- 2 medium russet or Yukon gold Wisconsin potatoes or 6 red Wisconsin potatoes
- 2 medium zucchini
- 1/2 smoked sausage rope
- 4 skewers (12 inches each)
- 1/2 cup Italian dressing
- Preheat grill to medium heat. Cut potatoes in half. Cut zucchini and sausage same width as potatoes. Skewer potatoes, zucchini and sausage. Repeat for each skewer.
- Place skewers in dish and cover with Italian dressing. Marinate 5 minutes.
- Place skewers on grill and cook 5 minutes on each side, or until potatoes are done. Remove from grill and serve.

Brown Sugar Meringues

Cook time: 1 hour, plus 1 hour rest time
Yield: 3 dozen meringues
- Water
6 large egg whites, at room temperature
1 cup Domino Light Brown Sugar
3/4 cup Domino Granulated Sugar Easy Baking Tub
1/8 teaspoon salt
2 tablespoons Domino Turbinado Sugar (optional)
- Preheat oven to 225 F. Line three baking sheets with parchment paper. Set aside.
- Pour 1 inch of water into medium saucepan and heat it until simmering. In heat-proof bowl, mix egg whites, brown sugar, granulated sugar and salt. Put bowl on top of saucepan and warm mixture until it reaches 125 F. Stir continuously and make sure mixture does not touch water.
- Carefully remove from heat. Using electric mixer, beat mixture at high speed 8-10 minutes. Transfer meringue into piping bag fitted with star tip. Pipe 12 meringues per baking sheet.
- Sprinkle turbinado sugar on top of meringues, if desired. Bake 1 hour. Turn off oven and allow meringues to rest inside oven 1 hour. Remove from oven and enjoy.

Flatiron Steak Salad:
- 1 1/2 pounds flatiron steak
- 2 cups Citrus Balsamic Vinaigrette, divided

- 2 quarts baby spinach
- 1/2 cup red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup radish, thinly sliced
- 1/2 cup cucumber, thinly sliced
- 1/2 cup crumbled goat cheese
- To make citrus balsamic vinaigrette: Combine orange juice, tangerine juice, orange zest, lemon juice, balsamic vinegar, honey, garlic, Dijon mustard and salt and pepper, to taste. Slowly drizzle in olive oil while whisking vigorously. Set dressing aside.
- To make flatiron steak salad: Place flatiron steak in container and add 1 cup citrus balsamic vinaigrette. Marinate in refrigerator at least 30 minutes, or up to 3 hours.
- Heat grill to medium-high heat.
- Grill steak to desired doneness. Remove from heat and rest 5 minutes before slicing thinly.
- In large mixing bowl, combine orange segments, grapefruit segments, baby spinach, red onion, cherry tomatoes, radish and cucumber. Add remaining citrus balsamic vinaigrette, as desired, and toss well to combine.
- To serve, divide salad and sliced steak among four plates and top with crumbled goat cheese.
Citrus Cherry Cobbler
Cobbler:
- 4 cups cherries, pitted, juice reserved
- 1/2 cup Florida Orange Juice
- 1 1/2 cups sugar
- 1 tablespoon lemon juice
- 3 tablespoons cornstarch
- 2 tablespoons unsalted butter
- 2 cups Florida Orange segments, seeded
- 1/2 cup Florida Grapefruit segments, seeded
Topping:
- 1 cup all-purpose flour
- 6 tablespoons light brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 3 tablespoons unsalted butter
- 1 large egg, beaten
- 3 tablespoons milk
- To make cobbler: In medium saucepan, combine cherries and reserved juice, orange juice, sugar, lemon juice and cornstarch. Bring to simmer, stirring constantly. Cook 1 minute and remove from heat. Add butter and stir until melted. Cool and add orange segments and grapefruit segments. Pour filling into baking dish or pie pan.
- To make topping: Heat oven to 350 F.
- In food processor, combine flour, brown sugar, baking powder and cinnamon. Add butter and pulse until butter is cut into small, pea-sized pieces. Remove flour mixture from food processor and place in mixing bowl. Add egg and milk; stir until just combined. Drop topping mixture by tablespoon over filling until almost covered.
- Bake until topping is browned and filling is bubbling and hot. Remove from oven and cool slightly before serving.

Dressing:

- 1 cup quinoa
- leafy greens (optional)

- 1/2 avocado, diced (optional)
- 1/4 cup feta cheese (optional)

