Oak Smoked Brown Sugar Chili Rubbed Ribs

Prep time: 40 minutes
Cook time: 4 hours, 50 minutes
Servings: 6

  • 2          racks Chairman’s Reserve pork loin baby back ribs
  • oak wood chips
  • 1          can (6 ounces) tomato paste
  • 2          tablespoons brown sugar
  • 2          teaspoons chili powder
  • 1          teaspoon cumin
  • 1          teaspoon garlic powder
  • 1          teaspoon onion powder
  • 2          teaspoons kosher salt
  1. Heat outdoor grill or smoker on low. Using charcoal, heat coals until white. Soak oak wood chips in water 15-30 minutes. Spread wood chips over coals or use smoke box.
  2. In mixing bowl, combine tomato paste, brown sugar, chili powder, cumin, garlic powder, onion powder and salt.
  3. Rub tomato mixture over ribs and grill 1 1/2 hours on direct heat. Wrap ribs using heavy duty foil then move to indirect heat about 3 hours until tender.

Pigskin Potatoes

Prep time: 20 minutes
Cook time: 44 minutes
Servings: 8

  • 1 bag (1 1/2 pounds) Dynamic Duo or Terrific Trio Little Potatoes
  • 6 ounces plain cream cheese at room temperature
  • 1/3 cup finely shredded orange cheddar cheese
  • 3 tablespoons finely chopped fresh chives
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 jalapeno, finely diced (optional)
  • 1 pound thinly sliced bacon, rashers cut in half
  1. Heat oven to 400° F.
  2. Boil potatoes until fork tender, approximately 15-20 minutes. Cut in half and allow to cool.
    In bowl, use spatula to combine cream cheese, cheddar, chives, salt, pepper and jalapeno, if desired.
  3. Once chilled, spread cream cheese on half of cut potatoes and sandwich each with other halves. Wrap each potato using half rasher of bacon around cut middle to ensure cheese doesn't escape.
  4. Bake on middle rack 10 minutes. Flip and bake 10 minutes.
  5. Turn oven to broil. Broil 2 minutes, turn once and broil 2 minutes until bacon reaches desired crispiness.

Tip: Boil potatoes 2 days ahead. Fill and wrap potatoes 1 day ahead then bake and serve on game day.

A Sweet-Heat Snack

Finger foods and watch parties go hand-in-hand, which is why these baby back ribs are ideal for grabbing a couple (or more) and heading to your favorite spot on the couch. Glazed with a mixture of honey, chipotle peppers and mangoes for some sweet heat, they're cooked low and slow for fall-off-the-bone flavor.

Just wrap the ribs and sauce in aluminum foil, place over low indirect heat and let your grill do the work. To help simplify game day, try cooking a day in advance and warm in the oven a couple hours prior to kickoff.

Baby Back Ribs with Honey, Chipotle and Mango Glaze

Servings: 8

  • 2 racks baby back ribs
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 can chipotle peppers in adobo sauce
  • 4 ripe mangoes, cubed
  • 1 cup honey
  1. Remove ribs from package; rinse and pat dry. Remove membrane. Place in shallow pan, sprinkle with salt and pepper and set aside.
  2. In small saucepan over medium heat, cook chipotle peppers, mangoes and honey, stirring constantly, until cooked down and thick enough to coat back of spoon.
  3. Heat grill to 225-240° F.
  4. Wrap ribs and 2/3 of sauce mixture tightly in aluminum foil and place over indirect heat. Close lid. After 2 hours, flip ribs and cook 2 hours. Open aluminum and remove ribs, place directly on grill and brush with remaining sauce. Cook 30 minutes. Remove from grill and serve hot.

