- 1 cup whole milk
- 1/2 cup Premier Protein Strawberries & Cream Protein Shake
- 1/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 2/3 cup creamy peanut butter
- 2 cups heavy whipping cream
- 2 teaspoons vanilla extract
- 1/2 cup sugar-free strawberry jelly
- In large, heavy saucepan, heat milk, protein shake, brown sugar and salt until bubbles form around sides of pan. Whisk small amount of hot mixture into egg. Return to pan, whisking constantly.
- Cook and stir over low heat until mixture thickens and coats back of spoon. Remove from heat; whisk in peanut butter. Quickly transfer to bowl; place in ice water and stir 2 minutes. Stir in cream and vanilla. Press wax paper onto surface of custard. Refrigerate several hours or overnight.
- Fill cylinder of ice cream freezer 2/3 full; freeze according to manufacturer's directions.
- When ice cream is frozen, spoon into freezer container, layering with jelly; freeze 2-4 hours before serving.

- 1 large sweet potato
- 1 bag (10 ounces) dark chocolate chips, plus additional for topping (optional)
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon fine sea salt
- 1/4 cup coconut sugar
- 1 Premier Protein Chocolate Protein Shake
"Caramel" Sauce:
- 3 tablespoons coconut oil (measured when solid)
- 3 tablespoons real maple syrup
- 1 1/2 tablespoons almond butter
- 1/8 teaspoon fine sea salt
- 1/4 teaspoon pure vanilla extract
- Wash and scrub sweet potato. Pierce with fork several times. Place on microwave-safe plate and microwave 5 minutes; flip and microwave 5 minutes. Allow to cool.
- In microwave-safe bowl, microwave chocolate chips in 20-second increments, stirring between each increment until smooth and melted. Set aside.
- Remove sweet potato skin and thoroughly mash. Pack into 3/4 cup measuring cup. Place in large blender.
- Add melted chocolate to blender along with vanilla, sea salt, coconut sugar and chocolate protein shake.
- Place lid on blender and blend on high at least 1 minute, or until ingredients are smooth and incorporated.
- Transfer to ice cream maker and prepare according to manufacturer's directions then transfer to airtight container and freeze 2-3 hours.
- To make "caramel" sauce: In microwave-safe bowl, microwave coconut oil and syrup 30 seconds. Stir and microwave 30 seconds, or until melted and smooth. Stir in almond butter and whisk until smooth. Add sea salt and vanilla extract; whisk to combine.
- Set "caramel" sauce aside at room temperature about 30 minutes. Top ice cream with sauce and additional chocolate chips, if desired.

Orange Juice Biscuits
Orange Butter Sauce:
- 1 1/2 cups Florida Orange Juice
- 2 1/2 tablespoons unsalted butter
Orange Biscuits:
- 1 1/2 tablespoons granulated sugar
- 2 teaspoons grated orange zest
- 2 cups bleached all-purpose flour, plus additional for kneading
- 1 2/3 tablespoons baking powder
- 3/4 teaspoon salt
- 1/2 cup shortening
- 1/2 cup whole milk
- 1/4 cup Florida Orange Juice
- To make orange butter sauce: Boil orange juice 5 minutes, or until reduced by half. Add butter and stir until melted. Remove from heat.
- To make orange biscuits: Preheat oven to 425 F.
- Use fingers to rub sugar and zest together until sugar is moistened and looks like wet sand.
- In large bowl, whisk orange sugar, 2 cups flour, baking powder and salt. Using two forks or pastry blender, cut in shortening to size of small peas.
- Combine milk and orange juice then stir into flour mixture to make sticky dough.
- Turn out dough onto well-floured work surface. Sprinkle top with flour and knead about six times while folding dough over in half and using more flour as needed.
- Pat dough out to 3/4-inch thickness. Cut out biscuits with round cutter by dipping cutter in flour then pressing into dough. Do not turn cutter while pressing.
- Place biscuits close together but not touching on baking sheet.
- Gather dough scraps and fold 2-3 times, pat out again and cut biscuits. Repeat until dough is used.
- Brush tops with orange butter sauce. Bake 15-20 minutes, or until lightly browned.
- Serve warm or at room temperature with remaining sauce.
Orange Juice Spicy Margaritas
- 2 cups Florida Orange Juice
- ice
- 2 cups simple syrup
- 8 ounces silver tequila
- 2 ounces triple sec or orange liqueur
- 2 ounces lime juice
- 4 ounces seltzer
- ghost pepper salt, to taste
- 4 Florida Orange slices, 1/4-inch thick
- In saucepan over medium heat, reduce orange juice to 1 cup and allow to cool.
- Fill cocktail shaker 3/4 full with ice. Add orange juice reduction, simple syrup, tequila, triple sec and lime juice.
- Shake and pour into four glasses. Top each glass with 1 ounce seltzer.
- Pour ghost pepper salt onto saucer and dip edges of orange slices in ghost pepper salt. Place orange slices on rim of each glass, if desired.

