Egg Ravioli with Sage and Almonds

Servings: 4

  • 8 cups water
  • 1/2 cup fat-free ricotta cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 1/2 teaspoons fresh, chopped thyme
  • 1/2 teaspoon grated orange zest
  • 1/4 teaspoon black pepper
  • 8 gyoza wrappers, shumai wrappers or wonton wrappers
  • 4 large egg yolks, unbroken
  • 1 large egg white, lightly beaten
  • 2 teaspoons olive oil
  • 1/4 cup sliced almonds, chopped
  • 1 tablespoon chopped, fresh sage
  • 1 tablespoon finely chopped red bell pepper (optional)
  1. Fill large pot with water. Bring water to gentle boil over medium-high heat.
  2. In medium bowl, stir ricotta cheese, Parmesan cheese, thyme, orange zest and pepper.
  3. Place four wrappers flour sides down on cutting board. Spoon 1 1/2 tablespoons cheese mixture onto center of each wrapper. Using back of spoon, press down on cheese mixture to create well about 1 1/2 inches across (width of large egg yolk), leaving at least 1/2 inch space around edges of wrapper. Without breaking it, carefully place one egg yolk in center of each well.
  4. Using pastry brush, brush edges of wrappers with egg white. Place one top wrapper with flour side up on each bottom wrapper. Using thumbs and forefingers, firmly press edges together to tightly seal each ravioli. Set aside.
  5. Using slotted spoon or spatula, carefully drop each ravioli into boiling water. Cook 2 1/2-3 minutes, or until wrappers are al dente (cooked not too soft but not overdone). Using slotted spoon, gently remove raviolis from pot, draining well. Transfer to plates. Drizzle with oil. Sprinkle with almonds, sage and bell pepper, if desired.

Tips: Gyoza wrappers (or shumai wrappers) are preferred because they're thinner than wonton wraps. Look for gyoza wrappers in the dairy aisle, deli department or freezer section.

Use these guidelines to determine how you want eggs cooked: At 2 1/2 minutes, eggs are yellow and slightly thickened but not set around edges, similar to sunny-side up. At 3 minutes, eggs are deeper orange and slightly set around edges, similar to over-easy.

Poached Eggs with Pesto Bulgur

Servings: 4

  • 2/3 cup uncooked instant or fine-grain bulgur
  • 1 1/3 cups, plus 2 tablespoons, fat-free, low-sodium vegetable broth, divided
  • 1 cup tightly packed fresh basil
  • 2 tablespoons chopped walnuts, dry roasted
  • 1 small garlic clove, minced
  • 1/8 teaspoon salt
  • 1 dash cayenne
  • 1/2 cup finely chopped yellow or red bell pepper
  • 1/4 cup thinly sliced green onions
  • 4 cups water
  • 1 tablespoon white vinegar
  • 4 large eggs
  • 1 medium lemon, cut into 4 wedges
  1. In medium saucepan, prepare bulgur according to package directions, omitting salt and substituting 1 1/3 cups broth for water. Fluff with fork.
  2. In food processor or blender, process basil, walnuts, garlic, salt, cayenne and remaining broth until smooth. Stir basil mixture, bell pepper and green onions into bulgur.
  3. In large skillet, bring water and vinegar to boil over high heat. Reduce heat and simmer. Break one egg into cup then carefully slip egg into simmering water. Repeat with remaining eggs, placing in water so they don't touch. Simmer 3-5 minutes, or until whites are completely set and yolks are beginning to set but aren't hard. Using slotted spoon, drain eggs well and place on bulgur mixture. Serve with lemon wedges.

Note: White vinegar helps firm egg whites quickly, preventing them from spreading too much.

Southwestern Quinoa and Egg Breakfast Bowls

Servings: 4

  • 1/4 cup uncooked quinoa, rinsed and drained
  • 2 medium tomatoes (about 2 cups), chopped
  • 1 cup no-salt-added frozen corn, thawed
  • 1/2 medium avocado, pitted and diced
  • 1/4 cup chopped green onions
  • 1/2 cup chopped fresh cilantro (optional)
  • nonstick cooking spray
  • 4 large eggs
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper
  • red hot pepper sauce, to taste (optional)
  1. Cook quinoa according to package directions. Remove from heat.
  2. Spoon quinoa into four bowls. Top each with even amounts of tomatoes, corn, avocado, green onions and cilantro, if desired.
  3. Lightly spray large skillet with nonstick cooking spray and set over medium-high heat. Crack eggs into skillet. Sprinkle with salt and pepper. Cook, uncovered, 3-4 minutes, or until egg whites are set but yolks are still runny. Using spatula, carefully transfer one egg, sunny side up, into each bowl. Sprinkle with hot sauce, to taste, if desired.

