Apple Cider Balsamic Glazed Pork Loin

Prep time: 10-15 minutes
Cook time: 45-60 minutes
Servings: 6

  • 1 Coleman Pork Loin (4 pounds)
  • salt, to taste
  • pepper, to taste
  • 1 tablespoon olive oil

Glaze:

  • 1 cup apple cider vinegar glaze
  • 6 tablespoons whole grain mustard
  • 4 teaspoons balsamic vinegar
  • 1 teaspoon minced rosemary
  • 1 teaspoon minced sage
  • 1 teaspoon minced thyme
  • 2 teaspoons minced garlic
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons olive oil
  • 4-6 sliced apples
  1. Preheat oven to 350 F and line sheet pan with parchment paper. Set aside.
  2. Remove pork from packaging and pat dry with paper towel. Season all sides with salt and pepper, to taste.
  3. To make glaze: In bowl, whisk apple cider vinegar glaze, mustard, balsamic vinegar, rosemary, sage, thyme and garlic. Add salt and pepper, to taste. In steady stream, slowly add olive oil to emulsify while whisking.
  4. In large skillet, heat oil over medium-high heat. Sear pork loin 2-3 minutes on each side.
  5. Move pork to lined baking sheet and brush on about half the glaze. Roast 30 minutes.
  6. Remove pork from oven and spread sliced apples around pork loin. Brush remaining glaze over pork and apples. Bake 20-30 minutes, or until internal temperature reaches 150 F.
  7. Let pork loin rest at least 10 minutes before slicing.

Stuffing-Filled Pork Chops

Prep time: 10-15 minutes
Cook time: 30-45 minutes
Servings: 6

Stuffing:

  • 1 small box biscuit mix
  • 1 stick butter
  • 2-3 stalks finely diced celery
  • 1 finely diced onion
  • 1 teaspoon poultry seasoning
  • 1-2 cups chicken broth
  • 1 bag cornbread stuffing mix
  • 2 eggs, beaten
  • salt, to taste
  • pepper, to taste
  • 6 Coleman Natural bone-in or boneless pork chops
  • oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced sage
  • 1 teaspoon minced thyme
  • 1 teaspoon minced rosemary
  1. To make stuffing: Bake biscuits according to package directions 1 day ahead. Dry biscuits will absorb more broth.
  2. Preheat oven to 350 F.
  3. In skillet, melt butter then add celery and onions. Saute until onions are translucent then add poultry seasoning and half the broth. Set aside to cool.
  4. In bowl, combine stuffing mix, crumbled biscuits and eggs.
  5. Add onion mix to bowl and mix well. Add leftover broth if mixture is too dry. Set aside.
  6. Slit each chop on rounded side, cutting almost through to bone, to create deep pockets for stuffing.
  7. Season chops with garlic, sage, thyme and rosemary. Fill each chop with stuffing mixture. Use toothpicks to keep chops closed.
  8. Preheat skillet with oil over medium-high heat and sear each chop 2-3 minutes on each side.
  9. Once chops are seared, add remaining stuffing to pan, cover with foil and bake 30-45 minutes until chops reach 140 F in center. Remove foil for last 10 minutes to brown top of stuffing, if desired.