Yield: 6 popovers
Popovers:
- 1 1/3 cups all-purpose flour
- 1 teaspoon kosher salt
- 1 1/3 cups whole milk
- 4 large eggs
- 2 tablespoons avocado or vegetable oil
- nonstick cooking spray
Cranberry Butter:
- 1/2 cup unsalted butter, softened
- 2 tablespoons cranberry sauce
- 1 pinch salt
- To make popovers: In large bowl, whisk flour, salt, milk and eggs until silky smooth. Add oil and whisk to combine. Transfer to pourable pitcher, cover and refrigerate at least 6 hours, or overnight.
- Heat oven to 375 F.
- Place 6-cup popover pan in oven 10 minutes.
- Remove pan and spray with nonstick cooking spray. Stir batter, divide and pour into cups, filling each 3/4 full.
- Bake until puffed high and cooked through, 45-50 minutes.
- To make cranberry butter: In medium bowl, mix butter, cranberry sauce and salt until well combined.
- Remove popovers from oven and serve with cranberry butter.

- 2 cloves garlic
- 1/2 small bunch Italian (flat-leaf) parsley
- 1/4 cup O Organics extra-virgin olive oil
- 1/8 cup red wine vinegar
- 2 teaspoons O Organics Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 pound O Organics ribeye steak
- 1/2 pint O Organics grape tomatoes
- 1/4 pound O Organics white mushrooms
- green pepper, sliced (optional)
- 1/2 medium red onion
- 6 skewers
- Peel and mince garlic. Wash and dry parsley. Shave leaves off stems; discard stems and mince leaves.
- In large bowl, whisk minced garlic, half the minced parsley (reserve remainder for garnish), olive oil, vinegar, Dijon mustard, salt and pepper.
- Cut steak into cubes; transfer to marinade bowl and toss to coat.
- Wash tomatoes, mushrooms and green pepper. Halve mushrooms. Add tomatoes, mushrooms and green pepper to marinade. Peel onion and cut into chunks; add to marinade. Toss beef and vegetables until well coated.
- Heat grill pan, outdoor grill or skillet to medium-high heat.
- Thread steak and vegetables onto six skewers.
- Cook kebabs in batches until steak is browned and vegetables are tender, 3-5 minutes per side. Transfer to plate and repeat with remaining kebabs.
- To serve, plate kebabs and sprinkle with remaining minced parsley.
Grilled Chicken Salad with Goat Cheese, Fresh Blueberries and Pecans

- 3/4 pound boneless, skinless O Organics chicken breasts

- 1/8 teaspoon black pepper

- Once pan is hot, coat with oil. Add chicken to pan and grill, turning once, until cooked through, 3-4 minutes per side.
- Wash and dry spring mix. Place in medium bowl.
- Wash and dry blueberries. Add to bowl with mixed greens. Using clean cutting board, roughly chop pecans. Add to bowl.
- Transfer cooked chicken to cutting board and cut into thin strips.
- In bowl, mix olive oil and balsamic vinegar to create dressing.
- Add chicken and dressing to salad bowl; toss to combine.
- To serve, divide salad between plates or bowls and crumble goat cheese over top.
Mixed Berry-Lime Smoothie Bowl with Banana and Granola

- 1 banana

- 12 pieces thinly sliced prosciutto
- 6 slices tomato
- 1/3 cup finely grated Parmesan cheese
- 6 large eggs
- fresh cracked black pepper, to taste

- Place rack in upper third of oven and preheat to 350 F.
- Line muffin pan with six cupcake liners. Drape two slices prosciutto in each cup over liner, ensuring there are no holes for egg to sneak through.
- Place one tomato slice in each cup. Sprinkle 1 tablespoon Parmesan atop each tomato. Crack one egg into each cup. Sprinkle each with fresh cracked black pepper, to taste.
- Bake 14-16 minutes, or until eggs are cooked as desired. Top with chives.
- Cool 5 minutes before serving warm.
Eggy Lemon Sandwich Cookies