Apple Ricotta Crepes

Crepes:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1cup whole milk
  • 2 eggs
  • 1 teaspoon vanilla
  • butter, for cooking

Apple Topping:

  • butter
  • 2 tablespoons brown sugar
  • Envy Apples, sliced or cubed
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • salt, to taste
  • maple syrup

Ricotta Filling:

  • 1 cup ricotta cheese
  • 1 lemon, zest and juice only
  • 2-3 tablespoons sugar, or to taste
  1. To make crepes: In bowl, combine flour, sugar and salt. Add milk, eggs and vanilla then, using whisk, combine thoroughly. Mixture should be silky smooth. Refrigerate.
  2. To make apple topping: In pan over medium heat, heat butter and brown sugar until bubbly and golden.
  3. Add apples, cinnamon, nutmeg and salt, to taste; cook over medium-low heat until apples are soft. Turn off heat and finish with maple syrup.
  4. To make ricotta filling: Combine ricotta, lemon zest, lemon juice and sugar, mix well and set aside.
  5. In nonstick pan over medium-low heat, melt small amount of butter.
  6. Add one ladle crepe batter, cook until bubbles form, flip and cook until golden. Repeat with remaining batter. Stack crepes to keep warm and soft.
  7. Spread ricotta mixture thinly onto crepes and fold into quarters. Top with apple mixture and serve.

Apple, Tomato and Goat Cheese Frittata

  • 6 eggs
  • 1 teaspoon hot pepper sauce
  • 2 teaspoons kosher salt
  • 20 turns fresh cracked pepper
  • 1/4 cup whole milk
  • 1 Envy Apple, small diced
  • 1/2 cup sundried tomatoes, chopped
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons thinly sliced chives
  1. Preheat oven to 350 F.
  2. In large mixing bowl, whisk eggs, hot pepper sauce, salt, pepper and milk until well combined.
  3. Stir in apples, tomatoes, goat cheese and chives until well combined.
  4. Using 1/3 measuring cup, spoon frittata mixture into oven-safe large skillet or 9-by-9-inch pan.
  5. Bake 25-30 minutes, or until eggs are set.
  6. Let cool slightly then serve.

Mac and Cheese with Pecan Breadcrumbs

  • 8 ounces cavatappi pasta
  • 1 teaspoon salt, plus additional for salting pasta water, to taste
  • 1 tablespoon butter
  • 1 block (8 ounces) cheddar cheese
  • 1/2 cup raw pecan pieces
  • 15 ounces part-skim ricotta cheese
  • 4 tablespoons sour cream
  • 1/4 teaspoon ground pepper
  • 1 large egg, lightly beaten
  1. Preheat oven to 375 F.
  2. Cook cavatappi in salted boiling water. Drain, reserving 1/2 cup pasta cooking water. Return pasta to pot and stir in butter.
  3. Using box grater, shred cheddar cheese.
  4. Using food processor, combine 1/4 cup shredded cheddar cheese with pecans. Process to coarse breadcrumb consistency.
  5. Add remaining cheddar cheese, ricotta, sour cream, 1 teaspoon salt and pepper to warm pasta. Stir until thoroughly combined. Add egg; stir. Add 2-4 tablespoons reserved pasta water to loosen mixture; stir until smooth.
  6. Pour into buttered 9-inch square or round casserole dish and top evenly with pecan topping.
  7. Bake 30 minutes.

Substitutions: Use pre-shredded cheese in place of cheddar cheese block. Use pasta of choice in place of cavatappi.

