Pulled Pork Sandwiches with Peach-Olive Jam

  • 1          teaspoon olive oil
  • 3          pounds pork shoulder roast
  • kosher salt, to taste
  • ground black pepper, to taste
  • 4          cloves garlic, quartered
  • 4          cups low-sodium chicken broth
  • 8          ounces dried peaches
  • 1          tablespoon chili powder
  • 1          cup California Black Ripe Olives, wedged
  • 2          teaspoons country mustard
  • 1          ounce arugula
  • 8          onion rolls, split and toasted
  1. Heat oven to 375° F.
  2. In large, high-sided saute pan, heat oil over medium-high heat.
  3. Season pork with salt and pepper, to taste, and cook in pan 3-4 minutes on each side until browned.
  4. Stir in garlic and continue cooking 3-5 minutes.
  5. Pour in chicken broth, peaches and chili powder; bring to boil.
  6. Cover loosely with foil and bake in oven 2 hours.
  7. With slotted spoon, carefully remove peaches and transfer to small mixing bowl. Mix olives and mustard with peaches; set aside.
  8. Continue to cook pork in oven 30-60 minutes until fork tender.
  9. Allow to cool slightly then shred by pulling apart with fork.
  10. Assemble sandwiches by spooning pork onto toasted rolls.
  11. Top with arugula and peach-olive mixture.

Easy Olive Bread

  • 8          ounces cream cheese, softened
  • 1/4       cup unsalted butter, softened
  • 1/2       cup mayonnaise
  • 1          clove garlic, minced
  • 2          cups shredded cheddar cheese
  • 10        ounces California Green Ripe Olives, chopped
  • 2          green onions, chopped
  • 1          loaf French bread, sliced in half lengthwise
  1. Heat oven to 350° F.
  2. In bowl, mix cream cheese, butter and mayonnaise until thoroughly combined. Add garlic; stir well to distribute. Add cheddar cheese, green olives and green onions; stir to combine.
  3. Spread mixture on cut sides of bread. Bake 20-30 minutes, until cheese is hot, bubbly and starting to brown.

Sun-Dried Tomato and Olive Tapenade

  • 1/2       cup shallots, chopped
  • 1/4       cup chopped smoked sun-dried tomatoes
  • 2          tablespoons extra-virgin olive oil
  • 2          tablespoons white balsamic vinegar
  • 2          cloves garlic, minced
  • 1          can (6 ounces) California Green Ripe Olives, drained
  • 1          can (6 ounces) California Black Ripe Olives, drained
  • 1/4       cup lightly packed fresh basil
  • sea salt, to taste
  • freshly ground pepper, to taste
  • crackers or toasted baguette slices
  1. In food processor, pulse shallots, sun-dried tomatoes, olive oil, vinegar and garlic until finely chopped. Add olives, basil, salt and pepper; pulse again until chopped.
  2. Cover and chill 1 hour.
  3. Serve with crackers or toasted baguette slices.

Olive Bar Flatbread

Prep time: 15 minutes
Servings: 2

  • 3          tablespoons Sabra Roasted Red Pepper Hummus
  • 1          flatbread
  • 1/2       cup desired vegetables, chopped (olives, roasted peppers, peppadew or artichokes)
  • 3          miniature mozzarella balls, sliced
  • 2          cups arugula
  • 2          tablespoons lemon juice
  • 1          tablespoon olive oil
  • ½         teaspoon salt
  • 1          teaspoon pepper
  1. Heat oven to 400° F.
  2. Place hummus on flatbread. Top with desired vegetables and mozzarella.
  3. Bake on lower rack 10-12 minutes, or until crispy and browned.
  4. Toss arugula with lemon juice, olive oil, salt and pepper. Place on flatbread and serve.

