- 4 portobello mushrooms
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon smoked paprika
- 2 yellow bell peppers, sliced
Yogurt Dill Sauce:
- 1 English cucumber, grated
- 1 cup whole-milk
Greek yogurt
- 1/2 cup sour cream
- 2 tablespoons extra-virgin olive oil
- 1/2 small lemon, juice only
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 tablespoon minced fresh dill
- 4 pita breads or naan
- 2 tomatoes, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 head green lettuce
- crumbled feta cheese (optional)
- Remove stems from mushrooms and brush caps with wet towel. Using spoon, carefully scrape out gills. Slice mushrooms into 1/4-inch pieces and place in medium bowl with olive oil, oregano and smoked paprika.
- Preheat indoor grill pan over medium-high heat. Add mushrooms and peppers; grill, tossing occasionally, until tender, 5-7 minutes.
- To make yogurt dill sauce: Squeeze grated cucumber in clean towel to remove excess liquid. Add to large bowl with yogurt, sour cream, olive oil, lemon juice, garlic, salt and dill. Stir to combine.
- To serve, place mushrooms and peppers in middle of pita bread. Top with tomatoes, onion, lettuce, feta, if desired, and big dollop of yogurt dill sauce.
Creamy Spinach, Mushroom and Lasagna Soup

- 1 tablespoon extra-virgin olive oil
- 2 cloves garlic, minced
- 1 medium onion, small diced
- 8 ounces crimini mushrooms, sliced
- 1 jar (24 ounces) marinara sauce
- 1 can (15 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 2 teaspoons balsamic vinegar
- 1 teaspoon granulated sugar
- 1 tablespoon dried basil
- 1/2 teaspoon salt
- 1 teaspoon oregano
- 1/2 teaspoon black pepper
- 1 bay leaf
- 3 cups vegetable broth
- 6 lasagna noodles, broken into pieces
- 1/2 cup heavy cream
- 5 ounces fresh baby spinach
- 1 cup whole-milk ricotta cheese
- 1/2 cup shredded mozzarella cheese, for topping
- Heat large pot over medium heat.
- Add olive oil, garlic, onion and mushrooms. Cook, stirring occasionally, until onions and mushrooms soften, 4-5 minutes.
- Add marinara, diced tomatoes, tomato paste, vinegar, sugar, basil, salt, oregano, pepper, bay leaf and broth. Bring to boil over high heat then reduce heat to low and simmer.
- Add lasagna noodles and cook, stirring often, until softened, about 15 minutes. Remove from heat and remove bay leaf.
- Stir in heavy cream and spinach until wilted, 2-3 minutes.
- Divide between bowls and top with dollop of ricotta and sprinkle of mozzarella.
Roasted Chicken Thighs and Veggies with Mushroom Orzo Risotto

Chicken:
- 8 boneless, skinless chicken thighs
- salt, to taste
- pepper, to taste
- 6 tablespoons unsalted butter
- 16 ounces crimini mushrooms, quartered
- 3 zucchini, sliced in half moons
- 3 large carrots, thinly sliced
- 4 sprigs fresh rosemary, leaves removed and roughly chopped
- 4 cloves garlic, minced
Orzo:
- 4 cups chicken or vegetable broth
- 1 tablespoon unsalted butter
- 1 tablespoon extra-virgin olive oil
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 16 ounces crimini mushrooms, finely chopped
- 1 cup uncooked orzo pasta
- 1/8 teaspoon black pepper
- 1/3 cup white wine
- 1/3 cup shredded Parmesan cheese
- To make chicken: Preheat oven to 450 F.
- Pat chicken dry. Season with salt and pepper, to taste. In large skillet over medium-high heat, melt butter. Sear chicken until browned, 4-5 minutes on each side.
- In large bowl, toss mushrooms, zucchini, carrots, garlic and rosemary. On large baking sheet, spread vegetables. Nestle chicken into vegetables. Drizzle with butter and juices from pan.
- Bake 20 minutes until chicken is cooked through and vegetables are tender.
- To make orzo: In small pot over medium-low heat, warm broth.
- Using skillet from chicken, add butter and olive oil over medium heat. Add onion, garlic and mushrooms. Cook, stirring occasionally, until onions soften, 3-4 minutes.
- Add orzo and black pepper. Stir and cook 2 minutes. Add white wine and cook until evaporated, about 1 minute.
- Add warm broth to orzo 2/3 cup at a time, stirring until liquid is absorbed. Repeat with remaining broth, waiting until last batch is absorbed before adding more. Remove from heat and stir in Parmesan.
- Serve in individual bowls with chicken and roasted vegetables atop mushroom orzo risotto.
Asian Barbecue Sesame Salmon with Noodles and Veggies

