- 4 ounces Blue Circle Smoked Salmon
- olive oil
- 6 ounces cream cheese
- 2 tablespoons small capers, drained, plus additional for serving, divided (optional)
- 1/2 medium red onion, finely diced
- 1 tablespoon chopped Italian parsley
- salt, to taste
- pepper, to taste
- Layer smoked salmon slices on lightly oiled aluminum foil, overlapping slightly.
- Mix cream cheese with capers, onion and parsley. Season with salt and pepper, to taste.
- Place thick line of cream cheese mixture along long side of salmon.
- Roll up salmon carefully with help of aluminum foil, similar to sushi roll.
- Chill in refrigerator 2-3 hours or overnight to firm up roll.
- To serve, use sharp knife to slice salmon roll into 1/2-inch long pieces.
- Place rolls on serving plate and garnish with additional capers, if desired.
Smoked Salmon Cucumber Boats

- 1 English cucumber (about 1 1/2 inches thick and 10 inches long)
- 1 medium tomato, seeded and cut into tiny pieces
- 1/4 cup scallions, finely chopped
- 1 tablespoon dill sprigs, finely chopped, plus additional for serving (optional), divided
- 1 tablespoon lemon juice
- 4 ounces Blue Circle Smoked Salmon, chopped or pulsed
- salt, to taste
- pepper, to taste
- Slice cucumber in half lengthwise and use spoon to scoop out seeds. If cucumber skin is too thick, peel before slicing.
- Gently mix tomato, scallions, 1 tablespoon dill, lemon juice and smoked salmon until combined. Season with salt and pepper, to taste.
- Fill cucumber halves with smoked salmon mixture.
- Slice cucumber boats into 1/2-3/4-inch pieces crosswise.
- To serve, place pieces on platter and garnish with additional dill, if desired.

5 Steps for Sizzling Steak
A sizzling steak is a surefire sound of summer, and the flavors achieved from one that's perfectly grilled are hard to match.
Before you fire up your grill, consider these five basics for cooking a chef-worthy steak:
Prepare Your Cut
Taste preferences (and prices) may differ among sirloins, ribeyes, T-bones and more, but the way you prepare steaks likely won't change much from cut to cut. You'll want to trim the thickness down to 1/2-1 inch for proper cooking, and setting the meat out ahead of time allows it to warm to room temperature before hitting the grill.
Add Some Salt
Feel free to add any spices you prefer, but remember a good steak typically doesn't require fancy seasoning - a pinch of salt works just fine. Add your salt anywhere between 30 minutes to a few hours before grilling time to help retain moisture and improve flavor.
Aim for High Heat
A two-zone fire is usually the way to go - one side of the grill should be hot (using direct heat) with the other side not quite as warm (indirect heat). This allows you to create a sear over direct heat before finishing cooking through - without burning - over indirect heat.
Sear and Slide
Cooking your steak over direct heat 1-2 minutes on each side is normally about right for creating a proper sear. At this point, depending on the thickness of your steak, you'll want to check for doneness. If it's not quite to the temperature you're looking to achieve, simply slide it over to the indirect heat for a finishing touch. Keep in mind these general guidelines for doneness: 120-125 F is rare, 130-135 F is medium-rare, 140-145 F is medium, 150-155 F is medium-well and 160-175 F is well done.
Let Rest
Finally, as hungry as you may be at this point, resting steaks is an important last step before diving in. Giving your steaks 5-10 minutes (foil or no foil) allows flavors to redistribute and moisture to be retained in the meat.