Meatballs

  • 1 Spanish white onion
  • 3 cloves garlic, minced
  • 3 cups diced bread (such as baguette)
  • water
  • 2 large eggs
  • 1/2 cup ricotta cheese
  • 1/2cup Parmesan cheese
  • 1 pound ground pork
  • 1 pound ground veal
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh Italian parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 2 tablespoons grapeseed oil
  • 3 cups basic tomato sauce
  1. In small saucepan over medium heat, sweat onion and garlic.
  2. In large bowl, soak bread in water 1-2 minutes. Strain excess liquid.
  3. In separate large bowl, add eggs, ricotta cheese, Parmesan cheese and onion-garlic mixture. Combine then add ground meat, soaked bread, extra-virgin olive oil, parsley and oregano. Mix thoroughly.
  4. Divide mixture evenly to form 10-12 meatballs and use hands to roll into shape.
  5. In large saute pan over high heat, brown meatballs in grapeseed oil on all sides.
  6. Place browned meatballs in separate saucepot with basic tomato sauce. Bring to simmer and finish cooking, about 1 hour.

Barbecue St. Louis Ribs

Serves: 12

Barbecue Sauce:

  • 2 cups ketchup
  • 2 cups apple cider vinegar
  • 1 cup Dijon mustard
  • 1 cup brown sugar
  • 2 tablespoons cayenne pepper
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper

Spice Rub:

  • 1/2 cup kosher salt
  • 1/4 cup ground mustard
  • 1/4 cup paprika
  • 1/4 cup black pepper
  • 1/4 cup cayenne pepper
  • 1/4 cup ground white pepper
  • 1/4 cup seafood seasoning
  • 2 tablespoons ground cumin
  • 4 full racks St. Louis-style ribs
  1. To make Barbecue Sauce: In bowl, mix ketchup, vinegar, Dijon mustard, brown sugar, cayenne pepper, salt and black pepper. Transfer to thick-bottomed saucepot over medium-low heat. Allow sauce to warm and mix over heat 10-15 minutes, stirring continuously. Remove and cool.
  2. To make Spice Rub: In bowl, mix salt, ground mustard, paprika, black pepper, cayenne pepper, white pepper, seafood seasoning and cumin. Keep dry and covered until ready to use.
  3. Remove silver skin from bottom side of ribs. Evenly rub each rack with 1/4 cup Spice Rub on top and bottom. Wrap each in plastic wrap and keep overnight in refrigerator or cooler.
  4. Heat smoker with pecan or other fruit wood to 165 F and maintain temperature. Remove plastic and place ribs in smoker 4 hours then check doneness. Ribs should be cooked but not falling off bone.
  5. Remove ribs from smoker and glaze each rack with 1/2 cup Barbecue Sauce. Return to smoker 30-40 minutes. Remove and glaze again with 1/2 cup sauce for each rack and cook 20 minutes.
  6. Remove ribs from smoker. Allow to rest 5 minutes then cut into single or double bone sections and serve.

Turkey Pot Pie

Serves: 4

  • 2 tablespoons butter
  • 1 Spanish white onion, chopped
  • 2 celery ribs, medium diced
  • 3 carrots, small diced
  • 3 cups cooked, shredded turkey (dark meat preferred)
  • 2 tablespoons fresh tarragon, chopped
  • 2 tablespoons fresh parsley, chopped
  • 4 tablespoons all-purpose flour
  • 4 cups turkey stock (or leftover gravy)
  • 2 potatoes, peeled and medium diced
  • 1 square prepared puff pastry
  • 1 egg, beaten
  1. Heat oven to 375 F.
  2. In medium saucepot, melt butter; add onion and sweat 4 minutes. Add celery and carrots; cook 4-5 minutes.
  3. Add turkey and cook 4 minutes. Add tarragon, parsley and all-purpose flour; cook 4 minutes. Add stock and bring to simmer. Add potatoes and simmer until fork tender.
  4. Pour filling into pie pan and top with pastry. Brush pastry with egg.
  5. Bake pie 20-30 minutes, or until crust is golden brown.

Elevate Your Summer Grilling

(Family Features) Weekend barbecues, birthday celebrations and family reunions are in full swing, so up your grill game from basic to bold with a few ideas to leave your guests wanting more.

Step outside your comfort zone and create some “wow-worthy” dishes with big flavors with these recipes from McCormick and chef Roger Mooking from Cooking Channel’s “Man, Fire, Food.”

