Sweet Potato Bowl with Cilantro, Turmeric Ghee and Lime
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons 4th & Heart Turmeric Ghee, divided
- 1 teaspoon cumin powder
- 1 teaspoon smoked paprika
- salt, to taste
- pepper, to taste
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1/4 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped, plus additional for garnish, divided
- 1 lime, juice only
- 1/4 cup crumbled feta or goat cheese (optional)
- Preheat oven to 400 F.
- In large bowl, toss cubed sweet potatoes with 1 tablespoon turmeric ghee, cumin powder and smoked paprika; add salt and pepper, to taste. Spread sweet potatoes evenly on baking sheet and roast 25-30 minutes, or until tender and slightly crispy on edges, turning halfway through.
- Cook quinoa according to package instructions. Once cooked, fluff with fork and set aside.
- In medium bowl, mix cooked quinoa with black beans, red onion and 1/4 cup chopped cilantro.
- Drizzle half the lime juice over quinoa mixture and stir to combine. Add salt and pepper, to taste.

Apple Ricotta Crepes
Crepes:
- 1 cup flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1cup whole milk
- 2 eggs
- 1 teaspoon vanilla
- butter, for cooking
Apple Topping:
- butter
- 2 tablespoons brown sugar
- Envy Apples, sliced or cubed
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- salt, to taste
- maple syrup
Ricotta Filling:
- 1 cup ricotta cheese
- 1 lemon, zest and juice only
- 2-3 tablespoons sugar, or to taste
- To make crepes: In bowl, combine flour, sugar and salt. Add milk, eggs and vanilla then, using whisk, combine thoroughly. Mixture should be silky smooth. Refrigerate.
- To make apple topping: In pan over medium heat, heat butter and brown sugar until bubbly and golden.
- Add apples, cinnamon, nutmeg and salt, to taste; cook over medium-low heat until apples are soft. Turn off heat and finish with maple syrup.
- To make ricotta filling: Combine ricotta, lemon zest, lemon juice and sugar, mix well and set aside.
- In nonstick pan over medium-low heat, melt small amount of butter.
- Add one ladle crepe batter, cook until bubbles form, flip and cook until golden. Repeat with remaining batter. Stack crepes to keep warm and soft.
- Spread ricotta mixture thinly onto crepes and fold into quarters. Top with apple mixture and serve.
Apple, Tomato and Goat Cheese Frittata
- 6 eggs
- 1 teaspoon hot pepper sauce
- 2 teaspoons kosher salt
- 20 turns fresh cracked pepper
- 1/4 cup whole milk

Golden Beet and Rice Burger Sliders

- 1 bag Success Jasmine Rice
- 1/2 can (7 1/2 ounces) white beans, drained and rinsed
- 1 egg, beaten
- 1/2 tablespoon water
- 4 ounces (about 1 1/2 cups) golden beets, cooked and grated
- 3 ounces goat cheese, crumbled, divided
- 1 tablespoon finely chopped fresh dill
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, divided
- 12 leaves Bibb lettuce
- 1 cup arugula
- 2 tablespoons Sriracha sauce
- Prepare rice according to package directions. Cool completely.
- In food processor, pulse beans, egg and water until mashed.
- Transfer bean mixture to large bowl. Add rice, beets, 1 1/2 ounces goat cheese, dill, salt and pepper; stir until combined. Divide mixture into six portions and shape into 1/2-inch-thick patties.
- In large, nonstick skillet over medium heat, heat 1 tablespoon oil. Cook patties in two batches, 3-5 minutes per side, or until golden brown and heated through, adding remaining oil as necessary.

