jalapeno Salsa: In bowl, combine cucumber, cilantro, onion and jalapenos; season with salt and pepper, to taste. Drizzle with olive oil and lime juice.
- To make Avocado Cream: In bowl, combine avocado, sour cream, lime juice and lime zest; season with salt and pepper, to taste.
- Spread Avocado Cream on bottom buns and place patties on top. Top patties with Jalapeno Salsa, corn and top buns. Press down gently and poke in skewers to secure sliders.

Strawberry Cream Cheese Tartlets

- 1/2 cup water
- 2 tablespoons lemon juice
- 3 tablespoons lemon zest
- 2 tablespoons gelatin
- 4 cups Well•Pict Strawberries, sliced, divided
- 1/3 cup honey
- 2 packages (8 ounces each) cream cheese
- 1/2 cup sour cream
- 1 cup ice cubes
- 2 cups graham cracker crumbs
- 1/2 cup melted butter

(Family Features) As families spend more time at home, Americans are finding comfort in a surprising source: bread. In fact, a 20-year trend of declining grain food consumption has been reversed.
A national study by the Grain Food Foundation suggests that the turnaround is more than a one-time sales blip due to pantry loading. In reality, consumers count bread among their top comfort foods. The study revealed one-third of Americans named pasta and bread as foods that are comforting during a stressful time.
In addition to the comforting flavor, this trend provides valuable nutritional benefits. As a part of many healthy eating plans, bread and pasta are nutritionist approved and provide nutrients needed for healthy aging such as B vitamins, magnesium, selenium, iron, folate and fiber.
“For years, we’ve been telling consumers that grain foods are the foods we love that love us back,” said Christine Cochran, executive director of the Grain Foods Foundation. “The stress has given us permission to enjoy bread and pasta again, but unlike most comfort foods, consumers recognize that grains have nutritional value.”
The highest-ranking comfort foods were ice cream; baked goods like cakes, cookies and pastries; salty snacks; candy; and fast food. However, when asked to identify comfort foods with nutritional advantages, consumers identified bread and pasta as the top two.
Beyond identifying comfort foods and their nutritional value, consumers also expressed worry that bread is in short supply right now.
“We can all rest assured that there is enough supply of grain food products in this country,” Cochran said. “Shoppers may be experiencing some sporadic unavailability of certain high-demand items. However, manufacturers are working closely with retailers to make sure that out-of-stocks are short lived. Consumers will be able to buy their favorite grain-food products and eat them, too.”

Avocado Veggie Sandwich

- 1/2 ripe avocado, peeled
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon salt
- 4 slices bread
- 4 slices tomato
- 8 slices cucumber
- 12 slices sweet bell pepper
- 2 tablespoons red wine vinegar
- 2 lettuce leaves
- In small bowl, combine avocado, lemon juice and salt. Spread mixture evenly over two bread slices.
- Place tomatoes, cucumber and peppers on covered surface. Drizzle with vinegar.
- Layer lettuce, tomato, cucumbers and peppers evenly between slices of bread, creating two sandwiches.
Panzanella Bagel Salad

- 2 medium Roma tomatoes, seeded and diced
- 1 1/4 cups canned diced tomatoes, undrained
- 1/4 cup green bell pepper, diced
- 1/4 cup cucumber, peeled, seeded and diced
- 2 tablespoons red onion, diced
- 2 tablespoons Parmesan cheese, grated, plus additional (optional)
- 1 tablespoon balsamic vinegar
- 2 tablespoons fresh basil, chopped
- 2 bagels (4 ounces each) cut into 2-inch pieces, toasted
- assorted greens (optional)
In medium bowl, mix tomatoes, canned tomatoes with juice, green pepper, cucumber, onion, cheese, vinegar and basil.
Add toasted bagel pieces; toss gently. Marinate, covered, in refrigerator 1 hour. Serve within 1 hour after marinating. Sprinkle with additional cheese and serve on bed of assorted greens, if desired.
Rotini with Sausage and Mushrooms

- 1 box (13 1/4 ounces) whole-grain rotini
- 1 tablespoon olive or vegetable oil
- 1 pound chicken sausage, sliced
- 1 cup leeks, thinly sliced
- 1 cup green onions, thinly sliced
- 2 cups mushrooms, sliced
- 1 cup chicken stock
- 1/4 cup parsley chopped
- 6 leaves from tarragon sprigs, chopped
- 1 cup Romano cheese grated
- Parmesan-Romano cheese (optional)
- Prepare rotini according to package directions. Drain and transfer to large bowl.
- In large skillet, heat oil over medium heat. Cook sausage 2-3 minutes, or until well browned. Add leeks, onions and mushrooms; cook until tender. Add chicken stock and simmer 3-5 minutes, or until hot. Fold sausage mixture into warm pasta. Add parsley, tarragon and Romano cheese; toss again. Top with Parmesan-Romano cheese, if desired.
Cheesy Black Bean Toast with Pico de Gallo

