- 1 jar (16 ounces) Aunt Nellie's Baby Whole Pickled Beets
- 2 large boneless, skinless chicken breast halves (about 1 pound)
- 1/2 teaspoon salt, plus additional, to taste, divided
- 1/2 teaspoon pepper, plus additional, to taste, divided
- 4 1/2 tablespoons stone ground mustard, divided
- 1 1/2 tablespoons, plus 1/3 cup, orange marmalade, divided
- 2 tablespoons minced fresh chives
- 1 large lemon, zest and juice (1/3 cup juice)
- 1/4 cup olive oil
- 1 bag (9 ounces) leafy romaine lettuce pieces
- 1/3 cup chopped almonds, toasted
- 1/3 cup crumbled blue, feta or goat cheese
- Heat oven to 375 F. Drain beets; set aside.
- Season both sides of chicken with salt and pepper, to taste. In small bowl, combine 1 1/2 tablespoons mustard and 1 1/2 tablespoons marmalade. Brush mixture over chicken until completely coated. Bake chicken on rimmed baking sheet lined with aluminum foil about 20-25 minutes, or until juices run clear; set aside.
- To make vinaigrette: In medium bowl, combine remaining mustard, remaining marmalade, chives, lemon zest and juice, 1/2 teaspoon salt and 1/2 teaspoon pepper. Slowly pour in oil while whisking vigorously until completely combined.
- Slice cooled chicken into 1-inch pieces. Onto each skewer, thread one beet, one piece of chicken and 4-5 pieces of lettuce; repeat two times for each skewer, adding one beet at ends. Repeat to make eight skewers. Place skewers on large serving platter.
- Stir vinaigrette; drizzle lightly over skewers. Sprinkle with almonds and cheese. Serve with remaining vinaigrette.
Middle Eastern-Inspired Bean Salad
Prep time: 20 minutes
Servings: 6
- 1 can (15 ounces) READ 3 or 4 Bean Salad
- 1/2 cup cherry or grape tomatoes, halved
- 1 small cucumber (4-5 inches long) cut in half lengthwise then thinly sliced crosswise
- 2 green onions, thinly sliced
- 1/2 cup chopped fresh parsley
- 2 tablespoons chopped fresh mint
- 1 small clove garlic, minced
- 1/4 teaspoon crushed red pepper flakes
Dressing:
- 2 tablespoons prepared hummus
- 1 tablespoon fresh lemon juice
- 1/4-1/2 teaspoon za'atar seasoning blend
- Drain bean salad. Discard liquid. Place bean salad in large bowl.
- Add tomatoes, cucumber, onions, parsley, mint, garlic and red pepper flakes to bean salad. Toss to combine.
- To make dressing: In bowl, combine hummus, lemon juice and za'atar seasoning.
- Add dressing to salad just before serving; toss to combine well. Serve immediately or chilled.

- Preheat the grill on high.
- Make sure the grate is well oiled to prevent sticking.
- Transport the chicken to the grill on one plate and use a clean plate to take the prepared food back to the kitchen.
- Use tongs to turn the chicken instead of a fork, which may tear the meat.
- Keep the grill covered as much as possible for quicker, more even cooking.
- Have a spray bottle filled with water handy in case of a flare up.
- Once you remove the chicken from the grill, allow it to "rest" for five minutes so it will retain its juices when cut.

Chipotle Maple Citrus Watermelon Wings
Watermelon Glaze:
- 2 cups watermelon puree
- Juice from 3 fresh lemons
- 1 tablespoon lemon zest
- 1/2 cup maple syrup (can use light version)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground chipotle pepper, or to taste
Chicken:
- Chicken wings or drumettes
- 2 cups pineapple juice
- 1/2 cup soy sauce
- 1 tablespoon minced fresh ginger
- 3 cloves minced fresh garlic
- To prepare the watermelon glaze, simmer ingredients together in a heavy saucepan for 20 minutes or until sauce is thick. Makes 2 cups. Keep warm.
- To prepare the chicken, place the chicken in a large zipper lock bag with rest of the ingredients and seal tightly. Allow to marinate at least 2 hours or up to 12. Grill until cooked and arrange on a warm platter. Pour the glaze over the chicken and serve immediately.

