- 18 ounces cheese tortellini

- In large rimmed skillet, heat olive oil over medium heat.
- Add sausage and brown on both sides. Add garlic and stir until golden, 20-30 seconds.

- 2 medium sweetpotatoes
- 3 bell peppers (combination of red, yellow and orange)
- 1 small onion
- 2 tablespoons olive oil or butter, divided
- 2 garlic cloves, minced
- 1 pound lean ground beef
- 1/2 cup beef broth
- 1 can diced tomatoes
- 8 ounces tomato sauce
- 1 can Mexi-corn or Southwest corn
- 1 tablespoon Southwest seasoning
- salt, to taste
- pepper, to taste
- Rinse and scrub sweetpotatoes to clean. Chop into 1/2-inch cubes. Dice bell pepper and onion. Set aside.
- In skillet over medium heat, heat 1 tablespoon oil or butter.
- Add garlic and saute until fragrant, being careful not to burn.
- Add ground beef, breaking apart and stirring until cooked through, 5-7 minutes. Remove garlic and beef to covered bowl or plate; set aside.
- In same skillet, add remaining oil or butter. Saute peppers, onion and sweetpotatoes until slightly tender.
- Pour in broth, diced tomatoes and tomato sauce; cover and simmer 12-15 minutes.
- Stir in cooked beef and corn. Cook until liquid reduces and mixture thickens slightly. Add seasoning and salt and pepper, to taste.

- 8 ounces dry whole-wheat spaghetti
- 2 cups chunky tomato sauce

Turkey Meatballs:
- 6 ounces 99% lean ground turkey
- 1/4 cup whole-wheat breadcrumbs
- 2 tablespoons fat-free evaporated milk
- 1 tablespoon grated Parmesan cheese
- 1/2 tablespoon fresh chives, rinsed, dried and chopped
- 1/2 tablespoon fresh parsley, rinsed, dried and chopped
Beef Meatballs:
- 6 ounces 93% lean ground beef
- 1/4 cup whole-wheat breadcrumbs
- 2 tablespoons fat-free evaporated milk
- 1 tablespoon grated Parmesan cheese
- 1/2 tablespoon fresh chives, rinsed, dried and chopped
- 1/2 tablespoon fresh parsley, rinsed, dried and chopped
- Preheat oven to 400 F.
- In 4-quart saucepan over high heat, bring water to boil.
- Add pasta and cook according to package directions. Drain and set aside.
- To make turkey meatballs: In bowl, combine ground turkey, breadcrumbs, evaporated milk, Parmesan cheese, chives and parsley; mix well. Measure 1 1/2 tablespoons turkey mixture and roll into ball using hands. Place meatball on nonstick baking sheet. Repeat until eight turkey meatballs are made.
- To make beef meatballs: In separate bowl, combine ground beef, breadcrumbs, evaporated milk, Parmesan cheese, chives and parsley; mix well. Measure 1 1/2 tablespoons beef mixture and roll into ball using hands. Place meatball on nonstick baking sheet. Repeat until eight beef meatballs are made.
- Bake meatballs 10 minutes until minimum internal temperature of 165 F is reached.
- Warm sauce, if necessary.
To serve: Serve four meatballs with 3/4 cup pasta, 1/2 cup sauce, 1 teaspoon Parmesan cheese and 1 pinch basil per portion.

- 3 tablespoons taco seasoning
- 1/2 cup tomato sauce
- 1 can (15 ounces) black beans, rinsed and drained
- nonstick cooking spray
- 2 pounds North Carolina sweetpotatoes, peeled and cut into 1/2-inch cubes
- 2 tablespoons butter
- 3/4 teaspoon salt
- 1 1/2 cups fresh chopped spinach
- 1 1/2 cups shredded cheddar cheese
- sour cream (optional)
- guacamole (optional)
- Preheat oven to 425 F.
- In skillet over medium-high heat, brown ground meat. Stir in taco seasoning, tomato sauce and beans; set aside.
- Lay out six 12-inch aluminum foil pieces; spray each with nonstick cooking spray.
- In center of each foil piece, place 1 cup sweetpotatoes, 1 teaspoon butter, 1/8 teaspoon salt, 1/4 cup spinach, 1/3 cup taco meat and 1/4 cup cheese.