Chorizo and Oaxaca Tamales

Prep time: 60 minutes
Cook time: 60 minutes
Servings: 10-12

  • 40 dried corn husks
  • water
  • 3 packages Cacique Pork, Beef or Soy Chorizo
  • 1 medium onion (about 1 cup), minced
  • 8 pounds basic tamale dough, at room temperature
  • 3 packages (10 ounces each) Cacique Oaxaca Cheese, cut into 1/2-inch strips
  • tamale steamer
  • Cacique Crema Mexicana, for serving
  • Cacique Homestyle Mild Salsa, for serving
  1. In large bowl, cover corn husks with boiling water and soak at least 1 hour. Remove excess water and pat each husk dry.
  2. In large skillet, cook chorizo according to package instructions. Add onions; saute over medium heat until translucent, about 5 minutes. Cool thoroughly.
  3. To make tamales: Prepare one husk at a time by placing husk on open palm, smearing 3 tablespoons tamale dough on husk from side to side and to bottom, leaving 3 inches of top untouched for folding. Place 1 tablespoon chorizo mixture in center and top with one strip of Oaxaca. Fold 1/3 of husk to left and 1/3 to right, overlapping; pinch bottom to seal and gently fold over top to create small rectangle.
  4. Add adequate room temperature water to tamale steamer and set steamer grate. Place formed tamales, vertically and upside down, tightly packed. Once first layer of tightly packed tamales is complete, begin second layer of tamales horizontally.
  5. Cover and steam over medium-high heat 45 minutes-1 hour. Check water level at 45 minutes. If water is low, gently add hot water to side of pot.
  6. Remove one tamale to check doneness. Tamale is cooked when dough separates from husk when unwrapping. Serve hot with crema and salsa.

Oaxaca, Potato and Chorizo Empanadas

Prep time: 20 minutes
Cook time: 30 minutes
Yield: 24 empanadas

Dough:

  • 1 stick, plus 6 tablespoons, cold unsalted butter, cubed
  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 1 egg, at room temperature, whisked

Filling:

  • 1 package Cacique Pork Chorizo
  • 2 russet potatoes, cubed
  • 5 ounces Cacique Oaxaca Cheese, cubed
  • 1 egg, well-beaten, for egg wash
  1. Preheat oven to 350 F.
  2. To make dough: Use pastry cutter or fork to cut butter into flour until it forms crumbly consistency. Sprinkle in salt and stir. Pour in warm water and egg; stir until clumpy dough forms. Knead dough about 5 minutes. Cut dough into 24 pieces and, using hands, roll each piece into ball. With rolling pin, roll balls evenly into 5-6-inch circles.
  3. To make filling: In pan over medium heat, cook chorizo, stirring until it crumbles. Add cubed potatoes. Cover and cook until potatoes are soft then uncover and cook 5-10 minutes until liquid evaporates.
  4. Fill empanadas by placing 2-3 tablespoons chorizo and potato mixture with 2-3 Oaxaca cubes in each dough circle. With finger, run egg wash across one side of circles. Fold over and seal edges by pressing down with fork or create folds and pinch to seal filling inside. Brush tops with egg wash.
  5. Prepare parchment-lined baking sheets and place empanadas on sheets. Bake 12-15 minutes until golden-brown.

  • 3/4 cup evaporated 2% milk
  • 3 tablespoons spicy brown mustard or Dijon mustard
  • 3/4 teaspoon coarsely cracked black peppercorns
  • 1/2 teaspoon all-purpose flour
  • 4 boneless pork loin chops (1 1/4 pounds), cut 3/4-inch thick
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 teaspoon minced garlic
  • 1/4 cup reduced-sodium chicken broth
  • cooked noodles or rice (optional)
  • chopped fresh parsley (optional)
  1. In bowl, whisk milk, mustard, peppercorns and flour. Set aside.
  2. Pat pork chops dry with paper towels. Sprinkle both sides of chops with salt.
  3. In large nonstick skillet, heat oil over medium-high heat. Cook pork chops 3-4 minutes, or until browned. Turn and cook 3-4 minutes, or until thermometer inserted in thickest part of chops reads 145 F. Transfer chops to serving platter. Loosely cover with foil to keep warm.
  4. Add garlic to drippings in skillet. Cook 15 seconds. Stir in broth. Cook, stirring constantly, until most liquid evaporates. Stir in milk mixture and any accumulated juices from cooked pork. Cook and stir until just boiling. Immediately remove from heat and spoon sauce over chops.
  5. Serve with noodles or rice, if desired. Garnish with parsley, if desired.

