- 8 slices bacon
- 1 pint grape tomatoes
- 2 medium Hass avocados
- 4 romaine hearts
- 4 hard-cooked eggs, peeled
- 1 package (4 ounces) crumbled feta cheese
- 1/2 cup honey mustard dressing
- Preheat large skillet over medium-high heat. Small dice bacon.
- Cook bacon, stirring occasionally, until crispy, 4-5 minutes. Using slotted spoon, remove crispy bacon to paper towel-lined plate; set aside.
- Wash and dry grape tomatoes, avocados and romaine hearts.
- Using clean cutting board, roughly chop eggs. Place on large plate.
- Halve tomatoes lengthwise. Add to plate with eggs.
- Halve and pit avocados; using spoon, scoop out flesh and medium dice. Add to plate and set aside.
- Chop (or tear) lettuce into bite-sized pieces.
- To serve, divide lettuce between plates or bowls. Top with tomatoes, avocado, bacon, eggs and feta. Drizzle with honey mustard dressing.

- 4-6 North Carolina Sweetpotatoes, peeled and diced (6 cups)
- 2 teaspoons, plus 1 tablespoon, olive oil, divided
- 3/4 teaspoon salt, divided
- 1/4 teaspoon pepper
- 1 1/2 bunches curly kale, rinsed and chopped (7-8 cups)
- 1/2 large lemon, juice only
- 1 can (15 ounces) garbanzo beans, rinsed and drained
- 1 large avocado, pitted and diced
- 1/2 cup cranberries
- 1/2 cup coarsely chopped almonds
- 1/4 cup red onion, chopped
- 1/2-3/4 cup feta or goat cheese
Dressing:
- 2 tablespoons pure maple syrup
- 2 tablespoons olive oil
- 1/4 cup balsamic or white vinegar
- Preheat oven to 375 F.
- Place sweetpotatoes in large bowl. In small bowl, lightly whisk 2 teaspoons olive oil, 1/2 teaspoon salt and pepper. Toss on sweetpotatoes and place potatoes on large sheet pan. Bake 35-40 minutes until tender, flipping once during baking.
- Place chopped kale in large bowl. In small bowl, lightly whisk remaining olive oil, remaining salt and lemon juice. Pour over kale and massage with hands until mixed, about 1 minute.
- To make dressing: In bowl, whisk syrup, olive oil and vinegar.
- In bowl with kale, add garbanzo beans, avocado, cranberries, almonds, red onion, sweetpotatoes and cheese. Toss with salad dressing and serve.
- Note: Sweetpotatoes can be baked and refrigerated 1 day in advance.

- 1 tablespoon chili crisp
- 2 teaspoons rice wine vinegar
- 1 teaspoon toasted sesame oil
- 2 bell peppers, cored and cut into 2-inch squares
- 1 green onion, thinly sliced
- minced cilantro
- black sesame seeds
- In bowl, combine salmon, chili crisp, vinegar and sesame oil.
- To serve, top each bell pepper square with some salmon, green onion, cilantro and sesame seeds. If leftover pieces of bell pepper remain, chop and add as additional garnish.

Feta Roasted Salmon and Tomatoes

- Nonstick cooking spray
- 3 cups halved cherry tomatoes
- 2 teaspoons olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon dried oregano or dried dill weed
- 1/4 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper, divided
- 1 1/2 pounds salmon or halibut fillets, cut into four serving-size pieces
- 1 cup (4 ounces) crumbled feta cheese
- Preheat oven to 425 F. Line 18-by-13-by-1-inch baking pan with foil. Lightly spray foil with nonstick cooking spray. Set aside.
- In medium bowl, toss tomatoes, olive oil, garlic, oregano or dill weed, salt and 1/4 teaspoon pepper.
- Place fish pieces, skin side down, on one side of prepared pan. Sprinkle with remaining pepper. Lightly press feta cheese on top of fish. Pour tomato mixture on other side of prepared pan. Bake, uncovered, 12-15 minutes, or until fish flakes easily with fork.
- Place salmon on serving plates. Spoon tomato mixture over top.