- Remove chicken from marinade. Place chicken in baking dish. Bake 25-30 minutes until chicken is cooked through.

- 3/4 pound Wisconsin russet potatoes, cut into 1/2-inch pieces
- 1 tablespoon water
- 1 tablespoon canola oil
- 3/4 pound ground lean turkey
- 1 large carrot, shredded
- 1/3 cup sliced green onions with tops
- 1 can (8 ounces) tomato sauce
- 2/3 cup shredded cheddar cheese
- 1 teaspoon dried Italian seasoning or basil
- salt, to taste
- pepper, to taste
- 4 large whole-wheat or high-fiber tortillas
- light sour cream (optional)
- Place potatoes in microwave-safe bowl; sprinkle with water. Cover, venting one corner. Microwave on high 5-8 minutes until potatoes are tender.
- In large nonstick skillet over medium-high heat, heat oil. Add and break up turkey; cook 5 minutes, tossing occasionally. Mix in carrot; cook 2 minutes. Add potatoes and onions; toss and cook 2 minutes. Reduce heat to medium; mix in tomato sauce, cheese and Italian seasoning.

Cheesy Spinach Ravioli

Total time: about 1 hour
Yield: 17-20 ravioli
Dough:
- 3 cups all-purpose flour, divided
- 1 pinch salt
- 1/4 teaspoon garlic powder
- 1/2 teaspoon olive oil
- 4 whole eggs
- 2 egg yolks
- water
Filling:
- 1/2 teaspoon olive oil
- 2 cups chopped spinach, fresh or frozen
- 1 pinch salt
- 1 pinch pepper
- 1 container (15 ounces) ricotta cheese
Toppings:
- 1 jar (24 ounces) RAGÙ Old World Style Traditional Sauce
- shredded mozzarella cheese
- 2 chopped basil leaves
- 2 chopped sprigs rosemary
- grated Parmesan cheese (optional)
- To make dough: Place 2 1/2 cups flour in bowl and make hole in center. Add salt, garlic powder, olive oil, eggs and egg yolks to hole. Slowly bring flour into middle and knead into ball. Cover with bowl and let rest 20 minutes.
- To make filling: In pan over medium heat, add olive oil; add spinach, salt and pepper then saute until spinach is wilted. Let cool then mix in ricotta cheese; set aside.
- Cut dough in half. Sprinkle remaining flour on large cutting board and roll dough to 1/8-inch thickness. Cut into rectangle then cut into 2-3-inch squares. Set scraps aside. Brush water on squares then spoon 1 teaspoon spinach-ricotta filling in center of every other square. Top with remaining squares. Use fork to crimp edges. Repeat with remaining dough. Form scraps into ball and repeat.
- Put ravioli in boiling water, 8-10 minutes; they will rise to top when done.
- In saucepan over medium heat, heat sauce until simmering.
- Place ravioli on plate and top with warm sauce, mozzarella cheese, basil and rosemary. Grate Parmesan cheese on top, if desired.

- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped Italian parsley
- 1 tablespoon olive oil
- 1/3 cup chopped onions
- 2 garlic cloves, minced
- 1/2 package (4 ounces) mushrooms, sliced
- 1/4 cup white wine
- 4 cups baby spinach leaves
- 2 cups shredded, cooked chicken breast
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Prepare rice according to package directions. In small bowl, combine ricotta, Parmesan and parsley; reserve.
- In large skillet over medium heat, heat oil. Add onions and garlic; saute 2 minutes. Add mushrooms and wine to skillet. Continue cooking 3 minutes, stirring occasionally. Add spinach and chicken. Stir until spinach is wilted and chicken is heated through, about 2 minutes. Stir in rice, salt and pepper.