Rustic Minestrone

  • 3          tablespoons Bertolli Extra Virgin Olive Oil, divided
  • 1          small zucchini, sliced in 1/2-inch half moons
  • 2          cups tightly packed, thinly sliced Tuscan kale leaves
  • 1          jar (23 ounces) Bertolli Rustic Cut Three Cheese with Aged Asiago, Romano and Parmesan Sauce
  • 1          carton (32 ounces) vegetable broth
  • 1          can (15 ounces) cannellini beans, rinsed
  • 1/3       cup shaved Parmigiano Reggiano cheese
  1. In 6-quart pot over medium-high heat, heat 2 teaspoons oil. Add zucchini and kale; cook, stirring frequently, about 1-2 minutes, or until kale begins to wilt. Reduce heat to medium; add sauce, broth and beans. Simmer 5-7 minutes, or until heated. Top with shaved cheese before serving.

Tips: Substitute garbanzo beans, kidney beans, pinto beans or tri-bean blend for cannellini beans. For heartier soup, add 3 cups (9 ounces) refrigerated tortellini pasta with broth and beans. Simmer soup 8-10 minutes more, or until pasta is cooked through.

Chocolate Chunk Banana Bread

  • 3/4       cup Bertolli Olive Oil, plus additional for coating pan
  • 3          ripe medium bananas, divided
  • 1/2       cup applesauce
  • 1          large egg
  • 1          large egg white
  • 1          teaspoon vanilla extract
  • 1 1/2    cups all-purpose flour
  • 1          cup sugar
  • 1/2       teaspoon baking soda
  • 1/2       teaspoon salt
  • 1/2       teaspoon cinnamon
  • 1/2       cup semi-sweet chocolate chunks or chips
  • 1/4       cup nut spread
  1. Heat oven to 350° F.
  2. Coat 9-by-5-inch loaf pan with olive oil.
  3. In mixing bowl, mash 2 bananas. Add applesauce, egg, egg white and vanilla to bananas and whisk.
  4. In separate bowl, combine flour, sugar, baking soda, salt and cinnamon. Slowly add wet ingredients to dry ingredients and mix. Add olive oil slowly and mix until combined.
  5. Fold in chocolate chunks. Pour batter into loaf pan.
  6. Heat nut spread in microwave until it reaches pourable consistency. Swirl spread into top of batter. Thinly slice long, flat strips of banana. Add slices to top of batter for decoration.
  7. Place loaf pan in oven and bake 1 hour. Remove bread and cool before slicing.

Cranberry Riesling Brined Turkey

  • 1          quart water
  • 6          bay leaves
  • 2          tablespoons whole black peppercorns
  • 1          tablespoon mustard seeds
  • 1 1/2    cups kosher salt
  • 1          bottle (750 milliliters) Riesling wine
  • 2          large shallots, thinly sliced, divided
  • 8          cloves garlic, crushed but left in skins
  • 1          bunch fresh thyme, divided
  • 2          cups fresh cranberries, slightly crushed, divided
  • 1          turkey (16 pounds), giblet package and neck removed
  • ice water, for covering turkey
  • 1/2       cup Bertolli Mild Olive Oil
  • salt, to taste
  • pepper, to taste
  1. In pot, bring water, bay leaves, peppercorns, mustard seeds and kosher salt to boil. Stir until salt is dissolved. Cool to room temperature.
  2. Pour brine into 5-gallon stock pot or container. Pour in wine then add one shallot, garlic, thyme (reserving some for stuffing turkey) and 1 cup cranberries. Slowly lower in turkey.
  3. Pour ice water into pot to cover turkey. Place lid on pot and refrigerate at least 24 hours.
  4. Heat oven to 500° F. Remove turkey from brine, pat dry and stuff with reserved shallot, thyme and cranberries.
  5. Place turkey in roasting pan. Generously massage olive oil into skin of turkey. Sprinkle with salt and pepper, to taste. Use kitchen twine to tie legs together so turkey will keep its shape. Place in roasting pan and roast 20 minutes. Lightly brush skin again with olive oil, reduce heat to 350° F and roast until internal temperature reaches 155-160° F on meat thermometer.
  6. Allow turkey to rest, loosely covered with foil, 30 minutes before carving.

A Host’s Guide to Holiday Gatherings

(Family Features) Gearing up for a big crowd at your holiday festivities can provide moments of excitement, stress, fun and plenty of other emotions as the big dinner draws near. This year, avoid any nagging feelings of doubt with this step-by-step guide to prepare for large gatherings.