- On charcuterie board or platter, arrange prosciutto, apple slices, nuts, pomegranate seeds, fig jam and cheddar cheese slices. Serve with crackers.
Prosciutto Pizza
Yield: 8 slices
- Olive oil
- flour
- 1 container (16 ounces) store-bought pizza dough
- 1/4 cup tomato sauce
- 4 ounces fresh mozzarella, cubed
- 5 slices Prosciutto di Parma
- 6 fresh basil leaves
- Remove dough from refrigerator and let sit at room temperature at least 30 minutes. Preheat oven to 500 F. Grease baking sheet with olive oil.
- Roll out pizza dough onto floured work surface to form oblong shape about 16 inches long and 12 inches wide. Remove to oiled baking sheet and stretch out edges to fill length of baking sheet.
- Bake 4 minutes. Remove from oven and evenly spread tomato sauce over surface, leaving 1/2 inch from edges bare. Dot with mozzarella. Bake until edges are golden and mozzarella is bubbling, about 12 minutes.
- Drape prosciutto over mozzarella. Garnish with fresh basil.
Sweet Potato Rounds
Yield: 16-20 rounds
- 2 medium sweet potatoes
- 2 teaspoons olive oil
- salt, to taste
- 2 tablespoons butter
- 1 bunch fresh sage, stems removed
- 4 ounces goat cheese
- 8 slices Prosciutto di Parma, halved
- Preheat oven to 425 F. Line baking sheet with foil or parchment paper. Peel and slice sweet potatoes into 1/2-inch rounds. In medium bowl, toss sweet potatoes with oil and lightly season with salt, to taste. Arrange rounds in single layer on prepared pan; bake until sweet potatoes are lightly browned and tender, about 20 minutes, flipping halfway through.
- In small skillet over medium heat, bring butter to simmer. Add half the sage leaves. Cook until crispy, 2-3 minutes. Remove to paper towel and season lightly with salt, to taste. Repeat with remaining sage leaves. Reserve 2 teaspoons butter. In small food processor, combine goat cheese and reserved butter; whirl until smooth.
- To make rounds, remove goat cheese to plastic zip-top bag. Cut off one corner and pipe small dollops of cheese onto each round. Top with half slice prosciutto and one crispy sage leaf.
Crudites Platter
Platter:
- 8 asparagus
- water
- 2 soft-boiled eggs
- 5 baby carrots, halved lengthwise
- 4 radishes with tops, halved lengthwise
- 1 head little gem lettuce, quartered
- 6-8 slices Prosciutto di Parma
Dip:
- 2 teaspoons white miso
- 1 tablespoon lemon juice
- 1 teaspoon water
- 1/2 cup full-fat Greek yogurt
- 2 tablespoons chopped herbs (dill, tarragon or parsley)
- 1/4 teaspoon salt
- fresh black pepper, to taste
- To make platter: Trim asparagus. To blanch, bring pot of water to boil and place asparagus in pot 2-3 minutes. While asparagus is cooking, fill large bowl with ice water. After 3 minutes, plunge asparagus in ice bath and let cool.
- To soft-boil eggs, bring pot of water to boil. Gently place room temperature eggs in water and simmer 3-4 minutes. Remove eggs with slotted spoon and cool under running water.
- Serve asparagus and eggs alongside baby carrots, radishes and little gem lettuce. Drape prosciutto slices over some vegetables and between others.
- To make dip: In small bowl, whisk miso, lemon juice and water until smooth. Add yogurt, herbs and salt. Season generously with cracked pepper, to taste; mix and serve with platter.

- 2 cloves garlic
- 1/2 small bunch Italian (flat-leaf) parsley
- 1/4 cup O Organics extra-virgin olive oil
- 1/8 cup red wine vinegar
- 2 teaspoons O Organics Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 pound O Organics ribeye steak
- 1/2 pint O Organics grape tomatoes
- 1/4 pound O Organics white mushrooms
- green pepper, sliced (optional)
- 1/2 medium red onion
- 6 skewers
- Peel and mince garlic. Wash and dry parsley. Shave leaves off stems; discard stems and mince leaves.
- In large bowl, whisk minced garlic, half the minced parsley (reserve remainder for garnish), olive oil, vinegar, Dijon mustard, salt and pepper.
- Cut steak into cubes; transfer to marinade bowl and toss to coat.
- Wash tomatoes, mushrooms and green pepper. Halve mushrooms. Add tomatoes, mushrooms and green pepper to marinade. Peel onion and cut into chunks; add to marinade. Toss beef and vegetables until well coated.
- Heat grill pan, outdoor grill or skillet to medium-high heat.
- Thread steak and vegetables onto six skewers.
- Cook kebabs in batches until steak is browned and vegetables are tender, 3-5 minutes per side. Transfer to plate and repeat with remaining kebabs.
- To serve, plate kebabs and sprinkle with remaining minced parsley.

Grilled Pork Chops with Peach Pecan Salsa
Cook time: 25 minutes
Servings: 4
- 4 boneless pork loin chops (each 1-inch thick)
- 3/4 teaspoon, plus 1/8 teaspoon, kosher salt, divided
- freshly ground black pepper, to taste
- 2 medium peaches, diced
- 2/3 cup raw pecan pieces
- 2 tablespoons red onion, diced
- 2 tablespoons chopped fresh basil
- 1 teaspoon minced jalapeno pepper
- 2 teaspoons lime juice
- Season pork chops with 3/4 teaspoon salt and black pepper, to taste.
- Heat grill or grill pan to medium-high heat.
- Grill pork chops until browned, about 5 minutes. Flip and cook 5-6 minutes until food thermometer inserted in center registers 135 F.
- Transfer to plate and rest at least 5 minutes until internal temperature rises to 145-160 F.
- Gently stir peaches, pecans, onion, basil, jalapeno, lime juice and remaining salt.
- Add salsa on top of each pork chop with remaining salsa on side.
Spiced Pecan Grilled Peach Salad with Goat Cheese

