- bamboo skewers
- In small bowl, whisk honey, soy sauce, olive oil and lime juice until completely blended. Pour mixture into re-sealable freezer bag and add chicken strips. Seal bag and gently shake to cover chicken strips. Allow to marinate 2 hours.
- Heat grill to medium-high heat.
- Soak bamboo skewers in water 15 minutes. Remove chicken strips from marinade and skewer onto bamboo sticks. Grill 8 minutes, or until juices are clear and chicken is fully cooked.

- 2 teaspoons freshly ground coffee
- 1/2 tablespoon Truvia Brown Sugar Blend
- 2 teaspoons freshly ground black pepper
- 1 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- 1/4 teaspoon sea salt
- 1 London broil (1 1/2 pounds, preferably grass fed)
- 1 teaspoon extra-virgin olive oil
- Heat grill to high.
- In small bowl, add coffee, brown sugar blend, black pepper, coriander, oregano and salt; mix well.
- Place London broil on cutting board or large plate. Drizzle 1/2 teaspoon of olive oil on each side of meat then rub all over. Sprinkle seasoning mixture over roast and rub in to evenly cover meat.
- Grill London broil to desired doneness, about 3-5 minutes per side for medium rare. Tent meat with foil for 5 minutes then slice into thin slices, cutting at an angle against the grain.

- 2 racks (about 4 pounds) baby back ribs
- garlic salt
- ground black pepper
- 1/2 cup water
- 1 tablespoon vegetable oil
- 1/4 cup finely chopped red onion
- 1 teaspoon finely chopped garlic
- 1 teaspoon grated fresh ginger
- 3/4 cup sweet chili sauce
- 1/2 cup Apple Nestlé Juicy Juice 100% Juice
- 1 tablespoon rice wine (mirin)
- Heat oven to 300° F. Using knife, remove membrane from bone side of ribs. Pat ribs dry with paper towel; season both sides liberally with garlic salt and pepper. Place ribs in large roasting pan, overlapping as needed. Add water to pan. Cover tightly with aluminum foil.
- Bake about 3 hours, or until meat is tender but not quite falling off bones.
- In small saucepan over medium-high heat, heat oil. Add onion; cook, stirring occasionally, 2-3 minutes, or until soft. Stir in garlic and ginger; cook 1 minute. Stir in sweet chili sauce, apple juice and rice wine. Reduce heat to low; cook 8 minutes, or until sauce is reduced to about 1 cup.
- Heat grill to medium heat.
- Brush glaze over tops of ribs. Grill 4-5 minutes, or until sauce caramelizes. Serve with remaining glaze.

Asparagus Crust:
- 2 cups cut-up fresh or frozen Michigan asparagus, blanched
- 1 egg
- 2/3 cup grated Parmesan cheese
- 2/3 cup shredded mozzarella cheese
- 1 tablespoon lemon pepper seasoning
White Sauce:
- 2 tablespoons butter
- 1/4 cup chopped leeks
- 1 clove garlic, minced
- 1 tablespoon flour
- 3/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1 cup cubed rotisserie chicken
- 1 cup shredded mozzarella cheese
- 1/2 cup frozen green peas, thawed
- 1/2 cup cut-up fresh or frozen Michigan asparagus, blanched and seasoned with avocado oil and lemon pepper seasoning
- 1/4 cup chopped prosciutto
- fresh chives, for garnish
- fresh basil, for garnish
- Heat oven to 375° F.
- To make Asparagus Crust: In food processor, puree blanched asparagus until smooth. In large bowl, mix asparagus puree, egg, Parmesan, mozzarella and lemon pepper seasoning until thoroughly combined.
- Press asparagus mixture into circular shape on parchment paper-lined pizza stone or baking sheet. Place layer of paper towel over crust and gently press down to remove excess moisture. Repeat until paper towel is no longer absorbing moisture. Discard wet paper towels.
- Bake 12-13 minutes.
- To make White Sauce: In saucepan over medium heat, cook butter, leeks and garlic 3-4 minutes. Slowly whisk in flour and cook 1-2 minutes. Slowly add in milk, continue whisking and cook until thickened. Add Parmesan then remove from heat and set aside.
- Pour white sauce over partially baked asparagus crust and top with chicken and mozzarella. Add peas, asparagus and prosciutto. Bake 5-8 minutes, or until cheese is thoroughly melted. Garnish with fresh chives or basil.

