Tomato-Tortellini Soup
- 2 14 ounce cans reduced-sodium chicken broth
- 1 9 ounce package of refrigerated tortellini
- 1 8 ounce tub cream cheese spread with chive and onion
- 1 can tomato soup
- Fresh chives (optional)
- In a medium sauce pan bring broth to a boil. Add tortellini then reduce heat to simmer uncovered for 5 minutes.
- In a bowl whisk 1/3 cup of hot broth into the cream cheese spread. Whisk until smooth. Pour contents into sauce pan.
- Stir in tomato soup and heat through.
- Serve with fresh chives, if desired.

Creamy Tomato and Roasted Pepper Soup with Cheddar Cracker Melts

Creamy Tomato and Roasted Pepper Soup:
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 3 cloves garlic, chopped
- 1 teaspoon salt, divided
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1 pinch chili flakes
- 4 cups organic no-salt-added vegetable broth
- 1 can (28 ounces) no-salt-added diced tomatoes
- 1 cup chopped prepared roasted red peppers
- 2 bay leaves
- 1/3 cup 35 percent heavy cream
- 2 tablespoons finely chopped fresh chives, divided
- 1 teaspoon cider vinegar
Cheddar Cracker Melts:
- 24 Crunchmaster Tuscan Peasant Fire Roasted Tomato Basil Crackers
- 3/4 cup shredded cheddar cheese
- In Dutch oven or large saucepan over medium heat, heat oil. Cook onion, carrot, garlic, 1/2 teaspoon salt, pepper, paprika and chili flakes about 5 minutes, or until vegetables are slightly softened.
- Stir in broth, tomatoes, roasted red peppers and bay leaves; bring to boil. Reduce heat to medium-low. Simmer 15-20 minutes, or until vegetables are tender. Discard bay leaves. Let cool slightly. Transfer to blender; puree in batches until smooth. Stir in cream, remaining salt, 1 tablespoon chives and vinegar.
- To make Cheddar Cracker Melts: Heat broiler to high and position rack in center of oven. Arrange crackers on parchment paper-lined baking sheet. Sprinkle with cheese. Broil 1-2 minutes, or until cheese is melted.
- Divide soup among six bowls. Sprinkle with remaining chives and serve with Cheddar Cracker Melts.
Tip: Use mild, medium or aged cheddar cheese. Smoked mozzarella can be substituted, if desired.

Tomato Soup with Homemade Olive Oil Croutons
Prep time: 10 minutes
- 4 tomatoes
- 3 grilled red bell peppers in oil
- 1 shallot
- 1/2 cup Bertolli Extra Virgin Olive Oil, plus additional for brushing on bread
- 3 tablespoons sherry vinegar
- 1 clove garlic
- 10 basil leaves
- salt, to taste
- pepper, to taste
- 4 slices crusty bread
- Cut small cross in bottom of tomatoes and submerge in boiling water 30 seconds. Let tomatoes cool in ice water 30 seconds then remove skins.
- In blender, blend tomatoes, red bell peppers, shallot, extra-virgin olive oil, vinegar, garlic, basil, salt and pepper, to taste, until mixture is smooth. Add mixture to large pot and heat, stirring frequently.
- Cut bread slices, brush with olive oil and grill 2 minutes per side over medium-high heat until visible grill marks have formed.
Healthy Beet Hummus
Prep time: 15 minutes
- 3 beets
- salt, to taste
- Bertolli Extra Virgin Olive Oil
- 2 cups canned chickpeas
- 2 tablespoons sesame seed paste or tahini
- Heat oven to 375° F.
- Peel beets and boil until soft; season with salt and olive oil.
- Puree beets with chickpeas and sesame seed paste until a uniform paste forms. Transfer to oven-safe serving dish. Bake 10 minutes and serve.
Mushroom Carpaccio and Creamed Spinach Au Gratin
Prep time: 15 minutes
Mushroom Carpaccio:
- 2 1/4 cups cremini mushrooms

Creamed Spinach:
- 2 1/4 cups spinach
- 1/2 cup heavy cream

- pepper
- Parmesan cheese
- To make Mushroom Carpaccio: Heat oven to 400° F.

