Tossed Bean Salad with Lemon Vinaigrette
Prep time: 15 minutes

- 1 can (15 ounces) READ 3 or 4 Bean Salad
- 2 tablespoons lemon juice or white wine vinegar
- 2 tablespoons olive oil
- coarsely ground black pepper, to taste
- 1 package (about 10 ounces) mixed salad greens with carrots
- 4 slices bacon (about 1/4 cup), cooked crisp and crumbled (optional)
- shaved Parmesan or Asiago cheese (optional)
- Drain bean salad well; in small bowl, reserve 1/2 cup liquid.
- To make dressing: Whisk reserved bean liquid and lemon juice then whisk in oil. Add pepper, to taste.
- Place salad greens in bowl. Add bean salad and bacon. Add dressing, as desired. Toss gently to coat. Arrange on platter; top with shaved cheese, if desired.
Variation: Top salad with sliced grilled chicken then top with cheese.

- 1 jar (16 ounces) Aunt Nellie’s Pickled Beets and Onions
- 1 medium eggplant
- 2 teaspoons salt, plus additional, to taste, divided
- 1 cup vegetable oil
- 4 hard-boiled eggs, sliced
- pepper, to taste
- 1 1/2 teaspoons za’atar, plus additional for serving, divided (optional)
- 1/2 teaspoon sumac, plus additional for serving, divided (optional)
- 1 cucumber, diced
- 3 Roma tomatoes, diced
- 1/3 cup fresh parsley, finely chopped
- 1/2 lemon, juice only
- 4 whole-grain pita breads with pockets
- 1/2 cup hummus
- 2 cups shredded red cabbage
- 1 medium green bell pepper, thinly sliced
- 1/4 cup Amba pickled mango sauce (optional)
- 1/4 cup tahini
- Drain beets and onions; set aside.
- Wash eggplant. Slice into 3/8-inch-thick pieces. Place slices on cooling rack. Add 2 teaspoons salt to slices to draw out extra moisture. Let sit 10 minutes. Pat extra moisture off.
- In large 14-inch skillet, heat vegetable oil over medium heat. Once oil is hot, place eggplant slices in oil; fry until browned, about 3 minutes per side, in batches of four pieces. Place on paper towel-lined plate to absorb additional oil.
- Season hard-boiled egg slices with salt and pepper, to taste. Season with 1/2 teaspoon za’atar and sumac, if desired. Set aside.
- To make salad: In medium bowl, combine cucumber, tomatoes, parsley, lemon juice and remaining za’atar. Set aside.
- Gently slice one end of each pita and open pocket. In microwave on high, heat pitas 10 seconds. Place equal amounts fried eggplant in each pita. Spread 2 tablespoons hummus in each pita. Gently layer one-fourth of egg slices, beets and onions, cabbage, Israeli salad and green peppers in each pita.
- Drizzle each sabich with about 1 tablespoon amba sauce, if desired, and 1 tablespoon tahini. Season with additional salt and pepper or sumac and Za’atar, if desired.

Baked Lemon Donuts

For example, these Baked Lemon Donuts are a unique dessert that can double as a sweet, fruity breakfast. Delicious and packed with lemon zest, they are coated in a lemon-sugar topping for a burst of lemon in every bite.
To make this recipe, start with 2 cups of flour in a mixing bowl. Add sugar, baking powder and salt then whisk everything together.
Then add buttermilk, eggs, melted butter, lemon juice, vanilla extract and lemon zest to the dry ingredients. Stir until all ingredients are combined to form dough.
Use a piping bag or cut a corner off a re-sealable storage bag then pipe the dough into a donut pan and bake at 350 F for 9 minutes.
While the donuts are in the oven, add some lemon zest to a half cup of sugar and mix.

- 2 cups flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3/4 cup buttermilk
- 2 eggs
- 2 tablespoons butter, melted
- 2 teaspoons lemon juice
- 1/2 teaspoon vanilla extract
- 1 teaspoon lemon zest
Lemon Sugar Topping:
- 1/2 cup sugar
- 1 teaspoon lemon zest
- 1/2 cup butter, melted
- Heat oven to 350 F.
- In large bowl, whisk flour, sugar, baking powder and salt.
- Add buttermilk, eggs, butter, lemon juice, vanilla extract and lemon zest. Stir until combined.
- Pipe batter into donut pan.
- Bake 9 minutes. Cool on wire rack.
- To make topping: In bowl, combine sugar with lemon zest. In separate bowl, place melted butter.
- Place donut face down in melted butter then face down in lemon sugar topping. Repeat with all donuts.

