Baked Brie with Pecans and Cranberry Orange Chutney

Servings: 8
- 1 bag (12 ounces) fresh cranberries
- 1/2 cup maple syrup, plus 1 teaspoon for garnish, divided
- 1/2 cup water
- 1 orange, zest and juice only
- 1 teaspoon freshly chopped thyme, plus additional for garnish, divided
- 1 teaspoon freshly chopped rosemary
- 1 tablespoon bourbon (optional)
- 1 round brie (13.4 ounces)
- 1/2 cup roasted pecan pieces
- crackers
- toasted bread
- apple slices
- Preheat oven to 350 F. Line baking sheet with parchment paper or silicone baking mat.
- In medium saucepan over medium-high heat, bring cranberries (reserving some for garnish), 1/2 cup maple syrup and water to boil. Reduce heat to medium-low and cook, stirring occasionally, until cranberries pop and mixture thickens, 8-10 minutes.
- Remove cranberry mixture from heat and stir in orange zest, orange juice, 1 teaspoon thyme, rosemary and bourbon, if desired.
- Place brie on parchment-lined baking sheet. Bake 5-7 minutes, or until inside of cheese softens while outside remains intact.
- Transfer brie to serving platter and top with chutney and toasted pecans. Drizzle remaining maple syrup over brie and garnish with remaining fresh thyme and reserved cranberries. Serve with crackers, toasted bread and apple slices.
Pecan Snack Mix with Cranberries and Chocolate

Prep time: 10 minutes
Cook time: 5 minutes, plus 10 minutes cooling time
- 1 cup pecan halves
- 1 cup rice squares cereal (wheat or cinnamon)
- 1/2 cup pretzels
- 2 tablespoons unsalted butter
- 1 tablespoon brown sugar
- 1 1/2 tablespoons pure maple syrup
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground nutmeg
- 1/2 cup dried cranberries
- 1/2 cup dark chocolate chips
- In large, microwave-safe bowl, add pecans, rice squares cereal and pretzels. In small, microwave-safe bowl, add butter, brown sugar, maple syrup, salt and nutmeg. Microwave butter mixture 1-2 minutes until melted then pour over dry mix. Toss well to combine.
- Microwave snack mix in 45-second intervals, about 4-5 intervals total, until mix is fragrant, golden and toasty.
- Cool mix completely then stir in cranberries and dark chocolate chips.

- 2 packages (8 ounces each) cream cheese
- 2 tablespoons caraway seeds
- 1 teaspoon poppy seeds
- 2 cloves garlic, minced, divided
- 1/4 cup parsley, chopped
- 2 teaspoons thyme leaves, chopped
- 1 teaspoon rosemary, chopped
- 1/4 cup dried cranberries, chopped
- 2 tablespoons pecans, chopped
- crackers (optional)

- Cut each cream cheese block into three squares. Roll each square into ball.
- In small bowl, combine caraway seeds, poppy seeds and half the garlic.
- In second small bowl, combine parsley, thyme, rosemary and remaining garlic.
- In third small bowl, combine cranberries and pecans.
- Roll two cheese balls in seed mixture, two in herb mixture and two in cranberry mixture.
- Cut each ball in half and serve with crackers, fruit or vegetables, if desired.

Lemon Curd:
- 1 cup Domino Golden Sugar
- 2 tablespoons cornstarch
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 6 tablespoons water
- 1/4 teaspoon salt
- 6 egg yolks
- 1/2 cup (1 stick) unsalted butter, at room temperature, cut into 1/2-inch cubes
Whipped Cream:
- 2 cups heavy whipping cream, cold
- 2 tablespoons Domino Golden Sugar
- 2 teaspoons pure vanilla extract
Trifle:
- 1 cup blueberry jam
- 12 ounces fresh blueberries, plus additional for garnish, divided
- 1 pound cake, cubed
- lemon slices, for garnish
- mint, for garnish
- To make lemon curd: In medium saucepan, stir sugar and cornstarch. Stir in lemon juice, lemon zest, water and salt. Cook over medium heat, stirring constantly, until thickened. Remove from heat and gradually stir in three egg yolks; mix well until combined. Stir in remaining egg yolks. Return to heat and cook 2 minutes, stirring constantly. Remove from heat.
- Stir in butter; mix until incorporated. Cover with plastic wrap, touching surface of lemon curd to prevent curd forming skin. Refrigerate until completely cool.
- To make whipped cream: In large bowl, beat cream, sugar and vanilla until soft peaks form. Do not overbeat.
- To make trifle: Mix blueberry jam with 12 ounces fresh blueberries. Place one layer cubed pound cake in bottom of trifle dish. Top with layer of blueberries. Add dollops of lemon curd and whipped cream. Repeat layering ending with whipped cream.
- Decorate trifle with lemon slices, fresh blueberries and mint.

