  • 1/2 cup dark chocolate chips
  • 2 cups tart cherry juice
  • 2 ripe bananas
  • 1 cup vanilla Greek yogurt
  • 1/4 cup almond butter
  • 1/4 cup granola
  • 1/4 cup dried tart cherries
  • 1/2 cup frozen tart cherries, thawed
  1. Place chocolate chips in bowl.
  2. In saucepan over medium heat, bring tart cherry juice to simmer about 20 minutes until reduced to 2/3 cup.
  3. Pour juice into bowl and mix until chocolate chips are melted and sauce is smooth.
  4. Cut bananas in half lengthwise and place on two plates. Spoon 1/2 cup Greek yogurt on each banana then drizzle with 2 tablespoons almond butter and 2 tablespoons tart cherry chocolate sauce.
  5. Sprinkle 2 tablespoons granola, 2 tablespoons dried tart cherries and 1/4 cup thawed frozen tart cherries on top of each banana split.

Note: Leftover tart cherry chocolate sauce can be stored in airtight container in refrigerator for later use.

Tart Cherry Brownie Bites

Yield: 12 bites

  • 10 medjool dates, pitted
  • 1/2 cup dried tart cherries
  • 1/4 cup walnuts
  • 2 tablespoons rolled oats
  • 1/4 cup cocoa powder
  • 1 tablespoon chia or hemp seeds (optional)
  • 1/4 teaspoon salt
  • 2 tablespoons peanut or almond butter
  • 4 tablespoons tart cherry juice
  • 1/4 cup mini chocolate chips
  • cocoa powder (optional)
  • melted chocolate (optional)
  1. In bowl of food processor, combine dates; dried tart cherries; walnuts; oats; cocoa powder; seeds, if desired; salt; and nut butter. Pulse 30-60 seconds until ingredients are ground into tiny pieces.
  2. Add tart cherry juice in 1 tablespoon additions, pulsing mixture after each addition, until crumbly dough forms.
  3. Transfer dough to bowl and fold in chocolate chips.
  4. Roll dough into 12 balls. Serve plain or finish balls with dusting of cocoa powder or drizzle of melted chocolate, if desired.

Mini Sweet Pepper Sheet Pan Nachos

  • 8          ounces Pero Family Farms Mini Sweet Peppers, cut into chip shapes
  • 7          ounces tortilla chips
  • 1/2       cup sweet or red onion, diced.
  • 1/2       cup canned or fresh corn
  • 1/2       cup queso fresco cheese
  • 1/4       cup black olives
  • 1/4       cup jalapeno peppers, fresh sliced
  • 1/4       cup cilantro leaves, for garnish
  • 1          lime, cut into thin wedges, for garnish
  1. Preheat oven to 350 F.
  2. Place peppers and tortilla chips on sheet pan. Layer onion, corn, cheese, black olives and jalapeno peppers. Bake 3-5 minutes.
  3. Garnish with cilantro and lime wedges.

Southwest Quiche Muffins Bento Box

  • 8          large eggs
  • 1/2       cup milk
  • nonstick cooking spray
  • 3/4       cup black beans, drained and rinsed
  • 1/2       cup chopped Nature Fresh Farms Tomz tomatoes
  • 1/3       cup shredded cheddar cheese
  • 1/4       small RealSweet sweet onion, chopped
  • 1/2       cup vanilla Greek yogurt
  • 1/4       cup granola

  1. Preheat oven to 325 F.
  2. In large bowl, whisk eggs and milk.
  3. Coat 12-cup muffin pan with nonstick cooking spray or use silicone muffin liners. Evenly divide beans, tomatoes, cheese and onion among cups. Pour eggs over top.
  4. Bake 20-25 minutes, or until eggs are set and lightly browned.
  5. Remove from oven and cool in pan 2-3 minutes. Use knife to loosen edges and remove.
  6. In cup or bowl, mix yogurt, granola and kiwi.
  7. Assemble bento box with two quiche muffins, kiwi parfait and mandarin slices.

Turn to Whole Grains for a Nutritional Boost

(Family Features) Nutritious eating, including smarter snacking, is an important way to protect your heart and maintain overall health and wellness. While many people understand the basics of healthy eating – avoiding too many sugary treats, for example – some are confused about important food categories that can impact nutrition.

According to a survey conducted by The Harris Poll on behalf of the American Heart Association, U.S. adults are least knowledgeable about refined vs. whole grains compared to other food categories like fruits, vegetables and proteins. Whole grains are, in fact, a key feature of the Association’s recommendations for a heart-healthy diet.

