- 1 1/2 pounds beef skirt steak
- 1/2 cup NAKANO Seasoned Rice Vinegar
- 2 tablespoons sugar
- 2 teaspoons sambal oelek (Asian chili garlic sauce)
- 1/2 teaspoon kosher salt
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 teaspoons ancho chili powder
- 1/2 teaspoon ground cumin
Pickled Onions:
- 1/4 cup water
- 1 medium red onion, halved, thinly sliced
- corn tortillas, warmed
- roasted tomato or tomatillo salsa
- cilantro sprigs
- sliced avocados
- thinly sliced radishes
- Using fork, pierce steak at 1/2-inch intervals. In large bowl, whisk vinegar, sugar, sambal oelek and salt. Reserve 1/4 cup mixture for later use. Add soy sauce, oil, chili powder and cumin to remaining vinegar mixture. Add steak; turn to coat. Let stand 10 minutes to marinate.
- To make pickled onions: In medium microwaveable bowl, combine water and reserved vinegar mixture. Microwave 2-3 minutes, or until hot. Add onions, submerging in vinegar mixture. Let stand at room temperature until cool.
- Preheat grill to high heat. Grill steaks 1-2 minutes on each side, or until medium rare. Let stand 5 minutes before slicing against grain into thin strips.
- Serve with tortillas, salsa, pickled onions, cilantro, avocado and radishes.

- 1 jar (16 ounces) Aunt Nellie’s Baby Whole Pickled Beets
- 2 tablespoons chopped red onion

- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper

- 1 tablespoon jalapeno mustard
- 4 soft flour tortillas (6 inches)
- 2 cups fresh arugula
- 2 cups chopped cooked rotisserie chicken (hot or cold)

- To make Pickled Beet Salsa: Drain beets; chop. In medium bowl, combine beets, onion, cilantro, lime juice, salt and pepper.
- In small bowl, stir together sour cream and mustard; set aside.

- 1 can (15 ounces) READ 3 Bean Salad
- 1 ribeye or top sirloin steak (about 8 ounces)
- 1/2 teaspoon vegetable oil
- 1/4 teaspoon salt
- 2 cups arugula
- 1/2 cup chopped herbs, such as parsley, thyme, dill, basil, chives or tarragon
Dressing:
- 2 tablespoons olive oil
- 1 tablespoon plain fat-free yogurt
- 1 tablespoon fresh lemon juice
- 1 teaspoon prepared horseradish
- 1/8 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Drain bean salad. Reserve half of liquid. Place beans and reserved liquid in large bowl.
- Heat cast-iron skillet or other heavy skillet over medium-high heat.
- Lightly brush both sides of steak with oil. Sprinkle evenly with salt.
- In skillet, cook steak 4 minutes on each side, or to desired doneness. Remove from pan. Allow steak to rest 10 minutes, covered lightly with aluminum foil; slice.
- In bowl, combine arugula and herbs with bean salad. Toss gently to combine.
- To make dressing: In small bowl, whisk oil, yogurt, lemon juice, horseradish, salt and pepper. Set aside. Whisk again before serving.
- Divide salad between two plates. Top evenly with steak slices. Drizzle dressing over salads.

