- 1 large shallot
- 1 large Honeycrisp apple (or 1 1/2 cups)
- 5 garlic cloves
- olive oil
- 2 cups low-sodium chicken or vegetable broth, divided
- 2 cups canned pumpkin puree
- 2 teaspoons maple syrup
- pepper, to taste
- salt, to taste
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cinnamon
- 2 tablespoons heavy cream
- fresh thyme, to taste

- Slice shallot, peel and cube apple and crush garlic.
- In pot over medium-low heat, add drizzle of olive oil and saute shallots, garlic and apple 20 minutes, covered.
- Let mixture slightly cool then add to blender with 1/2 cup broth and blend until fully combined.
- In pot, add pumpkin puree; blended shallot mixture; maple syrup; salt, to taste; pepper, to taste; nutmeg; cinnamon; remaining broth; heavy cream; and thyme, to taste. Bring to low boil then add frozen pierogies. Boil 3 minutes.

- 1 ripe avocado, pitted and thinly sliced
- 1 cup pickled red onions
- 3/4 cup Cotija cheese

Avocado Mayo Crema:
- 1/2 cup mayo
- 1 ripe avocado, pitted and roughly chopped
- 1/2 lime, juice only
- To make burrito bowls: In medium skillet over medium heat, add avocado oil. Saute pierogies in batches, approximately 8 minutes on both sides, until golden brown. Remove from heat and set aside.

- 2 cups sweet potato cubes (approximately 1 large or 2 medium sweet potatoes, cut into 1/2-inch cubes)
- 1 tablespoon olive oil
- salt, to taste
- pepper, to taste
- 4 tablespoons salted butter
- 1 tablespoon balsamic vinegar
- 2 tablespoons lemon juice
- water
- 1/2 cup pecans
- fresh thyme leaves, for serving
- Preheat oven to 400 F.
- Toss sweet potato cubes in olive oil, salt and pepper, to taste, and spread in even layer on baking sheet. Roast 25-30 minutes, tossing about halfway through, until potatoes are fork tender.

- 2 tablespoons olive oil, plus additional for brushing pierogies, divided

- 1/2 teaspoon ground black pepper
- 1/2 teaspoon oregano
- 1-2 cups mozzarella balls (18 total)
- fresh basil leaves
- bamboo skewers (10 inches)
Fresh Pesto:
- 2 cups fresh basil
- 2 garlic cloves, peeled
- 1/2 cup olive oil
- 1/4 cup pine nuts
- 1/4 grated Parmesan cheese
- salt, to taste
- ground black pepper, to taste
- Preheat air fryer to 400 F.

- 4 strips bacon, chopped
- 3 small onions, thinly sliced
- 1/3 cup baby bella mushrooms, thinly sliced

- 2 cups diced tomatoes
- 1 teaspoon dried Italian seasoning
- 1/4 cup chicken broth
- 1/2 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese, plus additional, for garnish

- 1/2 tablespoon cornstarch
- fresh basil, for garnish
- crushed red pepper flakes, for garnish
- Boil pierogies according to package directions. Drain then toss pierogies with 1 tablespoon olive oil to keep from sticking.
- In 12-inch skillet over medium-high heat, heat 1 tablespoon oil. Season chicken with salt and pepper, to taste, and cook 8-10 minutes per side, until golden brown and cooked through. Transfer to plate, cover and allow to rest 5-8 minutes. Slice thin.
- While chicken rests, lower heat to medium-low and add remaining oil to same skillet. Add garlic, spinach and tomatoes; saute 1-2 minutes until garlic is fragrant. Season with Italian seasoning and salt and pepper, to taste.
- Stir in chicken broth, heavy cream and 3/4 cup Parmesan. In small bowl, whisk cold water and cornstarch then stir into pan. Simmer 4-5 minutes until thickened and creamy.

Pierogies:
- 1 package Mrs. T’s Classic Onion Pierogies
- 1-2 tablespoons olive oil
Tri-Tip Steak:
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 tri-tip steak (2-3 pounds)
Chimichurri Sauce:
- 1 cup fresh Italian parsley, packed
- 1/4 cup fresh cilantro
- 1/2 cup extra-virgin olive oil
- 1/3 cup red wine vinegar
- 3-4 garlic cloves, peeled
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- To prepare Pierogies: Toss pierogies in olive oil.
- To prepare Tri-Tip Steak: In small bowl, combine salt, pepper, onion powder and garlic powder; season steak on all sides.
- To make Chimichurri Sauce: In food processor, pulse parsley, cilantro, olive oil, vinegar, garlic, red pepper, salt and black pepper until well combined but small pieces of herbs remain. Pour into serving bowl, cover and refrigerate until ready to use.
- Heat grill to 400° F for two-zone cooking. Grill steak over direct heat 3-4 minutes per side.
- After flipping steak, place pierogies over indirect heat.
- Close grill lid and cook 3-4 minutes.
- Move steak to indirect heat and move pierogies to direct heat.
- Remove from grill when pierogies are golden brown and steak is cooked to preferred doneness. Allow steak to rest before slicing.
- Layer one pierogy, one slice steak and drizzle of chimichurri sauce to assemble each bite.

