- 8 flour tortillas (6 inches each)
- 1 cup Monterey Jack cheese, shredded
- 2 tablespoons olive oil
- sour cream, for dipping
- salsa, for dipping
- guacamole, for dipping
- fresh cilantro, for garnish
- Prepare rice according to package directions; add collard greens and corn to water during last 5 minutes.
- Preheat oven to 450 F. Drain rice and vegetables; transfer to saucepan. Stir in black beans, pumpkin puree and taco seasoning.
- Spoon 1/3 cup rice mixture into center of one tortilla; sprinkle with 2 tablespoons Monterey Jack cheese. Roll up tightly. Place seam side down on parchment paper-lined baking sheet. Repeat with remaining tortillas, filling and cheese. Brush taquitos with olive oil; sprinkle with remaining cheese.
- Bake 10-15 minutes, or until tortillas are crisp and cheese is melted.
- Serve taquitos with sour cream, salsa and guacamole for dipping. Garnish with fresh cilantro.
Mushroom Spinach "Lasagna"

- 2 garlic cloves, chopped
- 1/2 cup onion, chopped
- 1 cup mushrooms, sliced
- 4 cups baby spinach leaves

- 2 cups ricotta cheese
- 1 egg, lightly beaten
- 1/2 cup grated Parmesan cheese, divided
- 1 tablespoon Italian seasoning
- 1 1/2 cups shredded mozzarella cheese, divided
- Prepare quinoa according to package directions.
- Preheat oven to 375 F.
- In large skillet, heat oil over medium heat. Add garlic and onions; saute 1 minute. Add mushrooms and cook 5 minutes, stirring occasionally. Add spinach and stir until wilted, about 2 minutes. Stir in tomato sauce and keep warm.
- In medium bowl, combine ricotta, egg, 1/4 cup Parmesan cheese and Italian seasoning.
- Place 1 cup sauce in bottom of 2-quart baking dish. Spread half of quinoa evenly over sauce. Top with half of ricotta mixture. Top with 1 cup sauce. Sprinkle with 1 cup mozzarella. Repeat layers, finishing with remaining mozzarella and Parmesan cheese.
- Bake uncovered 30 minutes. Serve warm.

- 3 quarts water
- 8 ounces dry whole-wheat spaghetti
- 2 cups chunky tomato sauce
- 4 teaspoons grated Parmesan cheese
- 1 tablespoon fresh basil, rinsed, dried and chopped
Turkey Meatballs:
- 6 ounces 99% lean ground turkey
- 1/4 cup whole-wheat breadcrumbs
- 2 tablespoons fat-free evaporated milk
- 1 tablespoon grated Parmesan cheese
- 1/2 tablespoon fresh chives, rinsed, dried and chopped
- 1/2 tablespoon fresh parsley, rinsed, dried and chopped
Beef Meatballs:
- 6 ounces 93% lean ground beef
- 1/4 cup whole-wheat breadcrumbs
- 2 tablespoons fat-free evaporated milk
- 1 tablespoon grated Parmesan cheese
- 1/2 tablespoon fresh chives, rinsed, dried and chopped
- 1/2 tablespoon fresh parsley, rinsed, dried and chopped
- Preheat oven to 400 F.
- In 4-quart saucepan over high heat, bring water to boil.
- Add pasta and cook according to package directions. Drain and set aside.
- To make turkey meatballs: In bowl, combine ground turkey, breadcrumbs, evaporated milk, Parmesan cheese, chives and parsley; mix well. Measure 1 1/2 tablespoons turkey mixture and roll into ball using hands. Place meatball on nonstick baking sheet. Repeat until eight turkey meatballs are made.
- To make beef meatballs: In separate bowl, combine ground beef, breadcrumbs, evaporated milk, Parmesan cheese, chives and parsley; mix well. Measure 1 1/2 tablespoons beef mixture and roll into ball using hands. Place meatball on nonstick baking sheet. Repeat until eight beef meatballs are made.
- Bake meatballs 10 minutes until minimum internal temperature of 165 F is reached.
- Warm sauce, if necessary.
To serve: Serve four meatballs with 3/4 cup pasta, 1/2 cup sauce, 1 teaspoon Parmesan cheese and 1 pinch basil per portion.