Superfood Pecan Energy Bars

Cook time: 40 minutes
Servings: 14

  • 15 Medjool dates (9 ounces)
  • 1 cup pecan pieces
  • 1/2 cup gluten-free oats
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  1. Preheat oven to 200 F.
  2. In food processor, process or pulse dates until chopped and rough texture forms. Add pecan pieces, oats, chia seeds, vanilla extract, cinnamon and kosher salt; process about 1 minute until crumbly dough forms.
  3. Line baking sheet or jelly roll pan with parchment paper. Dump dough into center of parchment paper and use rolling pin to roll into 6-by-10 1/2-inch rectangle. Cut dough into 14 bars about 1 1/2-by-3 inches or into desired shapes.
  4. Bake bars 30 minutes. Cool bars to room temperature then refrigerate in sealed container between sheets of wax paper.
  5. To package for on-the-go snacking, cut 4-by-6-inch rectangles of wax paper, wrap around bars and secure with tape.

Cheesy Spinach Ravioli

Prep time: 10 minutes
Total time: about 1 hour
Yield: 17-20 ravioli

Dough:

  • 3          cups all-purpose flour, divided
  • 1          pinch salt
  • 1/4       teaspoon garlic powder
  • 1/2       teaspoon olive oil
  • 4          whole eggs
  • 2          egg yolks
  • water

Filling:

  • 1/2       teaspoon olive oil
  • 2          cups chopped spinach, fresh or frozen
  • 1          pinch salt
  • 1          pinch pepper
  • 1          container (15 ounces) ricotta cheese

Toppings:

  • 1          jar (24 ounces) RAGÙ Old World Style Traditional Sauce
  • shredded mozzarella cheese
  • 2          chopped basil leaves
  • 2          chopped sprigs rosemary
  • grated Parmesan cheese (optional)
  1. To make dough: Place 2 1/2 cups flour in bowl and make hole in center. Add salt, garlic powder, olive oil, eggs and egg yolks to hole. Slowly bring flour into middle and knead into ball. Cover with bowl and let rest 20 minutes.
  2. To make filling: In pan over medium heat, add olive oil; add spinach, salt and pepper then saute until spinach is wilted. Let cool then mix in ricotta cheese; set aside.
  3. Cut dough in half. Sprinkle remaining flour on large cutting board and roll dough to 1/8-inch thickness. Cut into rectangle then cut into 2-3-inch squares. Set scraps aside. Brush water on squares then spoon 1 teaspoon spinach-ricotta filling in center of every other square. Top with remaining squares. Use fork to crimp edges. Repeat with remaining dough. Form scraps into ball and repeat.
  4. Put ravioli in boiling water, 8-10 minutes; they will rise to top when done.
  5. In saucepan over medium heat, heat sauce until simmering.
  6. Place ravioli on plate and top with warm sauce, mozzarella cheese, basil and rosemary. Grate Parmesan cheese on top, if desired.

  • 2 green onions, thinly sliced
  • 1 round bread loaf (16 ounces), unsliced
  1. Heat oven to 350 F.
  2. In medium bowl, blend ricotta cheese and sour cream until smooth. Add spinach, ham, Parmesan cheese and green onions; mix until blended.
  3. Cut 1-2-inch diameter circle out of top of bread loaf. Reserve top. Remove bread inside loaf, leaving about 1 inch along sides. Pour cheese mixture into bread bowl. Replace top. Cover bread loaf in aluminum foil and bake 60 minutes, or until warmed through.
  4. Take bread removed from inside bread bowl and cut into dipping sized chunks.
  5. Remove bread from aluminum foil and place on platter. Scatter bread chunks around bread bowl to use for dunking in cheese sauce.

  • 1/4 teaspoon ground cloves
  • salt, to taste
  • pepper, to taste
  • 1 1/2 tablespoons brown sugar
  • 1 1/2 tablespoons water
  • 1 cup pecans, rough chopped
  1. Preheat oven to 375 F.
  2. In pot over medium heat, melt butter. Add flour and cook 4 minutes, stirring occasionally. Reduce heat to low then slowly add milk gradually, ensuring it is incorporated before adding more. Turn heat to medium-high and cook until thickened, stirring continuously. Remove from heat and set aside.
  3. In bowl, add drained potatoes, sauce, bacon, cinnamon, nutmeg, ginger and cloves. Season with salt and pepper, to taste; mix well.
  4. In greased 8-by-11-inch baking dish, line potatoes on sides in desired pattern. Stuff extra bacon between potatoes from remains left in bowl. Pour extra sauce over potatoes.
  5. Bake 60 minutes.
  6. In small pot over medium-high heat, add brown sugar and water. Cook to melt sugar and allow to bubble, about 5 minutes. Add pecans; stir 2 minutes. Lay on parchment-lined baking sheet and allow to cool. Once cool, chop into pieces.
  7. Remove potatoes from oven and sprinkle pecans over top.