Easy Brunch Quiche
Serves: 12
- 1 package (10 ounces) frozen broccoli with cheese
- 12 slices bacon, chopped
- 1/2 cup green onions, sliced
- 1 cup mushrooms, sliced
- 4 eggs
- 1 cup milk
- 1 1/2 cups shredded cheese, divided
- 2 frozen deep dish pie shells (9 inches each)
- Heat oven to 350 F.
- In medium bowl, add broccoli and cheese contents from package. Microwave 5 minutes, or until cheese is saucy. Set aside.
- In skillet, cook chopped bacon 4 minutes. Add green onions; cook 2 minutes. Add mushrooms; cook 4 minutes, or until bacon is completely cooked and mushrooms are tender. Drain onto paper towel over plate. Set aside.
- In medium bowl, whisk eggs and milk until combined. Add broccoli and cheese mixture. Add 1 cup cheese. Stir to combine. Set aside.
- In pie shells, divide drained bacon mixture evenly. Divide broccoli mixture evenly and pour over bacon mixture. Sprinkle remaining cheese over both pies.
- Bake 40 minutes.
- Cool at least 12 minutes before serving.
Note: To keep edges of crust from burning, place aluminum foil over pies for first 20 minutes of cook time. Remove after 20 minutes and allow to cook uncovered until completed.

Chick Cheese Balls

Yield: 10 chicks
- 1 package cream cheese
- 1/4 tablespoon garlic powder
- 1 tablespoon Worcestershire sauce
- 1/2 lemon, juice only
- salt, to taste
- pepper, to taste
- 1 cup finely shredded cheddar cheese
- crackers
- carrots
- whole black peppercorns
- Using mixer, combine cream cheese, garlic powder, Worcestershire sauce and lemon juice. Add salt and pepper, to taste. Refrigerate mixture 1 hour.
- Using fingers, form about 1 tablespoon of cream cheese mixture at a time into balls. Refrigerate 30 minutes on small baking sheet.
- Before serving, roll each ball into shredded cheddar cheese to cover. Place each ball on round cracker.
- Cut small triangles from carrots for beaks and feet. Press carrots onto cheese balls. Add peppercorns for eyes.

- 4 ounces dried whole-wheat rotini pasta (about 1 1/2 cups)
- nonstick cooking spray
- 16 ounces frozen mixed vegetables, thawed
- 1 pouch (11 ounces) low-sodium chunk light tuna
- 1 can (10 3/4 ounces) low-fat, low-sodium condensed cream of chicken soup
- 1/2 cup chopped roasted red bell peppers
- 1/2 cup fat-free half-and-half
- 1 teaspoon all-purpose, salt-free seasoning blend
- 3/4 cup crushed low-sodium, whole-grain crackers
- 1/4 cup shredded or grated Parmesan cheese
- Prepare pasta according to package directions, omitting salt. Using colander, drain well. Transfer to large bowl.
- Preheat oven to 350 F. Lightly spray 2-quart glass baking dish with nonstick cooking spray.
Stir mixed vegetables, tuna, soup, roasted peppers, half-and-half and seasoning blend into pasta until combined. Transfer to baking dish. Top with crackers and Parmesan cheese. - Bake, uncovered, 25-30 minutes, or until casserole is warmed through and topping is golden brown.