Grilled Greek Kebabs
Dressing/Marinade:
- 3/4 cup olive oil
- 2 lemons, zest and juice only
- 1 teaspoon dried oregano
- 2 teaspoons Dijon mustard
- 1 garlic clove, finely chopped
- 1 teaspoon sugar
- salt, to taste
- pepper, to taste
- 3 teaspoons mayonnaise
- Skewers:
- 2 cups The Little Potato Company Dynamic Duo bagged Creamer Potatoes, cut in half
- 4-6 boneless, skinless chicken thighs, cut into 1-inch cubes
- 8 wooden skewers dipped in water
- pita bread (optional)
Salad:
- 2 cups cherry tomatoes, halved
- 4 sliced Lebanese cucumbers
- 1/4 cup red onion, finely sliced
- 1 cup feta cheese
- 1 cup pitted kalamata olives
To make dressing/marinade: In measuring cup, mix olive oil, lemon juice, lemon zest, oregano, Dijon mustard, garlic and sugar. Season generously with salt and pepper, to taste. Pour 1/3 cup marinade into large bowl. Refrigerate remaining.
To prepare skewers: Add potatoes and chicken pieces to bowl with marinade. Mix well to coat and marinate 30 minutes, or as long as overnight in refrigerator.
Preheat grill to medium heat.
Skewer potatoes and chicken cubes alternately on wooden skewers. Grill 6-8 minutes on both sides. Grill pita bread, if desired.
Finish dressing by adding mayonnaise.
To make salad: In large serving dish, mix tomatoes, cucumber, onions, feta cheese and olives. Place kebabs on top and drizzle with dressing.
Serve with grilled pita bread, if desired.

Red Radish Chili Pickles:
- 2 tablespoons white wine vinegar
- 2 tablespoons water
- 1/2 teaspoon sugar
- 2 tablespoons sliced fresh red chili peppers
- 1/2 cup sliced red radish
Wagyu Burgers:
- 1 1/3 pounds First Light New Zealand Grass-Fed Wagyu Grind
- salt, to taste
- pepper, to taste
- 1 teaspoon grainy mustard (optional)
- 2 tablespoons rice bran oil
- 4 hamburger buns
- 2 tablespoons mayonnaise
- 4 lettuce leaves
- 2 vine-ripened tomatoes, sliced
- 2 tablespoons onion jam
- To make Red Radish Chili Pickles: In small saucepan, heat vinegar, water and sugar. Add chili and radish; remove from heat.
- To make Wagyu Burgers: Season Wagyu grind with salt and pepper, to taste. Mix in mustard, if desired. Form into four patties.
- Lightly brush both sides of burgers with oil. In frying pan, sear burgers over high heat then reduce heat to medium and cook until well caramelized. Flip and repeat process on other side.

- Spread spoonful onion jam on each burger then finish with Red Radish Chili Pickles.

- water
- 3 cups rice wine vinegar
- 1/4 cup Sriracha sauce
- 2 tablespoons salt
- 2 cups honey, divided
- Heat grill to 225-240 F.
- In large bowl, rinse wings with cool water. Add rice wine vinegar, Sriracha, salt and 1 cup honey. Fold to incorporate all ingredients and coat wings evenly.
- Place wings on grill, cover with lid and cook 12-14 minutes before turning once and cooking additional 15-18 minutes.
- Open lid and turn wings. Brush remaining honey on wings. Cook 5-8 minutes, remove from heat and serve.

- 1 Smithfield Roasted Garlic & Herb Pork Loin Filet, cut into 1 1/4-inch cubes
- 3 small zucchini squash, cut into 1/2-inch thick slices
- 2 large red bell peppers, cut into 1 1/4-inch pieces
- 1 large red onion, cut into 1 1/4-inch wedges
- bamboo skewers, soaked in water 30 minutes
- olive oil
- 2 medium cucumbers, peeled
- 1 clove garlic, minced
- 1 1/2 cups whole milk Greek yogurt
- 1/2 lemon juice
- 2 teaspoons chopped fresh dill weed
- 1/2 teaspoon sea salt
- freshly ground black pepper
- chopped fresh parsley
- Heat grill to 375° F. Alternately thread fresh pork cubes, zucchini, peppers and onions onto bamboo skewers. Brush kebabs lightly with olive oil.
- In food processor, process cucumbers and garlic until finely chopped. Drain liquid from cucumbers. Stir cucumbers with yogurt, lemon juice, dill, sea salt and pepper. Refrigerate until ready to use.
- Grill fresh pork skewers approximately 10 minutes, turning occasionally, until char marks form and pork is cooked through.
- Garnish skewers with parsley and serve with tzatziki sauce for dipping.
Grilled Pork and Potato Planks
Prep time: 5 minutes
Cook time: 22 minutes
Serves: 4
- Nonstick cooking spray
- 2 Smithfield Roasted Garlic and Cracked Black Pepper Pork Tenderloins
- 2 pounds Yukon Gold or red potatoes, cut lengthwise into 3/4-inch-thick slices
- 2 tablespoons canola oil
- 3/4 cup shredded reduced-fat or regular sharp cheddar cheese
- 1/2 cup sour cream
- 1/4 cup finely chopped green onions
- Heat charcoal or gas grill to medium; spray grates with nonstick cooking spray. Grill tenderloins until internal temperature reaches 150° F, turning occasionally, about 20 minutes.
- Brush both sides of potato slices with oil; grill 15-20 minutes until just tender, turning occasionally. Remove potatoes and pork from grill.
- Top potatoes with cheese, sour cream and onions. Serve with tenderloins cut into 1/4-inch thick slices.