There are two types of grain products: whole grains, which contain the entire grain, and refined grains, which have been milled into a finer texture like flour or meal. Most adults, according to the survey, are able to distinguish whole vs. refined grains. However, there are a few misperceptions.

Most incorrectly believe multi-grain bread is a whole grain. Additionally, only 17% believe sorghum is an example of a whole grain when it is, in fact, a whole grain option. Whole grains like sorghum, oatmeal and brown rice are rich sources of dietary fiber, may improve blood cholesterol levels and provide nutrients that help the body form new cells, regulate the thyroid and maintain a healthy immune system.

Date Nut Granola Bars

  • Nonstick cooking spray
  • 1 1/2 cups rolled oats
  • 1/4 cup almond slices or whole almonds, coarsely chopped
  • 1/4 cup shelled pistachios, coarsely chopped
  • 1 cup pitted dates
  • 1/2 cup unsweetened dried cranberries
  • 1/4 cup uncooked whole-grain sorghum
  • 1/4 cup honey
  • 1/4 cup low-sodium peanut butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  1. Preheat oven to 350 F.
  2. Line bottom and sides of 8-inch square baking pan with plastic wrap or parchment paper. Lightly spray with nonstick cooking spray.
  3. On large baking sheet, spread oats, almonds and pistachios in single layer. Bake 10-15 minutes, or until lightly brown, stirring occasionally. Let cool slightly.
  4. In food processor or blender, process dates and cranberries 1-1 1/2 minutes, or until chopped and clumpy. Transfer to large bowl.
  5. Put 2 tablespoons sorghum in silicone microwaveable bowl or clean, brown paper bag. If using microwaveable bowl, cover with lid. If using paper bag, roll shut and place on microwavable dinner plate with fold facing down. Microwave on high 2 minutes, or until there are more than 10 seconds between pops. Repeat with remaining sorghum, microwaving 1 1/2 minutes, or until more than 10 seconds between pops.
  6. Stir popped sorghum, oats, almonds and pistachios into date mixture.
  7. In small saucepan over low heat, heat honey and peanut butter 5 minutes, or until peanut butter is smooth and mixture is warmed, stirring occasionally. Remove from heat. Stir in vanilla and salt.
  8. Pour peanut butter mixture over date mixture, stirring to break into small clumps. Transfer half to baking pan. Using bottom of drinking glass or fingers lightly sprayed with nonstick cooking spray, press down firmly to flatten and pack tightly so clumps adhere to each other. Repeat with remaining half. Freeze, covered, about 1 hour, to firm.
  9. Place cutting board over pan. Turn pan over. Discard plastic wrap. Using knife, cut into 12 bars. Refrigerate leftovers in airtight container up to 1 week.

Brunch Fruit Tart

Crust:

  • 4          cups granola mixture
  • 1/2       cup butter, softened
  • 4 1/2    tablespoons honey
  • nonstick cooking spray

Filling:

  • 2 1/4    cups vanilla Greek yogurt
  • 8          ounces cream cheese, softened
  • 1/2       cup granulated sugar
  • 1          teaspoon vanilla extract
  • 1          package gelatin

Toppings:

  • strawberries, sliced
  • blueberries
  • kiwis, sliced
  1. To make crust: Preheat oven to 350 F.
  2. In large bowl, combine granola, butter and honey. Grease 11-inch tart pan with nonstick cooking spray. Line bottom of tart pan with parchment paper.
  3. Press granola mixture into tart pan. Place tart pan on baking sheet and bake 10 minutes. Cool completely.
  4. To make filling: Using mixer, combine yogurt, cream cheese, sugar, vanilla extract and gelatin until whipped completely.
  5. Pour yogurt mixture into tart crust. Refrigerate at least 1 hour.
  6. Top with strawberries, blueberries and kiwis.

  • 12        blueberry pancakes (3-inch round), cooled to room temperature
  • 1/2       cup white frosting
  • 6          seedless watermelon slices (2/3-inch thick, 3-inch round), drained to remove excess moisture
  1. Evenly frost bottom of each pancake with white frosting. Arrange six pancakes frosting side up on serving platter. Place one slice watermelon on each frosted pancake.
  2. Top each with remaining pancakes, frosting side down. Serve immediately or cover and refrigerate until ready to serve.