Pappardelle with Garden Vegetables

- Salted water
- 3 tablespoons olive oil
- 3 tablespoons shallots or white onion, minced
- 2 cloves garlic, minced
- 1/4 teaspoon chili flakes
- 1 cup white wine
- 2 cups pappardelle noodles
- 3/4 cup vegetable stock
- 3 tablespoons capers (optional)
- 2 vine-ripened tomatoes, sliced in wedges
- 1 handful baby kale
- 1 fresh lemon, juice only
- 2 tablespoons butter (optional)
- sea salt, to taste
- freshly ground black pepper, to taste
- 1 handful fresh basil, torn
- Bring large pot of salted water to boil.
- In fry pan on medium-high heat, add olive oil and onions; saute 2 minutes. Lower heat slightly and add garlic and chile flakes. Saute on medium heat 2-3 minutes. Add white wine and deglaze pan. Cook 3 minutes. Remove from heat and keep warm until ready to add freshly cooked pasta.
- In pot of boiling water, add pappardelle. Cook according to package instructions then drain.
- Place fry pan back on medium heat. Add drained pasta; vegetable stock; capers, if desired; tomatoes; baby kale; and lemon juice. Add butter, if desired, and toss well. Cook 2-3 minutes, tossing occasionally, and season with salt and pepper, to taste, and fresh basil.
- Toss again, remove from heat and serve.
Homemade Potato Gnocchi
Total time: 2 hours
Servings: 2-4
- 2 medium Yukon Gold or russet potatoes
- 3/4 teaspoon sea salt, divided
- 2 teaspoons water
- 1 cup all-purpose flour, divided, plus additional, for surface
- 1/4 teaspoon freshly grated nutmeg
- 1/8 teaspoon white pepper
- 2 large egg yolks
- Preheat oven to 400 F. Place potatoes on sheet of foil, add 1/2 teaspoon salt and water; wrap. Bake 40 minutes, or until cooked through.
- Peel potatoes while hot. Cut and rice potatoes. Let potatoes cool completely.
- To make dough, sprinkle potatoes with flour. Aerate with bench scraper then add remaining salt, nutmeg and white pepper.
- Break up egg yolks and pour over potatoes. Cover surface with flour. Continue cutting and gently lifting dough.
- Test dough by squeezing gently; it shouldn’t stick. Add flour, if needed.
- Shape dough into rectangle and fold several times, using fingertips to bring together. Flatten dough out until it reaches finger thickness. Sprinkle with flour and let rest 5-10 minutes.
- Cut finger-width strips of dough and sprinkle strips with flour. Roll out each strip and cut ropes into 3/4-inch pieces. Separate slightly and flour well.
- Fresh gnocchi can sit at room temperature 30 minutes before cooking.
- To freeze: Place gnocchi on tray, making sure they aren’t touching. Once frozen, transfer to plastic freezer bag and freeze up to 2 months. Cook gnocchi from frozen and serve with desired sauce.

Grilled Portobello Gyros with Yogurt Dill Sauce

- 4 portobello mushrooms
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon smoked paprika
- 2 yellow bell peppers, sliced
Yogurt Dill Sauce:
- 1 English cucumber, grated
- 1 cup whole-milk
Greek yogurt
- 1/2 cup sour cream
- 2 tablespoons extra-virgin olive oil
- 1/2 small lemon, juice only
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 tablespoon minced fresh dill
- 4 pita breads or naan
- 2 tomatoes, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 head green lettuce
- crumbled feta cheese (optional)
- Remove stems from mushrooms and brush caps with wet towel. Using spoon, carefully scrape out gills. Slice mushrooms into 1/4-inch pieces and place in medium bowl with olive oil, oregano and smoked paprika.
- Preheat indoor grill pan over medium-high heat. Add mushrooms and peppers; grill, tossing occasionally, until tender, 5-7 minutes.
- To make yogurt dill sauce: Squeeze grated cucumber in clean towel to remove excess liquid. Add to large bowl with yogurt, sour cream, olive oil, lemon juice, garlic, salt and dill. Stir to combine.
- To serve, place mushrooms and peppers in middle of pita bread. Top with tomatoes, onion, lettuce, feta, if desired, and big dollop of yogurt dill sauce.
Creamy Spinach, Mushroom and Lasagna Soup