Feta Roasted Salmon and Tomatoes

- Nonstick cooking spray
- 3 cups halved cherry tomatoes
- 2 teaspoons olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon dried oregano or dried dill weed
- 1/4 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper, divided
- 1 1/2 pounds salmon or halibut fillets, cut into four serving-size pieces
- 1 cup (4 ounces) crumbled feta cheese
- Preheat oven to 425 F. Line 18-by-13-by-1-inch baking pan with foil. Lightly spray foil with nonstick cooking spray. Set aside.
- In medium bowl, toss tomatoes, olive oil, garlic, oregano or dill weed, salt and 1/4 teaspoon pepper.
- Place fish pieces, skin side down, on one side of prepared pan. Sprinkle with remaining pepper. Lightly press feta cheese on top of fish. Pour tomato mixture on other side of prepared pan. Bake, uncovered, 12-15 minutes, or until fish flakes easily with fork.
- Place salmon on serving plates. Spoon tomato mixture over top.
15-Minute Weeknight Pasta

- 6 quarts water
- 16 ounces linguine or penne pasta
- 2 tablespoons unsalted butter
- 1/2 cup thinly sliced onion
- 1 cup thinly sliced carrots
- 1 cup thinly sliced sweet bell pepper
- 1/2 cup grape tomatoes, halved
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, peeled and minced
- 1 cup reserved pasta water
- 1 teaspoon finely grated lemon zest
- 1/2 cup smoked provolone cheese, shredded
- 1/4 cup chopped fresh parsley (optional)
- Parmesan cheese (optional)
- Bring water to rolling boil and prepare pasta according to package directions for al dente texture, reserving 1 cup pasta water.
- In large skillet over medium heat, melt butter. Stir in onions, carrots and sweet bell peppers. Saute vegetables about 5 minutes, or until they brighten in color and begin to soften. Add tomatoes, salt, pepper and garlic. Cook and stir 1 minute to allow tomatoes to release juices.
- Pour reserved pasta water into skillet, stirring well. Bring sauce to boil. Reduce heat to medium-low and simmer 3 minutes. Taste sauce and adjust seasonings, as desired.
- Transfer drained pasta to skillet along with lemon zest and smoked provolone cheese, tossing well to coat. Serve immediately with fresh parsley and Parmesan cheese, if desired.

Sunchokes and Potato Quiche

Crust:
- 1 lemon, zest and juice only
- 1 egg
- 1 1/3 cups flour
- 9 tablespoons butter
- 1/4 teaspoon salt
Quiche:
- 1/3 cup Yukon gold potatoes, cut into1/2-inch cubes
- 3/4 cup sunchokes, sliced 1/2-inch thick
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 onion, chopped
- 2 tablespoons butter
- 2 cups Swiss chard, chopped with stock removed
Custard:
- 6 eggs
- 1/3 cup grated Parmesan
- 1/2 cup grated gouda
- 1/2 cup heavy cream
- 2 tablespoons parsley, chopped
- 2 tablespoons fresh thyme, chopped
- To make crust: In small bowl, whisk lemon juice with egg.
- In large bowl, mix flour, butter and salt. Mix using hands. Drizzle in lemon mixture. Add lemon zest.
- Using fingers, knead dough to break down butter. Cover dough with plastic wrap and roll into disc while at room temperature then refrigerate until firm.
- To make quiche filling: Preheat oven to 425 F.
- Toss potatoes and sunchokes with olive oil, salt and pepper then spread out on baking sheet.
- Bake 15-20 minutes, or until fork tender, tossing pieces halfway through.
- Add onion to well-buttered pan and cook over medium heat about 15 minutes, stirring frequently, until caramel colored. Add Swiss chard and continue cooking until wilted, stirring occasionally. Set aside to cool.
- Roll out dough on pastry mat or well-floured surface. Prick with fork. Carefully transfer dough to quiche pan, fold edges under and crimp then transfer to freezer.
- To make custard: Reduce oven temperature to 375 F.
- In large bowl, whisk eggs, cheeses, heavy cream, parsley and thyme.
- Add caramelized onions and vegetables then mix. Add mixture to crust.
- Tent with foil and bake about 20 minutes.
- Reduce oven temperature to 350 F and bake about 40 minutes.
- For food safety, casseroles containing eggs should always be cooked at a minimum of 160 F.
Notes: Bake times depend on size of quiche. Deeper quiches may require additional bake time. As quiche cools, filling continues to set; it may wobble when removed from oven.

