Watermelon Curd:

  • 3/4 cup watermelon juice
  • 2 tablespoons lime juice
  • 1/2 cup honey
  • 1 pinch salt
  • 3 eggs, lightly beaten
  • 1/2 cup butter (1 stick), cut into small cubes

Crust:

  • 8 graham crackers, crushed
  • 2 tablespoons honey
  • 1 pinch salt
  • 4 tablespoons butter, melted and cooled
  • basil leaves, for garnish

Whipped Cream:

  • 1 cup heavy whipping cream
  1. To make watermelon curd: In medium, heavy-bottomed saucepan, combine watermelon juice, lime juice, honey and salt. Stir to combine then add eggs.
  2. Place pan over medium heat and cook, adding cubed butter to pan and stirring constantly, until mixture thickens and coats back of wooden spoon. Immediately remove from heat and carefully pour through fine mesh sieve. Cool completely in refrigerator.
  3. To make crust: Preheat oven to 350 F.
  4. In food processor, pulse graham crackers until rough crumbs form. Add honey, salt and melted butter; pulse until mixture resembles wet sand.
  5. Line 8-by-8-inch pan with parchment paper then press graham cracker mixture into bottom of pan in even layer. Bake crust about 10 minutes, or until just beginning to brown. Allow crust to cool completely.

Watermelon Gelato

Servings: 8

  • 2 cups pureed watermelon
  • 1/2 cup sugar
  • 1 1/2 tablespoons cornstarch
  • 1 cup fat-free half-and-half
  • 3 tablespoons lemon juice
  • 1/2 cup whipping cream
  1. In blender, blend watermelon, sugar, cornstarch, half-and-half, lemon juice and whipping cream until smooth.
  2. Using ice cream maker, process gelato according to manufacturer's instructions.
  3. To make whipped cream: When crust and curd are completely cooled, in large bowl, whip cream until stiff peaks form.
  4. Gently push cream to one side of bowl and pour in watermelon curd. Using spatula, gently fold cream and watermelon curd together until no streaks are visible.
  5. Pour creamy watermelon mixture over graham cracker crust. Freeze dessert completely, 4-6 hours or overnight.
  6. When ready to serve, loosen sides with small spatula or butter knife. Turn out onto cutting board and use large spatula to flip so graham cracker crust is on bottom. Cut into eight bars and top each with basil leaf.

  • 1 frozen cauliflower pizza crust (11 ounces)

  • 2 medium carrots, peeled and trimmed
  • 1 medium fennel bulb, quartered and trimmed
  • 1 medium yellow bell pepper, halved and trimmed
  • 1/2 medium red onion
  • 16 black California grapes, halved
  • 1 cup canned or cooked chickpeas, drained and rinsed, divided
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons pesto
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 ounce fresh goat cheese, crumbled
  1. Heat oven to 400 F. Place frozen crust on large, parchment-lined baking sheet and brush top lightly with 2 teaspoons olive oil. Bake until crust is lightly golden, about 10 minutes. Transfer to cutting board and cut into quarters.
  2. Using mandolin, peeler or large, sharp knife and cutting board, thinly slice carrots, fennel, bell pepper and onion. Transfer to mixing bowl and add grapes and 1/2 cup chickpeas. Add parsley, pesto and 1 tablespoon olive oil; toss well. Season with salt and pepper, to taste.
  3. Using fork, coarsely mash remaining chickpeas and remaining oil; spread among pieces of crust. Mound grape-vegetable mixture on top. Dot with goat cheese and serve

Roasted Salmon and Grapes with Pistachios Over Fresh Greens

Cook time: 7-8 minutes

  • 4 wild sockeye or coho salmon fillets (about 5 ounces each)
  • 3 tablespoons extra-virgin olive oil, divided
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1/3 cup dry white wine
  • 1 cup green California grapes
  • 1/4 cup shelled, unsalted pistachios, coarsely chopped
  • 2 tablespoons finely chopped Italian parsley
  • 5 ounces baby spinach
  • 1/4 red onion, thinly sliced
  • 1 tablespoon white wine vinegar
  1. Heat oven to 400 F. Lightly oil shallow, 9-by-13-inch baking dish.
  2. Pat fish dry and place skin side down in pan. Brush fillets lightly with 1 tablespoon olive oil and sprinkle with salt and pepper, to taste. Pour wine in pan, scatter grapes around and sprinkle pistachios and parsley on fish.
  3. Roast salmon 7 minutes for medium-rare; 8 minutes for medium.
  4. In large bowl, toss spinach, onion, remaining oil and vinegar. Season with salt and pepper, to taste; toss again and divide among four plates.
  5. Place fish on top of greens. Spoon roasted grapes around fish.