- 1 tablespoon extra-virgin olive oil
- 2 cloves garlic, minced
- 1 medium onion, small diced
- 8 ounces crimini mushrooms, sliced
- 1 jar (24 ounces) marinara sauce
- 1 can (15 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 2 teaspoons balsamic vinegar
- 1 teaspoon granulated sugar
- 1 tablespoon dried basil
- 1/2 teaspoon salt
- 1 teaspoon oregano
- 1/2 teaspoon black pepper
- 1 bay leaf
- 3 cups vegetable broth
- 6 lasagna noodles, broken into pieces
- 1/2 cup heavy cream
- 5 ounces fresh baby spinach
- 1 cup whole-milk ricotta cheese
- 1/2 cup shredded mozzarella cheese, for topping
- Heat large pot over medium heat.
- Add olive oil, garlic, onion and mushrooms. Cook, stirring occasionally, until onions and mushrooms soften, 4-5 minutes.
- Add marinara, diced tomatoes, tomato paste, vinegar, sugar, basil, salt, oregano, pepper, bay leaf and broth. Bring to boil over high heat then reduce heat to low and simmer.
- Add lasagna noodles and cook, stirring often, until softened, about 15 minutes. Remove from heat and remove bay leaf.
- Stir in heavy cream and spinach until wilted, 2-3 minutes.
- Divide between bowls and top with dollop of ricotta and sprinkle of mozzarella.
Roasted Chicken Thighs and Veggies with Mushroom Orzo Risotto

Chicken:
- 8 boneless, skinless chicken thighs
- salt, to taste
- pepper, to taste
- 6 tablespoons unsalted butter
- 16 ounces crimini mushrooms, quartered
- 3 zucchini, sliced in half moons
- 3 large carrots, thinly sliced
- 4 sprigs fresh rosemary, leaves removed and roughly chopped
- 4 cloves garlic, minced
Orzo:
- 4 cups chicken or vegetable broth
- 1 tablespoon unsalted butter
- 1 tablespoon extra-virgin olive oil
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 16 ounces crimini mushrooms, finely chopped
- 1 cup uncooked orzo pasta
- 1/8 teaspoon black pepper
- 1/3 cup white wine
- 1/3 cup shredded Parmesan cheese
- To make chicken: Preheat oven to 450 F.
- Pat chicken dry. Season with salt and pepper, to taste. In large skillet over medium-high heat, melt butter. Sear chicken until browned, 4-5 minutes on each side.
- In large bowl, toss mushrooms, zucchini, carrots, garlic and rosemary. On large baking sheet, spread vegetables. Nestle chicken into vegetables. Drizzle with butter and juices from pan.
- Bake 20 minutes until chicken is cooked through and vegetables are tender.
- To make orzo: In small pot over medium-low heat, warm broth.
- Using skillet from chicken, add butter and olive oil over medium heat. Add onion, garlic and mushrooms. Cook, stirring occasionally, until onions soften, 3-4 minutes.
- Add orzo and black pepper. Stir and cook 2 minutes. Add white wine and cook until evaporated, about 1 minute.
- Add warm broth to orzo 2/3 cup at a time, stirring until liquid is absorbed. Repeat with remaining broth, waiting until last batch is absorbed before adding more. Remove from heat and stir in Parmesan.
- Serve in individual bowls with chicken and roasted vegetables atop mushroom orzo risotto.
Asian Barbecue Sesame Salmon with Noodles and Veggies

