- 1 1/2 tablespoons grated lemon zest, plus additional for garnish (optional)
- 1/4 cup fresh lemon juice
- 1/4 cup limoncello
- powdered sugar, for garnish (optional)
- dried sweetened lemon rings, for garnish (optional)
- Heat oven to 350 F. Oil 8-by-12-by-2-inch pan with olive oil and line bottom with parchment paper.
- In bowl, whisk flour, sugars, salt, baking soda and powder. In another bowl, whisk 1 1/3 cups olive oil, milk, eggs, lemon zest, juice and limoncello. Add dry ingredients; whisk until just combined.
- Pour batter into prepared pan and bake 60-75 minutes until top is golden and cake tester comes out clean. Transfer cake to rack and let cool 30 minutes.
- Run knife around edge of pan, invert cake onto rack and let cool completely, 2 hours.
- Sprinkle with powdered sugar, lemon zest and lemon rings right before serving, if desired.

Cookies:
- 2 cups all-purpose flour
- 1 cup cake sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- To make cookies: Preheat oven to 350 F. Lightly grease baking sheet.

- Add olive oil, vanilla extract and almond extract. Stir until crumbly dough forms.
- Add 2 tablespoons milk; stir until soft dough ball forms, adding more milk if needed.
- Place dough ball on lightly floured surface. Roll out dough until 1/4-inch thick. Using jar lid or other circular object, cut out cookies; place on baking sheet. Repeat until all dough is used.
- Bake 8-10 minutes; do not overbake. Set aside to cool.
- To make glaze: In small bowl, stir powdered sugar, 2 tablespoons orange juice and salt until thick glaze forms. Add more juice, if needed, to thin out glaze or add more powdered sugar to thicken.
- When cookies are cooled, glaze them. Top with orange slices or blood orange slices and pinch of sugar.

- 1/2 cup red bell pepper, diced

- 2 eggs
- 2/3 cup milk
- 3 teaspoons almond extract
- 1/2 teaspoon ground cinnamon
- 6 bread slices, crust removed, cut in half
- 3 tablespoons butter

- In skillet, cook sausage links according to package directions. Set aside.
- In medium bowl, whisk eggs, milk, almond extract and cinnamon.
- Dip bread slice in egg mixture. Wrap bread slice around cooked sausage link, pressing seam to keep from unrolling. Repeat with remaining bread slices and sausage links.
- In large skillet over medium-high heat, melt butter. Place roll-ups in skillet, seam-side down, and cook until all sides are browned, approximately 10 minutes.
- Drizzle with syrup.

Dressing:
- 1 cup plain Greek yogurt
- 1/3 cup buttermilk, plus additional (optional)
- 1 tablespoon fresh-squeezed lime juice, plus additional (optional)
- 3 tablespoons chopped cilantro
- 2 tablespoons taco seasoning
Salad:
- 2 pounds boneless, skinless chicken breasts
- 2 tablespoons taco seasoning
- 2 tablespoons olive oil
- 1 head leaf lettuce, chopped
- 1 avocado, chopped into bite- sized pieces
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 pint grape or cherry tomatoes, chopped
- 1 cup shredded cheese (Monterey Jack or Mexican)
- tortilla strips or crushed tortilla chips, for topping
- To make dressing: In small bowl, stir yogurt, buttermilk, lime juice, cilantro and taco seasoning until combined. Taste and adjust lime juice and cilantro as needed. - To make salad: Season chicken on both sides with taco seasoning. Heat large skillet over medium-high heat and add olive oil. Add chicken to pan and cook on both sides until outside is golden brown and chicken is cooked through. Remove to cutting board and slice into strips.
- On large platter, heap chopped lettuce. Sprinkle chicken over top. Add avocado, beans, corn, tomatoes and shredded cheese. Drizzle dressing on top and sprinkle with tortilla strips or crushed tortilla chips.

- Cover and cook 2 hours on low. Switch to warm until ready to serve.

- Heat oven to 350 F.
- In medium bowl, add broccoli and cheese contents from package. Microwave 5 minutes, or until cheese is saucy. Set aside.
- In skillet, cook chopped bacon 4 minutes. Add green onions; cook 2 minutes. Add mushrooms; cook 4 minutes, or until bacon is completely cooked and mushrooms are tender. Drain onto paper towel over plate. Set aside.
- In medium bowl, whisk eggs and milk until combined. Add broccoli and cheese mixture. Add 1 cup cheese. Stir to combine. Set aside.
- In pie shells, divide drained bacon mixture evenly. Divide broccoli mixture evenly and pour over bacon mixture. Sprinkle remaining cheese over both pies.
- Bake 40 minutes.
- Allow to cool at least 12 minutes before serving.
Note: To keep edges of crust from burning, place aluminum foil over pies for first 20 minutes of cook time. Remove after 20 minutes and allow to cook uncovered until completed.

