My husband and I try to eat meatless at least two nights a week. Well, let me rephrase this ... I try to make my husband eat meatless at least two nights a week. I could easily be a vegetarian but my carnivorous husband isn’t all aboard that train yet, so we compromise. Consequently, I love to take meatless dishes to any get-together we are attending. For me, it’s a win-win. I bring a meatless option for myself and those who also enjoy meatless dishes while introducing the room to meatless recipes and how amazingly delicious they can be. Queue this delicious and creamy recipe for Stuffed Cherry Tomatoes.
Beside the fact I don’t have to turn on any kitchen appliances, I love this recipe for its freshness and ease to make. The fact it contains cream cheese and dill is also a major plus for this girl. Anyway, if you’re ready for me to stop rambling and just get to the deliciousness ... let’s get started!
Stuffed Cherry Tomatoes
- 24-48 cherry tomatoes
- 1 package (8 ounces) cream cheese, softened
- 2 tablespoons mayonnaise
- 1 medium cucumber, peeled and diced
- 3 green onion stalks, diced
- 2 teaspoons minced dill
- fresh dill, for garnish
- Cut thin slice off top of each tomato. Scoop out pulp. Invert tomatoes on paper towel to drain.
- In medium bowl, combine cream cheese and mayonnaise until smooth. Stir in cucumber, green onion and dill. Spoon mixture into tomatoes. Top with fresh dill.
- Refrigerate until ready to serve.