Salsa:
- 2 cups chopped tomatoes (about 2 medium tomatoes)
- 1 medium avocado, halved, pitted and diced
- 1 large ear of corn, husks and silk discarded, kernels removed
- 1-2 medium fresh jalapenos, seeds and ribs discarded, finely chopped
- 2 tablespoons finely chopped red onion
- 2 tablespoons fresh lime juice
Tostadas:
- nonstick cooking spray
- 5 corn tortillas (6 inches each)
- 8 ounces ground skinless turkey breast
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 can (15 1/2 ounces) no-salt-added black beans, rinsed and drained
- 2 tablespoons water
- To make salsa: In small bowl, stir tomatoes, avocado, corn, jalapenos, onions and lime juice. Set aside.
- Preheat oven to 400 F.
- To make tostadas: Line baking sheet with aluminum foil. Lightly spray foil with nonstick cooking spray. Place tortillas on baking sheet. Lightly spray tortillas with nonstick cooking spray. Using fork, pierce tortillas several times to prevent from filling with air.
- Bake tortillas 5-6 minutes on each side, or until golden brown.
- In medium nonstick saucepan over medium-high heat, cook turkey, chili powder, cumin and coriander 5-6 minutes, or until turkey is no longer pink, stirring occasionally to turn and break up turkey.
- Add beans and water. Cook 5 minutes, or until beans are heated through. Using potato masher, coarsely mash beans. Remove from heat.
- To assemble tostadas, spread turkey mixture over each tortilla. Top with salsa.

- 1/2 teaspoon dried thyme, crumbled
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon freshly ground pepper
- 1/8 teaspoon salt
- 1 tablespoon all-purpose flour
- 1 3/4 cups fat-free, low-sodium vegetable broth
- 1 cup water
- 2 cans (15 ounces each) solid-pack pumpkin
- 1 cup fat-free milk
- 1/4 cup fat-free sour cream (optional)
- 2 tablespoons chopped chives (optional)
- In large heavy pot, heat oil over medium-high heat, swirling to coat bottom. Cook onion 6-8 minutes, or until soft, stirring occasionally.
- Stir in gingerroot, garlic, thyme, cinnamon, pepper and salt. Cook 1 minute, stirring constantly. Stir in flour. Pour in broth and water. Using spatula, scrape bottom of pot to dislodge any browned bits. Stir in pumpkin. Bring mixture to boil. Reduce heat to low and simmer 10 minutes.
- Stir in milk. Remove from heat. Ladle soup into bowls.
- Garnish with sour cream and chives, if desired.

- In another bowl, stir together brown sugar, flour and oats. Using hands or fork, cut in butter until pea size crumbs form. Sprinkle evenly over apples.
- Bake 40-45 minutes until mixture is bubbling and golden brown. Remove from oven and let cool 15 minutes.
- In small pot, whisk caramel, salt, orange zest and orange juice until warm.
- Spoon apple oat crumble over large scoop vanilla ice cream and top with salted citrus caramel.
Apple Stuffing Bites with Rosemary Gravy
- 1 box stovetop stuffing
- 2 tablespoons butter
- 2 cups diced Envy Apples
- 1/2 onion, diced small
Gravy:
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups beef broth
- 2 teaspoons kosher salt
- 20 turns fresh cracked pepper
- 1 teaspoon Worcestershire sauce
- 1 tablespoon finely chopped rosemary
- Preheat broiler.
- Cook stuffing according to package directions; set aside and allow to cool slightly.
- In large saute pan, melt butter saute apples and onion until tender. Set aside to cool slightly.
- Stir together stuffing and apple mixture. Spread stuffing on sheet tray and allow to cool in refrigerator.
- After cooling, form stuffing into medium bites and place on sheet tray lined with parchment paper.
- Broil bites until golden brown and slightly crispy.
- To make gravy: In small pot, melt butter and whisk in flour. Cook flour 1 minute, whisking frequently.
- Whisk in beef broth, salt, pepper and Worcestershire sauce; bring to boil, whisking frequently. Remove from heat and stir in rosemary. If desired, continue gently simmering gravy to thicken.
- Arrange stuffing bites in serving dish and drizzle with gravy. Serve hot.
Pumpkin Spice Apple Cider
- 1 Envy Apple, diced
- 1 tablespoon butter
- 1 teaspoon pumpkin spice
- 2 ounces bourbon
- 4 ounces pumpkin spice apple cider
- demerara sugar
- Envy Apple slices, for garnish
- rosemary, for garnish
- cinnamon stick, for garnish
- In pan over medium heat, saute diced apples in butter and pumpkin spice 5-10 minutes.
- In glass, combine bourbon and pumpkin spice apple cider; top with sauteed apples.
- Add demerara sugar then garnish with apple slices, rosemary and cinnamon stick.
Bell-Issimo Brie Melt
- 1 round brie (6-8 ounces)
- 2 Envy Apples
- 1/4 cup walnuts
- 1/4 cup dried cranberries
- firm crackers
- Unwrap brie and place on microwave-safe dish. Cut off top of brie round and microwave 60 seconds until middle is soft.
- Slice apples into thick wedges.
- Top brie with half the apples, crushed walnuts and dried cranberries.
- Serve with firm crackers and remaining apple wedges.

