Quinoa Pudding:
- 2 bags Success Tri-Color Quinoa
- 4 cups almond milk
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Creamy Yogurt Layer:
- 2 cups plain Greek yogurt
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
Cran-Raspberry Layer:
- 1/2 cup cranberry sauce
- 1/4 cup orange juice
- 1 teaspoon orange zest
- 2 cups fresh raspberries
- 1/2 cup sliced almonds, toasted
- 2 cups gluten-free vanilla cookies, chopped
- 1/2 cup fresh raspberries
- To make quinoa pudding: Prepare quinoa according to package directions, substituting almond milk for water. Drain, reserving almond milk.
- Remove quinoa from bags and stir into almond milk in saucepan over medium heat. Stir in honey, vanilla and cinnamon. Bring to simmer. Cook, stirring constantly, 5-8 minutes, or until thickened slightly. Refrigerate 45-60 minutes, or until well chilled.
- To make creamy yogurt layer: In large bowl, stir yogurt, honey and vanilla. In separate bowl, beat cream until stiff peaks form. Stir whipped cream into yogurt mixture until blended. Refrigerate until ready to use.
- To make cran-raspberry layer: In medium bowl, stir cranberry sauce, orange juice and orange zest. Gently fold in raspberries.
- To assemble: In 10-cup trifle dish, layer 1/3 quinoa mixture, 2 tablespoons almonds, 1/3 cran-raspberry mixture, 1/3 vanilla cookies and 1/3 yogurt mixture. Repeat layers twice. Garnish with remaining raspberries and almonds.
Pumpkin Pecan Rice Pudding Bars
Prep time: 10 minutes
Cook time: 40 minutes
Servings: 4-6
- 1 bag Success White Rice
- 1 cup pecans
- 4 cups coconut milk
- 1 can (15 ounces) pumpkin puree
- 3/4 cup brown sugar
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 3 eggs
- 1/2 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons maple syrup
- Prepare rice according to package directions. Preheat oven to 350 F. Spread pecans on baking sheet and toast 8-10 minutes. Cool then chop.
- In large saucepan over medium-high heat, combine milk, pumpkin, brown sugar, pumpkin pie spice and salt. Bring to boil, stirring constantly. Slowly add about 1/2 cup hot liquid to eggs and beat well. Stir egg mixture back into saucepan and cook over medium-high heat 2 minutes. Remove from heat and stir in cooked rice, vanilla and pecans.
- Pour mixture into greased 13-by-9-inch baking dish. Bake, uncovered, 30 minutes, or until knife inserted near center comes out clean.
- Whip heavy cream to soft peaks then add maple syrup and continue beating until peaks form. Serve with warm pudding.
Tip: For sweeter pudding, increase brown sugar to 1 1/2 cups.