Jalapeño Popper Cups
- 8 strips bacon, chopped
- 4 medium jalapeño peppers, seeded and minced
- 2 teaspoons minced garlic
- 2 packages (8 ounces each) cream cheese
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese, divided
- 1 package frozen phyllo dough sheets
- 2 tablespoons fresh cilantro, chopped
- Heat oven 375°F.
- In medium skillet over medium-high heat, cook bacon until crisp. Drain bacon; reserve 1 tablespoon grease.
- Add jalapeño peppers and minced garlic to bacon grease. Cook until peppers are tender.
- In large bowl, beat cream cheese and sour cream until smooth. Stir in bacon, jalapeño mix and 2/3 cup shredded cheese.
- Gently fold one pastry sheet in half. Fold in top corners to middle, forming point. Fold bottom corners to middle, forming point. Place phyllo dough in muffin pan cavity, forming cup.
- Fill phyllo cups with cream cheese mixture. Sprinkle remaining cheddar cheese over cups.
- Bake 7-8 minutes or until heated through. Remove from pan and sprinkle with cilantro.

- 1 chicken (3 pounds), liver discarded
- 2 1/2 quarts cold water
- 4 carrots, peeled and cut into bite-size pieces
- 2 onions, peeled
- 2 celery stalks with leaves, cut into 4 pieces
- 6 cloves garlic, peeled
- 2 fresh thyme sprigs or 1/2 teaspoon dried thyme
- 1 1/2 teaspoons kosher salt
- 1 teaspoon whole black peppercorns
Soup:
- 1 cup small pasta, cooked
- 1 cup frozen peas, thawed
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- To prepare broth: In large pot over high heat, bring chicken and all remaining broth ingredients to boil. Reduce heat to low; skim surface of broth to remove foam. Let simmer 1 1/2 hours, skimming occasionally, and turning chicken. Add more water if necessary to keep chicken submerged.
- Remove chicken with tongs and cool. Strain broth through fine sieve. Discard celery, herbs and spices. Reserve onions and carrots. Remove any excess fat from top of broth with spoon.
- Pull chicken meat from bones and discard skin and bones. Dice chicken and reserve. Quarter cooked onions, if desired.
- To prepare soup: In large pot over high heat, return strained chicken broth and bring to rolling boil. Add reserved onions and carrots. Reduce heat to low; stir in reserved chicken meat, pasta and frozen peas, cooking until warm. Season with salt and pepper. Ladle soup into bowls and top with dill and parsley.

- 1 Cuties clementine
- 9-10 thinly sliced strips red bell pepper, cut in 1-inch pieces
- 1/2 grape tomato
- 1 celery stick, cut to 3 inches
- 2 small leaves romaine lettuce
- 1 piece English cucumber, unpeeled, seeded and cut to 1 1/2 inches then thinly sliced
Dip:
- 2 tablespoons plain Greek yogurt
- 1/2 teaspoon honey
- 1/4 teaspoon fresh lemon juice
- Peel clementine and separate sections almost all the way, leaving attached at the base. Place on plate with base down. Place piece of red bell pepper between each citrus section, and half tomato in center to form flower.
- Place celery and lettuce leaves underneath as stem and leaves. Arrange cucumber slices below to represent grass.
- In small bowl, stir together yogurt, honey and lemon juice.
- Serve dip in dish alongside flower, or in a mound underneath cucumber slices.

