Green Chili Jack Smash Burgers

Servings: 4
Burger Patties:
- 1 pound ground pork
- 4 tablespoons red onion, scrubbed with vegetable brush under running water and finely minced
- 1 teaspoon garlic, minced
- 1 teaspoon chipotle chili powder
- 2 teaspoons ancho chili powder
- 1 cup cooked black-eyed peas, drained
- 1 teaspoon salt, plus additional, to taste
- 4 slices Jack cheese
Caramelized Onions:
- 2 tablespoons butter
- 1 large onion, scrubbed with vegetable brush under running water and sliced thin
- 1/2 cup water
- 1/2 teaspoon salt
Charred Green Chili Mayo:
- 1 can (3 ounces) diced green chilies
- 2/3 cup mayonnaise
- 1 clove garlic, crushed
- 1 tablespoon lime juice
- 2 green onions, gently rubbed under cold running water and finely sliced
- 1/4 cup cilantro, gently rubbed under cold running water and chopped
- 4 hamburger buns
- 1 avocado, peeled and sliced
- 1/2 head lettuce, gently rubbed under cold running water
- In large bowl, mix ground pork, onion, garlic and chili powders. Add black-eyed peas and salt; mix well. Form into four loosely packed balls and refrigerate at least 30 minutes.
- To make Caramelized Onions: In large skillet over medium-high heat, warm butter. Add onions, water and salt; cook, stirring, until onions soften and turn golden brown, about 5 minutes. Remove from heat and set aside.
- To make Charred Green Chili Mayo: Place green chilies in hot cast iron skillet over medium-high heat. Cook, turning, until chilies begin to soften and turn black. Remove from heat and place in small bowl. Add mayonnaise, garlic and lime juice; whisk to blend. Add green onions and cilantro; stir well and refrigerate.
- To make burgers: Warm cast iron or nonstick griddle pan over medium-high heat. Place pork balls on hot skillet; flatten with heavy metal spatula. Season with salt, to taste. Cook approximately 3 minutes; flip and cook 2-3 minutes until internal temperature reaches 145 F.
- Lightly toast buns. Place each burger on toasted bun with slice of cheese, Caramelized Onions, Charred Green Chili Mayo, avocado and lettuce.
Pork Chops with Smashed Yellow Peas and Black-Eyed Pea Gravy

- 2 cups yellow split peas, cooked and drained
- 1/4 cup, plus 2 tablespoons, softened butter, divided
- 1/4 cup cream
- 1/4 teaspoon salt, plus additional, to taste
- 4 pork chops
- pepper, to taste
- 2 tablespoons olive oil
- 1 onion, gently rubbed under cold running water and diced
- 1 can black-eyed peas with juice
- 1/8 cup flour
- 1 cup milk
- In medium bowl, use fork or potato masher to mash peas. Stir in 1/4 cup butter, cream and 1/4 teaspoon salt.
- Season pork chops with additional salt and pepper, to taste.
- In large skillet, warm oil over medium heat. Add pork chops to pan and cook approximately 4 minutes per side, or until they reach internal temperature of 145 F. Remove pork chops from pan; keep warm.
- In same pan, add remaining butter, onion and black-eyed peas. Cook 2-3 minutes until warm throughout, scraping pan. Add flour and season with salt and pepper, to taste. While stirring, slowly add milk.
- Serve mashed peas topped with pork chops and black-eyed pea gravy.
Cuban Black Beans

Serving: 6
- 1 quart water
- 1 green bell pepper, scrubbed with vegetable brush under running water and diced, divided
- 4 cloves garlic, peeled, divided
- 1 cup dried black beans, rinsed and soaked overnight
- 1 bay leaf
- 2 tablespoons olive oil
- 2 slices bacon, diced
- 1/2 Spanish onion, scrubbed with vegetable brush under running water and diced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 2 tablespoons apple cider vinegar
- 1 tablespoon light brown sugar
- Fill large pot with water. Add 1/2 diced green pepper, two garlic cloves, beans and bay leaf. Bring to boil over high heat. Reduce heat, cover and simmer until beans are tender, about 1 hour.
- In skillet over medium-high heat, warm olive oil. Add bacon; cook, turning, until bacon starts to brown, about 2 minutes. Add remaining green pepper and onion; cook, stirring, until slightly softened, about 3 minutes.
- Chop remaining garlic cloves. Add to skillet with oregano, cumin and black pepper. Stir 1 minute. Pour in vinegar, scraping browned bits from bottom of pan with wooden spoon.
- When beans are cooked, discard bay leaf. Transfer 1 cup beans to blender; blend to make paste. Return blended beans to large pot. Add bacon mixture and sugar. Stir well; bring to boil over medium heat. Lower heat, simmer and cook, uncovered, 20 minutes, skimming foam from top.