Sauce:
- 1/2 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 1 teaspoon chili garlic sauce (optional)
- 1 tablespoon toasted sesame oil
- 2 tablespoons barbecue sauce
- 2 tablespoons water
- 2 teaspoons cornstarch
- 1 1/2 pounds salmon (4 filets)
- 12 ounces stir-fry (pad thai) rice noodles
- 1 tablespoon toasted sesame oil
- 1 pound white mushrooms, sliced
- 1 cup sugar snap peas
- 1 large broccoli head, cut into bite-size florets
- 2-3 green onions, thinly sliced, for garnish
- sesame seeds, for garnish
- Preheat oven to 400 F.
- In small saucepan, whisk soy sauce; brown sugar; rice vinegar; garlic; ginger; chili garlic sauce, if desired; sesame oil; and barbecue sauce. Bring to boil over high heat then reduce heat to simmer.
- In small bowl, whisk water and cornstarch. Pour into pan and cook on low, whisking often, until sauce thickens, 3-5 minutes. Remove from heat and set aside.
- Pour 3 tablespoons sauce into small bowl. Brush salmon filets with reserved sauce and place on baking sheet. Bake 15 minutes, or until salmon is flaky. Discard small bowl sauce if any remains.
- Cook stir-fry noodles according to package directions. Drain, rinse and set aside.
- Heat large skillet over medium heat. Add sesame oil. Add mushrooms, snap peas and broccoli. Cook, stirring often, until veggies are tender-crisp, 7-8 minutes. Add noodles and remaining sauce from pan; toss to combine.
- To serve, divide noodles, veggies and salmon between plates.
- Top with sliced green onions and sesame seeds.

- 1/2 large white onion, chopped

- 1 tablespoon tomato paste

Cook 1-2 minutes, stirring constantly, then stir in crushed tomatoes, whole tomatoes, water, kidney beans and jackfruit; bring to boil then reduce heat to medium-low. Simmer 25-30 minutes. Stir in peanut butter and simmer 5 minutes.
- Serve with cornbread, tortilla chips or cinnamon rolls, if desired.
Peanut Granola Bars
Prep time: 10 minutes
Cook time: 6 minutes, plus 30-45 minutes cooling time
Servings: 12-14
- 1/2 cup honey
- 6 tablespoons unsalted butter
- 2 tablespoons creamy peanut butter
- 1/2 cup light brown sugar, firmly packed
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 2 cups rolled oats (quick or regular)
- 1 cup bran flakes
- 1 cup sweetened coconut flakes
- 1 cup dried fruit (raisins, blueberries or cranberries)
- 1 cup roasted peanuts, chopped
- In large, shallow, microwavable dish, combine honey, butter, peanut butter, brown sugar, vanilla and salt. Microwave at 50% power 2 minutes then whisk to combine and microwave at 50% power 2 minutes.
- Add oats, bran flakes, coconut flakes, dried fruit and peanuts; stir to combine. Microwave on high 1 minute. Stir and microwave 30 seconds.
- Press mixture into 13-by-9-inch baking dish lined with parchment or wax paper with some extra hanging over edges to easily lift bars out. Use bottom of glass wrapped with plastic wrap to press granola mixture firmly into pan. Allow to cool completely 30-45 minutes. Cut into 12-14 bars.