- 1 cup cooked chicken breast meat, cut into bite-size pieces
- 1 cup grape tomatoes, quartered
- 24 pitted Kalamata olives, or your favorite variety, coarsely chopped
- 1/4 cup Pompeian Extra Virgin Olive Oil
- 4 medium garlic cloves, minced
- 1/4 cup chopped, fresh basil leaves or 1 tablespoon dried basil leaves, crumbled
- 1 tablespoon chopped, fresh rosemary leaves or 1 teaspoon dried rosemary leaves, crumbled
- 1/8 to 1/4 teaspoon crushed red pepper, optional
- Salt and pepper to taste
- 2 ounces feta cheese, crumbled (1/2 cup)
- Cook pasta according to package directions.
- Remove pan from heat. Place chicken in a colander; pour pasta over chicken and shake off excess liquid. Return pasta and chicken to pan. Stir in remaining ingredients, except feta. Top with feta and toss gently, if desired.
Couscous Cakes with Fresh Mango-Ginger Chutney
Serves 4
Chutney:
- 2 tablespoons Pompeian Extra Light Tasting Olive Oil
- 1/4 cup finely chopped red onion
- 1 cup diced fresh or frozen, thawed mango
- 2 tablespoons sugar
- 2 tablespoons Pompeian Red Wine Vinegar
- 1/4 teaspoon crushed red pepper
- 1 tablespoon grated ginger
Couscous Cakes:
- 1 1/3 cups water
- 2/3 cup original couscous
- 2 tablespoons grated lemon zest
- 1/2 cup chopped cilantro leaves
- 2 large egg whites
- 2 tablespoons all purpose flour
- 1/4 cup Pompeian Classic Mediterranean Olive Oil
- 1/2 teaspoon salt
- Chutney: Heat 2 tablespoons oil in medium saucepan over medium heat. Cook onions 2 minutes. Stir in remaining chutney ingredients, except ginger, and bring to a boil over medium-high heat. Reduce heat and simmer, uncovered, 5 minutes or until thickened, stirring frequently. Remove from heat, cool and stir in ginger.
- Couscous Cakes: Meanwhile, bring water to a boil in a small saucepan over high heat. Remove from heat, stir in couscous and salt, cover and let stand 5 minutes. Fluff with a fork and let stand 5 minutes to cool. Combine couscous, cilantro, egg whites, flour, and lemon zest in a medium bowl.
- Heat 2 tablespoons oil over medium heat. Working with half of the couscous mixture, spoon about 2 tablespoons into skillet to make a mound, repeat, making 8 mounds total. Flatten slightly using the back of a spoon and cook for 3 minutes each side or until golden.
Drain on paper towels. Repeat with remaining oil and couscous mixture. - Serve the couscous cakes with mango chutney.
Basil-Rosemary Turkey Panini
Serves 4
- 12 ounces Italian bread, cut in half lengthwise
Dressing:
- 1/3 cup Pompeian Extra Virgin Olive Oil
- 2 tablespoons Pompeian Red Wine Vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh, chopped rosemary or 1 teaspoon dried rosemary leaves, crumbled
- 2 medium garlic cloves, minced
- Salt and pepper to taste
- 1/8 teaspoon dried pepper flakes, optional
- 1/2 cup chopped, fresh basil or 2 1/2 tablespoons dried basil leaves
Filling:
- 1 cup thinly sliced leftover cooked turkey or chicken (about 5 ounces)
- 1 large tomato, thinly sliced
- 4 slices Monterey Jack cheese with peppers, provolone, or mozzarella (about 3 ounces total)
- Whisk all dressing ingredients, except basil, in small bowl. Lightly brush outside of bread halves with 1 tablespoon dressing mixture and place, cut side up, on a clean work surface. Stir basil into dressing mixture and spoon over bottom half of bread. Arrange turkey, tomato, and cheese on top. Sprinkle lightly with salt and pepper, if desired. Top with remaining bread half and press down firmly to adhere.
- Heat large, nonstick skillet over medium low heat until hot. Place sandwich in skillet, cover with a sheet of foil, top with a dinner plate and several bread plates (This will weigh the sandwiches down, to help cook evenly and absorb flavors.) Cook 8 minutes on each side, or until golden brown and cheese is beginning to melt.
- Place on cutting board, and using a serrated knife, cut into four equal pieces.

- 1 teaspoon chopped fresh rosemary
- In large, nonstick skillet, heat half the oil over medium heat.
- Working in two batches, cook pork chops 4-5 minutes on each side until internal temperature reaches 150 F. Remove pork from skillet and place on rimmed serving platter; cover to keep warm. Repeat with remaining oil and pork chops.
- Serve pork chops drizzled with balsamic glaze and sprinkled with rosemary.
South of the Border Pizza

- 2 French bread sandwich rolls, halved
- 8 tablespoons refried black beans
- 8 tablespoons (2 ounces) Smithfield Anytime Favorites Hickory Smoked Diced Ham
- 8 slices pepper jack cheese

- 4 tablespoons low-fat sour cream
- Heat oven to 375 F.
- Place four French bread halves on ungreased sheet pan. Spread 2 tablespoons beans evenly over each bread half.