Bunny Butt Cupcakes

- 1 2-layer size white cake mix
- 1 tablespoon, plus 2 teaspoons, McCormick Pure Lemon Extract, divided
- 1 tablespoon McCormick Pure Vanilla Extract
- 3/4 cup white chocolate chips
- 2 sticks butter, softened
- 16 ounces confectioners’ sugar
- 2 tablespoons milk
- 10 drops McCormick Green Food Color
- 1-2 drops McCormick Red Food Color
- 12 large marshmallows, halved crosswise
- 3 tablespoons white nonpareil sprinkles
- Prepare cake mix as directed on package, adding 1 tablespoon lemon extract and vanilla. Spoon 3 tablespoons batter into 24 paper-lined muffin cups. Bake as directed on package for cupcakes. Cool cupcakes on wire rack.
- To make bunny feet: In medium, microwave-safe bowl, microwave white chocolate chips on high 30 seconds. Stir until completely melted and smooth. Spoon into pastry bag or re-sealable plastic bag. Snip small corner from bag. Pipe 24 pairs of bunny feet onto parchment or wax paper-lined cookie sheet. Use toothpick to smooth out bumps or rough edges, and gently tap cookie sheet on counter to help settle. Allow to harden 2 minutes in freezer or 15 minutes in refrigerator.
- To make frosting: In large bowl, beat butter and remaining lemon extract until light and fluffy. Gradually add confectioners’ sugar, beating well after each addition and scraping sides and bottom of bowl frequently. Add milk; beat until light and fluffy. Remove half the frosting and place in medium bowl. Add green food color; mix until evenly blended. Spoon into pastry bag fitted with grass decorating tip. Set aside. Remove half the remaining frosting into small bowl. Add red food color; mix until light pink. Spoon into another pastry bag.
- Using pink frosting, pipe three toes and padding on each bunny foot. Once frosting has set (about 1 hour) gently press down on pink frosting to create smoother look.
- To assemble cupcakes: Pipe green frosting onto each cupcake in series of short motions to create individual grass spots. Cover top of each cupcake completely.
- To make bunny butts: Place cut sides of marshmallow halves onto each frosted cupcake, leaving room for bunny feet. Shape remaining white frosting into dime-sized balls then roll with white sprinkles to cover. Pipe small drop of remaining pink or white frosting onto top of each marshmallow. Press bunny tail on top.
- Place both bunny feet against base of marshmallow with toes facing down.
Lemon Dill Slow Cooker Carrots
Prep time: 10 minutes
Cook time: 3-4 hours
Servings: 6
- Nonstick cooking spray
- 2 pounds carrots, peeled and cut into 1/2-1-inch chunks
- 2 tablespoons water
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 2 teaspoons McCormick Dill Weed
- 2 teaspoons McCormick Pure Lemon Extract
- 2 teaspoons Dijon mustard
- teaspoon white wine vinegar
- Spray inside of 4-quart slow cooker with nonstick cooking spray. Add carrots, water and salt; toss to coat. Cover.
- Cook on high 3-4 hours, or until tender.
- In small bowl, mix olive oil, dill weed, lemon extract, Dijon mustard and vinegar. Stir into cooked carrots in slow cooker before serving.
Rack of Lamb with Quinoa-Hazelnut Crust and Mint Pesto
Prep time: 20 minutes
Cook time: 40 minutes
Servings: 6
- 2 tablespoons red quinoa
- 2 tablespoons white quinoa
- 1/2 cup water
- 1/4 cup, plus 1 tablespoon, finely chopped toasted hazelnuts, divided
- 2 racks of lamb, about 1 pound each
- 3 tablespoons olive oil, divided
- 1 1/8 teaspoons McCormick Gourmet Sicilian Sea Salt, divided
- 1/4 teaspoon McCormick Gourmet Organic Black Pepper
- 2 teaspoons lemon juice
- 2 tablespoons McCormick Gourmet Organic Mint
- 1/8 teaspoon McCormick Gourmet Organic Garlic Powder
- cup plain Greek yogurt
- Rinse quinoa; drain well. In small saucepan over medium-high heat, bring quinoa and water to boil. Reduce heat to low; cover and simmer 13 minutes, or until liquid is absorbed, stirring occasionally. Spread cooked quinoa on baking sheet to cool. Stir in 1/4 cup hazelnuts. Set aside.
- Heat oven to 450° F. Brush racks of lamb lightly with 1 teaspoon oil. Sprinkle with 1 teaspoon sea salt and pepper. Coat lamb with quinoa mixture, pressing firmly to adhere. Place lamb on roasting rack in foil-lined, shallow roasting pan. Drizzle with 2 teaspoons oil.
- Roast 20-25 minutes, or until desired doneness.
- To make Mint Pesto: In small bowl, mix remaining oil, remaining hazelnuts, lemon juice, mint, garlic powder and remaining sea salt until well blended. Stir 1 teaspoon pesto into yogurt.
- To serve: Carve lamb into chops. Drizzle with remaining pesto. Serve with yogurt sauce.
Electric Pressure Cooker Lamb