Plan in advance. Even if you're typically the last-minute type, the hectic holiday season is no time to wait until a few days ahead of the celebration to throw meals and more together. Instead, be sure to put together a guest list and send invites at least a few weeks out. Take inventory of supplies like silverware, plates, serving dishes and any accessories you'd like to feature at the table. Make an outline of the food each guest is bringing, or, if you'll supply all the food, ensure there will be plenty for everyone - don't forget to take into account special diets or allergies.

Make a list. Planning only takes you so far if you don't write everything down. Once the menu is determined, list out what you'll need to make the magic happen. Don't forget to jot down easily overlooked items that can be picked up the day of, such as ice.

Remember to thaw. One surefire way to make the big day a big disaster is to forget to thaw your main course. If you're planning to roast a turkey - perhaps the most common centerpiece - remember it takes around a day to thaw for every two pounds of meat. So, for example, it could take close to a week for a 14-pound turkey to fully thaw prior to cooking.

Prep the day before. There are many tasks (big and small) that can be taken care of the day before guests arrive, making the holiday less stressful for hosts. From whipping up simple appetizers like dips to giving the house a thorough cleaning, there's plenty of pressure that can be taken off your shoulders 24 hours in advance. If you really want to make the big day a breeze, consider cooking your main dish, slicing the meat and placing it in reheating pans one day prior.

Create a schedule. No matter how far in advance you plan or how much prep you complete prior to the festivities, there will always be day-of work to be done. With guests coming in and out, it can be helpful to lay out what's known as a "fire list," which details times chronologically for when things need done, such as starting the oven to warm the turkey or simply remembering to lay out dessert following the meal.

Butcher's Butter Filet Mignon Roast Garnish

  • 1/4 cup salted butter
  • 1/4 cup duck fat
  • 1/2 teaspoon fresh rosemary, minced
  • 1 teaspoon fresh thyme, minced
  • 1 clove garlic, minced
  • 1/2 anchovy filet, minced
  • 1/8 teaspoon black pepper
  • 1 prepared Omaha Steaks Filet Mignon Roast
  1. In small saucepan, combine butter, duck fat, rosemary, thyme, garlic, anchovy filet and black pepper. Heat on low 3-5 minutes until fragrant. Remove from heat and serve over Filet Mignon Roast.

Roasted Grape Gastrique

Roasted Grapes:

  • 4 cups assorted grapes (picked, washed and dried)
  • 1 tablespoon olive oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cinnamon stick
  • nonstick cooking spray

Gastrique:

  • 2 tablespoons water
  • 1/2 cup sugar
  • 1/2 cup apple cider vinegar
  • 1 tablespoon cornstarch mixed with 4 tablespoons water
  1. To make Roasted Grapes: Heat oven to 350° F.
  2. In bowl, combine grapes, olive oil, salt, pepper and cinnamon stick.
  3. Lightly spray baking sheet with nonstick cooking spray. Pour grape mixture onto baking sheet. Bake 15 minutes. Remove from oven and pour into bowl.
  4. To make Gastrique: In small saucepan, combine water and sugar. Bring to boil over medium-high heat, 5-7 minutes, until sugar starts to brown.
  5. Remove from heat and slowly add vinegar. Return to heat and stir until combined. Add cornstarch and water mixture; bring to boil. Remove from heat.
  6. Pour Gastrique mixture over Roasted Grapes.

Whole Basted Turkey

  • 1 Omaha Steaks Whole Basted Turkey (10 pounds)
  1. Thaw turkey completely in refrigerator 3-4 days or, keeping turkey in vacuum-sealed packaging, place in sink full of cold water 5-7 hours, changing water approximately every 30 minutes.
  2. Heat oven to 350° F. Remove turkey from vacuum-sealed bag. Place turkey in bag provided; secure bag with twist tie. Place bag in deep roasting pan. Using fork, puncture 6-8 holes in top of bag. For extra browning or crispness, slit top of bag for final 20-30 minutes of roasting.
  3. Roast turkey 2 hours, 45 minutes- 3 hours. Turkey is done when internal temperature measured with kitchen thermometer reaches 165° F.