Get started with these ideas:

  • Once ribs are grilled until tender, use a sharp knife to carefully slit skin on the back of each rib for easier bone removal.
  • Make a giant cheese-stuffed burger by lining a 9-inch round cake pan with foil. Add in half of the ground beef followed by a cheese layer. Top with remaining ground beef and shake on seasoning for maximum flavor.
  • Brine pork chops in the refrigerator for 8-10 hours before grilling to infuse with flavor and help make tender and juicy. Top with caramelized apples cooked in a cast-iron skillet.

Smokehouse Maple-Brined Pork Chops

Servings: 4

  • 1/3       cup sea salt
  • 1/4       cup, plus 2 tablespoons and pinch, McCormick Grill Mates Smokehouse Maple Seasoning
  • 1/2       cup packed light brown sugar, divided
  • 8          cups water, divided
  • 4          bone-in center-cut pork chops (3/4-inch thick, about 2 1/2-2 3/4 pounds total)
  • vegetable oil
  • 1          lemon, cut in half
  • 3          tablespoons unsalted butter
  • 2          Granny Smith apples, each peeled, cored and cut into six wedges
  • 1          tablespoon finely chopped fresh chives (optional)
  1. In medium saucepan, whisk salt, 1/4 cup seasoning, 1/4 cup sugar and 4 cups water. Bring to simmer, whisking constantly, until salt and sugar dissolve. Pour in remaining water and mix thoroughly. Transfer brine to large container with lid and cool to room temperature. Add pork chops to brine. Cover and refrigerate 8-10 hours.
  2. Heat grill to medium-high heat.
  3. Remove pork chops from brine and pat dry with paper towels. Brush lightly with oil. Season both sides of pork with 2 tablespoons seasoning.
  4. Grill until bottom side of pork chops are well marked and charred, 7-9 minutes. Flip and grill 4-6 minutes, or until cooked through and internal temperature registers 145° F. Let rest under tented foil.
  5. Place large cast-iron skillet on grill. Juice one lemon half into small bowl. Add 1 teaspoon lemon juice and remaining sugar to skillet and stir with heatproof spatula until mixture resembles wet sand. Cook with grill open, stirring frequently, until sugar melts and deepens to amber, about 8 minutes. Add butter and stir until melted. Once foam subsides, add apples. Close grill and cook, stirring gently to coat apples in caramel, until apples are tender-crisp, about 8 minutes. Remove skillet from heat and add remaining lemon juice and pinch of seasoning; stir gently.
  6. Arrange pork chops on platter and top with apples. Zest remaining lemon half over dish. Sprinkle with chives, if desired.

Best-Ever Buffalo Rack O’ Ribs Sandwich

Servings: 4

Slaw:

  • 1/4       cup mayonnaise
  • 1          tablespoon lemon juice
  • 1/2       teaspoon Lawry’s Seasoned Salt, plus additional, to taste
  • 1/8       teaspoon coarsely ground black pepper, plus additional, to taste
  • 2          cups shredded green cabbage
  • 1/2       cup shredded carrot
  • 1/4       cup diced celery, chopped
  • 2          tablespoons fresh celery leaves
  • 2          tablespoons fresh flat-leaf parsley, chopped

Ribs:

  • 1          rack (about 2 pounds) baby back ribs
  • 3          tablespoons firmly packed brown sugar
  • 1          tablespoon Lawry’s Seasoned Salt
  • 4          tablespoons hot sauce, divided, plus additional for spreading and serving (optional)

Sandwich:

  • 1          soft French loaf (12-14 inches), split
  • olive oil
  • Lawry’s Seasoned Salt
  • McCormick coarsely ground black pepper
  • 1/4       small red onion, thinly sliced
  • 1/4       cup crumbled blue cheese
  1. To make slaw: In medium bowl, whisk mayonnaise, lemon juice, seasoned salt and pepper. Add cabbage, carrot, celery, celery leaves and parsley; toss to combine. Sprinkle with additional seasoned salt and pepper, to taste.
  2. To make ribs: Prepare grill for indirect medium heat at about 350° F.
  3. Insert butter knife between membrane and bone on backside of ribs. Grab membrane with paper towel then pull to remove membrane; discard. Rub ribs on both sides with brown sugar and seasoned salt. Wrap ribs tightly in aluminum foil and place on indirect-heat side of grill. Grill ribs, turning once until meat is tender and pulling away from bone but not totally falling apart, about 1 hour, 15 minutes-1 hour, 30 minutes. Remove ribs from grill.
  4. Unwrap ribs and let cool until cool enough to handle. Using sharp knife, carefully slit skin on back of ribs and remove bones, keeping slab in one piece.
  5. Place boneless rib slab on direct-heat side of grill, rounded-side up, and brush top with 2 tablespoons hot sauce. Grill until underside begins to crisp, about 2 minutes. Carefully flip ribs and brush top with the remaining hot sauce. Continue to grill ribs until glossy and caramelized, about 2-3 minutes.
  6. To assemble sandwich: Scoop out most of soft insides of top of French bread to make room for toppings. Brush cut sides with oil and sprinkle with seasoned salt and pepper. Grill on direct-heat side of grill until bread is toasted and grill marks appear, about 3 minutes.
  7. Place ribs on bottom of loaf. Brush with additional hot sauce, if desired, and top with slaw, onions and blue cheese. Cover with top of loaf. Cut into four pieces.

Giant Bacon-Cheddar Juicy Lucy Burger

Servings: 8

  • 2          tablespoons McCormick Grill Mates Montreal Steak Seasoning, divided
  • 2          pounds 80 percent lean ground beef
  • 8          ounces sliced medium or sharp white cheddar cheese
  • 1/4       cup mayonnaise
  • 1/4       cup yellow mustard
  • 8          long pickle slices, plus 2 tablespoons brine
  • 1          round loaf soft bread (10 inches), cut in half horizontally
  • olive oil
  • sea salt
  • freshly ground black pepper
  • 1          large heirloom tomato, thinly sliced
  • 1          small red onion, thinly sliced
  • 8          slices bacon, cooked
  • 2          cups shredded iceberg lettuce
  1. Line 9-inch round cake pan with aluminum foil, leaving extra foil over edges of pan. Sprinkle with 2 teaspoons steak seasoning. Press half of ground beef into cake pan. Layer cheese in middle, leaving 1/2-1-inch border around sides. Sprinkle with additional 2 teaspoons seasoning. Top with remaining ground beef in even layer and press to seal in cheese. Sprinkle with remaining seasoning.
  2. Lift burger from cake pan using foil. Press to flatten to about 11 inches in diameter. Refrigerate until ready to cook. (Patty can be assembled up to 2 hours in advance.)
  3. In small bowl, whisk mayonnaise, mustard and pickle brine until smooth. Cover and refrigerate.
  4. Remove most of soft insides from top of bread to make hollow. Reserve insides.
  5. Prepare grill for indirect medium heat at about 350° F.
  6. Brush grill grates with oil. Hold burger on foil bottom and flip onto indirect-heat side of grill; peel off foil. Cook until sides of burger are cooked and it feels firm when lifted with spatula, about 8-10 minutes. Using two spatulas, carefully flip burger. Close grill and cook until burger is cooked through and cheese is melted, about 5-8 minutes longer. Move to direct-heat side of grill for 1-2 minutes per side for more char.
  7. Brush cut sides of bread with olive oil and sprinkle with salt and pepper. Grill on direct-heat side of grill until bread is toasted and grill marks appear, about 3 minutes.
  8. Place bottom half of bread on large cutting board. Spread with half of mustard sauce. Place burger on top and top with tomatoes, onions, pickles and bacon. Spread top of bread with remaining mustard sauce and fill with lettuce. Place top of bun on burger and cut into eight wedges.

  • 1          small fresh yellow onion, finely chopped
  • 1          tablespoon minced fresh garlic
  • 1          tablespoon Korean-style chili flakes
  • 1/4       cup chopped fresh green onions
  • 1          tablespoon toasted sesame seeds
  1. Heat oven to 400° F.
  2. In large bowl, toss cauliflower, sesame oil and salt until well coated. Arrange on nonstick baking sheet. Bake 10-12 minutes, or until golden brown and tender.
  3. In small bowl, whisk cooking wine, honey, soy sauce, vinegar and cornstarch until well blended; set aside.
  4. In large, nonstick skillet, heat vegetable oil over medium-high heat. Add yellow onions and garlic; cook 2-3 minutes, or until golden brown, stirring frequently. Remove from heat. Stir in chili flakes and wine mixture.
  5. Return pan to stove and adjust to medium heat. Bring to simmer, stirring constantly. Continue cooking and stirring 1-2 minutes, or until thickened. Add cooked cauliflower; stir gently to coat.
  6. Transfer cauliflower to serving dish. Top with green onions and sesame seeds.