- 1 tablespoon butter
- 1 1/2 pounds boneless, skinless chicken breasts, cut into strips
- 1 jar RAGÚ Classic Alfredo Sauce
- 1 package (12 ounces) frozen broccoli florets, thawed
- 1 package (12 ounces) fettuccine pasta
- grated Parmesan cheese, for topping (optional)
- In large nonstick skillet over medium-high heat, melt butter. Cook chicken, in batches if necessary, stirring occasionally, until chicken is thoroughly cooked. Remove chicken and set aside.
- In same skillet, add sauce and broccoli; stir. Bring to boil over medium-high heat. Reduce heat to low and simmer, covered, stirring occasionally, until broccoli is heated through, about 5 minutes. Stir in chicken and cook, stirring occasionally, until cooked through, about 2 minutes.
- In separate pan, cook fettuccine according to package instructions.
- Serve chicken, broccoli and sauce over hot fettuccine and sprinkle grated Parmesan cheese on top, if desired.
Mini Turkey Sloppy Joes

- 1 cup diced onion

- 1 cup shredded sharp cheddar cheese

- 1/3 cup breadcrumbs
- 2 tablespoons butter, melted
- Preheat oven to 450 F. Prepare rice according to package directions.
- In large bowl, toss Brussels sprouts, ham, garlic, olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Place on parchment paper-lined baking tray and roast 12-15 minutes, or until caramelized. Decrease oven temperature to 425 F.
- In large bowl, toss rice, Brussels sprouts mixture, cream, chives, Dijon mustard, remaining salt and remaining pepper. Stir in cheddar and 1/3 cup Parmesan cheese. Transfer mixture to greased, 2-quart baking dish.
- In small bowl, stir breadcrumbs, remaining Parmesan and melted butter. Sprinkle over rice mixture.
- Bake 12-15 minutes, or until golden brown and bubbling.

Sweet Italian Sausage Polenta
Total time: 35 minutes

- 1 package Carando Sweet Italian Sausage
- 8 cups chicken stock
- 2 cups dry polenta
- 8 tablespoons unsalted butter
- 1/2 cup Parmesan cheese, grated
- 3 tablespoons olive oil
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 medium yellow onion, julienned
- 1 tablespoon fresh garlic, minced
- 1/4 cup white wine
- 1/4 cup red wine vinegar
- 2 tablespoons honey
- 2 teaspoons oregano
- Heat grill to medium-low. Grill sausages 15-20 minutes, using tongs to turn frequently; reserve.
- In heavy-bottomed pot, whisk stock and polenta; bring to boil. Cook, stirring frequently, about 15 minutes, or until thick and creamy.
- Remove polenta from heat and whisk in butter and cheese. Reserve until ready to serve.
- Heat pan over medium-high heat. Add olive oil, peppers, onions and garlic; and saute until vegetables soften and just begin to color.
- Deglaze pan with white wine and reduce by half. Add vinegar, honey and oregano; cook until reduced by half.
- Add sausages to pan to warm.
- When sausages are warm, place polenta on large platter then top with sausages, peppers and onions.