- 1 cup orange juice

- 1/3 cup lime juice
- 1/3 cup Dijon mustard
- 2 tablespoons chili powder
- 2 tablespoons paprika
- 2 teaspoons black and red pepper blend
- 2 teaspoons salt
- 2 teaspoons oregano
- 1 teaspoon California-style coarse onion powder
- 30 jumbo shrimp
- 12 bamboo skewers, soaked in water for at least 30 minutes
- Place orange juice, honey, lime juice, mustard and dry seasonings in a blender and blend on high for 1 minute until smooth. Pour into a saucepan and simmer over medium heat for 12 minutes or until thickened and reduced by half. Divide the glaze into 2 plastic containers, seal tightly and refrigerate until ready to use. Thread shrimp onto skewers. Cook shrimp over hot coals for about 3 minutes on each side or until completely pink, basting with one container of the glaze during grilling. Remove from grill and baste with remaining glaze.
Honey Marinated Chicken
Makes 4 servings
- 1 cup vegetable oil
- 2 tablespoons 100% pure honey
- 2 tablespoons Dijon-style mustard
- 2 cloves garlic, finely chopped
- 2 teaspoons salt
- 1/3 cup red wine vinegar
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon freshly ground black pepper
- 4 boneless, skinless chicken breast halves
- 1/3 cup 100% pure honey
- Blend all marinade ingredients (exclude the 1/3 cup honey); pour over chicken breasts. Marinate in refrigerator overnight in plastic bag. Remove chicken from marinade; discard marinade. Grill six to 10 minutes, turning once and basting occasionally with 1/3 cup honey during last five minutes of grilling.
Strawberry Chiffon Pie
Makes 8 servings
- 2 cups (12 ounces) coarsely chopped strawberries, fresh or frozen
- 3/4 cup 100% pure honey, divided
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 cup light sour cream
- Prepared 9-inch crumb crust
- In small bowl, mash strawberries and 1/4 cup honey; set aside.
- In small saucepan, sprinkle gelatin over cold water; let stand five minutes. Stir in remaining 1/2 cup honey. Warm over low heat until gelatin dissolves. Transfer to large bowl; stir in sour cream. Cover and refrigerate 20 to 30 minutes or until mixture mounds on a spoon when tested.
- Using electric mixer, beat mixture at medium speed until light. Fold in strawberries; mix until well combined. Pour into prepared crust. Cover and refrigerate at least two hours.
Citrus Salad with Avocado
Makes 6 servings
- 3 6-inch corn tortillas
- 4 oranges
- 4 grapefruits
- 1/3 cup 100% pure honey
- 1/4 cup raspberry vinegar
- 2 tablespoons oil
- 1/4 teaspoon salt
- 1 avocado, sliced
- Preheat oven to 255°F. Slice tortillas into very thin strips. Dry strips by placing on a cookie sheet and baking for approximately 15 minutes. Set aside
- Peel oranges and grapefruits, then section, seed and place in large bowl; set aside. In small bowl, whisk together honey, raspberry vinegar, oil and salt.
- Pour over citrus sections and toss gently.
- Top with avocado slices and tortilla strips.

- 2 cups freshly brewed tea
- 2 cups cranberry-raspberry juice

- 8 skewers
- 1 pineapple
- 2 tablespoons Carlini Vegetable Oil
- 1/2 teaspoon Stonemill Iodized Salt
- 1 teaspoon Stonemill Ground Black Pepper
- 1 3/4 pounds Never Any! Fresh Boneless Skinless Chicken Breasts, diced into 1-inch pieces
Lemon-Cucumber Salsa:
- 1 lemon, supremed
- 1 cucumber, diced
- 1/2 red onion, diced
- 1 tablespoon SimplyNature Organic Wildflower Honey
- 1 teaspoon Stonemill Ground Black Pepper
- Soak wooden skewers for 15 minutes prior to grilling.
- Heat grill to medium-high heat.
- Remove rind from pineapple and dice into 1-inch pieces.
- In small bowl, combine oil, salt and pepper. Add chicken and pineapple; toss to coat.
- Alternating chicken and pineapple, pierce onto skewers.

Citrus Ginger Rosé Punch

- 1/2 cup minced ginger
- 1 cup Baker’s Corner Granulated Sugar
- 1 cup water
- 2 bottles (750 milliliters each) Trestoria Rosé, chilled
- 5 cans (12 ounces each) PurAqua Belle Vie Grapefruit Sparkling Water, chilled
- 2 cans (12 ounces each) PurAqua Belle Vie Lemon Sparkling Water, chilled
- In small pot, combine ginger, sugar and water to make simple syrup. Bring to boil. Remove from heat and allow to cool completely in refrigerator.
- Strain simple syrup and discard ginger.
- In large punch bowl or pitcher, combine rosé, grapefruit sparkling water and lemon sparkling water. Add simple syrup.
- Serve in chilled glasses.
Tip: Freeze lemon slices in ice cube trays or silicone muffin trays and add them to punch for pop of color.

- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Salad:
- 1/2 cup hazelnuts, lightly crushed
- olive oil, to taste
- rosemary, to taste
- salt, to taste
- pepper, to taste
- 4 cups shaved Brussels sprouts
- 1/2 cup dried figs, chopped
- 1/3 cup finely sliced red onion
- 4 tablespoons Lemon Dressing
- 1 grapefruit, segmented
- 1/3 cup shredded pecorino cheese
- Heat oven to 375° F.
- To make Lemon Dressing: mix olive oil, lemon juice, salt and pepper.
- On lined baking sheet, toss hazelnuts with olive oil, rosemary, salt and pepper, to taste.
- Roast 10-15 minutes, or until lightly brown; let cool.
- In large mixing bowl, toss roasted hazelnuts, Brussels sprouts, figs, red onion and dressing until combined.
- Plate about 1/4 of mixed salad, top with a few grapefruit segments and sprinkle with

Crab Salad

Serves: 4
Dressing:
- 1/2 cup plain non-fat yogurt
- 1 lemon, juiced
- 2 tablespoons green onions
- 2 tablespoons olive oil
- salt, to taste
- pepper, to taste
- 1 ounce walnuts (about 14 halves)
- cayenne pepper, to taste
- 1 bag (8 ounces) spinach
- 1 can (6 ounces) crab meat or fresh lump crab
- 1/2 cup lentils, cooked
- 1 grapefruit, cut into sections
- Heat oven to 300° F.
- To make dressing: Mix yogurt, lemon juice, green onions and olive oil. Add salt and pepper, to taste.
- Toss walnuts with cayenne pepper, to taste, and bake 4-5 minutes. Make sure walnuts do not burn. Remove walnuts from oven and let cool.
- Toss spinach with dressing. Toss with crab meat. Sprinkle lentils on top and add walnuts. Place grapefruit pieces around edge.
