Peanut Dressing:
- 1 cup creamy peanut butter
- 3/4 cup full-fat coconut milk, plus additional, if desired
- lime juice
Bowl:
- 1 cup cooked farro or quinoa
- 1/2 cup chopped cabbage
- 1 cup shredded carrots
- 1 avocado, sliced
- 1 cup spiralized zucchini or butternut squash
- 1/2 cup pomegranate arils
- 1 cup mandarin pieces
- 1/2 cup roasted peanuts
- chopped cilantro, for garnish
- green onions, for garnish
- To make Peanut Dressing: In bowl, whisk peanut butter, coconut milk and lime juice until smooth. Add coconut milk, if necessary, to achieve desired consistency.
- To make bowl: Layer farro or quinoa then top with cabbage, carrots, avocado, zucchini or squash, pomegranate arils, mandarin pieces, peanuts and Peanut Dressing. Garnish with cilantro and green onions.
Thai Chicken Lettuce Wraps with Peanut Sauce

Peanut Sauce:
- 1/2 cup creamy peanut butter
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 2 tablespoons brown sugar
- 3 teaspoons chili garlic sauce
- 1/2 lime, juice only
- 2-3 garlic cloves, pressed or grated
- 2 tablespoons fresh ginger
- 1 teaspoon fish sauce
- 1/2 cup full-fat coconut milk
- 4 tablespoons warm water, plus additional, if necessary
Lettuce Wraps:
- 2 heads Boston or butter lettuce
- 1 pound cooked chicken
- 1 red bell pepper, thinly sliced
- 4 green onion, sliced
- 3 carrots, shredded and grated
- 1/2 cucumber, sliced into matchsticks
- 1 bunch fresh basil
- 1 bunch fresh mint
- 1/4 cup crushed peanuts
- sliced limes, for garnish
- To make Peanut Sauce: In small saucepan over low heat, combine peanut butter, soy sauce, rice vinegar, brown sugar, garlic sauce, lime juice, garlic, ginger, fish sauce, milk and water. Add more water for thinner sauce, if desired.
- To make Lettuce Wraps: Fill lettuce leaves with chicken and Peanut Sauce; top with bell pepper, onion, carrots, cucumber, basil and mint. Sprinkle crushed peanuts on top and garnish with lime slices.
Peanut Butter Breakfast Bread Pudding with Maple Peanut Sauce

- Butter
- 2/3 cup creamy peanut butter, divided
- 2 eggs
- 1/2 cup granulated sugar
- 2/3 cup milk
- 1 1/2 teaspoons pure vanilla extract
- 1/2 teaspoon salt
- 4 cups cubed brioche or challah bread, cut into 3/4-inch cubes
- 2/3 cup pure maple syrup
- 1/3 cup crushed peanuts
- powdered sugar, for garnish
- Heat oven to 350° F. Butter four 4-ounce ramekins.
- In bowl, mix 1/3 cup peanut butter, eggs, sugar, milk, vanilla and salt. Toss bread cubes in mixture until thoroughly coated. Divide evenly among prepared dishes. Bake until custard is set in middle and tops are golden, about 35-40 minutes. If tops of bread brown too quickly, cover ramekins loosely with aluminum foil.
- In small saucepan over low heat, combine remaining peanut butter and maple syrup until thoroughly warmed.
- To serve, drizzle ramekins with maple-peanut sauce and garnish with chopped peanuts and powdered sugar.
- Substitution: Whole wheat rolls may be used in place of brioche or challah bread.
Peanut Butter Squares

- Nonstick cooking spray
- 1 package (17 1/2 ounces) peanut butter cookie mix
- 3 tablespoons vegetable oil
- 1 tablespoon water
- 1 egg
- 3 cups miniature marshmallows
- 2/3 cup light corn syrup
- 2 tablespoons butter
- 2 teaspoons vanilla
- 1 bag (10 ounces) peanut butter chips
- 2 cups crispy rice cereal
- 2 cups salted roasted peanuts
- Heat oven to 350° F. Spray 13-by-9-inch pan with nonstick cooking spray.
- In large bowl, stir cookie mix, oil, water and egg until soft dough forms. Press dough into prepared pan.
- Bake 15-20 minutes, or until set.
- Sprinkle marshmallows over crust. Bake 1-2 minutes until marshmallows begin to puff. Remove from oven.
- In 4-quart saucepan over low heat, heat corn syrup, butter, vanilla and peanut butter chips, stirring constantly until chips are melted and smooth. Remove from heat.
- Stir in cereal and peanuts; spoon mixture evenly over marshmallow layer.
- Refrigerate 30 minutes, or until firm. Cut into bars and serve.