Grilled Chicken Shawarma

Prep time: 10 minutes
Cook time: 16 minutes
Servings: 8

  • 1 1/4    cup plain Greek yogurt, divided
  • 5          teaspoons McCormick Gourmet Organic Shawarma Seasoning, divided
  • 2          tablespoons olive oil
  • 1          tablespoon fresh lemon juice
  • 1          teaspoon McCormick Gourmet Sicilian Sea Salt
  • 2          pounds boneless, skinless chicken breast
  • 4          pita pockets, halved
  • 1          medium seedless cucumber, thinly sliced
  • 8          lettuce leaves
  1. In small bowl, mix 1 cup yogurt and 1 teaspoon shawarma seasoning. Cover and refrigerate until ready to serve.
  2. In small bowl, mix oil, lemon juice, remaining yogurt, remaining shawarma seasoning and sea salt. Reserve 2 tablespoons of mixture; set aside.
  3. Place chicken in large re-sealable plastic bag or glass dish. Add marinade; turn to coat well. Refrigerate 1 hour, or longer for extra flavor.
  4. Heat grill or skillet to medium heat.
  5. Remove chicken from marinade. Discard remaining marinade. Grill or saute 6-8 minutes per side, or until cooked through and internal temperature reaches 165 F, brushing with reserved marinade.
  6. Slice chicken into thin strips. Serve in pitas with cucumber, lettuce and yogurt dressing.

Shaved Carrot Salad with Pomegranate Harissa Dressing

Prep time: 20 minutes
Servings: 5

  • 1/4       cup chopped fresh mint
  • 3          tablespoons pomegranate juice
  • 1          tablespoon honey
  • 2          teaspoons McCormick Gourmet Organic Harissa Seasoning
  • 1/2       teaspoon McCormick Gourmet Sicilian Sea Salt
  • 1/4       teaspoon McCormick Gourmet Organic Black Pepper, coarse ground
  • 3          tablespoons extra-virgin olive oil
  • 1/2       pound multicolor carrots, washed and peeled
  • 1/2       cup shelled roasted pistachios
  • 1/2       cup dried cranberries
  • 3          cups baby arugula
  • 1/4       cup crumbled feta cheese
  1. In large bowl, mix mint, pomegranate juice, honey, harissa seasoning, sea salt and pepper. Gradually add oil while mixing with wire whisk until well mixed. Set aside.
  2. Trim carrot ends. Slice each carrot lengthwise into ribbons with vegetable peeler or mandoline. In medium bowl, toss carrots with 1/4 cup prepared dressing. Stir in pistachios and cranberries.
  3. Arrange arugula on serving platter. Drizzle with remaining dressing and top with carrot mixture. Sprinkle with feta before serving.

Za’atar Labneh

Prep time: 5 minutes
Servings: 8 (2 tablespoons each)

  • 1          cup labneh (yogurt cheese)
  • 2          teaspoons McCormick Gourmet Organic Za’atar Seasoning, divided
  • 1          tablespoon olive oil
  • pita bread, for serving (optional)
  • pita chips, for serving (optional)
  • sliced fresh vegetables, for serving (optional)
  1. In small bowl, mix labneh and 1 teaspoon seasoning until well blended.
  2. Drizzle with olive oil and sprinkle with remaining seasoning.
  3. Serve with fresh pita bread, pita chips or sliced fresh vegetables, as desired.

Family Favorites from Tree to Table

That was 12 years ago, and the Benson family has grown olives ever since. Though they are seasoned farmers, the Benson family members are new to olives, and they have brought an innovative way of harvesting to the decades old industry.

While California Ripe Olives remain a primarily hand-harvested crop, the Bensons’ young grove was planted with the intention of harvesting mechanically. As newer olive groves are planted, mechanical harvesting is slowly being implemented. 

“It’s a labor of love,” Benson said. “We view olives as our crop for the next generation.”