  • 1 prepared 9-inch double-crust pie pastry, divided
  • 3/4 cup Domino Light Brown Sugar
  • 1 tablespoon all-purpose flour

  1. Preheat oven to 375 F. Line 9-inch pie pan with half pastry then prick bottom and sides with fork.
  2. In large saucepot, combine brown sugar, flour, butter, cinnamon, nutmeg, salt, lemon juice and lemon zest. Add apples and toss to coat evenly. Slowly heat over medium-low heat, stirring occasionally, until sugar dissolves and apples begin to soften and cook down to about 6 cups.
  3. Turn apple mixture into lined pie plate. Top with remaining pastry. Trim and flute edges with fork. Slit top crust to allow steam to escape.
  4. Bake 35-40 minutes, or until crust is golden.
  5. Serve warm or at room temperature. Cover and refrigerate leftovers.

Lamb Chops:

  • 8-10 New Zealand grass-fed lamb rib chops
  • 1 teaspoon brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • olive oil
  1. To make glaze: In small bowl, whisk cranberries, maple syrup, orange juice, orange zest, garlic, Dijon mustard, salt and pepper. Set aside.
  2. To make lamb chops: Pat lamb chops dry with paper towel.
  3. In small bowl, whisk brown sugar, chili powder, smoked paprika, salt and garlic powder.
  4. Sprinkle dry rub on lamb chops and press mixture into meat.
  5. In large skillet, heat thin layer olive oil over medium heat until drop of water sizzles in pan. Sear rib chops 2 minutes on each side, or until internal temperature reaches 140 F. Remove chops from pan and set aside.
  6. Add glaze to pan and cook 3-5 minutes, whisking constantly until reduced by half.
  7. Drizzle glaze over chops before serving.

  • 1  cup ricotta cheese
  • 2  teaspoons lemon zest
  • 4  thick slices bread (sourdough or artisan)
  • olive oil
  • 16 ounces Michigan Asparagus
  • 1  tablespoon butter
  • flaky sea salt
  • 1 tablespoon chopped fresh dill, plus additional, for garnish, divided
  • 1 tablespoon fresh lemon juice
  • 4 slices prosciutto, thinly sliced
  • freshly cracked pepper
  1. Stir ricotta and lemon zest.
  2. Heat grill over medium-high heat and brush both sides of each slice of bread generously with olive oil. Grill 3-5 minutes per side, until lightly charred and toasted.
  3. Trim asparagus by breaking off woody bottoms. Slice into 1-inch pieces.
  4. In skillet over medium heat, heat butter. Add asparagus, sprinkle with flaky sea salt and cook, stirring occasionally, 3-4 minutes. Remove from heat and stir in 1 tablespoon fresh dill and lemon juice.
  5. Layer bread with lemon ricotta, asparagus and prosciutto. Top with freshly cracked pepper, flaky sea salt and chopped dill.

  • 1/8      cup water
  • 1/4      cup granulated sugar
  • 2         cups fresh or frozen strawberries
  • 2         cups fresh or frozen blueberries
  • 2         cups fresh or frozen raspberries
  • 2         cups fresh or frozen blackberries
  • 1         teaspoon fresh lemon juice
  • 1/8      teaspoon salt
  • ricotta cheese
  • pistachios, chopped
  • granola
  1. In small sauce-pan, combine water, sugar, berries, lemon juice and salt. Bring to boil then simmer 20 minutes or until compote reduces and coats spoon. Cool to room temperature.
  2. Layer bowl with ricotta cheese, berry compote and pistachios. Repeat layers then top with granola. Serve immediately.

Note: If making ahead, add granola before serving.

Ricotta Bruschetta

Prep time: 10 minutes
Cook time: 15 minutes

  • 1          loaf Italian bread, cut diagonally into 1/2-inch thick slices
  • 2          tablespoons Bertolli Organic Mild Olive Oil
  • 1          clove garlic
  • 1⁄3       cup Bertolli Tomato & Basil Sauce
  • 1        container (15 ounces) ricotta cheese
  1. Heat oven to 425° F.
  2. Arrange bread on baking sheet. Evenly brush with oil. Bake 10 minutes, or until golden brown.
  3. Rub toast evenly with garlic then top with sauce and cheese. Bake 5 minutes, or until cheese is golden brown. Serve hot.