- 1/2 cup creamy natural peanut butter
- 3 tablespoons sweet red chili sauce
- 1 tablespoon apple cider vinegar

- 1/8-1/4 cup hot water (optional)
- chopped unsalted roasted peanuts (optional)
- 2 tablespoons olive oil or avocado oil
- 1 1/2 pounds boneless skinless chicken breasts, diced into 1-inch cubes
- 1 tablespoon soy sauce
- 3/4 cup peanut sauce
- cooked brown rice
- assorted bell peppers, sliced
- chopped unsalted roasted peanuts (optional)
- To make peanut sauce: In small glass bowl, whisk peanut butter, sweet red chili sauce, apple cider vinegar, soy sauce and honey until blended smoothly.
- Thin sauce with hot water to desired consistency. Garnish with chopped unsalted roasted peanuts, if desired.
- To make chicken: In large skillet over medium-high heat, drizzle oil. Add diced chicken then pour soy sauce over top. Saute about 10-12 minutes until chicken is fully cooked.
- Serve with peanut sauce, brown rice and colorful sliced veggies. Garnish with chopped unsalted roasted peanuts, if desired.

For an 8-12-pound bird, aim for 2.5-3.5 hours; 12-16 pounds for 3.5-4 hours; 16-20 pounds for 4-4.5 hours, and so on. The key is bringing the turkey to a temperature reading of 170 F.
4. Let it rest. Instead of pulling the turkey out of the oven and immediately carving it, give it a chance to rest for 20-30 minutes, which allows the juices to soak into the meat and moisten it up.

- Form into ball. Wrap in plastic wrap.
- Chill at least 2-3 hours to allow flavors to blend.
- Just before serving, roll in remaining chopped beef until completely coated.

- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup C&H® Dark Brown Sugar
- 1 large egg
- 1/4 cup molasses
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- royal icing
- In large bowl of electric mixer fitted with paddle attachment, cream butter and sugar about 2 minutes on medium speed until light and fluffy. Add egg and molasses; mix until well incorporated.
- In separate bowl, whisk flour, baking soda, salt, ginger, cinnamon, nutmeg and cloves. Use mixer on low speed to add to butter mixture until combined and dough is formed.
- Divide dough in half, wrap with plastic film and refrigerate at least 1 hour.
- Preheat oven to 350 F and line baking sheets with parchment paper.
- Flour clean work surface. Roll dough 1/8-1/4 inches thick. Cut out shapes with desired cookie cutters.
- Transfer cookies to lined baking sheets and bake 10-12 minutes, or until firm. Let cookies cool on baking sheets 2-3 minutes then transfer to cooling rack. Cool completely.
- Decorate cookies with royal icing.

Orange Hollandaise:
- 2 egg yolks
- 1 orange, juice only
- 1/2 teaspoon kosher salt
- 1/2 cup unsalted butter, melted
- water
- 1 tablespoon white vinegar
- 8 eggs
- 1/2 cup butter, softened
- 6 French baguette slices, 3/4-inch thick each
- 6 thick slices ham
- 1/2 cup orange marmalade
- orange zest, for garnish
- To make Orange Hollandaise: In small bowl, blend egg yolks, orange juice and salt until combined. Gradually add melted butter into egg mixture while blending. Set aside.
- In skillet, add water halfway up sides. Add vinegar. Bring to simmer. Break eggs into water to poach. Cook 3-4 minutes until whites are cooked through and yolks are still runny. Using slotted spoon, remove eggs and drain on paper towels.
- Spread butter on one side of bread slices. Place bread in skillet and cook until golden brown. Add ham to same skillet and cook until browned on both sides.
- To assemble, spread bread slices with orange marmalade. Top each with one slice cooked ham and one poached egg. Pour hollandaise over eggs and garnish with orange zest.

- 1 cup white flour

- Preheat oven to 350 F.
- To make filling: In medium bowl, add apples, flour, sugar, cinnamon, cloves and lemon juice. Toss to evenly coat. Spread evenly in 8-by-8-inch baking dish.
- To make topping: In medium bowl, add oats, flour, brown sugars, baking powder, cinnamon, melted butter and salt. Fork mixture to create crumbles. Pour crumble topping over apple mixture.
- Bake 30-40 minutes, or until golden brown. Let stand 10 minutes before serving.