Flour Dredge:
- 1 1/2 cups all-purpose flour
- 1 1/2 tablespoons kosher salt
- 2 teaspoons freshly ground black pepper
- 1 1/2 teaspoons freshly ground white peppercorn
- 1 teaspoon sweet paprika
- 1 teaspoon onion powder
- 1/8 teaspoon ground dried sage
- 1/8 teaspoon dried thyme
- 1/8 teaspoon cayenne pepper
Pierogies:
- 1 box (16 ounces) Mrs. T’s Classic Cheddar Pierogies
- 1 cup buttermilk
- 2 eggs, lightly beaten
- 2 cups flour dredge (recipe below)
- canola oil
- large kosher pickles, cut into round slices
- ranch dressing
- To make flour dredge: In large mixing bowl, mix all flour dredge ingredients until thoroughly combined.
- To make pierogies: Bring large pot of water to boil. Place pierogies in boiling water until no longer frozen in center, about 2 minutes. Remove pierogies from water and cool in refrigerator 10 minutes.
- Place buttermilk, eggs and flour dredge in three separate bowls. One at a time, dip pierogies in buttermilk then in eggs and finally in flour dredge. Once all pierogies are dredged, fry in deep fryer at 350 F in canola oil, approximately 3 minutes until golden brown. Repeat flour dredge process with pickle slices and fry 3 minutes.
- To serve, place fried pierogies and pickles on serving plate. Serve with ranch.
Szechuan-Style Pierogies

- 1/2 cup, plus 2 tablespoons, vegetable oil, divided
- 3 Arbol chilies
- 1/4 cup Szechuan chili sauce
- 4 tablespoons, plus 2 teaspoons, fresh minced ginger, divided
- 2 tablespoons, plus 1 teaspoon, garlic, minced (about 5 cloves), divided
- 1/2 tablespoon Szechuan peppercorns, toasted and ground
- 1/2 cup black bean garlic sauce
- 2 cups chicken stock
- 1 tablespoon thinly sliced scallion (white parts only)
- 1 cup ground pork
- 1 teaspoon soy sauce
- 1 tablespoon unsalted butter
- 1 box (16 ounces) Mrs. T’s Garlic & Parmesan Pierogies
- 1 tablespoon peeled edamame
- 2 tablespoons firm tofu, diced
- 1 1/2 cups bean sprouts
- Place 1/2 cup oil and chilies in saucepan. Cook over low heat 2 minutes, or until chilies turn brown. Remove chilies from oil and discard oil.
- Add Szechuan sauce to saucepan; cook 3 minutes. Add 4 tablespoons ginger, 2 tablespoons minced garlic and ground peppercorns; cook until fragrant, about 2 minutes. Add black bean sauce and cook another 2 minutes. Add chicken stock and bring to boil. Reduce heat to simmer and cook 20 minutes. Reserve.
- In saute pan, heat 1 tablespoon vegetable oil over medium-high heat. Add remaining ginger, remaining garlic and scallions; cook 1 minute. Add pork and cook 5 minutes, breaking up with wooden spoon. Add soy sauce and combine. Reserve.
- In saute pan, melt butter and remaining vegetable oil. Add pierogies and sear lightly, about 7 minutes on each side until lightly browned. Reserve.
- In large saute pan, combine Szechuan sauce, ground pork mixture, seared pierogies, edamame and tofu. Cook over medium-high heat until combined, about 2 minutes. Garnish with bean sprouts.

- Wrap half slices of bacon around each pierogy. Arrange pierogies on baking sheet. Sprinkle with brown sugar, if desired. Bake 16-18 minutes, or until golden brown, turning once.
- Optional: Saute wrapped pierogies 8 minutes, or grill 5 minutes until browned.
Pierogy Nachos

Nachos:
- 2 boxes (16 ounces each) Mrs. T’s Classic Cheddar Pierogies
- 2 tablespoons butter
- 1 1/2 cups canned black beans, drained and rinsed
- 3/4 cup shredded Monterey Jack cheese
- Pico de Gallo (recipe below)
- guacamole (recipe below)
- sour cream (optional)
- pickled jalapeno peppers (optional)
Pico de Gallo:
- 2 Roma tomatoes, seeded and diced
- 1 small, diced red onion
- 2 tablespoons chopped cilantro
- 1 1/2 teaspoons lime juice
- 1/4 teaspoon salt
Guacamole:
- 1 small, ripe avocado
- 1 seeded and minced jalapeno
- 1/2 Roma tomato, seeded and chopped
- 2 tablespoons thinly sliced green onion
- 1 tablespoon chopped cilantro
- 2 teaspoons lime juice
- salt, to taste
- pepper, to taste
- To make nachos: Saute pierogies in butter over medium heat, approximately 8 minutes on both sides.
- Preheat broiler. On large, oven-safe plate, arrange hot pierogies; sprinkle with black beans and Monterey Jack cheese.
- Broil until cheese is melted and bubbly. Top with Pico de Gallo and guacamole, and sour cream or pickled jalapeno peppers, if desired.
- To make Pico de Gallo: Mix together all ingredients and set aside. Serve on top of pierogies.
- To make guacamole: Cut avocado in half and remove seed. With spoon, scoop out inside; place in bowl.
- Mash avocado with fork until slightly chunky.
- Mix in jalapeno, tomato, green onion, cilantro, lime juice, salt and pepper. Serve on top of pierogies.