A study published in the "Journal of Nutrition Education and Behavior" funded by the FMI Foundation shows that more frequent family meals are associated with better dietary and family functioning outcomes. The results build on years of previous research studies to punctuate the creation of the Family Meals Movement, which encourages Americans to pledge to share one more family breakfast, lunch or dinner at home per week.
Consider these notable findings from the study:
- Family meals improve fruit and vegetable consumption. Studies show a positive relationship between family meal frequency and fruit and vegetable intake when examined separately, but also when fruit and vegetable intake are combined.
- Family meals improve family dynamics. Nearly all the studies included in the systematic review and meta-analysis demonstrated a positive relationship between family meal frequency and measures of family functioning. Family functioning is defined as family connectedness, communication, expressiveness and problem-solving.
"There are thousands of individual studies that examine the impact of family meals on nutrition and family behavior, but this meta-analysis looks at the relationship between family meal frequency and family functioning outcomes," said David Fikes, executive director of the FMI Foundation. "We can confirm that family meals are a valuable contributor of improved nutrition and family dynamics."

German Fruit Tart

- 1 cup all-purpose flour
- 1/4 cup whole-wheat pastry flour
- 1/2 cup sugar
- 1 egg
- 1 tablespoon half-and-half or cream
- 1/8 teaspoon almond extract or 1/4 teaspoon vanilla extract
- 6 tablespoons unsalted butter, thinly sliced
- cornstarch
- sliced strawberries
- sliced kiwi
- sliced banana
- blueberries
- 2 teaspoons turbinado or powdered sugar (optional)
- Preheat oven to 350 F.
- To make crust, beat together flours, sugar, egg, half-and-half and almond extract. Add butter slices and mix together until sticky ball of dough forms. Refrigerate 30-60 minutes.
- On heavily floured surface, knead dough a few times and roll out to fit greased 10-inch tart pan.
- Carefully spread dough into tart pan and bake 15-20 minutes, or until tart starts to turn golden brown. Remove from oven and cool.
- Dust crust with cornstarch to help fruit stick to crust. Arrange strawberries, kiwi, banana and blueberries on top of crust; sprinkle with sugar, if desired.
Hawaiian Chicken Pizza

- Nonstick cooking spray
- 1 1/2 cups shredded rotisserie chicken
- 3/4 cup barbecue sauce
- 1ready-made pizza crust or whole wheat pizza crust (10 ounces)
- 1 cup canned or jarred tomato sauce
- 2 cups shredded mozzarella cheese or part-skim mozzarella cheese
- 1 cup finely chopped fresh pineapple or canned pineapple tidbits packed in 100% juice
- Preheat oven to 375 F. Coat pizza pan or baking sheet with nonstick cooking spray.
- In medium bowl, combine rotisserie chicken and barbecue sauce.
- Place pizza crust on pan and evenly spread tomato sauce over crust. Sprinkle evenly with cheese. Top evenly with rotisserie chicken mixture and pineapple.
- Bake until crust is crisp and browned around edges, about 10 minutes. Let pizza cool 10 minutes before cutting into eight slices.
Peanut Butter Banana Protein Baked Oatmeal

- 2 cups old-fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3 packets stevia (sugar substitute) or preferred sweetener
- 1/2 cup powdered peanut butter
- 1 scoop (1/4 cup) vanilla plant-based protein powder
- 1 cup unsweetened vanilla almond milk
- 1/2 cup nonfat plain Greek yogurt
- 3 tablespoons liquid egg whites
- 1 ripe banana (4 ounces), mashed
- 1 teaspoon vanilla extract
- 1 ripe banana (4 ounces), sliced into 24 slices
- Preheat oven to 350 F.
- In large bowl, combine oats, baking powder, cinnamon, salt, stevia, powdered peanut butter and vanilla protein powder.
- In separate bowl, combine almond milk, yogurt, egg whites, mashed banana and vanilla extract.
- Add oat mixture to wet ingredients and gently stir until fully combined.
- Line 9-inch brownie pan with parchment paper. Pour mixture into pan and spread evenly.
- Top with banana slices in four rows of six slices each.
- Bake 27-35 minutes, or until golden brown and set.
- Let cool and cut into six rectangles. Wrap and refrigerate extras until ready to eat.