Italian Sausage Spinach and Tomato Rigatoni

Cook time: 20 minutes
- Water
- 1/2 box rigatoni pasta
- 1 tablespoon olive oil
- 1/2 cup onions, chopped
- 4 cloves garlic, minced
- 1/2 cup mushrooms, sliced
- 16 ounces sweet Italian sausage
- 1 jar Bertolli d'Italia Marinara Sauce
- 2 cups fresh baby spinach
- salt, to taste
- pepper, to taste
- Parmesan cheese, for garnish
- Bring large stockpot of water to boil. Boil rigatoni pasta until al dente. Drain and set aside.
- In saute pan over medium heat, add olive oil. Add onions, garlic and mushrooms. Saute until vegetables start to brown. Add Italian sausage and cook until done, breaking into small pieces. Add sauce and bring to low boil.
- Add baby spinach. Cook until spinach is mostly wilted. Season with salt and pepper, to taste.
- Add drained pasta to pan with sausage and sauce. Toss and divide between plates. Garnish with Parmesan cheese.
Red Wine Braised Beef Short Rib Ragu
Prep time: 25 minutes
Cook time: 3 hours
- 2 tablespoons olive oil
- 4 pounds bone-in beef short ribs
- salt, to taste
- ground black pepper, to taste
- 1 stalk celery, chopped
- 1 large carrot, peeled and finely diced
- 1 small onion, chopped
- 8 cloves garlic, finely chopped
- 4 tablespoons tomato paste
- 1 cup red wine
- 4 sprigs fresh rosemary
- 2 sprigs fresh sage leaves, chopped
- 8 sprigs fresh thyme
- 2 bay leaves
- 1 jar Bertolli d'Italia Marinara Sauce
- 2 cups beef bone broth
- water
- 24 ounces pappardelle pasta or preferred pasta
- freshly grated Parmesan cheese, for garnish
- Heat oven to 350 F.
- In 5-quart Dutch oven, heat olive oil over medium heat. Season short ribs with salt and ground black pepper, to taste. Place one layer of short ribs in pot. Set remaining ribs aside.
- Cook ribs 3-4 minutes per side until browned. Transfer to plate and set aside. Repeat with remaining short ribs.
- Add celery, carrots and onion to pot used to brown ribs. Stir and cook until vegetables are browned, about 15 minutes.
- Add garlic and stir 1-2 minutes. Add tomato paste. Cook 2-3 minutes.
- Carefully pour red wine into pot.
- Stir and scrape any browned bits from bottom of pot. Cook 3-4 minutes until wine is almost completely absorbed into vegetables.
- Add rosemary, sage, thyme and bay leaves to pot. Add sauce, bone broth and browned ribs. Cover pot and place in oven 2 1/2-3 hours, or until ribs are fall-apart tender.
- Remove pot from oven. Transfer ribs to plate or cutting board. Remove and discard herb stems and bay leaves. Remove bones from ribs then shred meat into bite-sized pieces using two forks or tongs. Return shredded ribs to pot with ragu. Stir to combine. Set aside.
- Bring large stockpot of water to boil. Boil pappardelle pasta until al dente. Add drained pasta to pot with beef ragu and toss until combined.
- Garnish with freshly grated Parmesan cheese.
Creamy Italian Garlic Chicken Pasta
Prep time: 10 minutes
Cook time: 20 minutes
- 2 tablespoons olive oil
- 2 large chicken breasts
- 1 teaspoon Italian seasoning
- salt, to taste
- pepper, to taste
- 4 cloves garlic, minced
- 1/4 cup onions, chopped
- 1/4 cup sun-dried tomatoes, cut into strips
- 2 tablespoons capers, drained
- 6 fresh basil leaves, sliced
- 1 jar Bertolli d'Italia Creamy Rosa Sauce
- 1/2 cup heavy cream
- water
- 1/2 box Casarecce or preferred pasta
- parsley, for garnish
- Parmesan cheese, for garnish
- In saute pan over medium heat, add olive oil. Season chicken with Italian seasoning and salt and pepper to taste. Sear chicken breasts on both sides until browned. Remove from pan and set aside.
- Add garlic and onions to hot pan. Cook until starting to brown. Add sun-dried tomatoes, capers and basil; stir. Add sauce and heavy cream; cook until mixture starts boiling.
- Bring large stockpot of water to boil. Boil Casarecce pasta until al dente. Divide pasta between two plates. Place one chicken breast over pasta on each plate and top with additional sauce, parsley and Parmesan cheese.