- 1 large sweet potato
- 1 can low-sodium black beans, drained and rinsed

- Use fork to prick sweet potato. Microwave 5 minutes on high. Let cool slightly.
- Cut potato in half lengthwise and scoop flesh into large bowl. Mash until smooth.

- 4 cups peeled, sliced Gala apples
- 1/4 cup maple syrup
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- 12 frozen empanada shells, thawed
- 1 large egg white, beaten
- Heat skillet over low heat. Add apples, syrup, cornstarch and cinnamon. Cook 10 minutes, stirring frequently, or until apples are tender.
- Line center of each empanada shell with apples; fold and use fork to press edges together and seal. Brush with egg wash.
- Heat oven to 375° F.
- Place sealed empanadas on parchment-lined baking sheet. Bake 25-30 minutes, or until golden brown.
Tip: To make in air fryer: Heat air fryer to 375° F. Spray air fryer basket with nonstick cooking spray. Add sealed empanadas and cook 8 minutes, or until golden brown.
Chicken Cauliflower Fried Rice

Nashville-Style Sauce:
- 6 tablespoons Tabasco Sauce
- 8 tablespoons butter, softened
- 1 tablespoon light brown sugar
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- Heat oven to 425° F.
- In bowl, combine baking powder, salt, paprika and black pepper. Shake over both sides of wings.
- Place seasoned wings on rack over foil-lined sheet pan.
- Bake 20 minutes, turn wings over and continue cooking additional 20 minutes in convection oven or 30 minutes in conventional oven. Cooked wings should reach at least 180° F internal temperature with crispy texture.

- Heat casserole over medium heat. Add bacon and cook until browned and crisp, about 7-8 minutes. Using slotted spoon, transfer bacon to paper towel-covered plate.
- Reduce bacon fat in casserole to 2 tablespoons and return to stove over medium-high heat. Add sweet potatoes, onions and jalapeno pepper; cook, stirring occasionally, until onion is slightly softened, about 5 minutes.
- Add garlic and cook 1 minute. Stir in chili powder, cumin, oregano and ground chipotle; cook until fragrant, 15 seconds.
- Pour in broth, tomatoes, beans and barley; reduce heat to medium-low, cover and simmer until sweet potatoes are tender and barley is cooked through, about 20 minutes. Remove from heat and stir in bacon and salt; let stand 15 minutes before serving.

- 1 1/2 cups all-purpose flour
- 1 1/4 cups yellow cornmeal
- 3 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 cup canned pumpkin puree
- 2 large eggs, at room temperature
- 5 tablespoons unsalted butter, melted
- 4 tablespoons honey
- 1/3 cup buttermilk
- 1 tablespoon grated orange zest
- Heat oven to 400° F. Lightly butter baking pan.
- In bowl, combine flour, cornmeal, sugar, baking powder, baking soda and salt.
- In separate bowl, whisk pumpkin puree, eggs, butter, honey, buttermilk and orange zest. Stir flour mixture into pumpkin mixture until moistened; transfer to prepared baking pan.
- Bake until cornbread pulls away from sides of pan and toothpick inserted into center comes out clean, 20-22 minutes. Cool in pan 5 minutes. Remove from pan and cool on wire rack at least 10 minutes before cutting.

- In saucepan, bring chicken stock to boil.
- In essentials pan, saute onions, carrots and broccoli with butter. Add olive oil as needed if pan looks dry. Cook until onions are translucent and carrots are beginning to soften.
- Add chopped chicken, bay leaves, oregano, basil, thyme, garlic, salt, pepper and hot chicken stock to skillet. Simmer 20-30 minutes until vegetables are softened. Adjust seasoning, as necessary.
- Whisk cornstarch into half-and-half until smooth. Whisk into soup and simmer 5 minutes, until slightly thickened.
- To make Dumplings: In medium bowl, mix flour, baking powder, salt and half-and-half. Swirl soup with wooden spoon and add heaping tablespoons into center of soup at strong simmer. Continue adding until all dumpling batter is used. Cover with lid and cook on high 2-3 minutes.
- Serve topped with grated Parmesan and fresh cracked pepper.