Oatmeal Cream Cookie Sandwiches

Oatmeal Cookies:
- 1 cup unsalted butter, softened
- 1 cup dark brown sugar
- 1/2 cup light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 3 cups rolled old-fashioned oats
Vanilla Bean Cream Filling:
- 3/4 cup unsalted butter, softened
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon heavy cream
- Heat oven to 350 F. Line baking sheet with parchment paper and set aside.
- To make oatmeal cookies: with a mixer, cream butter, dark brown sugar and light brown sugar on medium-high speed until creamy. Add eggs and vanilla extract; mix until combined.
- In medium bowl, whisk flour, baking soda, salt, cinnamon, cloves and oats. Gradually add oat mixture to wet ingredients, mixing until just combined.
- Spoon dough into hands and roll into balls. Flatten balls and place onto prepared baking sheet, leaving about 2 inches between each cookie. Bake 10-12 minutes, or until lightly golden brown around edges. Move cookies to wire rack to cool completely.
- To make vanilla bean cream filling: with a mixer, cream butter on medium-high speed until light and fluffy. Gradually add powdered sugar, vanilla extract and heavy cream; mix until combined.
- Pipe or spoon a large dollop of filling on bottom sides of half the cookies; top each with second cookie.

Vanilla Bean Creme Filling:
- 3/4 cup unsalted butter, room temperature
- 2 1/2 cups Domino Confectioners’ Sugar
- 1 teaspoon vanilla bean paste or vanilla extract
- 1 tablespoon heavy cream
- To make Oatmeal Cookies: Preheat oven to 350 F. Line baking sheet with parchment paper and set aside.
- In bowl of stand mixer fitted with paddle attachment or in large bowl with electric mixer, cream butter, brown sugar and golden sugar on medium-high speed until light and creamy, about 2 minutes. Add eggs and vanilla; mix until combined, scraping down sides of bowl as needed. Set aside.
- In medium bowl, whisk flour, baking soda, salt, cinnamon, cloves and oats. With mixer on low, slowly add oat mixture to wet ingredients, mixing until just combined.
- Using large cookie scoop, scoop dough onto prepared baking sheet, leaving about 2 1/2 inches between each cookie. Bake 12-14 minutes, or until lightly golden brown around edges. Allow cookies to sit on pan about 3 minutes before removing to wire rack to cool completely.
- To make Vanilla Bean Creme Filling: In bowl of stand mixer fitted with paddle attachment or in large bowl with electric mixer, beat butter on medium-high speed until light and fluffy, about 5 minutes.
- Turn speed to low and gradually add confectioners’ sugar, mixing until completely incorporated. Add vanilla bean paste and heavy cream; mix until combined.
- Turn mixer to medium-high speed and beat 3-5 minutes until buttercream is fluffy. If necessary, add cream 1 teaspoon at a time until desired consistency.
- To fill and assemble, pipe or spread about 1 1/2 tablespoons Vanilla Bean Creme Filling on bottom halves of Oatmeal Cookies; top with remaining halves.