Rustic Chicken with Ripe Olives

Cook time: 30-35 minutes
Servings: 4

  • 1/2       cup mixed, porcini or chanterelle dried mushrooms
  • 2          teaspoons fennel seeds
  • 1 1/2    teaspoons dried basil
  • 1 1/2    teaspoons sea salt
  • 1/4       teaspoon red pepper flakes
  • 1 1/2    pounds baby yellow potatoes, halved
  • 3          tablespoons extra-virgin olive oil, divided
  • 4          small boneless, skinless chicken breasts
  • 1 1/2    cups California Black and Green Ripe Olives
  • 1/4       cup chicken broth
  • 1/4       cup white wine
  • 1          lemon, thinly sliced and seeds removed
  1. Heat oven to 425° F.
  2. In small food processor, pulse mushrooms, fennel seeds, basil, salt and red pepper flakes until mixture is finely chopped and almost powder-like.
  3. Place potatoes on large, shallow-rimmed baking sheet and drizzle with 2 tablespoons olive oil; toss to coat. Sprinkle with half the mushroom mixture and toss lightly.

Tomato Soup with Homemade Olive Oil Croutons

Prep time: 10 minutes

  • 4          tomatoes
  • 3          grilled red bell peppers in oil
  • 1          shallot
  • 1/2       cup Bertolli Extra Virgin Olive Oil, plus additional for brushing on bread
  • 3          tablespoons sherry vinegar
  • 1          clove garlic
  • 10        basil leaves
  • salt, to taste
  • pepper, to taste
  • 4          slices crusty bread
  1. Cut small cross in bottom of tomatoes and submerge in boiling water 30 seconds. Let tomatoes cool in ice water 30 seconds then remove skins.
  2. In blender, blend tomatoes, red bell peppers, shallot, extra-virgin olive oil, vinegar, garlic, basil, salt and pepper, to taste, until mixture is smooth. Add mixture to large pot and heat, stirring frequently.
  3. Cut bread slices, brush with olive oil and grill 2 minutes per side over medium-high heat until visible grill marks have formed.

Healthy Beet Hummus

Prep time: 15 minutes

  • 3          beets
  • salt, to taste
  • Bertolli Extra Virgin Olive Oil
  • 2          cups canned chickpeas
  • 2          tablespoons sesame seed paste or tahini
  1. Heat oven to 375° F.
  2. Peel beets and boil until soft; season with salt and olive oil.
  3. Puree beets with chickpeas and sesame seed paste until a uniform paste forms. Transfer to oven-safe serving dish. Bake 10 minutes and serve.

Mushroom Carpaccio and Creamed Spinach Au Gratin

Prep time: 15 minutes

Mushroom Carpaccio:

  • 2 1/4    cups cremini mushrooms

Creamed Spinach:

  • 2 1/4    cups spinach
  • 1/2       cup heavy cream
  • salt
  • pepper
  • Parmesan cheese
  1. To make Mushroom Carpaccio: Heat oven to 400° F.
  2. Clean mushrooms and cut into thin slivers.
  3. Season with olive oil and salt. Set aside.
  4. To make Creamed Spinach: Boil spinach 2 minutes, strain and place it into saucepan, over cream. Cook 5 minutes.
  5. In blender, puree mixture and pour over Mushroom Carpaccio.
  6. Grate Parmesan cheese over entire dish; bake 5 minutes.

Bitter Chocolate and Pistachio Cream Dessert

Prep time: 15 minutes

  • 1/2       cup, plus 1 tablespoon, sweetened condensed milk
  • 1/2       cup brown sugar
  • 1 1/2    tablespoons Bertolli Extra Virgin Olive Oil, plus additional for pistachio cream
  • 4          ounces dark chocolate
  • 1 1/4    cups shelled pistachios
  1. In saucepan, combine condensed milk and sugar; cook over low heat, stirring until mixture takes on toasted color.