Tips: The sauce mixture can also be used on chicken wings or grilled pork chops. In place of Korean-style chili flakes, use 1 teaspoon regular crushed red pepper flakes or 1 tablespoon Aleppo pepper.

Lettuce-Wrapped Korean Short Ribs

Prep time: 10 minutes, plus marinating
Cook time: 4 minutes
Servings: 4, about 6 ounces (pre-cooked) per portion

  • 3          tablespoons packed dark brown sugar, divided
  • 2          teaspoons kosher salt
  • 1          teaspoon ground black pepper
  • 1/2       teaspoon crushed red pepper flakes
  • 1 1/2    pounds thinly sliced, boneless beef short ribs
  • 1          cup Holland House Marsala Cooking Wine
  • 6          tablespoons toasted sesame oil
  • 1/4       cup roasted garlic paste
  • 2          tablespoons soy sauce
  • 1/2       cup chopped green onions, divided
  • 1          teaspoon cornstarch
  • 1          head fresh romaine lettuce, separated into large leaves         
  • 1/2       cup sliced fresh red radishes
  • 1/2       cup shredded fresh carrots dipping sauce
  1. In small bowl, combine 2 tablespoons brown sugar, salt, black pepper and red pepper flakes. Sprinkle evenly over short rib slices, gently rubbing into both sides. Place in re-sealable plastic bag.
  2. In bowl, whisk cooking wine, sesame oil, garlic paste, soy sauce and remaining brown sugar. Pour half of mixture into bag with meat and add 1/4 cup green onions. To marinate, refrigerate at least 1 hour, or up to 12 hours.
  3. In small saucepan, whisk remaining wine mixture and cornstarch until smooth. Bring to simmer over medium heat, whisking constantly. Cook 1 minute, or until thickened, stirring constantly. Set aside until cool. Stir in 2 tablespoons green onions.
  4. Heat grill to medium-high.
  5. Remove ribs from marinade, allowing excess to drip off. Discard marinade. Grill 1-2 minutes on each side, or until golden brown and cooked through.
  6. Cut ribs into 1-inch pieces. Serve with remaining green onions, lettuce, radishes, carrots and warm dipping sauce.

Tips: For fusion tacos, substitute corn or flour tortillas for lettuce leaves. In place of garlic paste, 2 tablespoons minced garlic can be substituted.

Sizzling Asian Vegetable Fried Rice with Savory White Wine Glaze

Prep time: 10 minutes
Cook time: 8 minutes
Servings: 4-6, about 1 cup per portion

  • 2          tablespoons vegetable oil
  • 1          tablespoon minced fresh garlic
  • 1/2       cup fresh chopped yellow onions
  • 1          cup fresh small white mushrooms, quartered
  • 1/2       cup chopped fresh carrots
  • 1/2       cup chopped fresh zucchini
  • 1/2       cup chopped fresh red bell peppers
  • 1/2       cup chopped fresh yellow bell peppers
  • 3          cups cold, cooked, long-grain white rice
  • 1/2       cup Holland House White Cooking Wine
  • 2          tablespoons oyster sauce
  • 1/2       cup fresh green onions, sliced 1/4-inch thick
  • 2          teaspoons toasted sesame oil
  • 1/4       teaspoon ground black pepper
  1. Heat heavy-bottomed, nonstick skillet over high heat. Add vegetable oil, garlic and onions. Stir-fry 1-2 minutes, or until lightly browned. Add mushrooms, carrots, zucchini, red bell peppers and yellow bell peppers; stir-fry 3 minutes. Add rice; stir-fry 3 minutes.
  2. Add cooking wine; stir-fry 2 minutes, or until dry. Add oyster sauce; stir-fry 2 minutes. Remove from heat. Stir in green onions, sesame oil and black pepper. Transfer to dish or bowl and serve.