Garlic Shrimp with Jasmine Rice

Ponzu Rice:
- 1 cup jasmine rice
- 1/2 cup Mizkan Ponzu Citrus Seasoned Soy Sauce
- 1 1/2 cups water
Stir Fry:
- 2 tablespoons Mizkan Organic Rice Vinegar
- 1/4 cup Mizkan Ponzu Citrus Seasoned Soy Sauce
- 1/4 cup brown sugar
- 1 teaspoon sesame oil
- 1/2 cup vegetable stock
- 1 teaspoon cornstarch
- 2 tablespoons oil
- 1 pound (about 21-25) raw shrimp, peeled and deveined
- 1/4 cup red onion, large chopped
- 2 teaspoons garlic, minced
- 1 cup red bell pepper, chopped
- 1/2 cup carrots, shredded
- 1 cup sugar-snap peas
- 1 cup broccoli florets
- 2 scallions, sliced
- 2 teaspoons sesame seeds
- To make ponzu rice: In small saucepan, combine jasmine rice, ponzu and water; cook according to rice directions.
- To make stir fry: In bowl, whisk rice vinegar, seasoned soy sauce, brown sugar, sesame oil, vegetable stock and cornstarch to combine. Set aside.
- In large saute pan over high heat, heat oil; add shrimp and cook 2-3 minutes until pink.
- Add red onion and cook 1 minute. Add garlic, red bell peppers, carrots, snap peas and broccoli; cook 3 minutes until tender.
- Add reserved sauce and cook 2 minutes until thickened.
- Divide rice among six bowls and top with shrimp stir fry. Garnish with scallions and sesame seeds; serve.
Miso-Glazed Salmon Bento
Prep time: 20 minutes, plus marinating
Cook time: 6 minutes
Servings: 2
- 1/4 cup miso paste
- 2 tablespoons Mizkan Mirin Sweet Cooking Seasoning
- 1 tablespoon sake
- 2 skinless center-cut salmon fillets (6 ounces each)
- 1 cup thinly sliced seedless cucumbers
- 1 teaspoon kosher salt
- 2 tablespoons Mizkan Seasoned Rice Vinegar
- 2 cups cooked short-grain sushi rice, cooled
- 1 tablespoon thinly sliced green onions
- 1 teaspoon toasted sesame seeds
- 6 cherry tomatoes
- 2 lemon wedges
- In medium bowl, whisk miso paste, mirin and sake. Add salmon, turning to coat evenly. Marinate 10-30 minutes. Discard remaining marinade.
- Heat large nonstick pan on medium-high heat. Cook fish 2-3 minutes on each side, or until internal temperature reaches 145 F. Cut each fillet into four small pieces.
- In strainer or colander, toss cucumbers with salt; let stand 5 minutes. Squeeze out excess liquid; toss with rice vinegar.
- Pack each bento box evenly with rice, pickled cucumbers and salmon. Sprinkle with green onions and sesame seeds. Garnish with tomatoes and lemons.
Substitutions: If ingredients are unavailable or difficult to find: Use 1/4 cup soy sauce to glaze salmon in place of miso paste; use low-carb rice such as cauliflower or broccoli rice in place of sushi rice.
Tip: To prevent sogginess, separate wet components like cucumber pickles by using aluminum foil or silicone muffin liners inside bento box.
Simple Teriyaki Bowl
Prep time: 10 minutes
Cook time: 35 minutes

- 1 large boneless chicken thigh
- 2 tablespoons soy sauce
- 3 tablespoons Mizkan Mirin
- 3 tablespoons Mizkan Natural Rice Vinegar
- 1/2 scallion
- 1 tablespoon cooking oil
- 2 servings hot, cooked rice
- 1 teaspoon dried seaweed sheet (nori), sliced (optional)
- Slice chicken thigh meat into bite-size pieces. In bowl, mix soy sauce, mirin and rice vinegar; marinate chicken pieces in seasoning mix 10 minutes.
- Cut scallion into 2-inch pieces. In frying pan, saute until soft, about 1 minute. Set aside.
- In frying pan, heat oil and cook chicken until browned.
- When meat is browned, pour marinade over chicken and continue cooking on low heat until sauce thickens.
- Place hot, cooked rice in individual bowls. Spread sliced dried seaweed pieces over rice, if desired, and top with chicken and scallions to serve.

- 1 pound (1 package) Omaha Steaks Applewood Smoked Steak-Cut Bacon
- 1 tablespoon fresh ground black pepper
- 1 cup packed light brown sugar
- Heat oven to 375° F.
- Place wire rack on foil-lined baking sheet. Place strips of bacon on wire rack and sprinkle with black pepper. Lightly pat brown sugar on top of bacon in thin layer.
- Place baking sheet on center rack in oven and bake 25 minutes, or until brown sugar melts and bacon is crisp.
- Remove from oven and cool 10 minutes. Using tongs, transfer bacon to parchment-lined baking sheet and cool to room temperature.
- Store in airtight container up to 3 days at room temperature.
Quick Pickles
Prep time: 10 minutes
Cook time: 5 minutes
Yield: 1 1/2 cups
- 1/2 cup white vinegar
- 2 teaspoons sugar
- 1 teaspoon mustard seed
- 1 teaspoon salt
- 1 clove garlic, crushed
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon dried dill, chopped, or 2 tablespoons fresh dill leaves
- 1 bay leaf
- 4 cucumbers, cut into angled 1-inch slices
- Heat small saucepan over medium high heat. Add vinegar, sugar, mustard seed, salt, garlic and red pepper flakes, if desired; cook until mixture begins to simmer and sugar dissolves. Remove from heat.
- In heat-proof bowl, toss dill, bay leaf and sliced cucumbers. Pour simmering liquid over cucumbers and stir to evenly coat. Cool to room temperature or chill before serving.
Note: Pickles may be made up to 3 days in advance. Refrigerate in covered non-reactive container.
Connecticut-Style Shrimp
Prep time: 5 minutes
Cook time: 10 minutes

