- 1 Coleman Pork Loin (4 pounds)
- salt, to taste
- pepper, to taste
- 1 tablespoon olive oil
Glaze:
- 1 cup apple cider vinegar glaze
- 6 tablespoons whole grain mustard
- 4 teaspoons balsamic vinegar
- 1 teaspoon minced rosemary
- 1 teaspoon minced sage
- 1 teaspoon minced thyme
- 2 teaspoons minced garlic
- salt, to taste
- pepper, to taste
- 2 tablespoons olive oil
- 4-6 sliced apples
- Preheat oven to 350 F and line sheet pan with parchment paper. Set aside.
- Remove pork from packaging and pat dry with paper towel. Season all sides with salt and pepper, to taste.
- To make glaze: In bowl, whisk apple cider vinegar glaze, mustard, balsamic vinegar, rosemary, sage, thyme and garlic. Add salt and pepper, to taste. In steady stream, slowly add olive oil to emulsify while whisking.
- In large skillet, heat oil over medium-high heat. Sear pork loin 2-3 minutes on each side.
- Move pork to lined baking sheet and brush on about half the glaze. Roast 30 minutes.
- Remove pork from oven and spread sliced apples around pork loin. Brush remaining glaze over pork and apples. Bake 20-30 minutes, or until internal temperature reaches 150 F.
- Let pork loin rest at least 10 minutes before slicing.
Stuffing-Filled Pork Chops
Prep time: 10-15 minutes
Cook time: 30-45 minutes

Stuffing:
- 1 small box biscuit mix
- 1 stick butter
- 2-3 stalks finely diced celery
- 1 finely diced onion
- 1 teaspoon poultry seasoning
- 1-2 cups chicken broth
- 1 bag cornbread stuffing mix
- 2 eggs, beaten
- salt, to taste
- pepper, to taste
- 6 Coleman Natural bone-in or boneless pork chops
- oil
- 1 teaspoon minced garlic
- 1 teaspoon minced sage
- 1 teaspoon minced thyme
- 1 teaspoon minced rosemary
- To make stuffing: Bake biscuits according to package directions 1 day ahead. Dry biscuits will absorb more broth.
- Preheat oven to 350 F.
- In skillet, melt butter then add celery and onions. Saute until onions are translucent then add poultry seasoning and half the broth. Set aside to cool.
- In bowl, combine stuffing mix, crumbled biscuits and eggs.
- Add onion mix to bowl and mix well. Add leftover broth if mixture is too dry. Set aside.
- Slit each chop on rounded side, cutting almost through to bone, to create deep pockets for stuffing.
- Season chops with garlic, sage, thyme and rosemary. Fill each chop with stuffing mixture. Use toothpicks to keep chops closed.
- Preheat skillet with oil over medium-high heat and sear each chop 2-3 minutes on each side.
- Once chops are seared, add remaining stuffing to pan, cover with foil and bake 30-45 minutes until chops reach 140 F in center. Remove foil for last 10 minutes to brown top of stuffing, if desired.

Sherry Cherry Pork Loin Roast

Cook time: 5-6 hours
Servings: 8-10
- 7 tablespoons avocado or grapeseed oil, divided
- 2 large Vidalia onions, halved and thinly sliced
- 4 teaspoons kosher salt, divided
- 1 pork loin roast (4-4 1/2 pounds), trimmed and patted dry
- 3 teaspoons freshly ground black pepper, divided
Sherry Cherry Sauce:
- 3/4 cup Holland House Sherry Cooking Wine
- 5-6 cloves garlic
- 1 cup frozen Bing cherries, divided
- 1 1/2 tablespoons dry mustard powder
- 4 tablespoons Holland House Balsamic Vinegar
- 2 tablespoons soy sauce
- 1 bunch fresh parsley, large stems removed, plus additional reserved for garnish
- 3 tablespoons cornstarch (optional)
- In large slow cooker on high heat, add 2 tablespoons oil, sliced onions and 1 teaspoon salt.
- Season roast evenly on all sides with 2 teaspoons salt and 1 teaspoon pepper.
- Place large skillet over medium heat. Add 2 tablespoons oil to pan. Sear pork loin 3 minutes on each side until golden brown. Transfer roast to slow cooker on top of onions.
- Cover and cook on low 3 hours.
- To make Sherry Cherry Sauce: In blender, blend sherry cooking wine, garlic, 1/2 cup cherries, mustard powder, balsamic vinegar, soy sauce, parsley, remaining olive oil, remaining salt and remaining pepper until smooth; set aside.
- After pork loin cooks 3 hours, add Sherry Cherry Sauce around pork roast. Cover and cook 2-3 hours on low.
- To glaze, brush roast with warm sauce 3-4 times in last hour of cooking.
- Once pork reaches internal temperature of 145 F, remove and let rest 15-20 minutes before slicing.
- To finish sauce, remove 1/4 cup cooking liquid and mix with cornstarch to make a slurry. Whisk slurry and remaining cherries into sauce. Cook in slow cooker on high 15 minutes, stirring occasionally.
- Slice roast 1/2-inch thick, garnish with fresh parsley and serve with Sherry Cherry Sauce and braised onions.
Tuscan White Bean Soup