Pasta with Yogurt Sauce

  • Salted water
  • 8 ounces angel hair pasta
  • 1 tablespoon vegetable oil, divided
  • 1 small white onion, minced
  • 8 ounces ground beef or lamb
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup plain yogurt
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 3 cloves garlic, minced
  • 1 tablespoon fresh mint or 1 teaspoon dried mint
  1. In medium pan, bring salted water to boil. Add pasta and cook according to package directions. Strain pasta and reserve about 1/2 cup water.
  2. In medium saute pan over medium heat, heat 1/2 tablespoon vegetable oil. Add minced onions. Cook until translucent and aromatic, 2-3 minutes. Add ground meat and season with salt and black pepper. Cook until meat is browned through, 8-10 minutes. Drain fat. Transfer cooked meat to bowl and set aside.
  3. In small pan over medium heat, cook yogurt, white pepper, cumin and garlic powder until mixture comes to soft boil and thickens. Remove pan from heat. Add pasta water to reach desired consistency.
  4. In same saute pan used to cook meat over medium heat, add remaining vegetable oil and saute garlic until golden in color. Add mint. Remove from heat and pour over yogurt mixture.
  5. Mix pasta, meat and yogurt sauce; serve.

Chicken with Creamy Sun-Dried Tomato Sauce

  • 3/4 cup half-and-half
  • 1/2 teaspoon all-purpose flour
  • 1 1/4 pounds boneless, skinless chicken breast cutlets (about 3/4 inch thick)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon oil from sun-dried tomato jar
  • 1/2 cup oil-packed, slivered sun-dried tomatoes, drained
  • 1/3 cup finely chopped onion
  • 1/3 cup reduced-sodium chicken broth
  • 1 tablespoon grated Parmesan-Reggiano cheese
  1. In bowl, whisk half-and-half and flour. Set aside.
  2. Pat chicken pieces dry with paper towels. If necessary, cut into four serving-size pieces. Sprinkle both sides of chicken with salt and pepper.
  3. In large nonstick skillet over medium heat, heat sun-dried tomato oil. Cook chicken pieces 3-4 minutes, or until browned. Turn chicken. Cook 3-4 minutes, or until thermometer inserted in thickest portion of chicken reads 165 F. Transfer to serving platter. Loosely cover with foil to keep warm.
  4. Add sun-dried tomatoes and onions to drippings in skillet. Cook 1-2 minutes, or until onion is tender. Stir in broth. Cook, stirring constantly, until most liquid evaporates. Stir in cream mixture and any accumulated juices from cooked chicken. Cook and stir until simmering and slightly thickened. Remove from heat. Stir in Parmesan-Reggiano cheese.
  5. To serve, spoon sauce over chicken.

Roasted Chicken and Zucchini Tostadas

  • 12 street taco-size corn tortillas
  • nonstick cooking spray
  • 1/2 cup plain Greek yogurt (2% or 5%)
  • 3 teaspoons lime juice, divided
  • 1/4 teaspoon garlic powder
  • 1 1/2 cups shredded or chopped rotisserie-roasted chicken breast
  • 1/2 cup seeded and chopped tomato
  • 1/2 cup chopped zucchini
  • 2 teaspoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon ground cayenne pepper
  • 1 cup (4 ounces) shredded Monterey Jack cheese
  1. Heat oven to broil.
  2. Line large baking sheet or 18-by-13-by-1-inch baking pan with foil. Arrange tortillas in single layer on pan. Lightly spray tortillas with nonstick cooking spray. Broil about 5 inches from heat 4-6 minutes, or until beginning to brown on one side. Remove from broiler. Carefully turn tortillas over.
  3. In medium bowl, stir yogurt, 1 teaspoon lime juice and garlic powder. Set aside. In another bowl, toss chicken, tomato, zucchini, remaining lime juice, olive oil, cumin and cayenne pepper.
  4. Spread yogurt mixture on unbrowned sides of tortillas. Top with chicken mixture. Sprinkle with cheese. Broil about 5 inches from heat 2-3 minutes, or until hot and cheese melts. Serve immediately.