- 2 thinly sliced tomatoes

- Bake chicken tenders according to package instructions.
- Spread mayonnaise evenly on insides of pita bread pocket.
- Layer lettuce then tomatoes and place chicken tenders evenly across pita bread pocket. Season with salt and pepper, to taste.
- Serve immediately.
Sloppy Joe Smart Pockets
Servings: 4
- 1 pound ground beef
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped carrot
- 1 clove minced garlic
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup tomato paste
- 2 tablespoons brown sugar
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon yellow mustard
- 1 cup water
- 4 Toufayan Smart Pockets, any variety
- In large skillet over medium heat, brown ground beef, celery, onion, carrot, garlic, salt and pepper, breaking up beef until browned and no longer pink, approximately 6-8 minutes.

- 1/2 cup water
- 2 cloves garlic, minced

- 1 teaspoon dried basil leaves
- 1 cup shredded low-moisture part-skim mozzarella cheese
- Heat oven to 400° F. Place tomatoes in medium bowl. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.
- Place chicken in 13-by-9-inch baking dish; sprinkle with the basil and cheese. Top with stuffing mixture.
- Bake 30 minutes, or until chicken is cooked through.

- 2 large boneless, skinless chicken breast halves (about 1 pound)
- 1/2 teaspoon salt, plus additional, to taste, divided
- 1/2 teaspoon pepper, plus additional, to taste, divided
- 4 1/2 tablespoons stone ground mustard, divided
- 1 1/2 tablespoons, plus 1/3 cup, orange marmalade, divided
- 2 tablespoons minced fresh chives
- 1 large lemon, zest and juice (1/3 cup juice)
- 1/4 cup olive oil
- 1 bag (9 ounces) leafy romaine lettuce pieces
- 1/3 cup chopped almonds, toasted
- 1/3 cup crumbled blue, feta or goat cheese
- Heat oven to 375 F. Drain beets; set aside.
- Season both sides of chicken with salt and pepper, to taste. In small bowl, combine 1 1/2 tablespoons mustard and 1 1/2 tablespoons marmalade. Brush mixture over chicken until completely coated. Bake chicken on rimmed baking sheet lined with aluminum foil about 20-25 minutes, or until juices run clear; set aside.
- To make vinaigrette: In medium bowl, combine remaining mustard, remaining marmalade, chives, lemon zest and juice, 1/2 teaspoon salt and 1/2 teaspoon pepper. Slowly pour in oil while whisking vigorously until completely combined.
- Slice cooled chicken into 1-inch pieces. Onto each skewer, thread one beet, one piece of chicken and 4-5 pieces of lettuce; repeat two times for each skewer, adding one beet at ends. Repeat to make eight skewers. Place skewers on large serving platter.
- Stir vinaigrette; drizzle lightly over skewers. Sprinkle with almonds and cheese. Serve with remaining vinaigrette.
Middle Eastern-Inspired Bean Salad

- 1 can (15 ounces) READ 3 or 4 Bean Salad
- 1/2 cup cherry or grape tomatoes, halved
- 1 small cucumber (4-5 inches long) cut in half lengthwise then thinly sliced crosswise
- 2 green onions, thinly sliced
- 1/2 cup chopped fresh parsley
- 2 tablespoons chopped fresh mint
- 1 small clove garlic, minced

Dressing:
- 2 tablespoons prepared hummus
- 1 tablespoon fresh lemon juice
- 1/4-1/2 teaspoon za'atar seasoning blend
- Drain bean salad. Discard liquid. Place bean salad in large bowl.
- Add tomatoes, cucumber, onions, parsley, mint, garlic and red pepper flakes to bean salad. Toss to combine.
- To make dressing: In bowl, combine hummus, lemon juice and za'atar seasoning.
- Add dressing to salad just before serving; toss to combine well. Serve immediately or chilled.