- 1 cup (2 sticks) unsalted butter, at room temperature
- 3/4 cup Dark Brown Sugar
- 1/2 cup Organic Raw Cane Sugar

- 3 cups quick oats
Creme Filling:
- 3/4 cup unsalted butter, at room temperature
- 2 cups Confectioners’ Sugar

- To make oatmeal cookies: Preheat oven to 350 F. Line two cookie sheets with parchment paper and set aside.
- In large bowl, whisk flour, baking soda, salt, cinnamon and cloves, if desired. Set aside.
- In bowl of stand mixer, beat butter, dark brown sugar and raw cane sugar on medium-high speed until light and creamy, about 1 minute. Add eggs and vanilla; beat until combined. Scrape down sides and bottom of bowl.
- With mixer on low, slowly add dry ingredients to wet ingredients. Mix until combined while avoiding overmixing. Add oats and mix until incorporated.
- Scoop about 2 tablespoons dough onto prepared cookie sheet. Space dough balls at least 3 inches apart. Bake 10-12 minutes, or until edges are light brown. Let cookies cool 5 minutes before transferring to wire rack to cool completely.
- To make creme filling: In bowl of stand mixer, beat butter on medium-high speed until light in color, about 3 minutes. With mixer on low, gradually add confectioners’ sugar and mix until well combined, about 1 minute. Add 1 tablespoon heavy cream, vanilla and salt. Beat on medium-high speed until fluffy. If filling is too thick, add second tablespoon heavy cream.
- Once cookies cool, pipe or spread creme filling on flat sides of half the cookies. Top with remaining cookies to form sandwiches.

Rattle Snake Pasta

- 1/4 cup buttery spread
- 2 tablespoons all-purpose flour
- 3/4 cup dairy milk (2% recommended)
- 1/2 cup vegetable broth
- 1 tablespoon vegetable base
- 1/2 cup Parmesan cheese, shredded
- salt, to taste (optional)
- pepper, to taste (optional)
- 1/4 cup pickled jalapeno slices
- 3 tablespoons minced garlic
- 10 ounces cooked rotisserie chicken, shredded
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 handful fresh cilantro, minced
- 1 pound whole-wheat linguini, cooked
- In medium pot, melt buttery spread then add flour; mix well. Slowly add dairy milk and vegetable broth, stirring well.
- Add vegetable broth and Parmesan cheese; heat slowly until thickened. Add salt and pepper, to taste, if desired.
- Add jalapenos, garlic, bell peppers and roasted chicken; heat thoroughly.
- Serve over cooked linguini.
Zucchini Oatmeal Muffins

- 1 zucchini
- 1 1/2 cups dairy milk (2% recommended)
- 3 bananas
- 6 pieces pitted Deglet Noor dates
- 1 teaspoon vanilla extract
- 2 tablespoons safflower oil
- 2 1/2 cups old-fashioned oats
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 teaspoon ground cinnamon
- Preheat oven to 350 F.
- Grate zucchini. Using kitchen towel or cheesecloth, wring as much water as possible. Set aside.
- In blender, blend dairy milk, banana, dates, vanilla and oil until smooth. Set aside.
- In large bowl, combine oats, baking powder, salt and cinnamon.
- Combine milk mixture, zucchini and oat mixture until well combined. Pour into coated 12-muffin pan.
- Cook 30 minutes, or until golden brown.
- Tips: Pair muffin (counts as one grain) with eggs and unsweetened nut butter for a balanced meal. Crumble over plain yogurt for parfait twist.

Easy Brunch Quiche

It’s time to add something new to the table with fresh ingredients and simple instructions to enhance your weekend spread.
Try this recipe for an Easy Brunch Quiche that is sure to have your senses swirling with every bite. This quiche is layered with many tastes and a variety of ingredients to give it crave-worthy flavor.
To create this dish, start with one package of broccoli and cheese then microwave it for 5 minutes until heated through.
Add 12 slices of chopped bacon to a skillet. While cooking, add 1/2 cup of green onions. Cook for 2 minutes then add 1 cup of mushrooms to the skillet. Cook for 4 minutes and drain the grease.
In a small mixing bowl, combine four eggs and 1 cup of milk. Whisk together. Add egg mixture to the broccoli and cheese. Also add 1 cup of shredded cheese and stir the ingredients together.
In two separate pie shells, spoon in the bacon mixture then pour the egg and broccoli mixtures over the top. Sprinkle with a little more cheese then bake for 35-45 minutes at 350 F.