Warm-Spiced Chickpeas and Couscous with Grapes and Arugula

  • 2 tablespoons extra-virgin olive oil
  • 1 small onion, chopped
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon kosher salt, plus additional, to taste, divided
  • 1/8 teaspoon ground allspice
  • 1 cup Israeli pearl couscous
  • 3/4 teaspoon ground turmeric
  • 1 1/2 cups water
  • 1 can (15 ounces) no-salt-added chickpeas, drained
  • 1 cup red California grapes, halved
  • 2 tablespoons chopped fresh cilantro or parsley
  • freshly ground black pepper, to taste

Add couscous and stir 1 minute to toast lightly. Add turmeric and water; bring to boil. Reduce heat, cover and simmer until couscous is tender, about 15 minutes.
  2. Stir chickpeas, grapes and cilantro into couscous then season with salt and pepper, to taste. Transfer couscous-grape mixture to large bowl, add arugula and toss well. Serve warm or at room temperature with lemon wedges.

Grilled Tequila-Lime Chicken with Grilled Asparagus

  • 1/4 cup tequila or white vinegar
  • 2 teaspoons lime zest
  • 1/2 cup fresh lime juice
  • 2 medium garlic cloves, minced
  • 1 tablespoon chipotle pepper canned in adobo sauce, minced, plus 2 tablespoons adobo sauce
  • 1 1/2 pounds boneless, skinless chicken breasts, fat discarded
  • nonstick cooking spray
  • 3 bunches asparagus spears, trimmed
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper, divided
  • 2 tablespoons canola oil or corn oil
  1. In small bowl, stir tequila, lime zest, lime juice, garlic, chipotle pepper and adobo sauce. Pour into large resealable plastic bag. Add chicken and seal bag tightly; turn bag to coat. Refrigerate 2-12 hours.
  2. Preheat grill to medium-high heat. Lightly spray grates with nonstick cooking spray.
  3. In large dish, sprinkle asparagus with salt and 1/4 teaspoon pepper. Drizzle with oil. Turn asparagus over to coat.
  4. Remove chicken from marinade. Discard marinade and wipe most of it off chicken. Sprinkle chicken with remaining pepper.
  5. Grill 8-12 minutes, or until chicken is no longer pink in center. Transfer to plate and cover with aluminum foil.
  6. Place asparagus on grill, facing opposite direction of grates. Grill 7 minutes, or until tender crisp.
  7. Serve asparagus with chicken.

Frozen Yogurt Bark

  • 1 1/2 cups 2% low-fat plain Greek yogurt
  • 2 tablespoons honey
  • 2 tablespoons chopped, unsalted almonds
  • 1/2 cup chopped mango
  • 1/4 cup blackberries or raspberries
  • 1/2 cup blueberries
  1. In medium bowl, mix yogurt and honey.
  2. Line 9-by-13-inch baking dish with parchment paper. Use spatula or knife to spread yogurt over entire bottom of dish.
  3. Pour chopped nuts over yogurt. Use fingers to slightly press into yogurt. Top yogurt with mango, blackberries and blueberries and slightly press into yogurt.
  4. Cover with plastic wrap or foil and place in freezer overnight.
  5. To serve: Lift parchment paper from baking dish onto cutting board. Use hands to break bark into pieces.

Cheesecake Ice Cream with Fruit Swirls

  • 12        ounces cream cheese, cut into cubes
  • 3/4       cup sugar
  • 1          cup sour cream
  • 3/4       cup half-and-half
  • 2          teaspoons vanilla
  • 1 1/4    teaspoons lemon juice, divided
  • 1          dash salt
  • 1/3       cup blueberry, raspberry, cherry, strawberry, peach or apricot fruit spread
  1. In large mixer bowl of electric mixer, beat cream cheese and sugar on medium speed until fluffy. Add sour cream, half-and-half, vanilla, 1 teaspoon lemon juice and salt. Beat on low speed until combined then beat on medium speed until smooth. Cover and refrigerate 2-24 hours, or until cold.
  2. Pour cream cheese mixture into 1 1/2-quart ice cream freezer. Freeze according to manufacturer’s directions.
  3. In small bowl, stir fruit spread and remaining lemon juice.
  4. Spoon about one-third of ice cream into 2-quart food storage container. Spoon about half of fruit spread mixture in dollops over ice cream. Repeat layers. Top with remaining ice cream. Cover and freeze 4-24 hours.
  5. To serve, scoop ice cream into dessert dishes.