- 3/4 cup green lentils, uncooked
- 2 1/2 cups water
- 2 tablespoons minced shallot
- 1 1/2 cups halved red California grapes
- 1/4 cup fresh chopped dill
- 1/4 cup chopped walnuts
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon white balsamic vinegar
- 1 tablespoon, plus 2 teaspoons, olive oil, divided
- 1 cup arugula
- 1/2 teaspoon sea salt, divided
- 1/4 teaspoon pepper, plus additional, to taste, divided
- 4 trout fillets (4-6 ounces each), skin on
- 1/2 teaspoon lemon zest
- In medium saucepan, combine lentils with water. Bring to boil then reduce heat to simmer; cover and cook 15 minutes. Turn off heat and allow lentils to steam 5 minutes; drain and let cool.
- In medium bowl, combine lentils, shallot, grapes, dill, walnuts, lemon juice, lemon zest, vinegar, 1 tablespoon olive oil, arugula, 1/4 teaspoon salt, and pepper, to taste; set aside.
- Heat oven to broil. Move rack to highest position.
- Sprinkle trout fillets with lemon zest, remaining salt and 1/4 teaspoon pepper; brush with remaining olive oil. Broil trout 4-5 minutes. Serve with lentil salad.

- 1 1/4 pounds English or Persian cucumbers, ends trimmed
- 1 teaspoon kosher salt
- 2 tablespoons rice vinegar

- 2 teaspoons granulated sugar
- 1-2 teaspoons chili oil
- 1 teaspoon toasted sesame oil
- 1 cup halved California grapes
- 2 scallions, thinly sliced
- 2 teaspoons toasted sesame seeds
- Using rolling pin, smash whole cucumbers lightly, just enough to break open. Tear or cut into 1 1/2-inch pieces and season with salt. Transfer to sieve and let drain 10 minutes.
- In large bowl, whisk vinegar, soy sauce, sugar, chili oil and sesame oil; stir in grapes and scallions. When cucumbers finish draining, add to bowl with grape mixture and stir to combine.
- Sprinkle with sesame seeds and serve.

- 1 1/2 cups buttermilk
- 1 tablespoon mustard powder
- 1 tablespoon Sriracha
- 2 teaspoons minced garlic
- 2 teaspoons paprika
- 4 chicken drumsticks, bone in, skin on
- 4 chicken thighs, bone in, skin on
- vegetable oil, for grill
- 1/4 cup chopped fresh parsley
- 1 lemon, cut into wedges (optional)
- In medium bowl, whisk buttermilk, mustard powder, Sriracha, garlic and paprika.
- Place chicken in large zip-top bag; pour buttermilk mixture over chicken. Seal bag and refrigerate 2 hours or overnight.
- Heat outdoor grill for direct grilling over medium heat. Remove chicken from marinade, shaking off excess; discard marinade. Lightly oil grill grates. Transfer chicken to grill and cook, turning occasionally, 16-18 minutes, or until internal temperature reaches 165° F.
- Transfer chicken to serving platter. Sprinkle with parsley and serve with lemon wedges, if desired.
Grilled Steak Salad with Chive Yogurt Dressing

Dressing:
- 1 cup plain yogurt
- 3 tablespoons freshly squeezed lime juice (3 small limes)
- 2 tablespoons milk
- 2 tablespoons chopped fresh chives
- 1 clove garlic, peeled and minced
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
Steak:
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon granulated garlic
- 20 ounces boneless petite sirloin steak
Salad:
- 3 cups baby spinach
- 3 cups chopped romaine lettuce hearts
- 1/2 cup sweet red pepper rings
- 1/2 cup sweet yellow pepper rings
- 1 cup avocado chunks
- 1/4 cup thinly shaved red onion
- To make dressing: In blender, combine yogurt, lime juice, milk, chives, garlic, salt and pepper. Blend on low until smooth consistency forms and chives are completely incorporated. Transfer dressing to jar with tight-fitting lid and refrigerate until serving.
- Heat grill to medium.
- To prepare steak: Combine kosher salt, black pepper and granulated garlic to create rub. Sprinkle half of seasoning mix over one side of steak, pressing it into meat. Repeat with remaining seasoning on opposite side of steak.
- Grill steak over direct medium heat to desired level of doneness, approximately 4-5 minutes per side for medium pink center. Remove steak from grill and let rest 7-10 minutes on cutting board.
- To make salad: Toss spinach and romaine on large platter. Scatter red and yellow peppers, avocado and onion over greens. Slice grilled sirloin thinly against grain. Arrange meat slices along center of salad.
- Drizzle dressing over salad just prior to serving.
Grilled Pizza with Arugula Pesto, Corn and Ham