- 6 quarts water
- 16 ounces linguine or penne pasta
- 2 tablespoons unsalted butter
- 1/2 cup thinly sliced onion
- 1 cup thinly sliced carrots
- 1 cup thinly sliced sweet bell pepper
- 1/2 cup grape tomatoes, halved
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, peeled and minced
- 1 cup reserved pasta water
- 1 teaspoon finely grated lemon zest
- 1/2 cup smoked provolone cheese, shredded
- 1/4 cup chopped fresh parsley (optional)
- Parmesan cheese (optional)
- Bring water to rolling boil and prepare pasta according to package directions for al dente texture, reserving 1 cup pasta water.
- In large skillet over medium heat, melt butter. Stir in onions, carrots and sweet bell peppers. Saute vegetables about 5 minutes, or until they brighten in color and begin to soften. Add tomatoes, salt, pepper and garlic. Cook and stir 1 minute to allow tomatoes to release juices.
- Pour reserved pasta water into skillet, stirring well. Bring sauce to boil. Reduce heat to medium-low and simmer 3 minutes. Taste sauce and adjust seasonings, as desired.
- Transfer drained pasta to skillet along with lemon zest and smoked provolone cheese, tossing well to coat. Serve immediately with fresh parsley and Parmesan cheese, if desired.

- 1/2 lemon, thinly sliced
- 3/4 teaspoon kosher salt, divided
- 1/4 teaspoon sugar
- 3 3/4 teaspoons extra-virgin olive oil, divided
- 1 cup diced tomato
- 1 cup diced English cucumber
- 1 tablespoon diced dill pickle
- 2 tablespoons sliced green onion
- 2 tablespoons fresh flat-leaf parsley leaves, chopped
- 1 1/2 teaspoons red wine vinegar
- 1/8 teaspoon ground black pepper
- 1 pound fresh asparagus, trimmed
- 3 cups hummus
- 1/2 cup crumbled feta cheese
- 1 1/4 cups pitted mixed olives
- 6 pita breads, warmed and quartered
- In bowl, mix lemon, 1/4 teaspoon salt and sugar. Cover and chill 2-6 hours. Dice lemon. Mix diced lemon and 1/4 teaspoon olive oil. Cover and chill.
- Mix diced lemon, tomato, cucumber, pickle, green onion, parsley, vinegar, 1 1/2 teaspoons olive oil and 1/4 teaspoon salt. Cover and chill.
- Lightly oil grill rack and heat grill to medium. Mix pepper, asparagus, remaining oil and remaining salt.
- Grill asparagus 2 minutes, or until tender-crisp. Let cool. Cover and chill.
- Set large serving platter on work surface. Place hummus and tomato salad in small bowls.
- To assemble, place larger items on platter then arrange smaller items around them. Group pita in several small stacks next to bowls. Arrange feta and olives in remaining space.
Falafel Burgers with Cucumber Sauce

Cucumber Sauce:
- 2 medium cucumbers, peeled and coarsely grated
- 2 cups plain full-fat Greek yogurt
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 small cloves garlic, minced
- 2 teaspoons dried dill
- 1 teaspoon kosher salt
- 2-3 tablespoons water
Falafel Patties:
- 2 cans (15 ounces each) chickpeas, rinsed, drained and patted dry
- 1/4 cup sesame seeds
- 1 large carrot, peeled and sliced
- 1 red onion, halved and sliced
- 1 cup loosely packed cilantro
- 6 cloves garlic, peeled
- 1 jalapeno, sliced
- 3/4 cup chickpea flour
- 4 teaspoons ground coriander
- 4 teaspoons ground cumin
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 6 tablespoons grapeseed or vegetable oil
- 4 buns
- lettuce (optional)
- tomato (optional)
- To make cucumber sauce: Place grated cucumber in clean dish towel. Roll dish towel around cucumber and squeeze to remove excess liquid.
- In bowl, mix cucumber, yogurt, lemon juice, oil, garlic, dill and salt. Stir in 2 tablespoons water, adding more as needed until mixture is smooth and creamy. Cover and chill.
- To make falafel patties: In food processor, cover and process chickpeas and sesame seeds until mixture is finely chopped. Transfer to bowl.
- In food processor, cover and process carrot, onion, cilantro, garlic and jalapeno until finely chopped. Add vegetable mixture to chickpea mixture. Add flour, coriander, cumin, salt and black pepper; mix well.
- Heat oven to 375 F. Line baking sheet with parchment paper. Shape chickpea mixture into four patties. In skillet over medium heat, heat oil. Cook patties 3 minutes, or until golden brown on bottoms. Turn over and cook 3 minutes. Drain on paper towels. Transfer patties to baking sheet.
- Bake 20 minutes. Let patties cool 15 minutes. Place patties on buns and top with lettuce and tomato, if desired. Drizzle with cucumber sauce.