- 1 tablespoon McCormick Garlic Powder
- 1 tablespoon McCormick crushed Rosemary Leaves
- 2 teaspoons McCormick Sea Salt
- 1 teaspoon McCormick Thyme Leaves
- 1/2 teaspoon ground McCormick Black Pepper
- 2 tablespoons vegetable oil
- 1 semi-boneless leg of lamb (about 4 pounds)
- 1 cup Kitchen Basics Original Chicken Stock
- 1/2 cup dry white wine
- 2 medium carrots, peeled and cut into 2-inch chunks
- 1 medium yellow onion, cut into wedges
- 1/4 cup water
- tablespoons cornstarch
- In small bowl, mix garlic powder, rosemary, sea salt, thyme and black pepper. Set aside.
- In electric pressure cooker, heat oil on saute setting until simmering. Sprinkle half the seasoning mixture evenly over lamb. Place lamb in pressure cooker. Cook 8-10 minutes, or until browned on all sides, turning occasionally. Add stock, wine and remaining seasoning mixture to pressure cooker. Arrange carrots and onion around lamb. Close lid.
- Cook 25 minutes on high pressure. Once complete, allow pressure to release naturally with vent closed 15 minutes. Vent to release remaining pressure; remove lid. Remove lamb and vegetables from pressure cooker; set aside and keep warm.
- Set pressure cooker to saute. Cook, uncovered, until liquid is reduced by about half, about 5-10 minutes. In small bowl, mix water and cornstarch. Stir into pressure cooker with wire whisk. Cook, stirring occasionally, 1-2 minutes, or until thickened. Serve lamb and vegetables with gravy.

Greek Pasta Salad
Ingredients
Sun-Dried Tomato Salad Dressing
- 3/4 cup sun-dried tomatoes, drained or rehydrate if dry
- 2/3 cup olive oil
- 1/4 cup fresh basil, chopped
- 2 tablespoons capers
- 3 cloves garlic
- 3 tablespoons Kikkoman Rice Vinegar
Salad
- 1/4 cup Kikkoman Thai Style Chili Sauce
- 4 cups rotini pasta, cooked
- 1/2 cup cucumber, peeled and seeded
- 1 cup cherry tomatoes
- 1 cup green bell pepper strips
- 1 4-ounce package feta cheese, crumbled
- 1 3.8-ounce can black olives, sliced and drained
- 3/4 cup chopped green onions
- 1/2 tablespoon chopped dill weed
Preparation
- For dressing, whisk together sun-dried tomatoes, olive oil, basil, capers, garlic and rice vinegar. Set aside.
- For salad, whisk together 1 cup salad dressing and chili sauce, set aside. In large bowl, combine pasta and remaining ingredients, tossing to combine. Serve with salad dressing.