Pecan-Crusted Pork Tenderloin

Total time: 35 minutes
Servings: 6

  • 1 pork tenderloin (about 1 1/2 pounds)
  • salt, to taste
  • pepper, to taste
  • 1/2 cup brown sugar, divided
  • 2 tablespoons soy sauce, divided
  • 2 teaspoons minced garlic
  • 1/2 cup pecan pieces
  • 1/4 cup pineapple juice
  • 2 tablespoons Dijon mustard
  1. Preheat oven to 400 F and lightly grease large baking dish. Season pork tenderloin with salt and pepper, to taste; set aside.
  2. In small bowl, stir 1/4 cup brown sugar, 1 tablespoon soy sauce and minced garlic. Spread mixture over pork.
  3. Press pecan pieces into brown sugar mixture on pork. Bake, uncovered, 20 minutes.
  4. In medium saucepan over medium-high heat, combine remaining brown sugar, remaining soy sauce, pineapple juice and Dijon mustard. Bring mixture to boil; reduce to simmer 3-5 minutes then remove from heat.
  5. Slice pork, spoon sauce over top and serve.

Mac and Cheese with Pecan Breadcrumbs

Total time: 50 minutes
Servings: 6

  • 8 ounces cavatappi pasta
  • 1 tablespoon butter
  • 1 block (8 ounces) cheddar cheese
  • 1/2 cup raw pecan pieces
  • 15 ounces part-skim ricotta cheese
  • 4 tablespoons sour cream
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 large egg, lightly beaten
  1. Preheat oven to 375 F.
  2. In salted boiling water, cook pasta according to package instructions. Drain, reserving 1/2 cup pasta cooking water. Return pasta to pot and stir in butter.
  3. Using box grater, shred cheddar cheese.
  4. Using food processor, process 1/4 cup shredded cheese with pecans to coarse breadcrumb consistency.
  5. Add remaining cheddar cheese, ricotta, sour cream, salt and pepper to warm pasta. Stir until thoroughly combined. Add egg; stir. Add reserved pasta water to loosen mixture; stir until smooth.
  6. Pour into buttered 9-inch square or round casserole dish and top evenly with pecan topping.
  7. Bake 30 minutes.

Celebrate Family and Food

Baked Stuffed Pasta Shells

  • 6          ounces jumbo pasta shells
  • 2          tablespoons olive oil
  • 1          tablespoon fresh garlic
  • 1          medium onion, diced
  • 5          portobello mushroom caps, gills removed then diced
  • 1          pinch sea salt, plus additional, to taste
  • 1          pinch pepper, plus additional, to taste
  • 2          cups shredded kale
  • 3          tablespoons water
  • 15        ounces skim milk ricotta cheese
  • 4          tablespoons pesto
  • 1          tablespoon The Fit Cook Land spice blend
  • 1 1/2    cups reduced-fat marinara, divided
  • 1 1/2    cups reduced-fat mozzarella
  • fresh herbs, for garnish

Preheat oven to 420 F.

Bring pot of salted water to boil. Cook pasta shells according to package instructions. Drain then set aside.

Heat pot or cast-iron casserole dish over medium heat. Once hot, add oil, garlic, onion and mushrooms. Add pinch of sea salt and pepper as it cooks. Cook until onions turn brown and mushrooms shrink in size, about 3-5 minutes. Empty contents and set aside.

Place pot back over heat. Add shredded kale and water to create steam. Toss kale in pot until it turns vibrant green; set aside to cool.

In large bowl, mix ricotta cheese with mushroom mixture, kale, pesto and spice blend.
In casserole dish, spread about 1/2 cup marinara on bottom. Then one-by-one, stuff each pasta shell with approximately 2 tablespoons ricotta mixture and add to casserole dish. Repeat with remaining shells.

Cover shells with remaining marinara and mozzarella cheese. Cover casserole dish with foil and bake 20 minutes. During final 5 minutes, remove foil so mozzarella can brown.

Garnish with fresh herbs and salt and pepper, to taste.

Green Curry

Servings: 2

  • 2          cups fresh spinach
  • 1          cup water
  • 1          tablespoon vegetable oil
  • 2          tablespoons green curry paste
  • 8          ounces skinless, boneless chicken, beef or pork, sliced thin
  • 1          small Japanese purple eggplant
  • 2          cups coconut milk
  • 4          teaspoons granulated sugar
  • 1/2       teaspoon salt
  • 1/2       cup bamboo shoots, sliced
  • 1/4       medium red bell pepper, sliced thin
  • 8-10     Thai basil leaves, plus additional, for garnish, divided
  • 2          cups cooked jasmine rice

In blender, blend spinach and water until mixture turns green and no leaves are visible.