Pasta and Chicken in Garlic Cream Sauce

- 4 slices bacon, cut crosswise into 1/2-inch-wide pieces
- 3/4 pound boneless, skinless chicken breasts, cut into 3/4-inch pieces
- 10 ounces (about 4 cups) farfalle (bow tie) pasta
- 2 1/2 cups reduced-sodium chicken broth
- 4 cloves garlic, minced
- 1 1/2 teaspoons dried Italian seasoning
- 1/2 teaspoon coarsely ground black pepper
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cups baby spinach leaves
- 1 cup halved cherry tomatoes, for garnish
- Place removable pan inside programmable pressure cooker. Using saute function, cook bacon, uncovered, until crisp. Use slotted spoon to remove bacon from pan. Drain bacon on paper towels. Leave 1 tablespoon drippings in pan; discard remaining.
- Add chicken to bacon drippings in pan in two batches. Using saute function, stir-fry chicken 2-3 minutes, or until cooked through. Use slotted spoon to remove chicken from pan. Repeat until all chicken is cooked. Press cancel.
- Stir pasta, broth, garlic, Italian seasoning and pepper into drippings in pan. Secure lid and set pressure release to sealing function. Select high pressure setting and cook 5 minutes. Press cancel.
- Allow pressure to release naturally 5 minutes. Move pressure release to venting function to release any remaining steam. Remove lid.
- Stir cream into pasta mixture. Using saute function, cook and stir, uncovered, until boiling. Boil, uncovered, about 4 minutes, or until sauce generously coats pasta, stirring frequently. Press cancel. Stir in chicken and Parmesan cheese.
- Place spinach and bacon in large bowl. Pour pasta mixture over top. Toss until combined. Ladle into serving bowls. Top each serving with tomatoes.

- 1 pound lean ground turkey
- 1 cup chopped onion
- 1 can (15 1/2 ounces) kidney beans, rinsed and drained
- 1 can (15 ounces) no-salt- added tomato sauce
- 1 can (14 1/2 ounces) diced tomatoes with green chili peppers
- 1 2/3 cups reduced-sodium chicken broth
- 1 tablespoon chili powder
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 8 ounces (about 1 3/4 cups) elbow macaroni
- 1/2 cup 2 percent or whole milk
- 2 tablespoons all-purpose flour
- 2 cups (8 ounces) shredded Mexican blend cheese
- 3/4 cup plain fat-free Greek yogurt or sour cream
- Place oil in removable pan of programmable pressure cooker. Place pan in pressure cooker. Using saute function, heat oil until hot. Add turkey and onion. Cook, uncovered, about 5 minutes, or until turkey is no longer pink, stirring to break up. Press cancel.
- Stir in beans, tomato sauce, diced tomatoes, broth, chili powder, garlic salt and pepper. Stir in macaroni. Secure lid and set pressure release to sealing function. Select high pressure setting and cook 5 minutes.
- Allow pressure to release naturally 2 minutes. Move pressure release to venting function to release any remaining steam. Remove lid.
- Stir macaroni mixture. Whisk together milk and flour. Stir into macaroni mixture. Using saute function, cook and stir, uncovered, 1-2 minutes, or until boiling. Press cancel.
- Stir cheese into macaroni mixture until melted. Ladle into serving bowls. Spoon dollops of yogurt or sour cream on top.
Chicken and Wild Rice Soup

- 1 cup shredded carrots
- 1/2 cup finely chopped onion
- 1/2 cup sliced celery
- 2 cloves garlic, minced
- 2 tablespoons butter or clarified butter
- 4 cups chicken broth
- 4 ounces (about 2/3 cup) wild rice, rinsed and drained
- 1 teaspoon dried thyme leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 12 ounces skinless, boneless chicken breast halves, cut into 3/4-inch pieces
- 1 cup plain low-fat Greek yogurt
- 2 tablespoons flour
- 1/2 cup whipping cream
- In Dutch oven, cook carrots, onion, celery and garlic in hot butter about 2 minutes, or until tender, stirring occasionally.
- Stir broth, wild rice, thyme, salt and pepper into vegetable mixture. Bring to boil. Reduce heat. Simmer, covered, 40 minutes. Stir in chicken pieces. Return to simmer, covered, 10-15 minutes, or until rice is tender and chicken is done.
- In small bowl, whisk together yogurt and flour. Gradually whisk in cream. Stir into chicken mixture. Cook and stir over medium heat until boiling. Boil 1 minute. Ladle into bowls.
