Fried Chicken Tenders

Servings: 4-6

  • Oil of choice, for frying
  • 1/2 stick butter
  • 2 eggs
  • 2 cups milk
  • 3 pounds chicken breast, cut into strips
  • 2 cups flour
  • 1/4 cup barbecue seasoning of choice
  • 1/4 cup mesquite seasoning
  • salt, to taste
  • pepper, to taste
  • dipping sauce of choice (optional)
  1. Fill Dutch oven or large frying pan halfway with oil and butter; heat over medium heat.
  2. In large bowl, mix eggs and milk then place chicken strips in mixture.
  3. In separate bowl, mix flour, barbecue seasoning and mesquite seasoning. Add salt and pepper, to taste.
  4. Remove 4-6 chicken strips from milk mixture and cover completely in flour mixture.
  5. Drop pinch of flour in hot oil; if it crackles, it's hot enough. Once hot, fry battered chicken 4 minutes then, using tongs or fork, turn over and fry 4 minutes. When done, chicken will be golden and almost float. Remove from frying pan and repeat with remaining chicken.
  6. Serve with dipping sauce of choice, if desired.

Chicken and Grape Cauliflower Rice Bowl

Servings: 4

Chicken:

  • 1/2 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • salt, to taste
  • pepper, to taste
  • 1 pound (3-4 pieces) small boneless, skinless chicken breast halves

Zucchini:

  • 1 tablespoon olive oil
  • 2 medium zucchini, trimmed and cut into 3/4-inch chunks
  • 1 1/3 cups halved red Grapes from California

Cauliflower Rice:

  • 1 bag (1 pound) thawed frozen riced cauliflower
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1/3 cup water
  • 2 large garlic cloves, minced
  • 2 teaspoons fresh ginger, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric
  • 1 can (15 ounces) garbanzo beans, drained and rinsed well
  • 1/3 cup chopped fresh cilantro
  • salt, to taste
  • pepper, to taste
  1. To make chicken: In medium bowl, combine oil, garlic, ginger and cumin. Add turmeric, season lightly with salt and pepper, to taste, and whisk to blend. Lightly pound chicken pieces to even them out then turn to coat in oil-spice mixture. Let stand 20-30 minutes.
  2. Heat heavy, large skillet over medium-high heat until hot. Add chicken, smooth side down, and cook until golden brown underneath, about 4 minutes. Flip with spatula, reduce heat to medium and cook about 4 minutes until just cooked through. Transfer chicken to plate and tent with foil. Do not clean pan.
  3. To make zucchini: In medium skillet over medium-high heat, heat oil until hot. Add zucchini pieces and cook, stirring often until crisp-tender, about 4 minutes. Remove from heat.
  4. To make cauliflower rice: In colander, drain cauliflower well. In same large skillet used for chicken, add oil, onion and water over medium heat; cook, stirring until softened, about 3 minutes. Add garlic, ginger, cumin and turmeric; cook, stirring, 3 minutes. Add drained cauliflower and garbanzo beans; cook until hot, about 5 minutes. Stir in cilantro and season with salt and pepper, to taste.
  5. Divide cauliflower rice among four large soup bowls. Slice chicken against grain and arrange on top of cauliflower rice along with grapes and cooked zucchini. Serve warm.

Nutritional information per serving: 420 calories; 34 g protein; 42 g carbohydrates; 14 g fat (30% calories from fat); 2.5 g saturated fat (5% calories from saturated fat); 65 mg cholesterol; 280 mg sodium; 10 g fiber.

Creamy Truffle Caesar Pork Sandwiches

Prep time: 5 minutes 
Cook time: 15 minutes 
Servings: 4

  1. Preheat pan on stove over medium-high heat. Season pork chops with Italian seasoning.
  2. When pan is hot, add oil and pork chops. Cook pork chops, turning halfway through, until they reach minimum internal temperature of 145 F, 6-8 minutes per side (depending on thickness).
  3. Once pork chops are cooked through, remove from pan and let rest a few minutes.
  4. Peel and slice onion. After resting, slice pork into strips; set aside.
  5. In same pan, saute onion until translucent, about 5 minutes. Set aside.
  6. In large bowl, combine lettuce, dressing, croutons and cheese from salad kit.
  7. In separate pan, toast buns until golden brown; set aside.
  8. To build sandwiches, place sliced pork on bottom halves of toasted buns. Top with prepared salad mixture and sauteed onions. Finish with top halves of buns.