Tip: To turn into a main course, add cooked beef, chicken or pork and serve topped with a fried egg.

Memphis-Style Dry Baby Back Ribs

Prep time: 10 minutes, plus 30 minutes stand time
Cook time: 4-6 hours
Servings: 2-4

Dry Rub:

  • 1/4 cup brown sugar
  • 1/4 cup kosher salt
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons dry mustard
  • 1 teaspoon black pepper
  • 1 teaspoon celery salt
  • 2 slabs Smithfield Fresh Pork Back Ribs, membrane removed
  • 1/4 cup prepared yellow mustard
  • apple juice or water, in spray bottle
  • barbecue sauce (optional)
  1. To make dry rub: In small bowl about 30 minutes before grilling, combine brown sugar, kosher salt, chili powder, dry mustard, black pepper and celery salt; mix well.
  2. Spread both sides of ribs with yellow mustard and sprinkle dry rub on top. Let stand at room temperature 30 minutes. Heat charcoal or gas grill to 250 F for indirect cooking.
  3. Place ribs, meaty side up, over drip pan and cook 4-6 hours until tender. Spritz ribs occasionally with water or apple juice using spray bottle.
  4. If using charcoal grill, add about 12 coals approximately every 45 minutes to maintain heat. Let ribs stand 10-15 minutes before serving. If desired, serve with barbecue sauce.

Sweet Sriracha Pork Skewers

Prep time: 15 minutes, plus marinade time
Cook time: 15-20 minutes
Servings: 4

  • 1 Smithfield Fresh Pork Tenderloin
  • 1/2 cup agave nectar
  • 2 tablespoons Sriracha sauce
  • 1 teaspoon minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 pint fresh pineapple chunks
  • wood skewers, soaked in water
  1. Trim skin off pork tenderloin and cut into 1-inch cubes.
  2. To make marinade: In bowl, combine agave, Sriracha sauce, garlic, soy sauce and rice vinegar, and whisk thoroughly.
  3. Pour marinade into re-sealable bag and add cubed pork tenderloin. Marinate for up to 24 hours in refrigerator. Place tenderloin and pineapple chunks on skewers, alternating so pineapple is tight against tenderloin.
  4. Heat charcoal or gas grill to medium heat. Grill skewers, turning every 5 minutes, until all sides are grilled. Cook until tenderloin chunks have reached internal temperature of 145° F.

Buffalo Chicken Sandwich

  • 4 boneless, skinless chicken breast halves (if thick, cut horizontally into two even pieces)
  • 1 bottle (12 ounces) Frank’s RedHot Buffalo Wings Sauce, divided
  • 1/4 cup blue cheese or ranch dressing
  • 4 hard rolls, split
  • 1/4 cup blue cheese crumbles
  • lettuce leaves (optional)
  • tomato slices (optional)
  • red onion rings (optional)
  1. Marinate chicken in 6 ounces Buffalo wings sauce for 30 minutes, or up to 3 hours.
  2. Mix remainder of Buffalo wings sauce and dressing together. Keep refrigerated until ready to use.
  3. Grill chicken 12 minutes, turning once, or until no longer pink in center.
  4. Place 2 tablespoons of mixed sauce on each roll half. Place chicken on top of roll half and top with 1 tablespoon blue cheese crumbles.
  5. Add lettuce, tomato and onion rings, if desired. Top with second roll half. Repeat for remaining sandwiches.

Sweet Chili Ribs

  • 2 full racks pork spareribs, trimmed (about 6 pounds)
  • 2 tablespoons fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 bottle (12 ounces) Frank’s RedHot Sweet Chili Sauce, divided
  1. Heat grill to 250° F and prepare for indirect cooking.
  2. Spread ribs with ginger and garlic. Place ribs on rib rack or in foil pan. Cook on covered grill 2 hours.
  3. Spread 6 ounces sweet chili sauce evenly over ribs then cook another hour, until tender.
  4. Baste ribs with remaining sweet chili sauce during last 15 minutes of cooking. If desired, at end of cooking time grill ribs over direct heat to char slightly.