  3. Line 9-by-5-inch loaf pan with parchment paper and spread mixture into pan. Refrigerate until fully set.

Sicilian Lamb Meatballs with Whipped Feta-Olive Oil Sauce

Sicilian Lamb Meatballs:

  • 1          pound ground lamb

  • 1          large egg, lightly beaten

Feta-Olive Oil Sauce:

  • 1/2       pound feta cheese, crumbled

  • 2          tablespoons plain Greek yogurt
  1. To make Lamb Meatballs: Heat oven to 375° F. Line large rimmed baking sheet with parchment paper.
  2. In large bowl, mix lamb, olive oil, panko bread crumbs, pine nuts, raisins, egg, salt and pepper. Use hands to mix all ingredients together.
  3. Roll mixture into approximately 36 meatballs about 1 inch in diameter and place on baking sheet.
  4. Bake 15 minutes until sizzling and golden brown.
  5. To make Feta-Olive Oil Spread: In food processor, blend feta cheese, olive oil and yogurt 30-45 seconds until creamy.

Marinated Roasted Portobello Mushrooms with Olive Oil Agrodolce

Prep time: 10 minutes

Roasted Mushrooms:

  • 2          pounds Portobello mushrooms

Agrodolce:

  • 1/2       cup red wine vinegar

  1. To make Roasted Mushrooms: Clean and destem mushrooms, cutting large mushroom caps in half.
  2. In large bowl, toss mushrooms with olive oil, fresh sage and fresh rosemary. Let mushrooms marinate 1 hour, tossing occasionally to absorb oil.
  3. Heat oven to 400° F. Line two large baking sheets with parchment paper.
  4. Spread marinated mushrooms on baking sheets, making sure mushrooms are in single layer and not crowded. Sprinkle lightly with salt and pepper.
  5. Roast 30 minutes until mushrooms are crisped and golden brown at edges.
  6. To make Agrodulce: In small saucepan over medium-low heat, bring vinegar and honey to simmer, stirring occasionally until honey dissolves.
  7. Continue simmering 15-20 minutes until vinegar is reduced by half and is thick and syrupy.
  8. To serve, place roasted mushrooms on platter and drizzle generously with Agrodolce and olive oil. Serve with choice of side.

Rustic Tuscan Potato Leek Soup with Olive Oil Pesto

Prep time: 15 minutes
Cook time: 50 minutes
Servings: 6

Potato Leek Soup:

  • 3          medium-large leeks
  • 2          tablespoons Carapelli Unfiltered Extra Virgin Olive Oil
  • 1          large garlic clove, coarsely chopped
  • 1/2       teaspoon kosher salt, plus additional, to taste (optional)
  • 2          pounds Yukon gold potatoes, peeled and diced into 2-inch cubes
  • 6          cups chicken or vegetable broth

Pesto:

  • 1          packed cup fresh basil
  • 1          packed cup flat-leaf parsley
  • 1          medium-large garlic clove, roughly chopped
  • 3          tablespoons pine nuts or 1/4 cup walnuts
  • 1/2       teaspoon kosher salt
  • 1/4       cup Carapelli Unfiltered Extra Virgin Olive Oil
  1. To make Potato Leek Soup: Trim bulb ends and tough, dark green stems off leeks. Slice tender white and light green stems in half lengthwise then soak in cold water 10-15 minutes to remove dirt. Drain leeks, rinse well and slice into thick half-moons.
  2. In large Dutch oven or stockpot over medium-low heat, heat olive oil. Add leeks, garlic and salt. Cook, stirring occasionally, until leeks are soft, about 10 minutes.
  3. Add potatoes and broth. Cover and increase heat to medium. Bring soup to simmer then uncover and continue cooking 30 minutes.
  4. Using immersion blender, puree soup until smooth, or carefully ladle into standing blender to puree in batches. Taste and add more salt, if desired.
  5. To make Pesto: In food processor, pulse basil, parsley, garlic, pine nuts, salt and olive oil to make chunky herb sauce.
  6. To serve, ladle soup into bowls and spoon Pesto on top of each serving.