In medium saucepan over medium-high heat, heat oil. Add green curry paste and stir to release fragrance, about 10 seconds.

Add protein and cook 3-5 minutes.

Add blended spinach water, purple eggplant, coconut milk, sugar and salt. Bring to boil. Add bamboo shoots and red bell pepper. Simmer 10 minutes.

Stir in basil leaves and turn off heat.

Serve with jasmine rice and garnish with additional basil leaves.

Daddy’s Birthday Flan

Caramel Sauce:

  • 1          cup granulated sugar
  • 1/4       cup water

Cake:

  • 1 1/2    cups all-purpose flour
  • 1          teaspoon baking powder
  • 1/4       teaspoon baking soda
  • 1/4       teaspoon salt
  • 3/4       cup unsalted butter, at room temperature
  • 3/4       cup granulated sugar
  • 2          large eggs
  • 1/2       teaspoon vanilla extract
  • 3/4       cup buttermilk
  • 3          tablespoons rainbow sprinkles (optional)

Flan:

  • 4          large eggs
  • 1          can (14 ounces) sweetened condensed milk
  • 1          can (12 ounces) evaporated milk
  • 1          tablespoon vanilla extract
  • ground cinnamon, to taste
  1. In saucepan, heat granulated sugar and water over medium-low heat until melted.
  2. Preheat oven to 350 F.
  3. Grease and flour 9-inch Bundt pan. Set aside.
  4. When sugar liquifies and turns golden brown, remove from heat and use silicone spatula or whisk to stir. While stirring, quickly pour into prepared Bundt pan.
  5. To make cake: In large bowl, sift flour, baking powder, baking soda and salt. Set aside.
  6. In another bowl, use hand mixer on medium speed to beat butter and sugar, about 3 minutes, until fluffy. Add eggs and vanilla. Beat well.
  7. On low speed, gradually beat in flour mixture and buttermilk until combined.
  8. Fold in rainbow sprinkles, if desired.
  9. Pour batter into pans over caramel sauce.
  10. To make flan: In blender on high speed, blend eggs, sweetened condensed milk, evaporated milk and vanilla until well combined.
  11. Gently pour through strainer and onto prepared cake batter.
  12. Sprinkle cinnamon on top.
  13. Place pan in water bath by putting it in larger baking dish, roasting pan, hotel pan or similar. Pour hot water halfway up sides to create water bath.
  14. Bake approximately 1 hour. Cake should be golden brown and jiggle when shaken when done.
  15. Remove cake from water bath and cool on rack 10 minutes.
  16. Run knife or spatula carefully around edges to separate. Place plate on top of cake and, while holding it, flip over carefully and quickly.
  17. Refrigerate at least 1 hour or overnight before serving.