Spiced Pecans:
- 1 large egg white
- 3 tablespoons dark brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon kosher salt
- 2 cups pecan halves
Salad:
- 1/4 cup, plus 2 teaspoons, extra-virgin olive oil or pecan oil, divided
- 1/4 cup white wine vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- 1/8 teaspoon kosher salt
- pepper, to taste
- 2 large peaches, halved and pits removed
- 6 cups mixed baby greens (such as arugula, spring mix and spinach)
- 4 ounces soft goat cheese
- To make spiced pecans: Preheat oven to 275 F. Line rimmed baking sheet with parchment paper and set aside.
- In medium bowl, whisk egg white, brown sugar, cinnamon, cayenne pepper and salt until well combined. Fold in pecans and mix until evenly coated in mixture. Spread in single layer on prepared baking sheet.
- Bake 45-50 minutes, stirring occasionally until pecans are fragrant and golden brown. Allow to cool completely.
- To make salad: Heat grill to medium-high heat.
- In small bowl, whisk 1/4 cup olive oil, white wine vinegar, Dijon mustard, garlic powder, salt and pepper, to taste. Set aside.
- Brush cut sides of peach halves with remaining olive oil and grill until grill lines appear and peaches become tender, 3-5 minutes. Remove peaches and cut into slices.
- Divide greens among four plates. Top with grilled peach slices and goat cheese. Divide 1 cup spiced pecans evenly among salads and reserve remaining cup for snacking. Drizzle each salad with vinaigrette.

Spaghetti and Clams

- Salt
- 8-12 littleneck or other small clams in shell, scrubbed
- 1/4 pound spaghetti noodles
- 2 tablespoons extra-virgin olive oil
- 1/2-1 garlic clove, minced
- 1/2 dried red chile pepper
- 1/3 cup vermouth or white wine
- 1-2 tablespoons chopped fresh Italian parsley
- Bring large pot of lightly salted water to boil. Soak clams in cold water.
- Add spaghetti to boiling water and cook until slightly underdone. In large saucepan over medium-low heat, add olive oil, garlic and chile pepper. Saute gently, reducing heat, if necessary, so garlic does not brown.
- Add vermouth and clams; cover. Clams should open in about 2 minutes. Add hot drained pasta, cover and shake pot gently. Simmer 1-2 minutes until spaghetti is cooked to taste.
- Discard unopened clams. Add half the parsley and shake pan to distribute evenly. Transfer to plate or bowl and sprinkle with remaining parsley.
Skirt Steak with Salsa Verde

- 1/2 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 2 thinly sliced scallions
- 3 tablespoons capers, drained and roughly chopped
- 3 garlic cloves, minced
- 1/2 teaspoon kosher salt, plus additional, to taste, divided
- 1/2 teaspoon black pepper, plus additional, to taste, divided
- 1 1/2 pounds skirt steak
- 2 tablespoons chopped parsley
- 2 tablespoons chopped fresh mint, divided
- 1/4 cup pistachios
- 1 romaine heart
- 1 radicchio
- 1/2 cup crumbled goat cheese
- Whisk olive oil, vinegar, scallions, capers, garlic, 1/2 teaspoon salt and 1/2 teaspoon pepper. Pour about 1/3 of dressing (about 1/3cup) over steak and turn to coat.
- Add parsley and 1 tablespoon mint to reserved dressing; stir and set aside until ready to use. Cover and refrigerate steak 30 minutes, or up to 24 hours.
- In small saute pan over medium heat, toast pistachios, tossing often, until golden brown, about 3 minutes. Set aside.
- Set grill to medium-high heat or heat grill pan on stovetop over medium-high heat. Grill steak about 5 minutes per side. Transfer to plate and rest 10 minutes.
- Cut romaine hearts lengthwise into quarters. Arrange romaine and radicchio in layers on large platter, leaving room on one side for steak. Sprinkle with goat cheese, pistachios and remaining mint.
- Slice steak into 3-inch pieces then slice against grain to cut steak into wide strips. Add sliced steak to platter. Drizzle reserved dressing on romaine and steak.

- 1 pinch sea salt
- 1/2 cup heavy cream

- In food processor or blender, blend goat cheese with sea salt and 2 tablespoons heavy cream. If mixture is too firm, add cream little by little while pulsing blender until light, fluffy consistency is reached.