Egg and Shrimp Salad with Poppy Seeds

- 1/2 cup Hellmann's or Best Foods Real Mayonnaise
- 2 medium green onions
- Juice of 1 lemon
- 3 tablespoons snipped fresh dill
- 2 tablespoons poppy seeds
- 1 tablespoon Dijon mustard
- 8 medium hard-cooked eggs, peeled and coarsely chopped
- 6 ounces cooked large shrimp or crabmeat
- Combine mayonnaise, green onions, lemon juice, dill, poppy seeds and mustard in large bowl with wire whisk. Stir in eggs. Gently fold in shrimp. Season, if desired, with salt and black pepper. Serve, if desired, over salad greens or on English muffins.
NOTE: If serving over greens, toss greens with fresh lemon juice, a drizzle of extra virgin olive oil and season with salt and pepper. If serving on bread, serve as an open-faced sandwich. Mound some salad on top of toasted bread and garnish with more fresh dill and sliced green onions.
Mini Fish Tacos

- 1/2 cup Hellmann's or Best Foods Real Mayonnaise
- 1/2 cup prepared salsa
- 1 tablespoon lime juice
- 1 can (6 ounces) tuna, drained and flaked
- 1 large green onion, thinly sliced
- 12 large corn tortilla chips
- 3/4 cup shredded cheddar cheese (about 3 ounces)
- Combine mayonnaise, salsa and lime juice in medium bowl; reserve 1/2 cup. Stir tuna and green onion into remaining mayonnaise mixture just until combined. Season, if desired, with salt and pepper.
- Arrange chips on baking pan. Top with tuna mixture, then sprinkle with cheese. Broil 1 minute or until cheese is melted. Dollop with reserved mayonnaise mixture. Garnish, if desired, with additional green onions.
- Also terrific served in individual scoops for a great hand-held snack.
Chicken or Turkey Gyros

- 1/4 cup coarsely grated seedless cucumber
- 3/4 cup Hellmann's or Best Foods Light Mayonnaise
- 2 cloves garlic, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh grated lemon peel
- 4 whole wheat pita breads, split
- Fresh spinach leaves, rinsed and patted dry
- 8 cherry tomatoes, halved
- 1 pound sliced rotisserie or grilled chicken or turkey
- Place grated cucumber on paper towel and gently squeeze dry. (Do not skip this step or you will have a watery dressing.) Combine drained cucumbers, mayonnaise garlic, lemon juice and peel in small bowl. Season, if desired, with salt and black pepper. Cover and refrigerate at least 30 minutes.
- Spread a few tablespoons dressing inside each pita; add spinach leaves, tomatoes and chicken, then drizzle with additional dressing.

- 1 medium onion, chopped (optional)
- 1/2 cup chopped green bell pepper (optional)
- 1 1.3 ounce envelope Sloppy Joe seasoning mix
- 1 6-ounce can tomato paste
- 1 1/4 cups water
- 8 sandwich buns, split and toasted
- In large saucepan, over medium heat crumble and cook sausage, onion and pepper until sausage is browned. Stir in seasoning mix, tomato paste and water. Bring to a boil, reduce heat to low and simmer 10 minutes. Serve on buns.
Speedy Spaghetti

- 1 pound Bob Evans Original Recipe Roll Sausage
- 1 28-ounce jar of your favorite pasta sauce
- 1 8-ounce (minimum) package of your favorite pasta
- In a skillet, crumble and brown sausage over medium heat until cooked. Stir in your favorite pasta sauce and heat until warm. Cook pasta according to package directions. Serve sauce over pasta.