Chicken Caesar Tacos

Prep time: 10 minutes
Cook time: 20 minutes
Servings: 4

  1. In shallow bowl, beat eggs. In separate bowl, combine flour and half packet of taco seasoning.
  2. Place chicken in resealable bag and, using meat tenderizer, pound to 1/4-inch thickness.
  3. In medium saute pan, heat oil over medium heat.
  4. Season chicken breasts with remaining taco seasoning.
  5. Coat chicken in flour mixture, dip into beaten eggs then coat chicken in flour mixture again, pressing firmly to adhere.
  6. In pan with hot oil, cook battered chicken until golden brown, flipping halfway through, until chicken reaches minimum internal temperature of 165 F, 4-5 minutes per side (depending on thickness). Fry in batches to avoid overcrowding pan, if necessary.
  7. Once fully cooked, fold chicken over to create taco shell-shape. Place sheet pan on top to hold shape, 3-4 minutes.
  8. In large bowl, combine lettuce, dressing, croutons and cheese from salad kit.
  9. Once chicken taco shells set, carefully remove sheet pan. Fill each taco shell with prepared salad mixture.

  • 3/4       pound boneless, skinless O Organics chicken breasts
  • 1/4       teaspoon salt
  • 1/8       teaspoon black pepper
  • 2          teaspoons O Organics extra-virgin olive oil
  • 1          package (5 ounces) O Organics spring mix
  • 1          package (6 ounces) O Organics blueberries (or desired berry)
  • 1/4       cup O Organics pecan halves
  • 3          tablespoons O Organics olive oil
  • 1          tablespoon O Organics balsamic vinegar
  • 1/2       log (4 ounces) O Organics goat cheese
  1. Pat chicken dry with paper towels and place on cutting board. Cut chicken in half horizontally to form thin cutlets. Season with salt and pepper on both sides.
  2. Preheat grill pan, outdoor grill or skillet to medium-high heat.
  3. Once pan is hot, coat with oil. Add chicken to pan and grill, turning once, until cooked through, 3-4 minutes per side.
  4. Wash and dry mixed greens. Place in medium bowl.
  5. Wash and dry blueberries. Add to bowl with mixed greens. Using clean cutting board, roughly chop pecans. Add to bowl.
  6. Transfer cooked chicken to cutting board and cut into thin strips.
  7. In bowl, mix olive oil and balsamic vinegar to create dressing.
  8. Add chicken and dressing to salad bowl; toss to combine.
  9. To serve, divide salad between plates or bowls and crumble goat cheese over top.

  • 4          whole-wheat pitas (6 1/2 inches each)
  • 1          cup chunky tomato sauce
  • 1          cup grilled boneless, skinless chicken breast, diced (about 2 small breasts)
  • 1          cup broccoli, rinsed, chopped and cooked
  • 2          tablespoons grated Parmesan cheese
  • 1          tablespoon fresh basil, rinsed, dried and chopped (or 1 teaspoon dried)
  1. Preheat oven or toaster oven to 450 F.
  2. On each pita, spread 1/4 cup tomato sauce and top with 1/4 cup chicken, 1/4 cup broccoli, 1/2 tablespoon Parmesan cheese and 1/4 tablespoon chopped basil.
  3. Place pitas on nonstick baking sheet and bake 5-8 minutes until pitas are golden brown and chicken is heated through.

French Onion Baked Chicken

  • 1          tablespoon olive oil
  • 4          boneless, skinless chicken breasts

Caramelized Onions:

  • 2          tablespoons butter
  • 1          tablespoon olive oil
  • 3          medium sweet onions, sliced
  • 1/2       teaspoon salt
  • 2          sprigs fresh thyme
  • 3          garlic cloves, minced
  • 1          tablespoon balsamic vinegar
  • 1          tablespoon Worcestershire
  • 2/3       cup beef broth
  • 2          teaspoons Dijon mustard
  • 1          cup shredded mozzarella, gruyere or fontina cheese
  1. Preheat oven to 400 F. In large pan over medium-high heat, heat oil. Sear chicken breasts 2-3 minutes on each side. Remove from pan.
  2. To make caramelized onions: In separate pan over medium-high heat, heat butter and olive oil. Once butter is melted and bubbling, add onions. Let sit 5 minutes.
  3. Turn heat to low and cover onions. Cook 20 minutes, stirring halfway through.
  4. Stir in salt, fresh thyme and garlic; cover onions. Cook 10 minutes.
  5. Stir in balsamic vinegar, Worcestershire, beef broth and Dijon mustard. Cover and cook 10-15 minutes, or until onions are brown and jammy. Stir onions every 10 minutes.
  6. Place chicken breasts in greased baking dish. Top with onions then cheese. Place any additional onions in bottom of dish.
  7. Bake 30-35 minutes, or until chicken reaches internal temperature of 165 F.

Cook time: 15 minutes

  • 1 tablespoon butter
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into strips

  3. In separate pan, cook fettuccine according to package instructions.
  4. Serve chicken, broccoli and sauce over hot fettuccine and sprinkle grated Parmesan cheese on top, if desired.