  • 4          cups granola mixture
  • 1/2       cup butter, softened
  • 4 1/2    tablespoons honey
  • nonstick cooking spray

Filling:

  • 2 1/4    cups vanilla Greek yogurt
  • 8          ounces cream cheese, softened
  • 1/2       cup granulated sugar
  • 1          teaspoon vanilla extract
  • 1          package gelatin

Toppings:

  • strawberries, sliced
  • blueberries
  • kiwis, sliced
  1. To make crust: Preheat oven to 350 F.
  2. In large bowl, combine granola, butter and honey. Grease 11-inch tart pan with nonstick cooking spray. Line bottom of tart pan with parchment paper.
  3. Press granola mixture into tart pan. Place tart pan on baking sheet and bake 10 minutes. Cool completely.
  4. To make filling: Using mixer, combine yogurt, cream cheese, sugar, vanilla extract and gelatin until whipped completely.
  5. Pour yogurt mixture into tart crust. Refrigerate at least 1 hour.
  6. Top with strawberries, blueberries and kiwis.

  • 1 teaspoon cumin powder
  • 1/4 teaspoon salt

Hummus:

  • 1 can (15 ounces) chickpeas
  • 3 cloves garlic, chopped
  • 1/4 cup tahini
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 3 tablespoons olive oil

For serving:

  • 1 Persian cucumber, small diced
  • 1 small tomato, diced
  • 2 tablespoons roasted pine nuts (or 2 tablespoons pomegranate seeds)
  • parsley, chopped
  • lemon wedges
  • toasted flatbread or tortilla chips
  1. To make lamb: Remove lamb from bone, dice meat into small cubes and transfer to medium bowl.
  2. Add cumin powder and salt. Toss to coat. Marinate while preparing hummus.
  3. To make hummus: Drain chickpeas, reserving 1 tablespoon liquid. Rinse chickpeas under running water then drain.
  4. In bowl of food processor, pulse chickpeas, chickpea liquid and garlic until chickpeas and garlic are chopped.
  5. Add tahini, lemon juice, salt, cumin, paprika and olive oil. Mix until smooth paste forms. Taste and adjust by adding more salt, lemon juice or olive oil, as desired.
  6. Transfer hummus to large platter and spread it out.
  7. In large skillet, heat extra-virgin olive oil over high heat until hot. Add lamb and cook 30 seconds without moving.
  8. Turn lamb over and cook 30-60 seconds, repeating until all sides are browned. Remove from pan and let rest 5 minutes.
  9. To serve, place cucumbers and tomatoes in well of hummus then top with lamb, pine nuts and parsley.
  10. Top with squeeze of lemon juice and serve with flatbread or tortilla chips.

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • sweetened whipped cream, for topping (optional)
  • fresh fruit, such as strawberries and blueberries, for topping (optional)
  1. Preheat oven to 350 F.
  2. Grease and flour 9-by-5-by-3-inch loaf pan. In large bowl, beat sugar and butter until fluffy. Beat in eggs one at a time. Add vanilla. In separate bowl, combine 1 3/4 cups flour, baking powder and salt. Gradually add to sugar mixture. Pour batter into pan.
  3. Bake 1 hour, or until toothpick inserted in center comes out clean. Remove from pan and turn out on rack to cool completely.
  4. Top with sweetened whipped cream and fresh fruit, if desired.

Easy Tiramisu Dip

  • 1          cup heavy whipping cream
  • 1          tablespoon espresso powder
  • 4          ounces cream cheese, softened
  • 8          ounces Mascarpone cheese
  • 1/2       cup powdered sugar
  • 1          teaspoon vanilla extract

  • wafers or fruit, for dipping
  1. In medium bowl, whisk heavy whipping cream and espresso powder until blended.
  2. In large bowl, use hand mixer to beat cream cheese until smooth. Add Mascarpone cheese and beat until combined. Gradually add powdered sugar, beating after each addition. Add vanilla extract; beat mixture. Add espresso mixture; beat until soft peaks form.
  3. Keep refrigerated until ready to serve.