- 4 tablespoons unsalted butter
- 2 tablespoons chives
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 12 large, cleaned, uncooked Omaha Steaks Wild Argentinian Red Shrimp
- Heat medium skillet to medium-high heat. Add butter; cook until melted.
- Add chives, salt, pepper and shrimp to pan. Cook 2 minutes, turn shrimp and cook 2 minutes, or until shrimp is opaque and cooked through. Remove from heat and serve.
Dry-Brined New York Strips with Grilled Brown Butter Balsamic Onions
Prep time: 1-12 hours
Cook time: 30-40 minutes
Servings: 4
Dry Brine:
- 4 tablespoons Kosher salt
- 1 tablespoon coarse ground pepper
- 4 (11-ounce) Omaha Steaks Private Reserve Boneless New York Strips, thawed
Butter and Balsamic:
- 4 tablespoons salted butter
- 2 tablespoons balsamic vinegar
- 2 teaspoons fresh thyme
Grilled Onions:
- 2 large sweet onions
- 4 wooden skewers, soaked
- 1 tablespoon olive oil
- salt, to taste
- pepper, to taste
- To make dry brine: Combine salt and pepper; season steaks generously on all sides. Place steaks on elevated rack on baking sheet and refrigerate at least 1 hour or overnight.
- To make butter and balsamic: Heat small skillet to medium high heat. Add butter and cook until butter begins to brown and smell nutty. Remove from heat and add balsamic vinegar and thyme. Set aside.
- To make grilled onions: Peel off outer layers of onions. Slice into 1/2-inch slices. Lay onions on flat surface. Push skewers through centers of onions; two onion slices per skewer. Brush onions with olive oil and season with salt and pepper, to taste.
- To cook steaks and onions: Make two-zone fire on charcoal grill with coals on one side and no coals on the other.
- Place onions on cool side of grill; flip and rotate every 10 minutes until golden brown, approximately 25-30 minutes. Total time will depend on how hot coals are and how close onions are to fire. When onions are golden and tender, brush with brown butter balsamic mixture.
- On hot side of grill, during last 15 minutes of cook time for onions, cook steaks to desired temperature. When steaks are 5 F from desired temperature, remove from grill and let rest 5-10 minutes.
- Remove onions from grill. Carefully remove onions from skewers and place in serving dish. Top with remaining brown butter balsamic mixture and serve with steaks.

Chicken:
- 8 boneless, skinless chicken thighs
- 2 cups buttermilk
- 2 tablespoons kosher salt, divided
- 3/4 teaspoon ground black pepper, divided
- 1/4 teaspoon rosemary, chopped
- 2 tablespoons orange blossom honey
- 2 cups all-purpose flour
- 2 teaspoons cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons paprika
- 1/2 teaspoon ancho chile powder
- vegetable oil, as needed
Waffles:
- 1 1/2 cups all-purpose flour
- 2 teaspoons orange blossom honey
- 1 teaspoon orange zest
- 1 teaspoon kosher salt
- 1 teaspoon baking powder
- 1 1/4 cups whole milk
- 2 large eggs
- 1/4 cup fresh chives, chopped
- 3/4 cup sharp cheddar cheese, shredded
- honey
- To make chicken: Rinse chicken thighs and pat dry with paper towels; place in large bowl.
- In separate bowl, combine buttermilk, 1 tablespoon salt, 1/4 teaspoon black pepper, rosemary and honey. Pour buttermilk mixture over chicken; cover and let marinate 8 hours or overnight.
- In separate mixing bowl, combine flour, remaining salt, remaining pepper, cayenne, garlic powder, onion powder, paprika and ancho chile powder; stir.
- Remove each piece of chicken from buttermilk, shake to remove excess liquid and dredge in flour mixture. Shake off excess.
- In deep fryer, heat oil to 375° F. Fry chicken until internal temperature reaches 175° F or juices run clear, approximately 5 minutes per thigh.
- Drain on paper towels.
- To make waffles: In large mixing bowl, mix flour, honey, orange zest, salt, baking powder, milk, eggs, chives and cheese until combined.
- Use waffle maker to cook four waffles in batches.
- Place chicken on waffles and drizzle with honey.