Arugula Pesto:
- 2 cups fresh arugula, tightly packed
- 1 clove garlic
- 1 tablespoon lemon juice
- pinch red pepper flakes, (optional)
- 1/3 cup shredded Parmesan cheese
- 1/2 cup extra-virgin olive oil
- salt, to taste
- pepper, to taste
Grilled Pizza:
- 2 tablespoons flour, divided
- 1 pound pizza crust dough (at room temperature if using refrigerated dough)
- vegetable oil, for grill
- 1/2 cup Arugula Pesto
- 1/2 cup part-skim ricotta cheese
- 1/2 cup diced deli ham
- 1/2-3/4 cup fresh corn kernels (about 1 cob)
- 1/4 cup thinly sliced red onion
- 1/4 cup shredded Parmesan cheese
- Heat grill to medium heat (350-400° F).
- To make Arugula Pesto: In food processor, combine arugula, garlic, lemon juice, red pepper flakes and Parmesan. Pulse until combined then, with food processor on, drizzle in olive oil until pesto forms, scraping down sides as needed. Taste and season with salt and pepper, to taste.
- To make Grilled Pizza: Flour pizza dough lightly and stretch or roll to about 1/2-inch thickness (14-16-inch diameter).
- Sprinkle remaining flour on large rimless baking sheet, pizza peel or pizza stone. Transfer dough to baking surface.
- Clean grill grate and grease with oil-soaked paper towel and tongs. Slide dough off baking surface onto grill. Cover and cook until dough is bubbling on top and golden brown on bottom, 2-3 minutes.
- Carefully flip dough over using peel or tongs. Remove crust from grill to add toppings. Spread Arugula Pesto over dough. Top with ricotta, ham, corn kernels, onion and Parmesan. Return pizza to grill, cover and cook until toppings are heated through and bottom of crust is crispy, 5-7 minutes.
- Remove from grill, slice and serve.

- Preheat the grill on high.

- Transport the chicken to the grill on one plate and use a clean plate to take the prepared food back to the kitchen.
- Use tongs to turn the chicken instead of a fork, which may tear the meat.
- Keep the grill covered as much as possible for quicker, more even cooking.
- Have a spray bottle filled with water handy in case of a flare up.
- Once you remove the chicken from the grill, allow it to "rest" for five minutes so it will retain its juices when cut.

Chipotle Maple Citrus Watermelon Wings
Watermelon Glaze:
- 2 cups watermelon puree
- Juice from 3 fresh lemons
- 1 tablespoon lemon zest
- 1/2 cup maple syrup (can use light version)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground chipotle pepper, or to taste
Chicken:
- Chicken wings or drumettes
- 2 cups pineapple juice
- 1/2 cup soy sauce
- 1 tablespoon minced fresh ginger
- 3 cloves minced fresh garlic
- To prepare the watermelon glaze, simmer ingredients together in a heavy saucepan for 20 minutes or until sauce is thick. Makes 2 cups. Keep warm.
- To prepare the chicken, place the chicken in a large zipper lock bag with rest of the ingredients and seal tightly. Allow to marinate at least 2 hours or up to 12. Grill until cooked and arrange on a warm platter. Pour the glaze over the chicken and serve immediately.

Cilantro Cream Sauce over Chicken
Makes 6 to 8 servings
- 6 to 8 boneless, skinless chicken breast halves, cooked and kept warm
- 2 cups loosely packed fresh cilantro
- 1 can (12 fluid ounces) Nestlé Carnation Evaporated Milk
- 1 cup water
- 2 teaspoons granulated chicken flavor bouillon
- 3 tablespoons butter or margarine
- 3 tablespoons all-purpose flour
- Ground black pepper to taste
- PLACE cilantro, evaporated milk, water and bouillon in blender; cover. Blend until smooth.
- MELT butter in medium saucepan over medium heat. Remove from heat. Stir in flour, stirring constantly until smooth. Stir in cilantro mixture. Cook over medium-low heat, stirring constantly, until mixture comes to a boil and thickens slightly. Season to taste with pepper.
- POUR sauce over chicken breasts.