Apple Custard Sponge Trifle

- 6 Envy apples
- 2 tablespoons golden caster sugar
- 1 teaspoon cinnamon
- 1/2 cup, plus 2 tablespoons, water
- 1 tablespoon corn flour
- 1 large plain sponge cake
- 2 cups vanilla bean custard
- 1/2 cup caramel or butterscotch sauce, plus additional for garnish, divided
- 1/2 cup creamfresh apple slices
- fresh strawberry slices
- Peel, core and dice apples; place in large saucepan. Add caster sugar, cinnamon and 1/2 cup water. Simmer apples 5-8 minutes until tender.
- Combine corn flour and remaining water. Stir corn flour mixture into apples until apples are syrupy.
- Cut sponge cake into 2-centimeter diced pieces. Arrange 1/3 of sponge pieces in base of serving bowl. Add half of cinnamon apple pieces, including syrupy juices. Add 1 cup custard and drizzle with 1/4 cup caramel sauce. Repeat with remaining ingredients, finishing with sponge cake; chill.
- Whip cream and spoon dollops over sponge cake to cover top. Garnish with apple slices, strawberry slices and caramel sauce.
Apple Wreath Salad

Balsamic Dressing:
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon black pepper, finely ground
- 1 large garlic clove, minced
- 1/4 cup balsamic vinegar
- 3/4 cup extra-virgin olive oil
Salad:
- 10 ounces baby arugula
- 3 Envy apples, sliced
- 9 ounces goat cheese, crumbled
- 3 ounces pomegranate arils
- 3 ounces pecans, toasted
- To make balsamic dressing: In small serving bowl, whisk honey, Dijon mustard, salt, pepper, garlic, balsamic vinegar and olive oil.
- Place dressing bowl in center of large board or platter. Arrange arugula around dressing bowl in wreath shape.
- Place apple slices on top of arugula. Sprinkle on goat cheese, pomegranate arils and pecans.
Brown Butter Apple Pie
Streusel Topping:
- 1/2 cup flour
- 1/4 cup chopped pecans
- 2 tablespoons light brown sugar
- 4 tablespoons butter, cut into 1/2-inch cubes
Filling:
- 4 tablespoons butter
- 2 pounds Envy apples, cut into 1/4-inch slices
- 1/2 cup light brown sugar
- 1/2 teaspoon cinnamon
- 1/8 teaspoon grated nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 3 tablespoons flour
- 1 deep dish frozen pie shell
- Preheat oven to 375 F.
- To make streusel topping: Mix flour, chopped pecans and light brown sugar. Stir in butter using fingertips until incorporated with small lumps of butter visible. Refrigerate.
- To make filling: In large skillet over medium heat, melt butter until amber, stirring often. Set aside to cool. In large bowl, stir sliced apples, brown sugar, cinnamon, nutmeg, salt, vanilla and flour using spatula. Pour brown butter over apples and mix, scraping skillet with rubber spatula to incorporate brown butter bits.
- Place frozen pie shell on baking sheet. Add 2 cups apple mixture into shell, gently pressing apple slices for even base. Add remaining apple slices and gently press. Sprinkle streusel topping evenly over apples.
- Bake 30 minutes then reduce oven temperature to 350 F and bake 35-45 minutes until topping is golden and apples feel tender when pierced with fork.
Roasted Apple Macaroni and Cheese
- Salted water
- 1 pound macaroni noodles
- 4 tablespoons butter
- 1 Envy apple, peeled and diced
- 4 tablespoons flour
- 2 cups heavy cream
- 2 cups milk
- 3 cups sharp cheddar cheese, grated
- 1 cup Romano cheese, grated
- 1 cup gruyere cheese, grated
- 1 tablespoon kosher salt
- 1 teaspoon Worcestershire
Topping:
- 2 tablespoons butter
- 1 cup panko breadcrumbs
- Bring large pot of salted water to boil. Add noodles and cook until just tender. Drain and set aside.
- In large pot over high heat, melt butter then saute diced apple until caramelized and tender. Sprinkle in flour and stir. Cook 1 minute, stirring frequently.
- Whisk in heavy cream and milk; bring to boil, whisking frequently so milk doesn't burn.
- Once boiling, turn heat to low and whisk in cheddar cheese, Romano cheese, gruyere cheese, salt and Worcestershire. Continue whisking until cheese is melted thoroughly.
- Carefully pour mixture into large blender and blend on high until smooth.
- Pour cheese sauce over noodles and stir.
- Pour macaroni and cheese into 9-by-13-inch pan and spread evenly.
- Heat oven to broil.
- To make topping: In medium bowl, melt butter and stir in panko breadcrumbs.
- Sprinkle breadcrumbs over macaroni and cheese; broil until golden brown.