- 1/2 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced

- 1 tablespoon toasted sesame oil
- 2 tablespoons barbecue sauce
- 2 tablespoons water
- 2 teaspoons cornstarch
- 1 1/2 pounds salmon (4 filets)
- 12 ounces stir-fry (pad thai) rice noodles
- 1 tablespoon toasted sesame oil
- 1 pound white mushrooms, sliced
- 1 cup sugar snap peas
- 1 large broccoli head, cut into bite-size florets
- 2-3 green onions, thinly sliced, for garnish
- sesame seeds, for garnish
- Preheat oven to 400 F.
- In small saucepan, whisk soy sauce; brown sugar; rice vinegar; garlic; ginger; chili garlic sauce, if desired; sesame oil; and barbecue sauce. Bring to boil over high heat then reduce heat to simmer.
- In small bowl, whisk water and cornstarch. Pour into pan and cook on low, whisking often, until sauce thickens, 3-5 minutes. Remove from heat and set aside.
- Pour 3 tablespoons sauce into small bowl. Brush salmon filets with reserved sauce and place on baking sheet. Bake 15 minutes, or until salmon is flaky. Discard small bowl sauce if any remains.
- Cook stir-fry noodles according to package directions. Drain, rinse and set aside.
- Heat large skillet over medium heat. Add sesame oil. Add mushrooms, snap peas and broccoli. Cook, stirring often, until veggies are tender-crisp, 7-8 minutes. Add noodles and remaining sauce from pan; toss to combine.
- To serve, divide noodles, veggies and salmon between plates.
- Top with sliced green onions and sesame seeds.

- 1 large egg
- 1 tablespoon water
- 2 teaspoons olive oil
- 1/3 cup finely crushed, low-sodium, whole-grain crispbread
- 1/3 cup shredded or grated Parmesan cheese
- 2 tablespoons minced fresh parsley
- 1/2 teaspoon ground oregano
- 1/4 teaspoon pepper
- 4 boneless, skinless chicken breasts (about 4 ounces each), all visible fat discarded, flattened to 1/4-inch thickness
- Preheat the oven to 400 F. Lightly spray a 13-by-9-by-2-inch baking dish with cooking spray.
- In a shallow dish, whisk the egg, water and oil. In a separate shallow dish or pie pan, stir together the crispbread, Parmesan cheese, parsley, oregano and pepper. Dip the chicken in the egg mixture then in crumb mixture, turning to coat at each step and gently shaking off any excess. Using fingertips, gently press the coating mixture so it adheres to the chicken. Arrange the chicken in a single layer in the baking dish. Lightly spray the chicken with cooking spray.
- Bake for 15-18 minutes, or until chicken is no longer pink in the center and the top coating is golden brown.

- 6 ounces small broccoli florets, rinsed in cold water, drained but not dried
- 8 large egg whites
- 1 large egg
- 4 ounces lower-sodium, low-fat ham (uncured, nitrate/nitrite-free), cut into 1/4-inch cubes
- 1/4 cup fat-free milk
- 1/4 teaspoon pepper
- Preheat the oven to 400 F.
- Lightly spray a medium ovenproof skillet with cooking spray. Heat over medium heat. Remove from the heat. Put the potatoes in the skillet. Lightly spray with cooking spray. Cook for 4-5 minutes, or until potatoes are golden brown, stirring occasionally.
- In a microwaveable bowl, microwave the broccoli, covered, on high for 3-4 minutes, or until tender-crisp. Drain in a colander. Stir the broccoli into the potatoes.
- In a medium bowl, whisk the egg whites and egg. Whisk in the ham, milk and pepper. Pour the mixture over the potatoes and broccoli; stir well.
- Bake for 15-18 minutes, or until the eggs are set.

- 8 ounces green beans, trimmed
- 2 teaspoons olive oil
- 4 ounces sliced mushrooms, stems discarded

- 2 teaspoons fresh lemon juice
- 1 pinch pepper
- Fill a medium saucepan 3/4 full of water. Bring to a boil, covered, over high heat. Cook the green beans, uncovered, 5 minutes, or until tender-crisp. Drain well in a colander.
- In a medium nonstick skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook the mushrooms, onion, garlic and salt 5 minutes, or until the mushrooms are soft and lightly browned, stirring frequently. Stir in the lemon juice, pepper and cooked green beans.