Mini Pecan Lemon Berry Tarts

Mini Pecan Crusts:
- Nonstick cooking spray
- 2 cups pecan pieces
- 1/4 cup butter, melted
- 2 tablespoons sugar
Lemon Filling:
- 1/2 cup lemon curd
- 1/2 cup blueberries, raspberries or combination
- powdered sugar, for dusting (optional)
- To make mini pecan crusts: Preheat oven to 350 F. Line mini muffin tin with paper liners or spray with nonstick cooking spray.
- In food processor, blend pecan pieces, butter and sugar until mixture forms coarse dough.
- Scoop about 2 teaspoons pecan mixture in each muffin tin. Use back of wooden spoon or fingers to press mixture evenly along bottom and up sides of each muffin cup.
- Bake 12 minutes, or until crusts are golden brown. Allow crusts to cool completely before removing from pan.
- To assemble crusts: Spoon 1 teaspoon lemon curd into each mini pecan crust. Top with one raspberry or three small blueberries. Dust with powdered sugar, if desired.
Buffalo-Pecan Pimento Cheese Dip
Total time: 15 minutes
Servings: 30
- 1 cup raw pecan pieces
- 1/2 pound (2 cups) sharp cheddar cheese, freshly grated
- 1 jar (4 ounces) sliced pimentos
- 2 tablespoons red hot sauce
- 2 tablespoons mayo
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh cracked pepper
- 1 tablespoon chives, freshly chopped
- veggies, for serving
- crackers, for serving
- Preheat oven to 350 F.
- On baking sheet, spread pecans and roast 8-10 minutes, or until golden brown and fragrant, tossing once halfway through. Remove from oven and set aside to cool completely.
- In bowl, combine cheddar cheese, pimentos with juice, hot sauce, mayo, salt and pepper. Stir until combined. Add 3/4 of pecan pieces and mix until combined.
- Place dip in serving bowl and top with remaining pecan pieces and freshly chopped chives.
- Serve with veggies and crackers.

For an 8-12-pound bird, aim for 2.5-3.5 hours; 12-16 pounds for 3.5-4 hours; 16-20 pounds for 4-4.5 hours, and so on. The key is bringing the turkey to a temperature reading of 170 F.
4. Let it rest. Instead of pulling the turkey out of the oven and immediately carving it, give it a chance to rest for 20-30 minutes, which allows the juices to soak into the meat and moisten it up.

- 1 can (2 1/4 ounces) sliced black olives, drained
- 2 tablespoons minced green onion
- 2 tablespoons minced red bell pepper
- 1 teaspoon Worcestershire sauce
- 1/8 teaspoon pepper
- 2 packages (4 ounces) Buddig Beef or Ham, chopped, divided
- 1 package assorted crackers
- In large bowl of mixer on medium speed, beat cream cheese and cheddar cheese until creamy.
- Mix in black olives, green onion, red bell pepper, Worcestershire sauce, pepper and 2 ounces chopped beef until well combined.
- Form into ball. Wrap in plastic wrap.
- Chill at least 2-3 hours to allow flavors to blend.
- Just before serving, roll in remaining chopped beef until completely coated.
- Serve with assorted crackers.

- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup C&H® Dark Brown Sugar
- 1 large egg
- 1/4 cup molasses
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- royal icing
- In large bowl of electric mixer fitted with paddle attachment, cream butter and sugar about 2 minutes on medium speed until light and fluffy. Add egg and molasses; mix until well incorporated.
- In separate bowl, whisk flour, baking soda, salt, ginger, cinnamon, nutmeg and cloves. Use mixer on low speed to add to butter mixture until combined and dough is formed.
- Divide dough in half, wrap with plastic film and refrigerate at least 1 hour.
- Preheat oven to 350 F and line baking sheets with parchment paper.
- Flour clean work surface. Roll dough 1/8-1/4 inches thick. Cut out shapes with desired cookie cutters.
- Transfer cookies to lined baking sheets and bake 10-12 minutes, or until firm. Let cookies cool on baking sheets 2-3 minutes then transfer to cooling rack. Cool completely.
- Decorate cookies with royal icing.