- Season with olive oil and salt. Set aside.
- To make Creamed Spinach: Boil spinach 2 minutes, strain and place it into saucepan, over cream. Cook 5 minutes.
- In blender, puree mixture and pour over Mushroom Carpaccio.
- Grate Parmesan cheese over entire dish; bake 5 minutes.
Bitter Chocolate and Pistachio Cream Dessert
Prep time: 15 minutes
- 1/2 cup, plus 1 tablespoon, sweetened condensed milk
- 1/2 cup brown sugar

- 4 ounces dark chocolate
- 1 1/4 cups shelled pistachios
- In saucepan, combine condensed milk and sugar; cook over low heat, stirring until mixture takes on toasted color.

- Line 9-by-5-inch loaf pan with parchment paper and spread mixture into pan. Refrigerate until fully set.
- To make pistachio cream: Blend pistachios and olive oil until smooth paste forms.
- Remove dessert from pan and cut into slices. Serve with pistachio cream on top.

Ingredients
- 1 tablespoon canola oil
- 1 large onion, minced (about 1 cup)
- 1 clove garlic, minced

- 1 cup nonfat milk
- 1 cup water
- 2 medium red potatoes, diced (about 2 cups)
- 1 large zucchini, diced (about 1 1/2 cups)
- 1 cup whole kernel corn
- 2 cups diced cooked chicken
- 2 tablespoons chopped fresh parsley
Preparation
- Heat oil in 4-quart saucepan over medium-high heat. Add onion and garlic and cook for 2 minutes, stirring occasionally.
- Stir in soup, milk and water and heat to a boil. Stir in potatoes, zucchini and corn. Reduce heat to medium-low.

- 1 1/4 cups water
- 1 1/4 pounds skinless, boneless chicken breast halves, cut into 1-inch pieces
- 3/4 teaspoon ground black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon poultry seasoning, crushed
- 1 tablespoon vegetable oil
- 1 package (16 ounces) frozen mixed vegetables, thawed
- 1 cup instant mashed potato flakes
- 1 cup fat free evaporated milk
- 1/4 cup shredded 2% milk Cheddar cheese
Preparation
- Heat oven to 350°F.
- Stir soup and 1/4 cup water in large bowl.
- Season chicken with 1/2 teaspoon black pepper, onion powder and poultry seasoning.
- Heat oil in 12-inch skillet over medium-high heat. Add chicken and cook until well browned, stirring occasionally. Add chicken and vegetables to soup mixture and stir to coat.
- Spoon chicken mixture into 2-quart round casserole.
- Microwave remaining water in microwavable bowl on HIGH for 1 to 2 minutes or until hot. Add potato flakes and stir until water is absorbed. Stir in milk and remaining black pepper. Loosely cover and microwave on HIGH for 2 minutes or until mixture is hot.
- Spread potato mixture over chicken mixture. Sprinkle with cheese. Bake for 40 minutes or until chicken mixture is hot and bubbling.

- 4 green onions, minced (about 1/2 cup)
- 1 can (10 3/4 ounces) Campbell's® Healthy Request® Condensed Healthy Request® Tomato Soup
- 1/2 cup Pace® Picante Sauce
- 1/2 cup water
- 1 can (about 15 ounces) black beans, rinsed and drained
- 1 cup whole kernel corn
- 2 tablespoons chopped fresh cilantro leaves
Preparation
- Stir chili powder and cumin in small bowl. Season chicken with chili powder mixture.
- Heat oil in 12-inch skillet over medium-high heat. Add chicken and cook for 6 minutes or until browned on both sides. Add garlic and onions and cook; stir for 1 minute.
- Stir in soup, picante sauce and water and heat to a boil. Reduce heat to medium-low. Add beans and corn. Cover and cook for 15 minutes or until chicken is cooked through.
- Sprinkle with cilantro.