Chorizo Ragu with Cheesy Toast

  • 3          bolillo-style rolls or 1 long baguette
  • 2          tablespoons olive oil 
  • 1          yellow or white onion, chopped
  • 2-3       carrots, chopped
  • 1⁄2       teaspoon salt
  • 6          cloves garlic, divided
  • 8          ounces white or cremini mushrooms, chopped
  • 2          tablespoons tomato paste
  • 1          tablespoon dried oregano 
  • 1          teaspoon ground cumin
  • 1 1⁄4    pounds ground beef
  • 1          package (9 ounces) Cacique Pork Chorizo
  • 1          can (28 ounces) crushed or pureed tomatoes
  • 6          tablespoons unsalted butter, softened
  • 9          tablespoons Cacique Crema Mexicana, plus additional for serving
  • 1 1⁄2    cups crumbled Cacique Ranchero Queso Fresco
  1. Preheat oven to 400 F. Halve bread lengthwise.
  2. In heavy-bottomed pot, warm olive oil over medium heat. Add onions, carrots and salt then cook, stirring occasionally, until vegetables just start to soften, 3-4 minutes. Mince 2 garlic cloves and add to pot with mushrooms; cook about 3 minutes.
  3. Use spoon to push vegetables to edges of pan then add tomato paste, oregano and cumin to center of pan; saute until fragrant, 1-2 minutes.
  4. Increase heat to high and add beef and pork chorizo. Break meat up with spoon but don’t over-stir. When beef is no longer pink, pour in tomatoes and bring to simmer. Decrease heat to medium-high and let simmer, stirring occasionally.
  5. While ragu simmers, use fork to mash or whip butter with crema until smooth. Mince or finely grate remaining garlic cloves then stir into crema mixture.
  6. Spread crema mixture evenly over bread, trying to cover as much area as possible. Sprinkle crumbled queso fresco all over and place bread on rimmed baking sheet, cheese side up. Toast 4-5 minutes until cheese is melted and bubbling. Finish under broiler 30-60 seconds for deeper browning, if desired. Cut bread into individual portions.
  7. After about 20 minutes of simmering, ragu should thicken and flavors meld. Swirl in additional crema then serve ragu in bowls with cheesy toast or ladle over pieces of toast.

Pulled Pork Sandwiches

  • 1 1/2    pounds pork shoulder
  • 2-3       whole cloves
  • 2          tablespoons smoked paprika or smoky spice rub
  • 1          red onion, sliced thin
  • 1          cup water
  • 6          ounces barbecue sauce
  1. Stud pork with cloves and rub with seasoning blend.
  2. Place roast in slow cooker and top with onions. Cover pork with water and slow cook 8-10 hours.
  3. Remove pork, discard cloves then drain fat and water. Allow pork to cool then shred by hand or with fork.
  4. Return meat to pot and add barbecue sauce. Heat 1-2 hours. Serve alone or on roll.

Meatballs

Serves: 6

  • 1 Spanish white onion
  • 3 cloves garlic, minced
  • 3 cups diced bread (such as baguette)
  • water
  • 2 large eggs
  • 1/2 cup ricotta cheese
  • 1/2cup Parmesan cheese
  • 1 pound ground pork
  • 1 pound ground veal
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh Italian parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 2 tablespoons grapeseed oil
  • 3 cups basic tomato sauce
  1. In small saucepan over medium heat, sweat onion and garlic.
  2. In large bowl, soak bread in water 1-2 minutes. Strain excess liquid.
  3. In separate large bowl, add eggs, ricotta cheese, Parmesan cheese and onion-garlic mixture. Combine then add ground meat, soaked bread, extra-virgin olive oil, parsley and oregano. Mix thoroughly.
  4. Divide mixture evenly to form 10-12 meatballs and use hands to roll into shape.
  5. In large saute pan over high heat, brown meatballs in grapeseed oil on all sides.
  6. Place browned meatballs in separate saucepot with basic tomato sauce. Bring to simmer and finish cooking, about 1 hour.

Barbecue St. Louis Ribs

Barbecue Sauce:

  • 2 cups ketchup
  • 2 cups apple cider vinegar
  • 1 cup Dijon mustard
  • 1 cup brown sugar
  • 2 tablespoons cayenne pepper
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper

Spice Rub:

  • 1/2 cup kosher salt
  • 1/4 cup ground mustard
  • 1/4 cup paprika
  • 1/4 cup black pepper
  • 1/4 cup cayenne pepper
  • 1/4 cup ground white pepper
  • 1/4 cup seafood seasoning
  • 2 tablespoons ground cumin
  • 4 full racks St. Louis-style ribs
  1. To make Barbecue Sauce: In bowl, mix ketchup, vinegar, Dijon mustard, brown sugar, cayenne pepper, salt and black pepper. Transfer to thick-bottomed saucepot over medium-low heat. Allow sauce to warm and mix over heat 10-15 minutes, stirring continuously. Remove and cool.
  2. To make Spice Rub: In bowl, mix salt, ground mustard, paprika, black pepper, cayenne pepper, white pepper, seafood seasoning and cumin. Keep dry and covered until ready to use.
  3. Remove silver skin from bottom side of ribs. Evenly rub each rack with 1/4 cup Spice Rub on top and bottom. Wrap each in plastic wrap and keep overnight in refrigerator or cooler.
  4. Heat smoker with pecan or other fruit wood to 165 F and maintain temperature. Remove plastic and place ribs in smoker 4 hours then check doneness. Ribs should be cooked but not falling off bone.
  5. Remove ribs from smoker and glaze each rack with 1/2 cup Barbecue Sauce. Return to smoker 30-40 minutes. Remove and glaze again with 1/2 cup sauce for each rack and cook 20 minutes.
  6. Remove ribs from smoker. Allow to rest 5 minutes then cut into single or double bone sections and serve.