Orange Eggs Benedict
Serves: 6
Orange Hollandaise:
- 2 egg yolks
- 1 orange, juice only
- 1/2 teaspoon kosher salt
- 1/2 cup unsalted butter, melted
- water
- 1 tablespoon white vinegar
- 8 eggs
- 1/2 cup butter, softened
- 6 French baguette slices, 3/4-inch thick each
- 6 thick slices ham
- 1/2 cup orange marmalade
- orange zest, for garnish
- To make Orange Hollandaise: In small bowl, blend egg yolks, orange juice and salt until combined. Gradually add melted butter into egg mixture while blending. Set aside.
- In skillet, add water halfway up sides. Add vinegar. Bring to simmer. Break eggs into water to poach. Cook 3-4 minutes until whites are cooked through and yolks are still runny. Using slotted spoon, remove eggs and drain on paper towels.
- Spread butter on one side of bread slices. Place bread in skillet and cook until golden brown. Add ham to same skillet and cook until browned on both sides.
- To assemble, spread bread slices with orange marmalade. Top each with one slice cooked ham and one poached egg. Pour hollandaise over eggs and garnish with orange zest.

- 1/4 cup olive oil
- 2 tablespoons minced garlic
- 3 tablespoons fresh chopped thyme

- 1 1/2 teaspoons black pepper
- Preheat grill to high heat.
- Rub tri-tip with olive oil. Add minced garlic and use hands to evenly distribute.

- Place tri-tip on hottest part of grill and sear 2-3 minutes.

- 1 3/4 cups blanched almond flour
- 1/2 teaspoon sea salt
- 2 tablespoons finely chopped fresh rosemary
- 1 tablespoon extra virgin olive oil
- 1 egg
- In large bowl, combine almond flour, salt and rosemary. In medium bowl, whisk together olive oil and egg. Stir wet ingredients into almond flour mixture until thoroughly combined.
- Roll dough into a ball and press between 2 sheets of parchment paper to 1/8-inch thickness. Remove top piece of parchment paper.
- Transfer the bottom piece with rolled out dough onto baking sheet. Cut dough into 2-inch squares with a knife or pizza cutter.
- Bake at 350°F for 12 to 15 minutes, until lightly golden. Let crackers cool on baking sheet for 30 minutes, then serve.
Almond Crusted Shrimp

Makes 4 servings
- 1/2 cup ground almonds
- 3 tablespoons all-purpose flour
- 1 teaspoons minced fresh parsley, or 1/2 teaspoon dried
- 1/2 teaspoon seafood seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound (61- to 70-count) shrimp, with tails and veins removed
- 1 egg white
- 2 tablespoons almond or corn oil, divided
- 1 lemon, cut into wedges
- Stir together almonds, flour, parsley, seafood seasoning, salt and pepper.
- Dip each shrimp in egg white, then in almond mixture; lay on a baking sheet or platter until ready to cook. Heat 1 tablespoon oil in a large skillet; grill shrimp in batches on medium heat, cooking 3 to 4 minutes, turning once, until pink and golden. Use remaining 1 tablespoon oil as necessary.
- Serve shrimp immediately, accompanied by lemon wedges.
Spiced Almonds

Sauteed Corn, Feta, Cherry Tomato and Scallop Crackers
Prep time: 15 minutes
Servings: 10
- 2 ears corn
- 2 teaspoons vegetable oil
- salt
- 10 large scallops
- 1/4 cup crumbled feta cheese
- 10 cherry tomatoes, quartered
- 2 tablespoons finely sliced basil
- pepper
- 10 Brenton Vinta crackers
- Slice corn off of cob.
- Heat vegetable oil in pan until hot, saute corn until golden brown, 3-5 minutes. Set aside to cool.
- In another pan, heat vegetable oil until hot. Salt scallops then sear for 2-3 minutes on each side until golden brown. Slice in half to create 10 round scallop discs.
- Mix corn, feta, tomatoes and basil together. Season with salt and pepper.
- To compile, place spoonful of corn salad on each cracker. Top with 2 pieces of scallop and 1 sprig of basil.
Marshmallow, Chocolate, Sweet Potato Crackers

- 10 large marshmallows
- 20 Breton sweet potato and ancient grain crackers
- 1/4 cup chocolate chips, divided
- Heat broiler to low (set rack in top two-thirds of oven if low-heat setting is unavailable).
- Place marshmallows on one cracker and broil 1-3 minutes, or until they begin to brown and soften.