Ricotta Bruschetta

  • 1          loaf Italian bread, cut diagonally into 1/2-inch thick slices
  • 2          tablespoons Bertolli Organic Mild Olive Oil
  • 1          clove garlic
  • 1⁄3       cup Bertolli Tomato & Basil Sauce
  • 1        container (15 ounces) ricotta cheese
  1. Heat oven to 425° F.
  2. Arrange bread on baking sheet. Evenly brush with oil. Bake 10 minutes, or until golden brown.
  3. Rub toast evenly with garlic then top with sauce and cheese. Bake 5 minutes, or until cheese is golden brown. Serve hot.

Prosciutto and Arugula Rustica Pizza

Prep time: 15 minutes
Cook time: 10 minutes
Servings: 4

  • 1          cup Bertolli Rustic Cut Three Cheese with Aged Asiago, Romano & Parmesan Sauce
  • 1          prebaked pizza crust (12 inches)
  • 1/2       cup shredded fontina cheese
  • 1          ounce prosciutto, thinly sliced
  • 2          cups arugula
  • 1          tablespoon Parmesan cheese, grated
  • 1          tablespoon toasted pine nuts
  • 1          tablespoon Bertolli Extra Virgin Olive Oil
  • 1          tablespoon Bertolli Balsamic Vinegar of Modena
  1. Heat oven to 450° F.
  2. Evenly spread sauce on crust then top with fontina cheese. Bake 10 minutes, or until cheese is melted, and remove from oven.
  3. Top with prosciutto. Arrange arugula in center of pizza then sprinkle with Parmesan cheese and pine nuts. Drizzle olive oil and vinegar over arugula and serve.

Eggs in Purgatory

Servings: 4

Eggs:

  • 1          jar (23 ounces) Bertolli Rustic Cut Roasted Garlic Marinara Sauce
  • 1/2       cup water
  • 4          eggs
  • salt, to taste
  • pepper, to taste
  • 2          tablespoons freshly grated Parmesan cheese
  • 1          tablespoon chopped parsley

Bread:

  • 4          slices ciabatta, sliced about 1/2-inch thick
  • 1 1/2    tablespoons Bertolli Extra Virgin Olive Oil
  • 1          large clove garlic, peeled but not chopped
  1. To make eggs: In large skillet with high sides over medium-high heat, add marinara sauce. Pour water into empty jar, swish it around to lift any sauce left in jar and pour it over sauce in skillet. Bring to low boil.
  2. Using back of wooden spoon, make four small wells in sauce. Carefully crack eggs, one at a time, and drop each egg into a separate well in bubbling sauce. Sprinkle salt and pepper on each one, to taste; cover skillet with lid and cook 7-8 minutes, or until egg whites set.
  3. When eggs are cooked to desired doneness, sprinkle with Parmesan cheese and chopped parsley.
  4. To make bread: Char bread on bruschetta pan or indoor grill pan about 1 minute on each side until toasted. Once toasted, rub with clove of garlic on both sides then drizzle with olive oil.
  5. Serve eggs with hunks of charred garlic bread.

Note: If using skillet larger than 12 inches, you can add eight eggs instead of four for additional servings.

Carrots and Fresh Herbs with Champagne-Dijon Vinaigrette

Prep time: 10 minutes
Servings: 6

Champagne-Dijon Vinaigrette:

  • 2          tablespoons champagne vinegar
  • 1          teaspoon Dijon Mustard
  • 1          tablespoon clover honey
  • 1/2       cup Carapelli Organic Olive Oil
  • 1/2       teaspoon garlic, minced
  • 1/2       teaspoon sea salt
  • 1/4       teaspoon freshly ground black pepper
  • 1          teaspoon fresh parsley, finely chopped
  • 1          teaspoon basil, finely chopped

 

  • 1          pound carrots, peeled and finely shredded
  • 2          tablespoons Italian parsley, chopped
  • 2          tablespoons chives, thinly sliced, plus more cut into 3/4-inch  pieces, for garnish
  • 1/3       cup Champagne Vinaigrette
  • fine sea salt, to taste
  • freshly ground black pepper,  to taste
  • chive sticks, for garnish
  1. In medium mixing bowl, combine champagne vinegar, Dijon and honey. Whisk constantly until well combined. While whisking, slowly drizzle in olive oil to emulsify. Add garlic, salt, pepper, parsley and basil: whisk to combine.
  2. In mixing bowl, toss carrots, parsley and chives. Add dressing. Season, to taste, with sea salt and freshly ground black pepper. Garnish with chive sticks.