- 6 Roma tomatoes, diced
- 1⁄2 medium onion, finely chopped

- 1⁄8 teaspoon oregano, finely crushed
- 1⁄8 teaspoon salt (optional)
- 1⁄8 teaspoon pepper
- 1⁄2 Hass avocado, diced
- 4 bolillos (6 inches) or large Kaiser rolls, sliced in half lengthwise
- 1 can (16 ounces) seasoned low-fat refried black beans
- 2 cups shredded Chihuahua or mozzarella cheese
- Heat oven to 350 F.
- In medium mixing bowl, combine tomatoes; onion; garlic; peppers; cilantro; lime juice; oregano; salt, if desired; pepper; and avocado; set aside.
- On medium platter, split rolls. With medium spatula, spread refried beans onto each bread half; sprinkle cheese among bread.
- Bake 5-8 minutes, or until cheese is melted and hot.

- 1 ounce fresh lime juice

- 1 teaspoon lime zest (optional)
- 20 ounces boneless, cooked chicken breast
- 20 ounces broccoli flower clusters
- In bowl, mix coconut milk, basil, xylitol, cilantro, lime juice, salt and garlic. For more citrus flavor, add lime zest, if desired.
- Add chicken, broccoli and sauce to 1-gallon zip-top freezer bag. Squeeze out any air and seal bag. Freeze bag flat up to 1 month.
- To cook: Thaw in refrigerator overnight. Heat oven to 350° F.

- 2 pounds beef arm chuck roast

- In medium saucepan over medium heat, bring cream to simmer. Whisk cream cheese and powdered mustard into simmering cream until smooth. Add 1 cup cheddar cheese, garlic, remaining salt, white pepper and pepper sauce, whisking until cheese melts; about 1-2 minutes. Remove from heat and stir in cauliflower.
- Pour into baking dish and top with remaining cheese. Bake 15 minutes until browned and bubbly.

- 1 cup sour cream
- 6 tablespoons cilantro, chopped
- 2 tablespoons lime juice
- 8 yellow corn tortillas
- 2 cups Mexican Mushroom-Beef Blend
- diced avocado (optional)
- shredded lettuce (optional)
- shredded cheese (optional)
- salsa (optional)
- In small bowl, mix sour cream, cilantro and lime juice. Cover and refrigerate.
- Warm tortillas in microwave or on stovetop according to package directions. Spoon 1/4 cup Mexican Mushroom-Beef Blend into each tortilla. Top with sour cream mixture and avocado, lettuce and cheese as desired.
Mexican Mushroom-Beef Blend
Makes: 8 cups
- 1 medium yellow onion
- 8 ounces fresh button or crimini mushrooms
- 1 pound lean ground beef
- 1 tablespoon olive oil
- 2 cans (15 ounces each) black beans, drained
- 1 package (1 ounce) reduced-sodium taco seasoning mix
- 1 can (15 ounces) crushed tomatoes
- 1 can (11 ounces) yellow kernel corn, drained
- In food processor, pulse onion and mushrooms to coarse texture. Set aside.
- In large frying pan, brown ground beef. Drain fat. Set aside.
- In same frying pan, heat oil. Add mushroom mixture and saute 3-4 minutes, or until most moisture has been released. Add black beans and mix.
- Add beef, taco seasoning, tomatoes and corn to black bean and mushroom blend. Mix and cook until heated through.
Mexican Lasagna
Servings: 6-8
- Nonstick cooking spray
- 16 yellow corn tortillas
- 6 cups Mexican Mushroom-Beef Blend
- 1 cup shredded, low-fat Mexican cheese blend
- sour cream (optional)
- chopped cilantro (optional)
- salsa (optional)
- Heat oven to 350° F. Spray bottom of 9-by-13-inch baking dish with nonstick cooking spray. Place four corn tortillas on bottom of dish and layer 2 cups Mexican Mushroom-Beef Blend on top. Repeat layers, ending with tortillas as top layer. Top with cheese.
- Bake uncovered 25 minutes, or until cheese melts and lasagna is heated through. Top with dollops of sour cream, cilantro and salsa as desired.