Prosciutto and Arugula Rustica Pizza

Prep time: 15 minutes
Cook time: 10 minutes
Servings: 4

  • 1          cup Bertolli Rustic Cut Three Cheese with Aged Asiago, Romano & Parmesan Sauce
  • 1          prebaked pizza crust (12 inches)
  • 1/2       cup shredded fontina cheese
  • 1          ounce prosciutto, thinly sliced
  • 2          cups arugula
  • 1          tablespoon Parmesan cheese, grated
  • 1          tablespoon toasted pine nuts
  • 1          tablespoon Bertolli Extra Virgin Olive Oil
  • 1          tablespoon Bertolli Balsamic Vinegar of Modena
  1. Heat oven to 450° F.
  2. Evenly spread sauce on crust then top with fontina cheese. Bake 10 minutes, or until cheese is melted, and remove from oven.
  3. Top with prosciutto. Arrange arugula in center of pizza then sprinkle with Parmesan cheese and pine nuts. Drizzle olive oil and vinegar over arugula and serve.

Eggs in Purgatory

Servings: 4

Eggs:

  • 1          jar (23 ounces) Bertolli Rustic Cut Roasted Garlic Marinara Sauce
  • 1/2       cup water
  • 4          eggs
  • salt, to taste
  • pepper, to taste
  • 2          tablespoons freshly grated Parmesan cheese
  • 1          tablespoon chopped parsley

Bread:

  • 4          slices ciabatta, sliced about 1/2-inch thick
  • 1 1/2    tablespoons Bertolli Extra Virgin Olive Oil
  • 1          large clove garlic, peeled but not chopped
  1. To make eggs: In large skillet with high sides over medium-high heat, add marinara sauce. Pour water into empty jar, swish it around to lift any sauce left in jar and pour it over sauce in skillet. Bring to low boil.
  2. Using back of wooden spoon, make four small wells in sauce. Carefully crack eggs, one at a time, and drop each egg into a separate well in bubbling sauce. Sprinkle salt and pepper on each one, to taste; cover skillet with lid and cook 7-8 minutes, or until egg whites set.
  3. When eggs are cooked to desired doneness, sprinkle with Parmesan cheese and chopped parsley.
  4. To make bread: Char bread on bruschetta pan or indoor grill pan about 1 minute on each side until toasted. Once toasted, rub with clove of garlic on both sides then drizzle with olive oil.
  5. Serve eggs with hunks of charred garlic bread.

Note: If using skillet larger than 12 inches, you can add eight eggs instead of four for additional servings.

Carrots and Fresh Herbs with Champagne-Dijon Vinaigrette

Prep time: 10 minutes
Servings: 6

Champagne-Dijon Vinaigrette:

  • 2          tablespoons champagne vinegar
  • 1          teaspoon Dijon Mustard
  • 1          tablespoon clover honey
  • 1/2       cup Carapelli Organic Olive Oil
  • 1/2       teaspoon garlic, minced
  • 1/2       teaspoon sea salt
  • 1/4       teaspoon freshly ground black pepper
  • 1          teaspoon fresh parsley, finely chopped
  • 1          teaspoon basil, finely chopped

 

  • 1          pound carrots, peeled and finely shredded
  • 2          tablespoons Italian parsley, chopped
  • 2          tablespoons chives, thinly sliced, plus more cut into 3/4-inch  pieces, for garnish
  • 1/3       cup Champagne Vinaigrette
  • fine sea salt, to taste
  • freshly ground black pepper,  to taste
  • chive sticks, for garnish
  1. In medium mixing bowl, combine champagne vinegar, Dijon and honey. Whisk constantly until well combined. While whisking, slowly drizzle in olive oil to emulsify. Add garlic, salt, pepper, parsley and basil: whisk to combine.
  2. In mixing bowl, toss carrots, parsley and chives. Add dressing. Season, to taste, with sea salt and freshly ground black pepper. Garnish with chive sticks.

Notes: Vinaigrette can be stored in refrigerator up to five days. For zestier salad, add additional 2 tablespoons vinaigrette to carrots; serve with crusty bread.