Country-Style Ribs

Makes 4 servings

  • 1-1/2 cups Jack Daniel’s® Honey Smokehouse Barbecue Sauce, divided
  • 1-1/2 cups Jack Daniel’s Hickory Brown Sugar Barbecue Sauce
  • 3 pounds country ribs (boneless pork)
  • 1/2 cup water
  • 1/4 cup soy sauce
  • 1/4 cup honey
  1. Set aside 1/2 cup Honey Smokehouse barbecue sauce to use on cooked ribs.
  2. Place ribs in 4-quart saucepot. Combine remaining ingredients and pour over ribs. Cover and simmer 1 hour or until tender. While cooking, prepare grill.
  3. Remove ribs from sauce and discard liquid. Grill 15 minutes or until browned. Brush on reserved sauce to finish ribs.

 

Backyard Brawl Baked Beans

Makes 4 servings

  • 4          slices thick-sliced bacon, chopped
  • 2          cups chopped onion
  • 1/2       green pepper, chopped
  • 2          garlic gloves, chopped
  • 2          (16-ounce) cans Heinz Vegetarian Beans, drained and rinsed
  • 1/3       cup molasses
  • 1/2       cup Jack Daniel’s® Spicy Original Recipe Barbecue Sauce
  • 1/4       cup packed brown sugar
  • 1          tablespoon Lea & Perrins Worcestershire Sauce
  • 1          teaspoon dark brown mustard
  • 1          tablespoon dry mustard
  • 1          tablespoon Heinz Apple Cider Vinegar
  • 1/4       tablespoon Liquid Smoke, or to taste
  • Salt and freshly ground black pepper
  1. In heavy pot, cook bacon over medium heat to render fat. Add onion, green pepper and garlic, and cook until vegetables are soft, about 5 minutes.
  2. Stir in beans, molasses, barbecue sauce, brown sugar, Worcestershire sauce, brown mustard, dry mustard, cider vinegar and liquid smoke. Simmer, uncovered, until rich and thickly flavored, 10 to15 minutes, stirring with wooden spoon. Season to taste with salt and pepper.

Note: May also place beans in baking dish and bake in preheated 350°F oven about 30 minutes.

Bacon-Wrapped Barbecued Shrimp

Makes 4 servings

  • 1-1/2    cups Jack Daniel’s® Barbecue Sauce
  • 1          tablespoon garlic powder
  • 2          tablespoons lemon juice
  • 1          pound peeled and deveined shrimp
  • 1/2       pound pepper bacon (or preferred bacon)
  1. Cut bacon slices in half. Cook bacon partially (should not be crisp). Prepare grill.
  2. Combine barbecue sauce, garlic powder and lemon juice; pour half of mixture into separate bowl for use later. Dip shrimp into remaining sauce to thoroughly coat. Wrap each piece of shrimp with 1/2 piece of bacon. Place on skewer (leave small space between pieces). Brush grill with vegetable oil, place skewers on hot grill and baste with remaining sauce. Grill approximately 4 to 6 minutes.

 

Southern-Style Cole Slaw

Makes 4 servings

  • 1/4       cup Heinz Apple Cider Vinegar
  • 2          tablespoons dark brown sugar
  • 1/2       teaspoon celery seed
  • 1/2       teaspoon ground turmeric
  • 1/4       teaspoon ground ginger
  • Pinch of ground allspice
  • 3          ounces red onion, finely diced
  • 6          ounces green cabbage, coarsely chopped
  • 4          ounces cucumbers, peeled and seeded, coarsely chopped
  • 3          ounces red pepper, coarsely chopped
  • 2          ounces green pepper, coarsely chopped
  • 3          tablespoons olive oil
  1. In medium saucepan, bring vinegar, brown sugar, celery seed, turmeric, ginger and allspice to simmer on medium heat.
  2. Stir in onion, remove from heat and allow to stand 5 minutes to cool. Meanwhile, toss cabbage, cucumbers and peppers in mixing bowl. In another bowl, whisk olive oil into cooled vinaigrette mixture.
  3. Pour mixture over vegetables and toss to coat. Season with salt and pepper to taste.