- 4 cups chicken stock
- 1 cup Holland House White Cooking Wine
- 1 can (14 1/2 ounces) diced tomatoes
- 1 medium yellow onion, diced small
- 1 cup celery, diced
- 1 cup carrots, diced
- 6 large cloves garlic, minced
- 3 cans (15 1/2 ounces each) cannellini beans, rinsed and drained
- 1 can (13 3/4 ounces) artichoke hearts, rinsed and drained
- 1 bay leaf
- 1 teaspoon poultry seasoning
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/4 teaspoon dried rosemary
- 4 cups kale (about 6 ounces), cleaned, destemmed and chopped
- 5 ounces pancetta or bacon, diced
- 8 teaspoons Parmesan cheese, shaved (for garnish)
- Place chicken stock, white cooking wine, tomatoes, onion, celery, carrots, garlic, cannellini beans, artichoke hearts, bay leaf, poultry seasoning, salt, pepper and rosemary in slow cooker. Cover and cook on low 7-8 hours or high 4-5 hours.
- About 30 minutes before serving soup, stir in kale and cover.
- In 10-inch skillet over medium heat, cook pancetta until crispy, about 4 minutes. Move pancetta to paper towel-lined plate to drain.
- Ladle soup into bowls and sprinkle with pancetta and Parmesan cheese shavings.
Sherry, Ham and Cheese Brunch Bake

- 8 tablespoons salted butter, melted, plus additional for greasing pan, divided
- 2 teaspoons olive oil
- 2 large shallots, minced
- 1/2 cup Holland House Sherry Cooking Wine
- 1 package (20 ounces) frozen hash brown potatoes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups (8 ounces) shredded white cheddar cheese
- 1 cup (4 ounces) shredded Parmesan cheese
- 8 ounces precooked ham, cut into 1/2-inch pieces
- 8 large eggs
- 1 1/4 cups whole milk
- 1/2 teaspoon dry mustard powder
- 2 tablespoons fresh chopped dill
- 1 teaspoon fresh chopped dill, for garnish (optional)
- 2 teaspoons freshly grated Parmesan cheese, for garnish (optional)
- Move oven rack to middle position and preheat to 400 F. Generously grease 9-by-13-inch baking dish with butter; set aside.
- In 10-inch nonstick skillet, add olive oil and preheat pan over medium heat. Add shallots and cook, stirring often, until softened and golden, about 7-8 minutes.
- Stir in cooking wine and cook until liquid is evaporated, about 3-5 minutes. Remove from heat.
- Add frozen hash browns to prepared baking dish. Pour melted butter over potatoes and add salt, pepper and caramelized shallots.
- Use spoon to mix well. Bake 30 minutes, or until potatoes are cooked through and some edges are beginning to brown. Remove potatoes from oven and reduce temperature to 325 F.
- Sprinkle cheddar cheese and 1 cup shredded Parmesan cheese evenly over potatoes followed by ham.
- In large measuring cup or small bowl, vigorously whisk eggs, milk, mustard powder and dill until fully combined and eggs become frothy, about 1 minute.
- Pour egg mixture evenly over potatoes, cheese and ham. Store covered in refrigerator if prepping night before.
- Bake 35-40 minutes, or until edges of casserole are golden brown and center of casserole is set.
- Cool 5 minutes before slicing and serving. Serve with chopped dill and grated Parmesan cheese, if desired.

