Lemon Honey Vinaigrette:
- 6 tablespoons olive oil
- 1/4 cup lemon juice
- 2 tablespoons Dijon mustard
- 2 1/2 tablespoons honey
- salt, to taste
- pepper, to taste
- 3 medium sweetpotatoes, peeled and sliced
- 2 tablespoons olive oil
- salt, to taste
- pepper, to taste
- 4 cups spring salad mix
- 1 cup fresh blueberries
- 1/3 cup chopped walnuts
- 1/4 cup blue cheese crumbles
- lemon wedges, for garnish (optional)
- To make lemon honey vinaigrette: In bowl, mix olive oil, lemon juice, Dijon mustard and honey. Season with salt and pepper, to taste. Refrigerate until ready to serve.
- Preheat grill to medium heat. Drizzle sweetpotatoes with olive oil and season with salt and pepper, to taste. Grill sliced sweetpotatoes on each side about 5 minutes, or until sweetpotatoes are tender and slightly charred. Remove from grill and let cool.
- To arrange salad, spread spring salad mix onto large platter and top with grilled sweetpotatoes, blueberries, walnuts and blue cheese crumbles.
- Top with lemon honey vinaigrette and garnish with lemon wedges, if desired.

- 2 cloves garlic, minced, divided
- 1/4 cup parsley, chopped

- Roll two cheese balls in seed mixture, two in herb mixture and two in cranberry mixture.

- To make lemon curd: In medium saucepan, stir sugar and cornstarch. Stir in lemon juice, lemon zest, water and salt. Cook over medium heat, stirring constantly, until thickened. Remove from heat and gradually stir in three egg yolks; mix well until combined. Stir in remaining egg yolks. Return to heat and cook 2 minutes, stirring constantly. Remove from heat.
- Stir in butter; mix until incorporated. Cover with plastic wrap, touching surface of lemon curd to prevent curd forming skin. Refrigerate until completely cool.
- To make whipped cream: In large bowl, beat cream, sugar and vanilla until soft peaks form. Do not overbeat.
- To make trifle: Mix blueberry jam with 12 ounces fresh blueberries. Place one layer cubed pound cake in bottom of trifle dish. Top with layer of blueberries. Add dollops of lemon curd and whipped cream. Repeat layering ending with whipped cream.
- Decorate trifle with lemon slices, fresh blueberries and mint.

Easy Brunch Quiche

- 1 package (10 ounces) frozen broccoli with cheese
- 12 slices bacon, chopped
- 1/2 cup green onions, sliced
- 1 cup mushrooms, sliced
- 4 eggs
- 1 cup milk
- 1 1/2 cups shredded cheese, divided
- 2 frozen deep dish pie shells (9 inches each)
- Heat oven to 350 F.
- In medium bowl, add broccoli and cheese contents from package. Microwave 5 minutes, or until cheese is saucy. Set aside.
- In skillet, cook chopped bacon 4 minutes. Add green onions; cook 2 minutes. Add mushrooms; cook 4 minutes, or until bacon is completely cooked and mushrooms are tender. Drain onto paper towel over plate. Set aside.
- In medium bowl, whisk eggs and milk until combined. Add broccoli and cheese mixture. Add 1 cup cheese. Stir to combine. Set aside.
- In pie shells, divide drained bacon mixture evenly. Divide broccoli mixture evenly and pour over bacon mixture. Sprinkle remaining cheese over both pies.
- Bake 40 minutes.
- Cool at least 12 minutes before serving.
Note: To keep edges of crust from burning, place aluminum foil over pies for first 20 minutes of cook time. Remove after 20 minutes and allow to cook uncovered until completed.

- 1/3 cup unsweetened shredded coconut
- 1/3 cup all-purpose flour
- 2 tablespoons brown sugar
- 3 tablespoons unsalted butter, melted
- 1/4 cup honey, plus additional for drizzling, divided
- 1/2 teaspoon cinnamon
- 1 teaspoon pure vanilla extract
- 1pinch salt
- 1/2 cup vanilla Greek yogurt
- 1/2 lemon, juice only
- 3 strawberries, sliced
- 1/4 cup blueberries
- 1/4 cup blackberries
- Preheat oven to 350 F.
- In mixing bowl, mix egg, rolled oats, coconut, flour, brown sugar, butter, 1/4 cup honey, cinnamon, vanilla and salt until incorporated.
- Evenly spread mixture in greased springform pan and bake 20 minutes, or until golden brown.
- Remove pan from oven and cool.
- In bowl, mix Greek yogurt with lemon juice.
- Once oatmeal crust is fully cooked, use spatula to spread lemon-yogurt mixture on top.
- Top with sliced strawberries, blackberries and blueberries. Drizzle with additional honey.
Grilled Peach Flatbread with Goat Cheese