Yield: 16-18 cookies
Dough:
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon kosher salt
- 3/4 cup vegetable shortening
- 1/4 cup unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons whole milk
- 2 teaspoons vanilla extract
Lemon Curd:
- 1/2 cup fresh lemon juice
- 2 teaspoons finely grated lemon zest
- 1/2 cup granulated sugar
- 3 large eggs
- 6 tablespoons unsalted butter, cut into cubes
Buttercream:
- 1 cup unsalted butter, softened to room temperature
- 2 cups powdered sugar
- 1 pinch salt
- 1 teaspoon finely grated lemon zest
- 1-2 tablespoons warm milk
- 1 teaspoon poppy seeds
- To make dough: In medium bowl, whisk flour, baking soda, baking powder and salt.
- In bowl of stand mixer fitted with paddle attachment, cream together shortening and butter until well combined. Scrape down sides of bowl, add sugar and beat on medium speed until pale and fluffy, 3-5 minutes.
- Add egg, milk and vanilla extract; beat until combined. Add dry ingredients and beat on low until dough forms. Scrape down sides of bowl to ensure no dry pockets at bottom. Wrap and refrigerate dough 30 minutes.
- Place rack in upper third of oven and preheat to 350 F.
- Roll half of dough on lightly floured counter to 1/4-1/2-inch thickness. Cut with 2-3-inch egg cookie cutter and place on parchment paper-lined baking sheet. Use 1-inch round or egg-shaped cookie cutter to cut yolk holes out of half the cookies. Bake 8-10 minutes until just golden around edges. Cool completely before filling.
- To make lemon curd: In 2-quart heavy saucepan, whisk juice, zest, sugar and eggs. Stir in butter and cook over low heat, whisking frequently, until curd is thick enough to hold marks of whisk and bubbles appear on surface, about 6 minutes.
- Transfer lemon curd to bowl and chill, covered with plastic wrap, until cold, at least 1 hour.
- To make buttercream: In medium bowl using electric hand mixer, beat butter until well softened. Add powdered sugar, salt and lemon zest; beat on low. Add milk and whip to combine. Beat in poppy seeds. Transfer frosting to zip-top bag with corner cut off or piping bag with medium round tip. Leave buttercream at room temperature until ready to pipe.
- To assemble cookies: Flip each whole egg cookie so bottoms are facing up. Pipe buttercream frosting around edges. Spoon 2-3 teaspoons lemon curd into centers of cookies. Top each with one cookie with hole; press gently and spoon 1 teaspoon lemon curd into cookie hole.

Skewers:
- Nonstick cooking spray
- 2 chicken breasts (6 ounces each), cubed
- 1 ham steak (6 ounces), cubed
- 6 bamboo skewers (8 inches)
- 1 tablespoon Dijon mustard
- 1 teaspoon pure maple syrup
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon paprika
- 1 teaspoon extra-virgin olive oil
Sauce:
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup lactose-free 2% milk
- 1 teaspoon Dijon mustard
- 1 cup shredded Swiss cheese
- salt, to taste (optional)
- pepper, to taste (optional)
- To make skewers: Preheat broiler to 500 F. Line broiler pan with foil and spray with nonstick cooking spray.
- Thread cubed chicken pieces and cubed ham pieces onto skewers.
- In small bowl, combine Dijon mustard, maple syrup, black pepper, paprika and oil.
- Brush mustard mixture on skewers.
- Broil about 5 minutes, flip and cook 5 minutes, or until chicken is cooked through.
- To make sauce: In small saucepan over medium heat, melt butter. Whisk in flour and cook 1 minute, whisking constantly. Gradually add milk, whisking constantly. Add Dijon mustard. Continue cooking 5 minutes, or until thick. Reduce heat to low and stir in cheese, whisking until melted.
- Add salt and pepper, to taste, if desired.