Turkey Pot Pie

Serves: 4

  • 2 tablespoons butter
  • 1 Spanish white onion, chopped
  • 2 celery ribs, medium diced
  • 3 carrots, small diced
  • 3 cups cooked, shredded turkey (dark meat preferred)
  • 2 tablespoons fresh tarragon, chopped
  • 2 tablespoons fresh parsley, chopped
  • 4 tablespoons all-purpose flour
  • 4 cups turkey stock (or leftover gravy)
  • 2 potatoes, peeled and medium diced
  • 1 square prepared puff pastry
  • 1 egg, beaten
  1. Heat oven to 375 F.
  2. In medium saucepot, melt butter; add onion and sweat 4 minutes. Add celery and carrots; cook 4-5 minutes.
  3. Add turkey and cook 4 minutes. Add tarragon, parsley and all-purpose flour; cook 4 minutes. Add stock and bring to simmer. Add potatoes and simmer until fork tender.
  4. Pour filling into pie pan and top with pastry. Brush pastry with egg.
  5. Bake pie 20-30 minutes, or until crust is golden brown.

  • 2 French bread sandwich rolls, halved
  • 8 tablespoons refried black beans

  • 1          Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet
  • 1          tablespoon olive oil, divided
  • 1/3       cup dry red wine
  • 3          tablespoons balsamic vinegar
  • 2          tablespoons sugar
  • 1          teaspoon chopped fresh rosemary
  1. Cut pork loin filet into 3/4-to-1-inch thick chops.
  2. In large, nonstick skillet over medium heat, heat 1/2 tablespoon olive oil.
  3. Cook half the pork chops 4-5 minutes on each side until internal temperature reaches 150° F. Remove pork chops from skillet and place on rimmed serving platter; cover to keep warm. Repeat with remaining olive oil and pork chops.
  4. In same skillet, combine wine, vinegar and sugar. Bring to boil over medium-high heat; cook 3-5 minutes until slightly thickened, or until liquid is reduced to 1/4 cup.
  5. Serve pork chops drizzled with wine reduction and sprinkled with rosemary.

Fresh Pork and Kalamata Flatbreads

Prep time: 5 minutes
Cook time: 35 minutes
Servings: 6

  • 1          Smithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin
  • 1          tablespoon extra-virgin olive oil
  • 1          can (13.8 ounces) refrigerated pizza crust dough
  • 3/4       cup sliced sun-dried tomatoes in olive oil
  • 1/2       cup sliced Kalamata olives, drained
  • 1          teaspoon crushed dried rosemary
  1. Cut pork tenderloin into 3/4-inch cubes.
  2. Heat oven to 400° F. In large skillet over medium-high heat, heat olive oil. Stir-fry pork 8-10 minutes, or until well browned.
  3. Unroll pizza dough and press onto greased sheet pan, about 18-by-13 inches; cut into six rectangles.
  4. Drain tomatoes, reserving oil. Brush tops of flatbreads with sun-dried tomato oil, reserving about 1 tablespoon. Top with pork, drained tomatoes, olives and rosemary, pressing into dough lightly with fingertips.
  5. Bake 18-21 minutes until edges are golden brown.
  6. Remove from oven. Drizzle remaining sun-dried tomato olive oil evenly over flatbreads; let stand on baking sheet 2 minutes before serving.