- 1 jar (16 ounces) Aunt Nellie's Sliced Pickled Beets
- 1 jar (about 6 ounces) marinated artichoke hearts
- 1/2 cup pitted kalamata or ripe olives, sliced
- 3 tablespoons sliced green onions
- freshly ground black pepper, to taste (optional)
- 6 romaine lettuce leaves
- 1 pound thinly sliced deli turkey
- 6 ciabatta or sandwich rolls, sliced horizontally
- 1/3 cup crumbled feta cheese
- 1/4 cup pine nuts, toasted
- Drain beets and artichoke hearts, reserving 1/4 cup liquid from each. Coarsely chop beets and artichoke hearts. In medium bowl, combine beets, artichokes, olives and green onions; set aside.
- In small bowl, whisk reserved beet and artichoke liquids. Pour over beet mixture; toss gently to coat. Season with black pepper, to taste, if desired.
- Layer lettuce and turkey on bottom halves of rolls. Top with relish, as desired; feta cheese; and pine nuts. Top with remaining halves of rolls. Wrap tightly; chill up to 4 hours. Serve with remaining relish.
Bean, Tortellini and Pesto Salad
Servings: 6
- 2 cans (15 ounces each) READ 3 or 4 Bean Salad
- 1/4 cup prepared basil pesto
- 1/2 teaspoon salt (optional)

- 2 cured chorizo sausages
- 1/4 cup finely chopped fresh parsley
- 3 tablespoons lemon juice
- Preheat grill to medium-high heat; grease grates well.
- Prepare quinoa according to package directions, substituting chicken broth for water. Drain, reserving 1 cup chicken broth.
- In large saucepan, stir diced tomatoes with reserved chicken broth; bring to boil. Cook 3-5 minutes, or until thickened slightly. Stir in quinoa, peas and smoked paprika. Cook 1 minute. Cover and let stand 10 minutes.
- In small bowl, stir olive oil, garlic, paprika, salt and pepper. Brush marinade over onion and red pepper. Toss half of remaining marinade with chicken and remaining marinade with shrimp.
- Grill chicken 6-8 minutes per side, or until well-marked and internal temperature reaches 165 F. Grill sausages, turning occasionally, 6-8 minutes, or until well-marked and heated through. Grill shrimp 2-3 minutes per side, or until well-marked and cooked through. Grill red pepper and onion 2-3 minutes per side, or until well-marked and tender.
- Chop chicken, sausage, red pepper and onion into bite-size pieces. Stir into quinoa mixture. Stir in shrimp, parsley and lemon juice. Serve warm or at room temperature.

- Preheat grill to medium-high; grease grates well. Grill corn 10-12 minutes, or until well-marked and tender. Allow to cool slightly. Slice corn kernels from cobs and reserve.
- In medium bowl, stir lime juice, mayonnaise, sour cream, garlic, chili powder, lime zest, salt, pepper and cumin. Add rice, corn, feta and green onions. Toss well.

Chicken Apple Enchiladas

- 1/2 sweet onion, diced
- 1 jalapeno, diced
- 1 Envy or Jazz apple, diced
- 2 cups cooked shredded chicken
- 8 flour tortillas
- 6 ounces shredded Mexican blend cheese, divided
- 1 can red enchilada sauce
- cilantro (optional)
- Heat oven to 350 F.
- In skillet, cook onions until translucent. Add jalapeno and apple; saute 2-3 minutes.
- Add cooked chicken and mix well. Remove from heat.
- Lay out tortillas and sprinkle cheese on each. Add chicken mixture and roll. Place in baking dish and cover with enchilada sauce.
- Bake 20 minutes, or until heated throughout.
Greek Chicken Bowls

- 1 cup cooked white or brown rice
- 1 grilled chicken breast, sliced

- 1 cup cherry tomatoes

- Place cooked rice and chicken in bowls.