- Nonstick cooking spray
- 1 cup all-purpose flour
- 1 1/4 cups granulated sugar, divided
- 3 tablespoons plus 1/4 cup Nestlé Toll House Baking Cocoa, divided
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 can (12 fluid ounces) Nestlé Carnation Evaporated Lowfat 2% Milk, divided
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
- 2 tablespoons water
- Lowfat whipped topping or ice cream (optional)
- PREHEAT the oven to 350° F. Spray 8-inch-square baking pan or dish with nonstick cooking spray.
- COMBINE flour, 3/4 cup sugar, 3 tablespoons cocoa, baking powder and salt in medium bowl. Add 1/2 cup evaporated milk, oil and vanilla extract; whisk until just blended. Spread batter into prepared baking pan.
- COMBINE remaining 1/2 cup sugar and 1/4 cup cocoa in small bowl. Microwave remaining 1 cup evaporated milk and 2 tablespoons water in small, uncovered microwave-safe bowl on HIGH (100%) power for 1 minute. With wire whisk, stir in sugar-cocoa mixture into milk mixture until blended. Gently pour over chocolate batter in pan.
- BAKE for 20 to 25 minutes (25 to 30 minutes if using glass dish) or until cake layer forms on top and edges are bubbly. Let stand for 10 minutes. Spoon into serving dishes, spooning chocolate sauce over cake. Top with whipped topping.
TIP: Individual servings can be reheated in microwave for 10 seconds.

- 1 chicken (3 pounds), liver discarded
- 2 1/2 quarts cold water
- 4 carrots, peeled and cut into bite-size pieces
- 2 onions, peeled
- 2 celery stalks with leaves, cut into 4 pieces
- 6 cloves garlic, peeled
- 2 fresh thyme sprigs or 1/2 teaspoon dried thyme
- 1 1/2 teaspoons kosher salt
- 1 teaspoon whole black peppercorns
Soup:
- 1 cup small pasta, cooked
- 1 cup frozen peas, thawed
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- To prepare broth: In large pot over high heat, bring chicken and all remaining broth ingredients to boil. Reduce heat to low; skim surface of broth to remove foam. Let simmer 1 1/2 hours, skimming occasionally, and turning chicken. Add more water if necessary to keep chicken submerged.
- Remove chicken with tongs and cool. Strain broth through fine sieve. Discard celery, herbs and spices. Reserve onions and carrots. Remove any excess fat from top of broth with spoon.
- Pull chicken meat from bones and discard skin and bones. Dice chicken and reserve. Quarter cooked onions, if desired.
- To prepare soup: In large pot over high heat, return strained chicken broth and bring to rolling boil. Add reserved onions and carrots. Reduce heat to low; stir in reserved chicken meat, pasta and frozen peas, cooking until warm. Season with salt and pepper. Ladle soup into bowls and top with dill and parsley.

Flower:
- 1 Cuties clementine
- 9-10 thinly sliced strips red bell pepper, cut in 1-inch pieces
- 1/2 grape tomato
- 1 celery stick, cut to 3 inches
- 2 small leaves romaine lettuce
- 1 piece English cucumber, unpeeled, seeded and cut to 1 1/2 inches then thinly sliced
Dip:
- 2 tablespoons plain Greek yogurt
- 1/2 teaspoon honey
- 1/4 teaspoon fresh lemon juice
- Peel clementine and separate sections almost all the way, leaving attached at the base. Place on plate with base down. Place piece of red bell pepper between each citrus section, and half tomato in center to form flower.
- Place celery and lettuce leaves underneath as stem and leaves. Arrange cucumber slices below to represent grass.
- In small bowl, stir together yogurt, honey and lemon juice.
- Serve dip in dish alongside flower, or in a mound underneath cucumber slices.

- 1/2 teaspoon ground cinnamon
- 2 slices whole-wheat bread
- 1 teaspoon soft margarine
- 4 teaspoons light pancake syrup
- In flat-bottomed bowl, crack eggs. Thoroughly whisk in milk and cinnamon. Dip bread slices, one at a time, into egg mixture, wetting both sides. Re-dip, if necessary, until all egg mixture is absorbed into bread.
- Meanwhile, heat large, nonstick skillet over medium heat. Add butter. Place dipped bread slices in skillet. Cook 2 1/2-3 minutes per side, or until both sides are golden brown.
- Drizzle with syrup. Serve when warm.