- 2 large eggs
- 2 tablespoons fat-free milk
- 1/2 teaspoon ground cinnamon
- 2 slices whole-wheat bread
- 1 teaspoon soft margarine
- 4 teaspoons light pancake syrup
- In flat-bottomed bowl, crack eggs. Thoroughly whisk in milk and cinnamon. Dip bread slices, one at a time, into egg mixture, wetting both sides. Re-dip, if necessary, until all egg mixture is absorbed into bread.
- Meanwhile, heat large, nonstick skillet over medium heat. Add butter. Place dipped bread slices in skillet. Cook 2 1/2-3 minutes per side, or until both sides are golden brown.
- Drizzle with syrup. Serve when warm.

Mojo Marinade:
- 3/4 cup extra-virgin olive oil
- 1 cup cilantro, minced
- 3/4 cup orange juice
- 1/2 cup fresh squeezed lime juice
- 3 tablespoons fresh garlic, minced
- 1 tablespoon fresh oregano, minced
- 2 teaspoons cumin, ground
- kosher salt, to taste
- coarse black pepper, to taste
Sandwich:
- 3 1/2 pounds pork shoulder or boneless pork butt
- 2 teaspoons Tabasco Chipotle Sauce
- 3 tablespoons mayonnaise
- 6 pieces Cuban bread or baguette (6 inches each), cut lengthwise
- 8 ounces deli ham, thinly sliced
- 1/2 pound swiss cheese, thinly sliced
- 24 dill pickle chips
- 4 tablespoons yellow mustard
- 1 cup unsalted butter
- 4 tablespoons reserved Mojo Marinade
- To make Mojo Marinade: In bowl, whisk olive oil, cilantro, orange juice, lime juice, garlic, oregano, cumin, salt and pepper until incorporated. Adjust salt and pepper, to taste. Reserve 4 tablespoons marinade in separate bowl, cover and set aside in refrigerator.
- Place pork in large zip-top bag. Cover with Mojo Marinade and close bag. Place in roasting pan and refrigerate overnight.
- Heat oven to 450° F.
- Remove pork and marinade from bag and place in roasting pan. Cover with foil and cook in oven 45 minutes.
- After 45 minutes, reduce heat to 375° F, remove foil and cook 2 hours until internal temperature reaches 175° F and pork is fork tender at thickest part.
- Remove from oven and let rest 20 minutes before slicing.
- In small bowl, mix chipotle sauce and mayonnaise until fully incorporated.
- Spread mixture on bottom bread slice.
- On top bread slice, place two slices deli ham, 3-4 ounces roasted pork, two slices swiss cheese, 4-6 pickles and yellow mustard.
- Over medium-high heat, butter flat surface of griddle and add reserved Mojo Marinade while butter is melting.
- Place assembled sandwiches on griddle, pressing grill weight or heavy skillet on top of sandwiches.

- 2 baby romaine lettuce leaves, halved and shredded
- 1 small red onion, finely chopped
- 2 tomatoes, finely chopped
- 1 lime, juiced

- 2 tablespoons cilantro, chopped
- 2 tablespoons chives, chopped
- kosher salt, to taste

- 1 cup shredded rotisserie chicken

- 4 tablespoons olive oil, divided

- 1/4 cup bacon pieces, half-cooked

- 2 cups heavy cream
- 1 1/2 cups chopped fresh baby spinach
- 1/2 cup chopped fresh tomato
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Season pork chops on both sides with salt and pepper, to taste.
- In large skillet, heat 2 tablespoons oil over medium heat. Cook pork chops 4-5 minutes per side until internal temperature reaches 145° F. Remove pork chops from pan and keep warm.
- In same skillet, heat remaining oil over medium heat. Add minced garlic and partially cooked bacon to skillet; cook until tender, about 3 minutes. Add chicken stock and bring to simmer.
- Reduce heat to low and add heavy cream. Season with salt and pepper, to taste.
- Add spinach and tomatoes to sauce; let spinach wilt. Stir in Parmesan cheese and Italian seasoning; simmer about 3 minutes.
- Return pork chops to pan along with juices. Spoon Florentine sauce over chops; simmer 3-5 minutes.
Italian Stir-Fried Pork and Pasta
Cook time: 30 minutes