Notes: Vinaigrette can be stored in refrigerator up to five days. For zestier salad, add additional 2 tablespoons vinaigrette to carrots; serve with crusty bread.

Whipped Ricotta and Goat Cheese Beet Skewers

Prep time: 20 minutes
Cook time: 3 hours, plus cooling time
Servings: 42 skewers

Beets:

  • 2          beets (about 1 pound), 3 inches in diameter, peeled and sliced into 3/4-inch chunks
  • 1          tablespoon Carapelli Oro Verde Extra Virgin Olive Oil, plus more for drizzling
  • 1/2       teaspoon fresh thyme leaves
  • 1          teaspoon sea salt
  • arugula, for garnish
  • flaked sea salt, for garnish

Whipped Ricotta and Goat Cheese:

  • 4          ounces goat cheese
  • 1/4       cup whole milk ricotta cheese
  • 1          tablespoon Carapelli Oro Verde Extra Virgin Olive Oil
  • 1/4       teaspoon lemon zest
  • 1/8       teaspoon sea salt
  • 1/8       teaspoon freshly ground black pepper
  1. Heat sous vide water bath to 185° F.
  2. In mixing bowl, combine beets, olive oil, thyme and salt; toss to coat. Remove beets from liquid and divide, placing them in single layer into two quart-sized vacuum-seal bags, leaving any excess liquid behind.
  3. Use vacuum sealer to remove air and double-seal bag. To use zip-top bags instead, slowly dip slightly open bags into large container filled with water, allowing water to displace air. Seal bags when air is removed.
  4. Place vacuum-sealed bag into prepared water bath, placing heavy, heat-resistant bowl on top of beets to keep them submerged, if necessary. Cook 3 hours.
  5. If you do not have a sous vide machine, bring large stock pot filled with water to rolling boil. Place vacuum-sealed bags in water. Reduce to gentle simmer, cover and cook 1 hour.
  6. Carefully remove beets from water bath and cool in sealed bag until they reach room temperature, about 30 minutes. Refrigerate at least 30 minutes more before serving.
  7. In mini food processor, cream goat cheese, ricotta and olive oil until smooth. Add zest, salt and pepper: stir to combine.
  8. Transfer cheese mixture to piping bag fitted with star tip and refrigerate until ready to use.
  9. To serve, remove beets from bag and arrange on serving platter. Pipe dollop of Whipped Ricotta and Goat Cheese onto each beet. Drizzle with olive oil.
  10. Garnish with arugula and pinch of flaked sea salt; place skewer through each beet to serve.

Olive Oil Drizzled Pecorino Popcorn

Prep time: 5 minutes
Cook time: 5 minutes
Servings: 4

  • 1/2       cup grated pecorino, plus more for garnish
  • 1/2       teaspoon freshly ground black pepper, plus more for garnish
  • 3          tablespoons Carapelli Unfiltered Extra Virgin Olive Oil, divided
  • 1/3       cup yellow popcorn kernels
  1. In bowl, combine pecorino and pepper; mix until well combined and there are no cheese clumps.
  2. In small saucepan over low flame, heat 2 tablespoons olive oil; keep warm.
  3. Add remaining olive oil and popcorn to large Dutch oven. Stir until all popcorn kernels are coated in oil.
  4. Cover Dutch oven with lid and cook over medium-high heat, shaking pot periodically. Once popcorn begins to pop, lower heat to medium and continue to shake pot approximately every 15 seconds. When popping slows considerably, remove Dutch oven from heat and allow to rest until popping ceases, about 30 seconds.
  5. Remove lid and transfer popcorn to large mixing bowl. Drizzle warm olive oil over popcorn; toss to coat. Sprinkle cheese mixture over popcorn; toss to coat.
  6. Divide popcorn into bowls. Sprinkle some freshly grated pecorino and dash of freshly ground black pepper over top; serve.