- 4 large eggs
- ice water
- 2 cups fresh water
- 1 quart vegetable broth
- 5 ounces (3 cups) broccoli florets, cut into bite-size pieces
- 10 ounces (4 cups) spiralized zucchini
- 5 ounces (5 packed cups) baby spinach
- 1 tablespoon, plus 2 teaspoons, white miso paste
- 1/4 teaspoon kosher salt, plus additional, to taste, divided
- 1 tablespoon toasted sesame oil, plus additional for garnish, to taste
- 2 cups mung bean sprouts, for garnish
- chili garlic sauce, for garnish
- 1 cup shredded raw carrot, for garnish
- 4 tablespoons crushed peanuts, for garnish
- In large saucepan of gently boiling water, cook eggs 7 minutes then transfer to bowl of ice water.
- Drain cooking water from saucepan then add broth and fresh water. Bring to simmer over medium-high heat. Add broccoli and cook 3 minutes then add zucchini and spinach. Continue cooking until spinach is wilted and zucchini is crisp-tender, 2-3 minutes. Remove from heat.
- Ladle about 1/2 cup broth from saucepan into small bowl. Add miso paste and 1/4 teaspoon salt; whisk to combine. Return mixture to soup, add sesame oil and stir to combine. Add additional salt, to taste. Cover to keep warm.
- Remove eggs from ice bath; peel then cut in half lengthwise. Ladle 2 cups soup into four serving bowls. Top each portion with one egg and 1/2 cup sprouts. Drizzle with chili garlic sauce and additional sesame oil, to taste. Top each serving with 1/4 cup shredded carrot and 1 tablespoon crushed peanuts.

Broccolini and Bacon Egg Bites

- Nonstick cooking spray
- 5 slices (4 ounces) no-sugar- added bacon
- 5 large eggs
- 3 ounces cream cheese
- 2 tablespoons feta cheese
- 1 tablespoon hot sauce
- 1/2 teaspoon kosher salt, plus additional, to taste, divided
- 4 1/2 ounces broccolini (5-7 stalks), stalks and florets thinly sliced
- 1 tablespoon water
- 1 1/2 cups baby arugula
- 1 tablespoon lemon juice
- 1 tablespoon extra-virgin olive oil
- freshly ground black pepper, to taste
- 1 cup fresh blueberries
- Preheat oven to 350 F. Lightly coat eight silicone egg-bite mold cups or eight cups of standard nonstick muffin tin with nonstick cooking spray and set in large baking pan.
- In large nonstick skillet, cook bacon over medium heat until golden, about 5 minutes per side. Transfer to paper towel-lined plate to drain. Chop bacon into small pieces.
- In blender, puree eggs, cream cheese, feta cheese, hot sauce and 1/4 teaspoon salt until smooth.
- Pour off all but 1 tablespoon fat from skillet. Add broccolini, water and 1/4 teaspoon salt. Cook over medium-high heat, stirring frequently, until broccolini is tender, 3-5 minutes. Remove from heat.
- Fill each egg cup with 1 teaspoon bacon and 1 tablespoon broccolini. Top with egg mixture, filling cups to about 1/8 inch from top. Add just enough boiled water to baking pan to come halfway up sides of molds.
- Bake egg bites until set, 20-25 minutes. Take pan from oven then take molds from water bath. Let egg bites cool then remove from molds.
- In medium bowl, toss arugula, lemon juice, oil and salt and pepper, to taste. Place 3/4 cup salad, two egg bites and 1/4 cup blueberries on four plates and serve.

Flourless Salted Peanut Butter Chocolate Chip Cookies

- 1 cup sugar-free smooth or creamy peanut butter
- 2 teaspoons stevia extract powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free semisweet chocolate chips
- 1 teaspoon flaky sea salt
- Set oven racks in upper- and lower-third positions. Preheat oven to 350 F. Line two cookie sheets with parchment paper.
- In medium bowl, use handheld electric mixer on medium speed to beat peanut butter, stevia, baking soda and salt, scraping down sides if needed, until well combined, about 1 minute. Reduce speed to low, add egg and vanilla extract; beat until combined.
- Shape dough into 24 balls (about 1 tablespoon each) and place 2 inches apart on prepared cookie sheets. Using tines of fork, carefully flatten each ball, creating crisscross pattern.
- Bake, rotating cookie sheets from top to bottom and back to front halfway through, until edges begin to brown and cookies are set, 7-9 minutes. Cookies should not be browned. Let cool 10 minutes on cookie sheets then carefully transfer to cooling rack to cool completely.
- In small microwave-safe bowl, add chocolate chips and microwave on high in 20-second increments, stirring after each, until melted, about 1 minute.
- Dip dry fork into chocolate then drizzle over cookies. Sprinkle with sea salt.