Frosted Watermelon Cutouts

  • 1          seedless watermelon, cut into 1/2-3/4-inch thick slices
  • 1          serving vanilla yogurt

  2. Frost each slice with yogurt. Sprinkle with granola.

  • 3          cups plain non-fat Greek yogurt
  • 1/3       cup honey, plus additional for drizzling (optional)
  • 1          teaspoon vanilla
  • 1/2       cup strawberries, sliced into rounds
  • 1/2       cup blueberries
  • 1/2       cup raspberries, halved
  1. In medium mixing bowl combine Greek yogurt, 1/3 cup honey and vanilla.
  2. On parchment paper-lined baking sheet, spread Greek yogurt mixture to 1/4-inch thickness. Press strawberries, blueberries and raspberries into yogurt. Freeze at least 3 hours. Break into pieces upon removing from freezer.

Peanut Butter Yogurt Dip

Prep time: 5 minutes
Servings: 4

  • 3/4       cup vanilla Greek yogurt
  • 1/4       cup peanut butter
  • 1          dash cinnamon
  • apples, graham crackers or other dipper of choice
  1. In bowl, six Greek yogurt, peanut butter and cinnamon until smooth.
  2. Serve with apples, graham crackers or another dipper of choice.

Good Morning Yogurt Parfait

Prep time: 5 minutes
Servings: 1

  • 1/2       cup sliced or diced fruit, any variety
  • 6          ounces low-fat or fat-free vanilla yogurt
  • 1/4       cup granola or other cereal (optional)
  1. In small bowl or cup, layer fruit and yogurt, starting with fruit on bottom. Top with cereal or granola, if desired.
  2. Note: This recipe can be made using low-fat or non-fat cottage cheese sweetened with honey and cinnamon.

Frozen Banana Pops

Prep time: 2 hours
Servings: 8

  • 4          large bananas, peeled
  • 8          wooden ice pop sticks
  • 2          cups vanilla non-fat Greek yogurt
  • 1/2       cup creamy natural peanut butter
  1. Cut each banana in half and carefully insert wooden ice pop stick in bottom of each , about one-third into banana. Place bananas on large baking sheet lined with parchment paper. Freeze bananas until partially frozen, about 30 minutes.
  2. Carefully dip each banana in tall pint glass of vanilla yogurt to coat, leaving 1/2-inch at bottom of banana uncoated. Return yogurt-coated bananas to parchment paper-lined baking sheet and freeze until completely firm, about 1 hour.
  3. Microwave peanut butter until smooth and creamy, about 30-45 seconds. Drizzle peanut butter evenly over bananas then place on baking sheet to freeze until peanut butter is firm, about 30 minutes.
  4. Serve immediately or wrap each banana in plastic wrap and store in freezer up to 3 months.

Breakfast Six Layer Trifle

Serves: 8 to 12

  • 3 cups organic fat free vanilla yogurt
  • 2 cups low fat natural granola
  • 4 cups watermelon, minced
  • 3 cups organic fat free peach yogurt
  • 2 cups organic crisp rice cereal
  • 2 cups shredded coconut
  1. Spread the vanilla yogurt over bottom of deep glass casserole or trifle dish. Layer remaining ingredients in order listed above in even layers over vanilla yogurt.

Chunky Watermelon Lemonade

Serves: 2 to 3

  • 2 cups water
  • 1/3 cup raw sugar (or to taste)
  • 2 cups seedless watermelon puree
  • 1 fresh lemon, sliced thinly
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups chopped seedless watermelon flesh
  1. In half-gallon pitcher with lid, mix 1 cup of water with sugar until completely dissolved. Stir in rest of water, watermelon puree, sliced lemon, lemon juice and vanilla extract. Stir to mix well and chill thoroughly. Stir in 2 cups of chopped watermelon before serving.

Watermelon Pancake Sandwiches

Serves: 4

  • 2 tablespoons maple syrup
  • 8 silver dollar size (3 to 4-inch) natural blueberry pancakes homemade or prepared, warm
  • 4 slices seedless watermelon, same size as pancakes
  1. Spread syrup over one side of each pancake. Place slice of watermelon on the syrup brushed side of 4 of the pancakes. Top the watermelon with other 4 pancakes, syrup side down. Serve immediately.

Watermelon Waldorf Salad

Serves: 4 to 6

  • 2 cups cubed watermelon (1/2-inch cubes)
  • 1/2 cup celery, sliced
  • 1/2 cup seedless red grape halves
  • Dash of salt
  • 1/4 cup Greek yogurt
  • 2 tablespoons sliced almonds, toasted
  1. Stir together watermelon, celery, and grapes in bowl. Just before serving, stir salt into yogurt for dressing. (Add water to thin, if necessary.) Pour dressing over fruit; stir until coated. Sprinkle with almonds.