Cranberry Orange Pork Loin
- 1 tablespoon oil
- 1 pork loin (4 pounds), tied at 1-inch intervals
- 14 ounces cranberry sauce
- 1 cup dried cranberries
- 3/4 cup orange juice
- 1/8 teaspoon cinnamon
- 3 strips orange zest
- salt, to taste
- pepper, to taste
- In skillet over medium heat, heat oil.
- Sear pork loin on all sides.
- In slow cooker, stir cranberry sauce, dried cranberries, orange juice, cinnamon and orange zest until combined. Set pork loin in middle of sauce mixture and drizzle sauce over meat.
- Cover and cook on low 4 hours, or until meat reaches 140-145 F.
- Transfer pork to cutting board. Remove twine.
- Strain cranberries from slow cooker; set aside. Pour strained liquid into skillet. Add salt and pepper, to taste. Simmer 7-8 minutes.
- Spoon cranberries and sauce over pork loin.

Garlic Rosemary Pork Loin

- 1 pound boneless pork loin
- olive oil cooking spray
- 1 tablespoon Dijon mustard
- 3 garlic cloves, minced
- 2 tablespoons fresh rosemary, thinly sliced
- Heat oven to 350° F.
- In small skillet over medium heat, cook pork loin, fatty-side down, 4-5 minutes to brown top and render some fat.
- Coat 7-by-11-inch baking dish with cooking spray. Place pork loin in dish.
- In small bowl, combine mustard, garlic and rosemary; stir well. Spoon mixture over pork. Transfer to oven and bake 45 minutes-1 hour, until loin is cooked through but still slightly pink in center.
- When pork is cooked, let rest 5 minutes before slicing. Slice and serve immediately.
Sweet Potato-Pumpkin Puree

- 3 large egg whites
- 5 tablespoons sugar substitute, divided
- 1/2 cup half pecans
- 1 1/2 pounds sweet potatoes, peeled
- 1/4 cup unsalted butter stick
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 15 ounces pumpkin (without salt, drained, cooked and boiled)
- Heat oven to 250° F. Lightly butter baking sheet.
- In medium mixing bowl, beat egg whites with electric mixer at high speed until foamy. Gradually add 3 tablespoons sugar substitute and continue mixing until soft peaks form. Spoon onto prepared baking sheet and spread with spatula to 1/4-inch thickness. Bake 35 minutes. Turn oven off; let meringue stand in oven 45 minutes. Crush meringue and place in bowl. Add pecans and toss gently to combine. Set aside.
- While meringue is resting, place sweet potatoes in medium saucepan. Cover with water to 2 inches above potatoes and bring to boil. Cook until tender, about 20 minutes, and drain. Return saucepan to medium-high heat. Add potatoes, butter, cream, remaining sugar substitute, salt, cinnamon, pumpkin pie spice and pumpkin puree. Stir to combine. Mash with potato masher until smooth. Heat through, about 1 minute.
- Transfer potato mixture to serving dish and cover with meringue topping.
Salted Caramel Cheesecake Bites

- 1/2 cup heavy cream
- 1/3 cup plain protein powder
- 2 tablespoons stevia
- 6 ounces cream cheese, at room temperature
- 1/3 cup chopped almonds or macadamia nuts
- 1 tablespoon sugar-free caramel syrup
- 1 teaspoon vanilla extract
- 1/8 teaspoon xanthan gum (optional)
- 1/4 teaspoon sea salt or sea salt flakes
- In large mixing bowl, combine heavy cream with protein powder and stevia. Whisk until smooth. Add cream cheese, almonds or macadamia nuts, caramel syrup and vanilla extract; blend until smooth. If cream cheese clumps slightly, mix with rubber spatula, breaking up bits of cream cheese against side of bowl.
- Sprinkle mixture with xanthan gum, if desired, and mix about 30 seconds. Mixture will thicken slightly.
- Cover tray that will fit into freezer with sheet of wax paper. Using soup spoon, scoop mixture onto tray, making 18 mounds. Alternatively, use two silicone candy molds or empty ice cube tray coated with olive oil spray and press cheesecake mixture into 18 molds. Sprinkle with sea salt.
- Freeze at least one hour before serving.
Note: Can be stored in freezer up to 1 month.
Tip: Switch up flavors by using sugar-free hazelnut syrup in place of caramel and hazelnuts or walnuts instead of almonds.