Chicken Cordon Bleu Kebabs

Skewers:
- Nonstick cooking spray
- 2 chicken breasts (6 ounces each), cubed
- 1 ham steak (6 ounces), cubed
- 6 bamboo skewers (8 inches)
- 1 tablespoon Dijon mustard
- 1 teaspoon pure maple syrup
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon paprika
- 1 teaspoon extra-virgin olive oil
Sauce:
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup lactose-free 2% milk
- 1 teaspoon Dijon mustard
- 1 cup shredded Swiss cheese
- salt, to taste (optional)
- pepper, to taste (optional)
- To make skewers: Preheat broiler to 500 F. Line broiler pan with foil and spray with nonstick cooking spray.
- Thread cubed chicken pieces and cubed ham pieces onto skewers.
- In small bowl, combine Dijon mustard, maple syrup, black pepper, paprika and oil.
- Brush mustard mixture on skewers.
- Broil about 5 minutes, flip and cook 5 minutes, or until chicken is cooked through.
- To make sauce: In small saucepan over medium heat, melt butter. Whisk in flour and cook 1 minute, whisking constantly. Gradually add milk, whisking constantly. Add Dijon mustard. Continue cooking 5 minutes, or until thick. Reduce heat to low and stir in cheese, whisking until melted.
- Add salt and pepper, to taste, if desired.
- Serve chicken and ham kebabs with sauce.
Chicken, Spinach and Feta Casserole

- 1 package (10 ounces) frozen chopped spinach, thawed
- 3 eggs, slightly beaten
- 2 cups cottage cheese
- 1 1/2 cups chopped cooked chicken
- 3/4 cup crumbled feta cheese
- 3 tablespoons all-purpose flour
- 2 tablespoons butter, melted
- 2 teaspoons dried minced onion
- 1 teaspoon dried oregano leaves
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Preheat oven to 350 F.
- Place spinach in colander. Use back of large spoon or rubber spatula to press moisture from spinach.
- In large bowl, combine spinach, eggs, cottage cheese, chicken, feta cheese, flour, butter, onion, oregano, salt and pepper.
- Spoon into greased 1 1/2-quart casserole dish. Bake, uncovered, 45-50 minutes, or until set near center (160 F). Let stand 5 minutes before serving.
One Pan Mac and Cheese

- Water
- 2 teaspoons salt
- 2 cups dry macaroni noodles
- 2 cups lactose-free whole milk
- 2 eggs
- 2 tablespoons butter, clarified or ghee
- 1 1/2 cups shredded sharp white cheddar cheese
- 1 cup shredded Parmesan cheese
- salt, to taste
- fresh cracked pepper, to taste
- Add water and salt to 3-quart saucepan; cook noodles according to package directions. Drain and add noodles back to pan.
- Measure milk into large measuring cup. Add eggs and whisk.
- Toss noodles with clarified butter, turn heat to medium and pour in milk-egg mixture. Add cheeses and stir until melted. Bring to low boil about 3 minutes; sauce will thicken and become creamy. Add salt and fresh cracked pepper, to taste.
Parmesan-Swiss Fish

- 1 1/4 pounds skinless halibut, salmon or tilapia fillets (fresh or frozen)
- 3/4 cup shredded Swiss cheese
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons sliced green onion
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons grated Parmesan cheese
- 1/4 teaspoon paprika
- Preheat oven to 450 F.
- Thaw fish, if frozen. Cut into four serving-size pieces, if necessary. Pat fish dry with paper towels. Arrange in single layer on greased 15-by-10-by-1-inch baking pan, tucking under any thin edges.
- In small bowl, toss Swiss cheese, yogurt, mayonnaise, green onion, salt and pepper. Spread over fish fillets. Sprinkle with Parmesan cheese and paprika. Bake, uncovered, until fish flakes easily with fork. Allow 6-8 minutes baking time per 1/2-inch thickness of fish.