- 1 Smithfield Roasted Garlic & Herb Marinated Fresh Pork Loin Filet
- 1 package (8 ounces) spiral pasta
- 2 tablespoons olive oil

- Heat skillet or wok to 400° F.
- Slice pork loin filet into thin strips.
- Cook pasta according to package directions.
- Add pork strips and oil to heated skillet. Stir-fry until meat is browned, about 5 minutes.
- Add zucchini, onion, mushrooms, tomatoes, garlic and butter to skillet; stir-fry until vegetables are crisp-tender, about 5 minutes.

Pulled Pork Sandwiches with Peach-Olive Jam
- 1 teaspoon olive oil
- 3 pounds pork shoulder roast
- kosher salt, to taste
- ground black pepper, to taste
- 4 cloves garlic, quartered
- 4 cups low-sodium chicken broth
- 8 ounces dried peaches
- 1 tablespoon chili powder
- 1 cup California Black Ripe Olives, wedged
- 2 teaspoons country mustard
- 1 ounce arugula
- 8 onion rolls, split and toasted
- Heat oven to 375° F.
- In large, high-sided saute pan, heat oil over medium-high heat.
- Season pork with salt and pepper, to taste, and cook in pan 3-4 minutes on each side until browned.
- Stir in garlic and continue cooking 3-5 minutes.
- Pour in chicken broth, peaches and chili powder; bring to boil.
- Cover loosely with foil and bake in oven 2 hours.
- With slotted spoon, carefully remove peaches and transfer to small mixing bowl. Mix olives and mustard with peaches; set aside.
- Continue to cook pork in oven 30-60 minutes until fork tender.
- Allow to cool slightly then shred by pulling apart with fork.
- Assemble sandwiches by spooning pork onto toasted rolls.
- Top with arugula and peach-olive mixture.
Easy Olive Bread

- 8 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1/2 cup mayonnaise
- 1 clove garlic, minced
- 2 cups shredded cheddar cheese
- 10 ounces California Green Ripe Olives, chopped
- 2 green onions, chopped
- 1 loaf French bread, sliced in half lengthwise
- Heat oven to 350° F.
- In bowl, mix cream cheese, butter and mayonnaise until thoroughly combined. Add garlic; stir well to distribute. Add cheddar cheese, green olives and green onions; stir to combine.
- Spread mixture on cut sides of bread. Bake 20-30 minutes, until cheese is hot, bubbly and starting to brown.
Sun-Dried Tomato and Olive Tapenade
- 1/2 cup shallots, chopped
- 1/4 cup chopped smoked sun-dried tomatoes
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons white balsamic vinegar
- 2 cloves garlic, minced
- 1 can (6 ounces) California Green Ripe Olives, drained
- 1 can (6 ounces) California Black Ripe Olives, drained
- 1/4 cup lightly packed fresh basil
- sea salt, to taste
- freshly ground pepper, to taste
- crackers or toasted baguette slices
- In food processor, pulse shallots, sun-dried tomatoes, olive oil, vinegar and garlic until finely chopped. Add olives, basil, salt and pepper; pulse again until chopped.
- Cover and chill 1 hour.
- Serve with crackers or toasted baguette slices.

Baked White Bean and Artichoke Dip with Crackers

- 1 can (15 ounces) organic white cannellini beans, drained and rinsed
- 1 can (14 fluid ounces) water-packed artichoke hearts, drained
- 1/3 cup olive oil
- 2 tablespoons finely chopped fresh chives, divided
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon white wine vinegar
- 2 cloves garlic
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- pinch of cayenne pepper
- 1 package (3.54 ounces) Crunchmaster Protein Snack Crackers in Roasted Garlic flavor
- Heat oven to 400° F.