Easy Brunch Quiche
Serves: 12
- 1 package (10 ounces) frozen broccoli with cheese
- 12 slices bacon, chopped
- 1/2 cup green onions, sliced
- 1 cup mushrooms, sliced
- 4 eggs
- 1 cup milk
- 1 1/2 cups shredded cheese, divided
- 2 frozen deep dish pie shells (9 inches each)
- Heat oven to 350 F.
- In medium bowl, add broccoli and cheese contents from package. Microwave 5 minutes, or until cheese is saucy. Set aside.
- In skillet, cook chopped bacon 4 minutes. Add green onions; cook 2 minutes. Add mushrooms; cook 4 minutes, or until bacon is completely cooked and mushrooms are tender. Drain onto paper towel over plate. Set aside.
- In medium bowl, whisk eggs and milk until combined. Add broccoli and cheese mixture. Add 1 cup cheese. Stir to combine. Set aside.
- In pie shells, divide drained bacon mixture evenly. Divide broccoli mixture evenly and pour over bacon mixture. Sprinkle remaining cheese over both pies.
- Bake 40 minutes.
- Allow to cool at least 12 minutes before serving.
Note: To keep edges of crust from burning, place aluminum foil over pies for first 20 minutes of cook time. Remove after 20 minutes and allow to cook uncovered until completed.

- 2 tablespoons flour
- 1 1/2 cups milk
- 1 cup shredded Swiss cheese
- 2 sheets puff pastry
- 18 eggs
- 2 cups diced ham
- chopped fresh green onions
Heat oven 375 F.
- In small saucepan, melt butter. Whisk flour with butter. Gradually pour in milk, whisking each time. Bring to simmer, whisking until mixture starts to thicken. Remove from heat; stir in Swiss cheese. Set aside.
- Use rolling pin to thin out puff pastries. Cut each into nine squares. Line pastry squares in muffin cups, pressing bottoms down firmly and moving pastries up sides for edges to come up just over muffin tins. Fill each cup with 1 teaspoon cheese sauce. Crack one egg into each cup and sprinkle each with diced ham.
- Bake 10-15 minutes until eggs set. Sprinkle with chopped green onions.

Breakfast Burrito
- 1 Silver Fern Farms New Zealand 100% Grass-Fed New York Strip Steak (10 ounces)
- oil
- salt, to taste
- pepper, to taste
- 1/2 onion, finely chopped
- 1 red bell pepper, sliced lengthwise
- 4 large mushrooms, sliced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2-1 teaspoon chili powder
- 1 tomato, finely chopped
- 8 eggs
- 1/2 cup milk
- 4 large tortillas
- 1 cup spinach
- 1 1/2 ounces feta cheese, crumbled
- 1/4 cup cilantro
- 1 avocado
- lime wedges (optional)
- hot sauce (optional)
- Remove steak from packaging and set aside 10 minutes. Once steak reaches room temperature, heat pan over medium-high heat.
- Rub steak with oil and season with salt and pepper, to taste.
- Cook until medium-rare, approximately 3-4 minutes each side. Remove from pan and cover loosely with tinfoil to rest 5 minutes.
- Reduce heat to medium and add splash of oil. Add onion; cook 1 minute. Add red bell pepper and mushrooms; cook 1 minute.
- Add cumin, paprika and chili powder; stir through.
- When veggies are tender (about 2 minutes), add tomato and cook until soft. Season with salt and pepper, to taste.
- In large bowl, whisk eggs, milk and salt and pepper, to taste.
- Heat pan to medium heat and add splash of oil.
- Pour egg mixture into pan and cook, lifting and folding eggs until thickened and no visible liquid egg remains. Do not stir constantly.
- Lay tortillas on flat surface or plate.
- In center of tortilla, add cooked veggies and top with thinly sliced beef. Add handful of spinach, scrambled eggs, crumbled feta, cilantro and avocado. Fold bottom of tortilla and roll.
- Serve with lime wedges and hot sauce, if desired.

Doughnuts:
- Vegetable oil, for frying
- 2 cups all-purpose flour
- 1 3/4 cups Domino Golden Sugar, divided
- 2 tablespoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons lemon zest
- 5 large eggs
- 1 3/4 cups ricotta cheese
- 1 tablespoon pure vanilla extract
Lemon Curd (optional):
- 1 stick unsalted butter, softened
- 1 1/2 cups Domino Golden Sugar
- 2 large eggs
- 2 egg yolks
- 4 lemons, zest and juice only
- 1/8 teaspoon salt
- To make doughnuts: In large saucepan, preheat oil to 350 F. Prepare cookie sheet with paper towel to drain doughnuts once out of hot oil.
- In bowl, mix flour, 3/4 cup sugar, baking powder and salt. Add lemon zest, eggs, ricotta cheese and vanilla extract; mix until well combined.
- Use ice cream scoop to scoop small amounts dough into oil, 4-5 pieces at a time. Fry each batch until golden brown, about 7 minutes. Keep oil at or near 350 F; if oil is too hot, doughnuts will turn golden brown but centers may still be raw. Remove from oil and drain in paper towel. Repeat with remaining dough.
- While still hot, toss doughnuts with remaining sugar.
- To make lemon curd, if desired: In large bowl of stand mixer, cream butter and sugar until light and fluffy. Add eggs and egg yolks, one at a time. Add lemon zest, lemon juice and salt.
- Transfer mixture to saucepan and cook at low-medium heat until thick and creamy, stirring constantly. Remove from heat and let cool before serving with doughnuts.