- 1 1/2 cups panko breadcrumbs, divided
- 1 pound skinless, boneless salmon filets, chopped
- 4 ounces whole green chiles, drained and chopped
- 2 scallions, thinly sliced
- 1/2 cup vegetable oil
- In medium bowl, whisk mayonnaise, sour cream, lime zest, lime juice and cilantro.
- In large bowl, combine salt, pepper, 3/4 cup breadcrumbs, salmon, chiles, scallions and 3 tablespoons mayonnaise mixture. Form salmon mixture into four patties. Cover patties with remaining breadcrumbs.
- In skillet, heat oil. Add breaded patties and cook until golden brown, about 3 minutes on each side.
- Serve with remaining mayonnaise mixture.

Cherry Sauce

- 3/4 cup water
- 3/4 cup maple syrup
- 4 cups fresh Northwest-grown sweet cherries
- 4 cups dried cranberries
- 4 peels (2 inches each) fresh ginger (optional)
- 3 tablespoons citrus zest (optional)
- black pepper (optional)
- fresh herbs (optional)
- raspberries (optional)
- In medium saucepot, add water, syrup and sweet cherries. Bring to simmer, stirring occasionally and more frequently as sauce begins to form.
- Add cranberries; continue stirring. Once reduced, remove from heat and add fresh ginger, citrus zest, black pepper, fresh herbs and raspberries, if desired.
- Cool 30 minutes-1 hour before transferring to wider, shallow pan for speed cooling.
- Once cooled, store refrigerated in airtight container up to 2 weeks.
Cherry Bruschetta
Servings: 6
- 18 slices (1/2-inch thick) small baguette-style bread
- 1 tablespoon olive oil, divided
- 1 1/2 cups pitted Northwest fresh sweet cherries, coarsely chopped
- 1/4 cup chopped cilantro
- 1/4 cup diced yellow sweet pepper
- 2 tablespoons finely chopped green onions
- 2 tablespoons lime juice
- 1 teaspoon grated lime peel
- 1/2 teaspoon garlic salt
- 1/4 teaspoon ground black pepper
- 2 ounces fresh mozzarella cheese
- 1 tablespoon thinly sliced fresh basil
- Heat oven to 350° F.
- Arrange baguette slices on cookie sheet and toast one side 5 minutes. Turn slices, brush with 1/2 tablespoon olive oil and bake 5 minutes.
- Combine cherries, cilantro, sweet pepper, green onions, lime juice, lime peel, garlic salt, pepper and remaining olive oil; mix well.
- Top each baguette with thin slice cheese, 1 tablespoon cherry mixture and sprinkle of basil. Serve warm or cold.

- North America: Maple Bourbon Butter - Combine one stick butter, 4 teaspoons bourbon, 2 teaspoons maple syrup and pinch of salt.
- South America: Lime-Avocado Crema - In a blender, combine one avocado, 1/4 cup lime juice, one garlic clove, 1/2 bunch cilantro, 1/2 cup sour cream and pinch of salt. Blend until smooth. Add water if necessary.

Mexican Style Corn
Serves: 4
- 4 ears fresh Sunshine Sweet Corn, husked
- 1/4 cup mayonnaise
- 4 ounces Cotija or feta cheese
- 1 teaspoon chili powder
- 4 lime slices
- Preheat grill or broiler. Grill or broil corn, turning occasionally until hot and some kernels turn golden brown, about 5 minutes. Using knife, coat each ear of corn with about 1 tablespoon of mayonnaise. Crumble cheese on one side of each corn ear.
- Sprinkle with chili powder, dividing evenly. Broil until cheese starts to melt, approximately 1 to 2 minutes. Serve with lime.
Charred Corn Tacos with Radish Zucchini Slaw
Serves: 4
- 4 ears Sunshine Sweet Corn
- Extra virgin olive oil, as needed
- Salt and freshly ground pepper, as needed
- 1/2 cup torn cilantro, parsley and mint leaves
- 1/2 small red onion, thinly sliced
- 2 1/2 tablespoons fresh lime juice
- 1 teaspoon maple syrup
- 1 cup radishes, cut into matchsticks
- 1 small zucchini, cut into matchsticks
- 1 jalapeno, seeded and thinly sliced
- 1/2 cup (2 1/2 ounces) crumbled Cotija or feta cheese
- 10 to 12 small (6-inch) soft corn tortillas
- Brush corn with olive oil and season with salt and pepper. Over hot grill or open gas stove flame, char ears of corn until well blackened but not completely burnt. Remove from heat; cool. With large knife, shave off kernels into bowl. Add cilantro, parsley and mint; reserve.
- In small bowl, combine onion and lime juice; let stand 10 minutes. Stir in maple syrup, radishes, zucchini, jalapeno and 2 tablespoons of oil. Season with salt and pepper; set aside.
- Heat your tortillas one of two ways: Wrap whole stack in foil and place in warm 250°F oven for 15 minutes, or coat cast-iron skillet with thin layer of oil and heat over high heat; warm each tortilla 30 seconds to 1 minute each side, until lightly blistered.
- To make tacos, fill each tortilla with 1/4 cup corn. Top with cheese and radish-zucchini slaw. Serve with lime wedges, if desired.
Fire Roasted Corn and Chorizo Dip
Serves: 8 to 12
- 3 to 4 ears Sunshine Sweet Corn
- 1 small onion, peeled and sliced into rings
- 1 small red bell pepper
- 1 cup cooked chorizo
- 3 cloves garlic, minced
- 1(8-ounce) package cream cheese, softened
- 1/2 pound spicy pepper cheese, like pepper-jack or habanero cheddar
- 1/4 cup chopped green onions
- Preheat oven to 400°F and preheat grill to high heat.
- Remove cornhusks and corn silk, and place fresh Florida Sweet Corn, onion slices and red bell pepper on grill.
- Grill corn and bell pepper for 8 to 10 minutes, turning every 2 minutes until all sides are slightly charred.
- Grill onion slices for approximately 3 minutes per side. When veggies are cool enough to handle, cut corn off cob. Then chop onions and pepper, removing pepper seeds. In 8-by-8-inch baking dish or one-quart souffle dish, mix all ingredients together until well combined.
- Bake for 10 to 15 minutes until edges are bubbly. Serve warm with tortilla chips.