Whipped Ricotta and Goat Cheese Beet Skewers

Prep time: 20 minutes
Cook time: 3 hours, plus cooling time
Servings: 42 skewers

Beets:

  • 2          beets (about 1 pound), 3 inches in diameter, peeled and sliced into 3/4-inch chunks
  • 1          tablespoon Carapelli Oro Verde Extra Virgin Olive Oil, plus more for drizzling
  • 1/2       teaspoon fresh thyme leaves
  • 1          teaspoon sea salt
  • arugula, for garnish
  • flaked sea salt, for garnish

Whipped Ricotta and Goat Cheese:

  • 4          ounces goat cheese
  • 1/4       cup whole milk ricotta cheese
  • 1          tablespoon Carapelli Oro Verde Extra Virgin Olive Oil
  • 1/4       teaspoon lemon zest
  • 1/8       teaspoon sea salt
  • 1/8       teaspoon freshly ground black pepper
  1. Heat sous vide water bath to 185° F.
  2. In mixing bowl, combine beets, olive oil, thyme and salt; toss to coat. Remove beets from liquid and divide, placing them in single layer into two quart-sized vacuum-seal bags, leaving any excess liquid behind.
  3. Use vacuum sealer to remove air and double-seal bag. To use zip-top bags instead, slowly dip slightly open bags into large container filled with water, allowing water to displace air. Seal bags when air is removed.
  4. Place vacuum-sealed bag into prepared water bath, placing heavy, heat-resistant bowl on top of beets to keep them submerged, if necessary. Cook 3 hours.
  5. If you do not have a sous vide machine, bring large stock pot filled with water to rolling boil. Place vacuum-sealed bags in water. Reduce to gentle simmer, cover and cook 1 hour.
  6. Carefully remove beets from water bath and cool in sealed bag until they reach room temperature, about 30 minutes. Refrigerate at least 30 minutes more before serving.
  7. In mini food processor, cream goat cheese, ricotta and olive oil until smooth. Add zest, salt and pepper: stir to combine.
  8. Transfer cheese mixture to piping bag fitted with star tip and refrigerate until ready to use.
  9. To serve, remove beets from bag and arrange on serving platter. Pipe dollop of Whipped Ricotta and Goat Cheese onto each beet. Drizzle with olive oil.
  10. Garnish with arugula and pinch of flaked sea salt; place skewer through each beet to serve.

Olive Oil Drizzled Pecorino Popcorn

Prep time: 5 minutes
Cook time: 5 minutes
Servings: 4

  • 1/2       cup grated pecorino, plus more for garnish
  • 1/2       teaspoon freshly ground black pepper, plus more for garnish
  • 3          tablespoons Carapelli Unfiltered Extra Virgin Olive Oil, divided
  • 1/3       cup yellow popcorn kernels
  1. In bowl, combine pecorino and pepper; mix until well combined and there are no cheese clumps.
  2. In small saucepan over low flame, heat 2 tablespoons olive oil; keep warm.
  3. Add remaining olive oil and popcorn to large Dutch oven. Stir until all popcorn kernels are coated in oil.
  4. Cover Dutch oven with lid and cook over medium-high heat, shaking pot periodically. Once popcorn begins to pop, lower heat to medium and continue to shake pot approximately every 15 seconds. When popping slows considerably, remove Dutch oven from heat and allow to rest until popping ceases, about 30 seconds.
  5. Remove lid and transfer popcorn to large mixing bowl. Drizzle warm olive oil over popcorn; toss to coat. Sprinkle cheese mixture over popcorn; toss to coat.
  6. Divide popcorn into bowls. Sprinkle some freshly grated pecorino and dash of freshly ground black pepper over top; serve.

Sweet Ways to Cook with Sweet Corn

Chef Justin’s Kitchen Tips for Kids
Get the kids involved in buying, prepping and cooking corn. Here’s what they need to know to help you in the kitchen:

  • Look for fresh sweet corn with the husk still attached. They should feel and look moist and plump, with the kernels inside fat and shiny. The silk of the corn should be a little sticky and should look glossy, stiff and moist.
  • To shuck: Grasp the husks and pull down to expose the kernels. Continue until all the husks and silk-like hairs have been removed.
  • To remove kernels: Hold corn cob upright by the tip, with the large end solidly down on the table. Take a small sharp knife and cut down, removing the corn kernels. Be careful not to cut too deep and remove parts of the cob.