Sweet Potato Waffles with Whipped Cream and Berry Compote
Yield: 4 large waffles
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 3 eggs, separated
- 3/4 cup 2% milk
- 1 pouch Honest Earth Mashed Sweet Potatoes
- 2 tablespoons vegetable oil, plus additional for brushing on waffle iron, divided
Berry Compote:
- 1 cup raspberries
- 1 cup blackberries
- 1 cup blueberries
- 2-3 tablespoons granulated sugar
- 1 dash lemon zest or juice
- Preheat waffle iron to medium heat.
- In medium bowl, whisk flour, baking powder and salt.
- In separate bowl, blend egg yolks (reserve whites), milk, sweet potatoes and 2 tablespoons oil until smooth.
- Add flour mixture to egg and milk mixture; blend until no clumps remain.
- In separate bowl, whip reserved egg whites until stiff peaks form. Fold egg whites gently into batter.

- 1/4 cup chopped pecans

- Nonstick cooking spray

- 1 cup butter, softened
- 2 packages (8 ounces each) cream cheese
- 1 cup sugar
- 1 lemon, juice only
- 2 instant lemon pudding mix packages (3 ounces each)
- 4 cups milk
- 1 container (12 ounces) frozen whipped topping, thawed
- chopped pecans
- Heat oven to 350 F. Grease 9-by-13-inch baking pan with nonstick cooking spray.
- In medium bowl, combine flour and butter using pastry cutter. Press into bottom of baking pan. Bake 25 minutes, or until golden brown. Cool completely.
- In medium bowl, beat cream cheese and sugar until smooth. Juice lemon into mixture; continue mixing until blended.
- Pour mixture over cooled crust. Set aside.
- In medium bowl, whisk pudding mix and milk until thickened. Spread over cream cheese mixture. Spread whipped topping over pudding layer. Sprinkle with chopped pecans.

- 1-1 1/2 pounds chicken breasts or chicken thighs
- flour
- 1 pinch salt, plus 2 teaspoons, divided
- 2 tablespoons extra-virgin olive oil
- 1 onion, diced
- 16 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 bell pepper, diced
- 1 can (28 ounces) diced tomatoes
- 4 tablespoons butter
- capers (optional)
- parsley, plus additional for topping (optional)
- lemon
- preferred pasta
- Parmesan cheese (optional)
- Dredge chicken in flour and pinch of salt. Turn on saute function on pressure cooker. Add oil; saute chicken 2-3 minutes on each side. Remove and set aside (chicken will finish cooking later).
- Add onion, mushrooms and garlic. Saute until softened. Add broth and let sizzle out.
- Add chicken, bell pepper, tomatoes and remaining salt to pressure cooker. Cook on high pressure 15 minutes. Release pressure.
- Shred chicken. Stir in butter, capers, parsley and lemon. Serve with preferred pasta and top with additional parsley and Parmesan cheese, if desired.
Easy Chicken Enchiladas with Black Beans

- 1 medium onion, chopped
Chicken:
- 1 pound chicken breasts
- 1/4 teaspoon garlic powder

- pepper, to taste
Enchiladas:
- 15 ounces black beans, drained and rinsed
- 10 ounces diced tomatoes and green chilies, drained
- 2 cups shredded Mexican cheese, divided
- 16 ounces restaurant-style salsa, divided
- 10 whole-wheat tortillas
Optional Toppings:
- diced avocado
- plain Greek yogurt
- cilantro
- Preheat oven to 400 F. Spray 9-by-13-inch pan with nonstick cooking spray and set aside.
- In medium skillet over medium-high heat, cook onion until translucent, about 3-5 minutes. Transfer to large bowl and set aside.
- To make chicken: Season chicken breasts with garlic powder, onion powder, chili powder, cumin and salt and pepper, to taste. Add chicken to same skillet over medium-high heat. Cook 5-7 minutes on each side, or until cooked through. Use fork and knife to shred chicken.
- To make enchiladas: In large bowl with cooked onion, add shredded chicken, black beans, diced tomatoes, green chilies and 1 cup shredded Mexican cheese. Use spoon to mix well.
- Pour 1 cup salsa on bottom of greased pan and use spatula to spread evenly. Scoop about 1/2 cup chicken and veggie mixture into each tortilla. Roll tightly and place seam side down in pan.
- Top enchiladas with 3/4 cup salsa and remaining shredded cheese; use spatula to spread evenly.
- Cover pan tightly with foil and bake 25-30 minutes. Remove from oven; serve hot. Add avocado, yogurt and cilantro, if desired.