Sweet N Salty Popcorn Pretzel Sticks
Yield: 6 sticks
- 6 tablespoons peanut butter
- 6 large pretzel rods
- 3 cups popped popcorn
- Sugar sprinkles
- 3/4 cup mini chocolate chips (optional)
- Spread 1 tablespoon of peanut butter over each pretzel, leaving a two-inch "handle" without peanut butter.
- Press and roll popcorn onto peanut butter to coat. Sprinkle with sugar sprinkles.
- For optional chocolate drizzle, place chocolate chips in small sealable plastic bag and seal. Microwave 30 seconds or until chocolate is melted. Clip small corner from bag and squeeze to drizzle chocolate over popcorn.
- Sprinkle with additional sugar sprinkles. Allow chocolate to harden before serving.
Chili Lime Popcorn Snack Mix
Yield: 1 quart
- 1 quart popped popcorn
- 1 teaspoon brewer's yeast powder
- 1 teaspoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- Preheat oven to 300°F.
- Spread popcorn on baking sheet. Sprinkle yeast powder, lime juice, chili powder and salt over popcorn.
- Heat about seven minutes and toss just before serving. Serve warm.
Blueberry & Pomegranate Power Bars
Yield: 12 bars
- 8 cups popped popcorn
- 1 1/2 cups old-fashioned rolled oats
- 1 cup dried blueberries
- 1/2 cup pomegranate seeds
- 1/2 cup toasted and coarsely chopped whole natural almonds
- 2/3 cup honey
- 2/3 cup light brown sugar
- 2 tablespoons butter or margarine
- 6 ounces melted bittersweet chocolate
- Line 13-by-9-inch pan with foil; spray with cooking spray.
- Combine popcorn, oats, blueberries, pomegranate seeds and almonds in large bowl.
- Combine honey, brown sugar and butter in small saucepan. Cook over low heat to boiling; boil two minutes. Pour over popcorn mixture and mix thoroughly.
- Using damp hands, press mixture firmly into prepared pan. Refrigerate until firm, about two hours. Cut into 12 bars.
- Dip bottoms of bars into melted chocolate. Place on wax paper-lined pan. Store in tight covered container in refrigerator until ready to serve.
Popcorn Trail Mix
Yield: 5 cups
- 1 quart popped popcorn (air popped)
- 6 ounces diced, dried fruit (apricots, apples, etc.)
- 8 ounces raisins
- Place freshly popped popcorn in large bowl. Add diced fruit and raisins. Toss popcorn and fruit until combined thoroughly.
Note: Add whatever fixings your family enjoys: dried fruits, seeds, nuts, etc.
Popcorn S'mores
Yield: 20 pieces
- 1 cup firmly packed light brown sugar
- 1/2 cup (1 stick) butter or margarine
- 1/2 cup corn syrup
- 1/2 teaspoon baking soda
- 10 cups freshly popped popcorn
- 1 package (10 1/2 ounces) miniature marshmallows
- 2 cups mini graham cookies (teddy bears)
- 1 cup chocolate chips
- Combine brown sugar, butter and corn syrup in medium saucepan. Cook over high heat for five minutes; remove from heat and stir in baking soda.
- Combine popcorn and marshmallows in large bowl. Pour sugar mixture over popcorn to coat.
- Gently stir in graham cookies and chocolate chips.
- Spread mixture evenly into greased 15-by-10-inch pan. Let cool completely, then break into pieces. Store in airtight container.