Ginger Beef and Broccoli Stir-Fry

- 1/2 cup Kitchen Basics Unsalted Beef Stock
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon honey
- 1 teaspoon McCormick Garlic Powder
- 1 teaspoon McCormick Ground Ginger
- 1/2 teaspoon McCormick Crushed Red Pepper
- 1 pound flank steak, thinly sliced
- 1/2 package (from 14-ounce box) Simply Asia Lo Mein Noodles
- 3 tablespoons vegetable oil, divided
- 1 1/2 cups broccoli florets
- 1 cup thinly sliced onion
- 1 tablespoon cornstarch
- In medium bowl, mix stock, soy sauce, honey, garlic powder, ginger and red pepper until well blended. Reserve 1/3 cup of marinade. Place sliced flank steak and remaining marinade in large, re-sealable plastic bag; turn to coat well. Refrigerate 30 minutes.
- Cook noodles according to package directions. Drain. Spread noodles on sheet pan. Set aside.
- In large skillet on high heat, heat 2 tablespoons oil. Remove beef from marinade. Discard remaining marinade in bag. Add beef to skillet; stir-fry 3 minutes, or until beef is no longer pink. Using tongs, remove beef from skillet. Add remaining oil, broccoli and onion; stir-fry 3-5 minutes, or until tender-crisp.
- In small bowl, mix reserved marinade and cornstarch until smooth. Add to skillet; stirring constantly, bring to boil on medium heat and boil 1 minute. Return beef and noodles to skillet. Cook and stir until heated through.
Tip: Place raw flank steak in freezer 30 minutes to make it easier to slice.

Pot Sticker Noodle Stir-Fry

- 1/3 package (from 14-ounce box) Simply Asia Udon Noodles
- 1 tablespoon oil
- 1 tablespoon minced fresh ginger
- 1 pound ground pork
- 1/2 cup Kitchen Basics Unsalted Chicken Stock
- 2 tablespoons reduced-sodium soy sauce
- 1 teaspoon McCormick Garlic Powder
- 1/8 teaspoon McCormick Crushed Red Pepper
- 1 cup shredded green cabbage
- 2 tablespoons finely chopped green onion
- Cook noodles as directed on package. Drain. Set aside.
- In large saucepan over medium heat, heat oil. Add ginger; cook and stir 30 seconds-1 minute, or until fragrant. Add ground pork; cook and stir until no longer pink. Drain fat.
- Stir in stock, soy sauce, garlic powder and red pepper. Bring to gentle boil. Add noodles and cabbage; cook and stir 5 minutes, or until heated through. Remove from heat. Sprinkle with green onion.

Triple Threat Burger

Pulled Pork:
- 1 Farmer John Boneless Fresh Pork Shoulder Roast
- 1/4 cup barbecue seasoning blend
- 3/4 cup pale lager beer
- 1 1/2 teaspoons liquid hickory smoke
Triple Threat Sauce:
- 1 jar (12 ounces) seedless raspberry jam
- 1 cup barbecue sauce
- 3/4 cup pale lager beer
- 1 teaspoon dry mustard
- 1/4 teaspoon chipotle powder
Burgers:
- 1 pound Farmer John Ground Pork
- 1 pound 80 percent lean ground beef
- 1/4 cup pale lager beer
- 2 tablespoons barbecue seasoning blend
- 6 slices cheddar cheese
- 6 sandwich buns, toasted
- 6 slices Farmer John Bacon, cooked crisp
- 6 dill pickle planks
- To make pulled pork: Rub pork roast with seasoning and place in 4-5-quart slow cooker. Pour beer and liquid smoke around sides. Cover and cook 8-10 hours on low or 4-5 hours on high.
- Remove roast from slow cooker with tongs and place in large container. Using tongs or two forks, shred pork and set aside 2 cups. Cover and refrigerate.
- To make sauce: In medium saucepan, combine raspberry jam, barbecue sauce, beer, mustard and chipotle powder; bring to boil over medium-high heat; boil 5 minutes, stirring constantly. Reduce heat and simmer 15 minutes. Stir 1/2 cup sauce into reserved pulled pork.
- To make burgers: Heat charcoal or gas grill to medium. Combine ground pork, ground beef, beer and seasoning; form into six (1-inch thick) burger patties. Grill 5 minutes per side until internal temperature reaches 160° F. Top each burger with slice of cheese; let melt.
- Place burgers on bottom buns; spoon about 1/3 cup pulled pork with barbecue sauce onto each burger. Top each with one slice bacon and one pickle plank then close with top bun.
Chipotle Glazed Spare Ribs
Prep time: 25 minutes
Cook time: 1 hour, 40 minutes
Servings: 6
- 2 racks Farmer John Pork Spareribs, membranes removed
- 4 tablespoons salt
- 4 tablespoons pepper
- 6 cloves chopped garlic
- 1 cup honey
- brown sugar
- 1/2 can (7 ounces) chipotle chilies in adobo sauce
- 1/2 cup barbecue sauce
- 2 limes, zest and juice only, plus additional lime juice
- 1/2 cup cilantro, chopped
- Heat oven to 325° F. Season ribs with salt and pepper. Place on rimmed baking sheet and cover tightly with foil. Bake 1 1/2 hours until ribs reach internal temperature of 195° F. Let cool.
- While ribs bake, blend garlic, honey, brown sugar, chipotle chilies, barbecue sauce and lime zest and juice. Blend until smooth. Set aside.
- Heat charcoal or gas grill to medium-high. Place ribs on grill and baste with sauce mixture, turning frequently until well-coated with sauce and charred, about 10 minutes. Transfer to cutting board and let rest. Serve with remaining sauce mixture, additional lime juice and chopped cilantro.