5 Cooking Swaps to Help Manage Cholesterol

High cholesterol is one of the major controllable risk factors for heart disease and stroke, with about 38% of American adults diagnosed with high cholesterol, according to the American Heart Association. It can be managed by getting levels regularly tested and making lifestyle changes like eating a heart-healthy diet.
- Reduce saturated fat – Select lean cuts of meat or opt for plant protein, limit processed meats, broil or bake rather than pan-fry meats and remove skin from poultry before cooking.
- Eat more fish – Fish can be fatty or lean, but it’s still low in saturated fat. Choose oily fish like salmon or trout, which are high in omega-3 fatty acids.

Chicken Tortilla Soup

- 1 pound boneless, skinless chicken breasts, visible fat discarded, cut into 1/2-inch cubes
- 2 cups frozen whole-kernel corn, thawed
- 2 cups fat-free, no-salt-added chicken broth
- 1 can (14 1/2 ounces) no-salt-added, diced tomatoes, undrained
- 1/4 cup finely chopped onion
- 1 teaspoon sugar
- 1 teaspoon ancho powder
- 2 medium garlic cloves, minced
- 1/4 teaspoon salt
- 2 corn tortillas (6 inches each), cut into 1/4-inch-wide strips
- 1 corn tortilla (6 inches), torn into pieces
- 2-4 tablespoons snipped fresh cilantro
- 1/4 cup finely chopped avocado
- 1/4 medium red bell pepper, cut into matchstick-size strips
- In slow cooker, stir chicken, corn, broth, tomatoes, onion, sugar, ancho powder, garlic and salt. Cook, covered, on low, 6-8 hours, or on high, 3-4 hours.
- Preheat oven to 350 F.
- On baking sheet, arrange tortilla strips in single layer. Bake 8-10 minutes, or until crisp. Transfer baking sheet to cooling rack. Let strips stand 15 minutes, or until cool. Transfer to airtight container and set aside.
- When soup is ready, transfer 1 cup to food processor or blender. Stir in tortilla pieces. Let mixture stand 1 minute. Process until smooth. Stir mixture into soup. Stir in cilantro.
- Ladle soup into bowls. Sprinkle with avocado, bell pepper and reserved tortilla strips.
Air Fryer Crispy (Un) Fried Chicken

- 1/2 cup all-purpose flour
- 2 tablespoons minced fresh parsley
- 1/2 teaspoon ground oregano
- 1/4 teaspoon pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/2-1 cup low-fat buttermilk
- 1/2 tablespoon hot pepper sauce (optional)
- 1/3 cup whole-wheat panko breadcrumbs
- 1/3 cup shredded or grated Parmesan cheese
- 4 boneless, skinless chicken breasts (about 4 ounces each), visible fat discarded, flattened to 1/4-inch thickness, patted dry with paper towels
- nonstick cooking spray
- reheat air fryer to 390 F.
- In shallow dish or pie pan, whisk flour, parsley, oregano, pepper and cayenne.
- In separate shallow dish or pie pan, whisk buttermilk and hot sauce.
- In third shallow dish or pie pan, stir panko and Parmesan.
- Place dishes and large plate in row. Dip chicken in flour mixture then buttermilk mixture then panko mixture, turning to coat at each step and gently shaking off excess. Using fingertips, gently press panko mixture so it adheres. Place chicken on plate. Cover and refrigerate 30 minutes.
- Lightly spray chicken with nonstick cooking spray. Arrange chicken in single layer in air fryer basket, working in batches if needed. Cook 10-15 minutes, or until chicken is no longer pink in center and coating is golden brown, turning once halfway through and lightly spraying with nonstick cooking spray.