Garlic Shrimp with Jasmine Rice

Ponzu Rice:
- 1 cup jasmine rice
- 1/2 cup Mizkan Ponzu Citrus Seasoned Soy Sauce
- 1 1/2 cups water
Stir Fry:
- 2 tablespoons Mizkan Organic Rice Vinegar
- 1/4 cup Mizkan Ponzu Citrus Seasoned Soy Sauce
- 1/4 cup brown sugar
- 1 teaspoon sesame oil
- 1/2 cup vegetable stock
- 1 teaspoon cornstarch
- 2 tablespoons oil
- 1 pound (about 21-25) raw shrimp, peeled and deveined
- 1/4 cup red onion, large chopped
- 2 teaspoons garlic, minced
- 1 cup red bell pepper, chopped
- 1/2 cup carrots, shredded
- 1 cup sugar-snap peas
- 1 cup broccoli florets
- 2 scallions, sliced
- 2 teaspoons sesame seeds
- To make ponzu rice: In small saucepan, combine jasmine rice, ponzu and water; cook according to rice directions.
- To make stir fry: In bowl, whisk rice vinegar, seasoned soy sauce, brown sugar, sesame oil, vegetable stock and cornstarch to combine. Set aside.
- In large saute pan over high heat, heat oil; add shrimp and cook 2-3 minutes until pink.
- Add red onion and cook 1 minute. Add garlic, red bell peppers, carrots, snap peas and broccoli; cook 3 minutes until tender.
- Add reserved sauce and cook 2 minutes until thickened.
- Divide rice among six bowls and top with shrimp stir fry. Garnish with scallions and sesame seeds; serve.
Miso-Glazed Salmon Bento
Prep time: 20 minutes, plus marinating
Cook time: 6 minutes
Servings: 2
- 1/4 cup miso paste
- 2 tablespoons Mizkan Mirin Sweet Cooking Seasoning
- 1 tablespoon sake
- 2 skinless center-cut salmon fillets (6 ounces each)
- 1 cup thinly sliced seedless cucumbers
- 1 teaspoon kosher salt
- 2 tablespoons Mizkan Seasoned Rice Vinegar
- 2 cups cooked short-grain sushi rice, cooled
- 1 tablespoon thinly sliced green onions
- 1 teaspoon toasted sesame seeds
- 6 cherry tomatoes
- 2 lemon wedges
- In medium bowl, whisk miso paste, mirin and sake. Add salmon, turning to coat evenly. Marinate 10-30 minutes. Discard remaining marinade.
- Heat large nonstick pan on medium-high heat. Cook fish 2-3 minutes on each side, or until internal temperature reaches 145 F. Cut each fillet into four small pieces.
- In strainer or colander, toss cucumbers with salt; let stand 5 minutes. Squeeze out excess liquid; toss with rice vinegar.
- Pack each bento box evenly with rice, pickled cucumbers and salmon. Sprinkle with green onions and sesame seeds. Garnish with tomatoes and lemons.
Substitutions: If ingredients are unavailable or difficult to find: Use 1/4 cup soy sauce to glaze salmon in place of miso paste; use low-carb rice such as cauliflower or broccoli rice in place of sushi rice.
Tip: To prevent sogginess, separate wet components like cucumber pickles by using aluminum foil or silicone muffin liners inside bento box.
Simple Teriyaki Bowl
Prep time: 10 minutes
Cook time: 35 minutes
Servings: 2
- 1 large boneless chicken thigh
- 2 tablespoons soy sauce
- 3 tablespoons Mizkan Mirin
- 3 tablespoons Mizkan Natural Rice Vinegar
- 1/2 scallion
- 1 tablespoon cooking oil
- 2 servings hot, cooked rice
- 1 teaspoon dried seaweed sheet (nori), sliced (optional)
- Slice chicken thigh meat into bite-size pieces. In bowl, mix soy sauce, mirin and rice vinegar; marinate chicken pieces in seasoning mix 10 minutes.
- Cut scallion into 2-inch pieces. In frying pan, saute until soft, about 1 minute. Set aside.
- In frying pan, heat oil and cook chicken until browned.
- When meat is browned, pour marinade over chicken and continue cooking on low heat until sauce thickens.
- Place hot, cooked rice in individual bowls. Spread sliced dried seaweed pieces over rice, if desired, and top with chicken and scallions to serve.