Chicken, Spinach and Feta Casserole

- 1 package (10 ounces) frozen chopped spinach, thawed
- 3 eggs, slightly beaten
- 2 cups cottage cheese
- 1 1/2 cups chopped cooked chicken
- 3/4 cup crumbled feta cheese
- 3 tablespoons all-purpose flour
- 2 tablespoons butter, melted
- 2 teaspoons dried minced onion
- 1 teaspoon dried oregano leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Preheat oven to 350 F.
- Place spinach in colander. Use back of large spoon or rubber spatula to press moisture from spinach.
- In large bowl, combine spinach, eggs, cottage cheese, chicken, feta cheese, flour, butter, onion, oregano, salt and pepper.
- Spoon into greased 1 1/2-quart casserole dish. Bake, uncovered, 45-50 minutes, or until set near center (160 F). Let stand 5 minutes before serving.
One Pan Mac and Cheese

- Water
- 2 teaspoons salt
- 2 cups dry macaroni noodles
- 2 cups lactose-free whole milk
- 2 eggs
- 2 tablespoons butter, clarified or ghee
- 1 1/2 cups shredded sharp white cheddar cheese
- 1 cup shredded Parmesan cheese
- salt, to taste
- fresh cracked pepper, to taste
- Add water and salt to 3-quart saucepan; cook noodles according to package directions. Drain and add noodles back to pan.
- Measure milk into large measuring cup. Add eggs and whisk.
- Toss noodles with clarified butter, turn heat to medium and pour in milk-egg mixture. Add cheeses and stir until melted. Bring to low boil about 3 minutes; sauce will thicken and become creamy. Add salt and fresh cracked pepper, to taste.
Parmesan-Swiss Fish

- 1 1/4 pounds skinless halibut, salmon or tilapia fillets (fresh or frozen)
- 3/4 cup shredded Swiss cheese
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons sliced green onion
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons grated Parmesan cheese
- 1/4 teaspoon paprika
- Preheat oven to 450 F.
- Thaw fish, if frozen. Cut into four serving-size pieces, if necessary. Pat fish dry with paper towels. Arrange in single layer on greased 15-by-10-by-1-inch baking pan, tucking under any thin edges.
- In small bowl, toss Swiss cheese, yogurt, mayonnaise, green onion, salt and pepper. Spread over fish fillets. Sprinkle with Parmesan cheese and paprika. Bake, uncovered, until fish flakes easily with fork. Allow 6-8 minutes baking time per 1/2-inch thickness of fish.

Orange and Harissa Glazed Beef Kebabs

Cook time: 20 minutes

- 1/2 cup California Valencia orange juice, freshly squeezed
- 2 California Valencia oranges, zested and segmented
- 2 tablespoons harissa paste
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon fresh mint leaves, roughly chopped
- 2 garlic cloves, finely chopped
- 8 ounces beef tenderloin, cut into 2-inch cubes
- 1 green bell pepper, cut into 2-inch squares
- 1 red onion, cut into 2-inch squares
- 16 broccoli florets, raw
- kosher salt, to taste
- black pepper, to taste
- cooked couscous
- mandarin chutney
- In mixing bowl, combine orange juice and zest, harissa, honey, oil, mint and garlic; mix well.
- Add beef cubes and toss to coat; marinate 2 hours in refrigerator.
- Using long skewers, build kebabs, alternating beef, peppers, onions and broccoli on each.
- Heat grill to medium-high heat.
- Season kebabs with salt and pepper, to taste. Grill until vegetables are cooked through and beef reaches desired doneness.
- Serve over bed of couscous and top with mandarin chutney.
Orange Ice Cream
Prep time: 1 hour
Servings: 6
- 2 cups California Valencia orange juice, freshly squeezed
- 1 1/2 cups whole milk
- 1 1/2 cups heavy cream
- 1/2 vanilla bean
- 2 tablespoons glucose syrup or corn syrup
- 1/4 cup non-fat dry milk powder
- 2/3 cup granulated sugar
- 3 egg yolks
- 2 California Valencia oranges, zest only
- California Valencia orange slices, for garnish
- Prepare ice cream making vessel or unit, such as old-fashioned churner or ice cream machine with motor.
- Reduce orange juice to 1 cup; ice down to chill.
- In saucepan over medium heat, combine milk, cream, vanilla scraped pod and seeds, and glucose syrup until hot; remove from heat. Steep 30 minutes.
- In bowl, combine milk powder and sugar. Add dry mixture into hot cream mixture. Whisk to combine. Return mixture to medium heat.
- In separate heat-safe bowl, combine egg yolks and orange zest.
- In small increments, pour hot mixture over yolks and zest. Mix vigorously while pouring.
- Cook to 185 F.
- Remove from heat and pour through fine strainer. Hand-blend until smooth.
- Ice down immediately. Add cooled, reduced orange juice. Hand blend to combine.
- Spin and freeze then follow directions according to machine or vessel to make ice cream.
- Serve with orange slices.