Marvelous Mother's Day Brunch

Angel Sherbet Cake

Prep time: 30 minutes
Freeze time: at least 1 hour or until hard
Yields: 10 servings

  • 1 pint raspberry sherbet
  • 1 pint lime sherbet
  • 1 Angel Food Cake loaf (store bought, approximately 7 x 3 inches)
  • Topping:
  • 2 cups heavy whipping cream or 12-ounce container frozen whipped topping, thawed
  • 3 teaspoons sugar
  • 1 teaspoon lemon juice
  1. Line two bread pans, approximately the same size as the angel food cake, with plastic wrap. Soften sherbet. Scoop lime sherbet into one pan and raspberry sherbet in the other. Spread sherbet with a metal spatula dipped in hot water. Sherbet should be approximately 1/2 inch deep. Refreeze sherbet in pans for at least 1 hour or until hard.
  2. Trim edges of angel food cake with a serrated knife to even them; cut cake into three lengthwise slices.
  3. Remove frozen lime and raspberry sherbet from freezer. Alternate layers, cake, sherbet, cake, sherbet and cake. Cut off any oversized sherbet or cake to ensure that cake and sherbet are even on all sides of the cake. Refreeze until solid; can be frozen up to 3 days if wrapped well in plastic wrap.
  4. Before serving, prepare cake topping by whipping the cream until very thick. Add sugar and lemon juice and whip mixture until soft peaks form. Spread whipped cream on cake. Refreeze cake until ready to serve.
  5. Remove cake from freezer and let soften 5 to 10 minutes. Slice with an electric knife. If desired, place cake slices on pools of strawberry or raspberry sauce and top with a lemon twist and mint leaves.

Wheat Berry Tuna Salad

Prep time: 15 minutes
Cook time: 60 to 90 minutes
Yields: 4 to 6 servings
Serving size: 1 1/2 cups

  • 1 cup wheat berries
  • 4 cups water
  • 1/2 teaspoon salt
  • 1 cup cherry tomatoes, diced
  • 1/2 cup celery, diced
  • 1/2 cup cucumber, diced
  • 2 cans Albacore tuna packed in water, drained
  • 2 eggs, hard boiled, chopped (optional)
  • 2 tablespoons flat leaf parsley, coarsely chopped
  • 1/2 cup Italian dressing
  • 1/8 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  1. Place wheat berries, water and salt in a sauce pan and simmer for 60 to 90 minutes until tender when you bite down on them.
  2. Drain well and allow to cool.
  3. In a large bowl, toss together with the remaining ingredients. Serve chilled.

Burrito Bites

Prep time: 10 minutes
Chill time: 30 minutes
Yields: 4 servings
Serving size: 1 tortilla roll-up

  • 4 (9-inch) whole wheat tortillas
  • 6 tablespoons smooth peanut butter or reduced-fat cream cheese
  • 1 cup fresh spinach or torn romaine leaves
  • 1 large stalk celery, cut into thin 3- to 4-inch sticks (12 sticks total)
  • 1/2 cup carrots, shredded or matchstick
  • 1/2 cup fat-free plain yogurt or low-fat ranch dressing (optional)
  1. Spread 1 1/2 tablespoons peanut butter or reduced-fat cream cheese on each tortilla, leaving 1 inch of clean space at the top edge of each tortilla. Layer spinach leaves on top of peanut butter. Place three celery sticks across the middle on top of the spinach; sprinkle with shredded carrot.
  2. Keeping the clean edge at the top, roll tortillas up tightly from the bottom, folding in the sides after the first roll. Wrap each burrito tightly in plastic wrap and refrigerate for at least 30 minutes. Remove plastic wrap. Cut each roll into 1/2-inch slices, inserting a toothpick into the burrito before each cut is made.
  3. Serve with yogurt or ranch dressing.

Spiced Granola Pancakes

Prep time: 10 minutes
Cook time: 15 minutes
Yields: 12 servings
Serving size: 1 pancake

  • 1 cup fat-free milk
  • 1/2 cup applesauce
  • 1 tablespoon fat-free vanilla yogurt
  • 2 eggs
  • 2 teaspoons grated orange peel
  • 1 cup all-purpose flour
  • 1 cup low-fat granola
  • 1/2 cup whole wheat flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  1. In large bowl, combine milk, applesauce, yogurt, eggs and orange peel. In medium bowl, combine remaining ingredients. Stir the dry ingredients into the wet ingredients and mix just until dry ingredients are moistened. Do not over mix.
  2. Heat nonstick griddle to 350°F. For each pancake, pour 1/4 cup of pancake batter onto hot griddle. Cook each side until puffed and dry around edges. Turn and cook 1 to 2 minutes longer or just until golden brown.