Grilled Honey Glazed Shrimp
Makes 6 servings
- 1 cup orange juice
- 3/4 cup 100% pure honey
- 1/3 cup lime juice
- 1/3 cup Dijon mustard
- 2 tablespoons chili powder
- 2 tablespoons paprika
- 2 teaspoons black and red pepper blend
- 2 teaspoons salt
- 2 teaspoons oregano
- 1 teaspoon California-style coarse onion powder
- 30 jumbo shrimp
- 12 bamboo skewers, soaked in water for at least 30 minutes
- Place orange juice, honey, lime juice, mustard and dry seasonings in a blender and blend on high for 1 minute until smooth. Pour into a saucepan and simmer over medium heat for 12 minutes or until thickened and reduced by half. Divide the glaze into 2 plastic containers, seal tightly and refrigerate until ready to use. Thread shrimp onto skewers. Cook shrimp over hot coals for about 3 minutes on each side or until completely pink, basting with one container of the glaze during grilling. Remove from grill and baste with remaining glaze.
Honey Marinated Chicken
Makes 4 servings
- 1 cup vegetable oil
- 2 tablespoons 100% pure honey
- 2 tablespoons Dijon-style mustard
- 2 cloves garlic, finely chopped
- 2 teaspoons salt
- 1/3 cup red wine vinegar
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon freshly ground black pepper
- 4 boneless, skinless chicken breast halves
- 1/3 cup 100% pure honey
- Blend all marinade ingredients (exclude the 1/3 cup honey); pour over chicken breasts. Marinate in refrigerator overnight in plastic bag. Remove chicken from marinade; discard marinade. Grill six to 10 minutes, turning once and basting occasionally with 1/3 cup honey during last five minutes of grilling.
Strawberry Chiffon Pie
Makes 8 servings
- 2 cups (12 ounces) coarsely chopped strawberries, fresh or frozen
- 3/4 cup 100% pure honey, divided
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 cup light sour cream
- Prepared 9-inch crumb crust
- In small bowl, mash strawberries and 1/4 cup honey; set aside.
- In small saucepan, sprinkle gelatin over cold water; let stand five minutes. Stir in remaining 1/2 cup honey. Warm over low heat until gelatin dissolves. Transfer to large bowl; stir in sour cream. Cover and refrigerate 20 to 30 minutes or until mixture mounds on a spoon when tested.
- Using electric mixer, beat mixture at medium speed until light. Fold in strawberries; mix until well combined. Pour into prepared crust. Cover and refrigerate at least two hours.
Citrus Salad with Avocado
Makes 6 servings
- 3 6-inch corn tortillas
- 4 oranges
- 4 grapefruits
- 1/3 cup 100% pure honey
- 1/4 cup raspberry vinegar
- 2 tablespoons oil
- 1/4 teaspoon salt
- 1 avocado, sliced
- Preheat oven to 255°F. Slice tortillas into very thin strips. Dry strips by placing on a cookie sheet and baking for approximately 15 minutes. Set aside
- Peel oranges and grapefruits, then section, seed and place in large bowl; set aside. In small bowl, whisk together honey, raspberry vinegar, oil and salt.
- Pour over citrus sections and toss gently.
- Top with avocado slices and tortilla strips.
Honey Raspberry Iced Tea
Makes 4 servings
- 2 cups freshly brewed tea
- 2 cups cranberry-raspberry juice
- 1/4 cup 100% pure honey
- In large, heat-proof pitcher, whisk together all ingredients until thoroughly combined and honey is dissolved. Chill until ready to serve. To serve, pour over ice.

Cherry-Glazed Duck Breast Salad

Cherry Vinaigrette:
- 2 cups dried cherries, divided
- 3 cups hot water
- 1/3 cup raspberry vinegar
- 1 cup extra-virgin olive oil
- salt, to taste
- freshly ground black pepper, to taste
- 2 Maple Leaf Farms Boneless Duck Breasts
- 6 cups loosely packed baby spinach leaves, washed and trimmed
- 2 cups blue cheese
- 2 cups slivered almonds
- To make Cherry Vinaigrette: In small saucepan over low heat, cover 1 cup cherries with water. Bring to simmer, cover pan and remove from heat. Let cherries soak in hot water 15-20 minutes. Strain cherries and reserve liquid.
- In food processor or blender, puree cherries until smooth, adding reserved liquid as necessary. Add raspberry vinegar to cherry mixture. With blender or food processor on low, slowly add olive oil, reserving about 2 tablespoons. Season mixture, to taste, with salt and pepper. Set aside Cherry Vinaigrette.
- Heat grill to medium heat. Remove skin from duck breasts. Rub with remaining olive oil and season liberally with salt and pepper. Pour some Cherry Vinaigrette into separate container to use as glaze; reserve remaining for dressing. Using pastry brush, coat duck breasts with Cherry Vinaigrette.
- Cook duck until crisp and dark brown (about 5-6 minutes), turn over and recoat with Cherry Vinaigrette. Continue cooking until second side is crisp and brown, brushing with vinaigrette as needed, about 4 minutes, or until internal temperature reaches 155 F. Remove to cutting board and let rest at least 5 minutes.
- Place spinach in mixing bowl. Toss spinach with enough dressing to coat leaves. Add blue cheese, almonds and most of remaining dried cherries, reserving some of each for garnish. Season with salt and pepper.
- Divide spinach mixture among four bowls.
- Slice duck breast thinly on bias, starting at one end of each breast with knife at 45-degree angle.
- Fan slices of duck on top of each salad. Sprinkle each salad with crumbled blue cheese, almonds and dried cherries.