Italian Sausage Spinach and Tomato Rigatoni

Prep time: 10 minutes
Cook time: 20 minutes

  • Water
  • 1/2 box rigatoni pasta
  • 1 tablespoon olive oil
  • 1/2 cup onions, chopped
  • 4 cloves garlic, minced
  • 1/2 cup mushrooms, sliced
  • 16 ounces sweet Italian sausage
  • 1 jar Bertolli d'Italia Marinara Sauce
  • 2 cups fresh baby spinach
  • salt, to taste
  • pepper, to taste
  • Parmesan cheese, for garnish
  1. Bring large stockpot of water to boil. Boil rigatoni pasta until al dente. Drain and set aside.
  2. In saute pan over medium heat, add olive oil. Add onions, garlic and mushrooms. Saute until vegetables start to brown. Add Italian sausage and cook until done, breaking into small pieces. Add sauce and bring to low boil.
  3. Add baby spinach. Cook until spinach is mostly wilted. Season with salt and pepper, to taste.
  4. Add drained pasta to pan with sausage and sauce. Toss and divide between plates. Garnish with Parmesan cheese.

Red Wine Braised Beef Short Rib Ragu

Prep time: 25 minutes
Cook time: 3 hours

  • 2 tablespoons olive oil
  • 4 pounds bone-in beef short ribs
  • salt, to taste
  • ground black pepper, to taste
  • 1 stalk celery, chopped
  • 1 large carrot, peeled and finely diced
  • 1 small onion, chopped
  • 8 cloves garlic, finely chopped
  • 4 tablespoons tomato paste
  • 1 cup red wine
  • 4 sprigs fresh rosemary
  • 2 sprigs fresh sage leaves, chopped
  • 8 sprigs fresh thyme
  • 2 bay leaves
  • 1 jar Bertolli d'Italia Marinara Sauce
  • 2 cups beef bone broth
  • water
  • 24 ounces pappardelle pasta or preferred pasta
  • freshly grated Parmesan cheese, for garnish
  1. Heat oven to 350 F.
  2. In 5-quart Dutch oven, heat olive oil over medium heat. Season short ribs with salt and ground black pepper, to taste. Place one layer of short ribs in pot. Set remaining ribs aside.
  3. Cook ribs 3-4 minutes per side until browned. Transfer to plate and set aside. Repeat with remaining short ribs.
  4. Add celery, carrots and onion to pot used to brown ribs. Stir and cook until vegetables are browned, about 15 minutes.
  5. Add garlic and stir 1-2 minutes. Add tomato paste. Cook 2-3 minutes.
  6. Carefully pour red wine into pot.
  7. Stir and scrape any browned bits from bottom of pot. Cook 3-4 minutes until wine is almost completely absorbed into vegetables.
  8. Add rosemary, sage, thyme and bay leaves to pot. Add sauce, bone broth and browned ribs. Cover pot and place in oven 2 1/2-3 hours, or until ribs are fall-apart tender.
  9. Remove pot from oven. Transfer ribs to plate or cutting board. Remove and discard herb stems and bay leaves. Remove bones from ribs then shred meat into bite-sized pieces using two forks or tongs. Return shredded ribs to pot with ragu. Stir to combine. Set aside.
  10. Bring large stockpot of water to boil. Boil pappardelle pasta until al dente. Add drained pasta to pot with beef ragu and toss until combined.
  11. Garnish with freshly grated Parmesan cheese.

Creamy Italian Garlic Chicken Pasta

Prep time: 10 minutes
Cook time: 20 minutes

  • 2 tablespoons olive oil
  • 2 large chicken breasts
  • 1 teaspoon Italian seasoning
  • salt, to taste
  • pepper, to taste
  • 4 cloves garlic, minced
  • 1/4 cup onions, chopped
  • 1/4 cup sun-dried tomatoes, cut into strips
  • 2 tablespoons capers, drained
  • 6 fresh basil leaves, sliced
  • 1 jar Bertolli d'Italia Creamy Rosa Sauce
  • 1/2 cup heavy cream
  • water
  • 1/2 box Casarecce or preferred pasta
  • parsley, for garnish
  • Parmesan cheese, for garnish
  1. In saute pan over medium heat, add olive oil. Season chicken with Italian seasoning and salt and pepper to taste. Sear chicken breasts on both sides until browned. Remove from pan and set aside.
  2. Add garlic and onions to hot pan. Cook until starting to brown. Add sun-dried tomatoes, capers and basil; stir. Add sauce and heavy cream; cook until mixture starts boiling.
  3. Bring large stockpot of water to boil. Boil Casarecce pasta until al dente. Divide pasta between two plates. Place one chicken breast over pasta on each plate and top with additional sauce, parsley and Parmesan cheese.