Mediterranean Grain Bowl with Pork Skewers

Servings: 6 (1 pork skewer, 2/3 cup sorghum, 2 tablespoons hummus)
Red Lentil Hummus:
- 1 1/3 cups water
- 1/3 cup dried red lentils
- 1 tablespoon olive oil
- 1 tablespoon tahini
- 1 tablespoon lemon juice
- 1/2 teaspoon minced garlic
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 12 ounces pork loin roast, trimmed of fat
- 4 tablespoons olive oil, divided
- 2 teaspoons minced garlic
- 1 teaspoon lemon zest
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 sweet onion, chopped
- 3 cups no-salt-added chicken stock
- 3/4 cup whole-grain sorghum, rinsed and drained
- 1 cup canned garbanzo beans (chickpeas), rinsed, drained and dried with paper towels
- 1 1/2 cups halved cherry tomatoes
- 1 cup arugula
- 1 cup chopped cucumber
- 2/3 cup crumbled feta cheese
- 1/2 cup kalamata olives
- To make Red Lentil Hummus: In small saucepan, combine water and dried red lentils; bring to boil over medium-high heat. Reduce heat to low and simmer, covered, stirring occasionally, about 30 minutes, or until lentils split and become soft. Cool and transfer to food processor. Add olive oil, tahini, lemon juice, minced garlic, cumin, salt and black pepper; process 30-60 seconds, or until smooth, stopping to scrape down sides as needed. Transfer to airtight container and store in refrigerator up to 5 days until serving time.
- Cut pork loin into 1-inch cubes. Place in re-sealable plastic bag set in shallow dish. In small bowl, combine 3 tablespoons olive oil, garlic, lemon zest, cumin, salt and black pepper. Pour half olive oil mixture over meat, reserving remaining half. Seal bag; turn to coat meat. Marinate in refrigerator 2 hours, turning bag occasionally.
- In medium saucepan, heat remaining olive oil over medium-high heat. Add onion, cook and stir 6-8 minutes, or until tender. Add stock and bring to boil. Add sorghum. Reduce heat and simmer, covered, 45-60 minutes, or until sorghum is tender, stirring occasionally.
- Preheat oven to 400 F.
- Arrange chickpeas on foil-lined 15-by-10-by-1-inch baking pan. Drizzle with reserved olive oil mixture; toss to coat. Roast 20-30 minutes, or until chickpeas are toasted and crispy, stirring occasionally. Remove from oven and increase oven to 500 F.
- Drain meat, discarding marinade. Divide among six wooden or metal skewers. Arrange skewers on wire rack on baking sheet and bake 10 minutes, or until meat is slightly pink in center, turning once halfway through.
- To serve, divide cooked sorghum between six shallow bowls. Top with tomatoes, arugula, cucumber, feta cheese, olives, chickpeas and Red Lentil Hummus. Serve with pork skewers.

Sorghum Split Pea Soup

- 1 1/2 tablespoons olive oil
- 1 onion, chopped
- 3/4 cup sliced carrots
- 3/4 cup sliced celery
- salt, to taste
- pepper, to taste
- 1 1/2 teaspoons minced garlic
- 6 cups no-salt-added chicken stock
- 1 1/4 cups green split peas
- 1 small ham bone
- 2/3 cup chopped ham
- 2/3 cup pearled sorghum
- 4 sprigs thyme
- 2 bay leaves
- 1 1/2 tablespoons Worcestershire sauce
- chopped fresh thyme (optional)
- cracked black pepper (optional)
- In 4-quart stock pot or large pot, heat oil over medium heat. Add onion, carrots, celery and garlic; season with salt and pepper, to taste, and cook, stirring occasionally, 10-12 minutes, or until onion is tender. Add chicken stock, split peas, ham bone, ham, sorghum, thyme sprigs and bay leaves. Bring to boil; reduce heat and simmer, covered, 45-60 minutes, or until split peas are soft and sorghum is tender.
- Remove ham bone, thyme sprigs and bay leaves from soup. Remove ham from bone, chop ham and return to pot. Discard bone, thyme sprigs and bay leaves. Add Worcestershire sauce and season with salt and pepper, to taste.
- Garnish with chopped fresh thyme and cracked black pepper, if desired.

- 2 cups vegetable broth
- 2 cups water
- 1 cup whole-grain sorghum
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh parsley
- 1 1/2 teaspoons lemon zest
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 pork tenderloin (16 ounces), trimmed of fat
- 1 medium sweet potato, peeled and cut into 1/2-inch pieces
- 1 cup kidney beans, rinsed and drained
- 1/2 cup dried cranberries
- 1/2 cup pecan halves
- Preheat oven to 425 F. In medium saucepan, combine vegetable broth and water. Bring to boil. Add sorghum. Reduce heat to simmer and cook, covered, 45-60 minutes, or until tender.
- In medium bowl, combine olive oil, garlic, parsley, lemon zest, salt and pepper. Drizzle half oil mixture on pork; rub in with fingers. Place pork in shallow roasting pan. Add sweet potatoes to bowl with remaining oil mixture. Toss to coat and set aside.
- Roast pork, uncovered, 10 minutes. Arrange sweet potatoes around pork and roast 15-20 minutes, or until pork reaches 145 F internal temperature and potatoes are tender. Remove pork from pan. Cover; let stand 10 minutes.
- Stir roasted sweet potatoes, beans, cranberries and pecan halves into cooked sorghum and heat through.
- Slice pork tenderloin and serve with warm sorghum salad.