Sweet Corn with Southern BBQ Butter

Yield: 4 servings

  • 1/4 cup of your favorite barbecue sauce (sweet, spicy, etc.)
  • 1/4 stick butter
  • 4 ears fresh Florida sweet corn, shucked
  • Kosher salt and fresh ground pepper
  • Chives, for garnish
  1. Preheat oven broiler on high.
  2. Add barbecue sauce and butter to small saucepan.
  3. Stir over low heat until melted and smooth.
  4. Season corn lightly with salt and pepper. Place sweet corn in a medium-sized baking dish and pour barbecue mixture over sweet corn. Broil 4 inches from broiler, being sure to watch the whole time. Turn and baste for 6 to 8 minutes, or until golden.
  5. Garnish with chives. Serve warm.

Sweet Corn and Black Bean Enchiladas

Yield: 6 to 8 servings

  • 1 tablespoon vegetable oil
  • 1/2 cup onion, chopped
  • 1 cup fresh Florida sweet corn kernels
  • 2 bell peppers, diced
  • 1 teaspoon ground cumin
  • 1 cup salsa
  • 1 can low sodium black beans,
  • rinsed and drained
  • Kosher salt and freshly ground pepper
  • 10 6-inch corn tortillas
  • 2 cups shredded Monterey Jack cheese, divided
  • 1 8-ounce can enchilada sauce
  1. Preheat oven to 350°F.
  2. Lightly spray an 11 x 7-inch (2-quart) baking dish with pan release cooking spray.
  3. Add vegetable oil to a medium pan. Cook onion, corn and bell peppers over medium high heat for 3 minutes. Add cumin, salsa and black beans, and continue to cook for two minutes, stirring occasionally. Season with salt and pepper to taste. Remove pan from heat and let cool slightly.
  4. Place an even amount of the filling mixture in each tortilla. Using 1 cup shredded cheese, evenly distribute it on top of each tortilla. Carefully roll up each tortilla, and place seam side down in sprayed baking dish.
  5. Pour enchilada sauce over rolled enchiladas, spreading to coat all tortillas. Sprinkle with remaining 1 cup cheese.
  6. Bake 25 to 30 minutes or until cheese is melted and sauce is bubbly around edges. Remove from oven and let cool slightly.
  7. Serve with diced avocado, salsa and sour cream, if desired.

Sweet Corn and Ricotta Fritters

Yield: 4 to 6 servings

  • 2 ears fresh Florida sweet corn, kernels removed
  • 1/2 bunch fresh cilantro, chopped fine
  • 4 ounces low-fat ricotta cheese
  • 2 large eggs, beaten
  • 1/3 cup self-rising unbleached or whole-wheat flour
  • Kosher salt and fresh ground pepper
  • Olive oil (for shallow pan frying)
  1. In medium-sized bowl, combine corn, cilantro, ricotta, eggs, flour and a pinch of salt and pepper.
  2. Add a small amount of olive oil to a medium-high preheated sauté pan. Carefully add spoonfuls of corn mixture to hot pan. Cook on both sides until golden brown. Test the first done fritter, and adjust seasoning with salt and pepper. Serve with low-fat sour cream if desired.

Sweet Corn and Tomato Bisque

Yield: 4 servings

  • 2 tablespoons unsalted butter
  • 1/2 onion, finely chopped
  • 4 ears fresh Florida sweet corn, kernels removed
  • 1 large garlic clove, minced
  • 4 cups low-sodium broth (vegetable or chicken)
  • Kosher salt and fresh ground pepper
  • 2 tablespoons sour cream
  • 2 medium tomatoes, coarsely chopped
  • 1 scallion, thinly sliced
  • 1 tablespoon cilantro, finely chopped, plus more for garnish
  1. Melt butter in large, heavy pot. Add onion and cook over moderately high heat, stirring, until lightly browned, for about 6 to 7 minutes.
  2. Stir in corn and garlic, cooking until corn is lightly browned, about 5 minutes. Add broth and simmer until corn is tender, about 15 minutes. Lightly season with kosher salt and pepper to taste.
  3. Transfer half the soup into blender or food processor; purée until almost smooth. Add blended soup back into unblended soup; stir to combine.
  4. Add tomatoes, scallion and 1 tablespoon cilantro; bring to a boil. Serve hot and garnish with cilantro.