- 1 pound red or white potatoes, scrubbed and cut into 1/2-inch pieces
- water
- 1/2 small onion, coarsely chopped (about 1/2 cup)
- nonstick cooking spray
- 1/2 teaspoon salt, divided
- 1/4 teaspoon pepper
- 1 cup reduced-fat and reduced-sodium, chopped, cooked ham (about 4 ounces)
- 1 cup (4 ounces) shredded Swiss or cheddar cheese
- 4 eggs
- 1 1/2 cups skim milk
- 1 tablespoon mustard
- Heat oven to 350° F.
- In large saucepan, cover potato pieces with enough water to just submerge. Bring to boil. Reduce heat; simmer, covered, 5 minutes. Add onion. Return to simmer, covered, about 5 minutes, or until potatoes are just tender. Drain well. Cool slightly.
- Coat 8-by-8-by-2-inch baking dish with nonstick cooking spray. Place potato-onion mixture in baking dish. Sprinkle with 1/4 teaspoon salt and pepper. Gently stir to combine. Sprinkle ham and cheese on top.
- In medium bowl, lightly beat eggs. Whisk in milk, mustard and remaining salt. Pour over layers in baking dish. Bake, uncovered, 40-45 minutes, or until knife inserted near center comes out clean. Let stand 5 minutes before serving.

- Nonstick cooking spray
- 2 cups all-purpose flour, spooned and leveled
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 10 tablespoons unsalted butter, at room temperature
- 1 3/4 cups packed C&H Golden Brown Sugar
- 1/4 cup C&H Granulated Sugar
- 2 large eggs, at room temperature
- 1 1/2 teaspoons vanilla
- 1 cup full-fat Greek yogurt
- C&H Confectioners’ Sugar, for dusting
- Heat oven to 350° F.
- Grease 10-cup bundt pan with nonstick cooking spray. Set aside.
- In medium bowl, whisk flour, baking powder, baking soda and salt.
- In bowl of stand mixer fitted with paddle attachment, beat butter, brown sugar and granulated sugar until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add vanilla and mix on low speed.
- With mixer on low, add flour mixture in three additions, alternating with yogurt. Begin and end with flour mixture. Mix until just combined.
- Pour batter into prepared bundt pan and use offset spatula to level batter.
- Bake 50-55 minutes, or until cake is golden brown and toothpick inserted in center of cake comes out clean. If cake browns too quickly while baking, cover with foil after 35 minutes.
- Remove from oven and cool on baking rack 20 minutes. Invert pan onto baking rack and gently tap bottom of pan to release cake.
- Cool completely before dusting with confectioners’ sugar.

Bunny Oatmeal

- 1/3 cup instant oats
- 3/4 cup fat-free milk
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla
- 1 teaspoon brown sugar
- 2/3 small banana
- 2 fresh blueberries
- 1/2 small strawberry
- chocolate syrup (optional)
- 1 glass milk (8 ounces)
- In microwave-safe bowl, stir oats, milk, cinnamon, vanilla and brown sugar. Microwave on high 30-60 seconds and stir.
- Cut banana in half crosswise. Cut 1 1/8-inch thick coin slice from flat ends of each banana half. Place two banana slices in upper third of oatmeal bowl, side by side, to make eyes. Top each banana slice with one blueberry.
- Place remaining banana halves at top of bowl, hanging out, to create ears.
- Place strawberry in middle of bowl to make nose then drizzle chocolate, if desired, to make mouth and whiskers.
- Serve with 8-ounce glass of real milk for added nutrition.

- Heat oven to 375° F. Lightly coat 8-by-8-inch casserole dish with nonstick cooking spray. In bottom of casserole dish, arrange ham, potatoes, spinach and cheese.
- In large bowl, beat eggs and milk. Pour mixture over ingredients in casserole dish. Bake 25-30 minutes, or until lightly browned and puffed.
- Serve with 8-ounce glass of real milk for added nutrition.