- 2 large naan or flatbreads
- 2 fresh peaches, sliced
- 1/4 cup goat cheese crumbles
- 1-2 tablespoons balsamic vinegar

- 12 ounces cream cheese, cut into cubes
- 3/4 cup sugar
- 1 cup sour cream
- 3/4 cup half-and-half
- 2 teaspoons vanilla
- 1 1/4 teaspoons lemon juice, divided
- 1 dash salt
- 1/3 cup blueberry, raspberry, cherry, strawberry, peach or apricot fruit spread
- In large mixer bowl of electric mixer, beat cream cheese and sugar on medium speed until fluffy. Add sour cream, half-and-half, vanilla, 1 teaspoon lemon juice and salt. Beat on low speed until combined then beat on medium speed until smooth. Cover and refrigerate 2-24 hours, or until cold.
- Pour cream cheese mixture into 1 1/2-quart ice cream freezer. Freeze according to manufacturer’s directions.
- In small bowl, stir fruit spread and remaining lemon juice.
- Spoon about one-third of ice cream into 2-quart food storage container. Spoon about half of fruit spread mixture in dollops over ice cream. Repeat layers. Top with remaining ice cream. Cover and freeze 4-24 hours.
- To serve, scoop ice cream into dessert dishes.

- 4 cups granola mixture
- 1/2 cup butter, softened
- 4 1/2 tablespoons honey
- nonstick cooking spray
Filling:

- To make filling: Using mixer, combine yogurt, cream cheese, sugar, vanilla extract and gelatin until whipped completely.

- 1/2 cup red bell pepper, diced

- 12 large eggs
- 1 cup cheddar cheese, shredded
- 1 teaspoon salt

In small bowl, combine hoisin sauce, soy sauce, honey, fish sauce, garlic, 1 teaspoon rice vinegar and five-spice powder; pour over steak. Cover and marinate in fridge at least 2 hours, or overnight.
- In small pot over medium heat, heat remaining rice vinegar, sugar and salt. Cook and stir until sugar and salt dissolve. Remove from heat and let cool.
- Place carrots in deep plate or storage container. Pour cooled pickling liquid over carrots. Set aside to marinate.
- Remove steak from marinade and pat dry. Reserve marinade.
- Heat oven to 325 F.
- Heat heavy-bottomed pan over high heat and add oil. Once oil begins to smoke, add steak. Sear both sides, about 1 minute per side. Lower heat to medium.
- Add reserved marinade and water to pan. Cook, covered, 3 minutes, removing lid to flip meat occasionally. Remove lid and let sauce reduce 1 minute, or until slightly thickened.
- Transfer steak and sauce to large plate and let rest 10 minutes before slicing.
- Toast baguettes in oven 5 minutes. Let cool 5-10 minutes.
- Slice baguettes along middle without cutting through.
- Slice steak into thin pieces.
- Spread mayonnaise on baguettes and add 1-2 lettuce leaves to each. Layer steak on lettuce leaves followed by cilantro, cucumbers and pickled carrots. Slice baguette into two sandwiches.

- ice water
- 2 cups fresh water
- 1 quart vegetable broth
- 5 ounces (3 cups) broccoli florets, cut into bite-size pieces
- 10 ounces (4 cups) spiralized zucchini
- 5 ounces (5 packed cups) baby spinach
- 1 tablespoon, plus 2 teaspoons, white miso paste
- 1/4 teaspoon kosher salt, plus additional, to taste, divided
- 1 tablespoon toasted sesame oil, plus additional for garnish, to taste
- 2 cups mung bean sprouts, for garnish
- chili garlic sauce, for garnish
- 1 cup shredded raw carrot, for garnish
- 4 tablespoons crushed peanuts, for garnish
- In large saucepan of gently boiling water, cook eggs 7 minutes then transfer to bowl of ice water.
- Drain cooking water from saucepan then add broth and fresh water. Bring to simmer over medium-high heat. Add broccoli and cook 3 minutes then add zucchini and spinach. Continue cooking until spinach is wilted and zucchini is crisp-tender, 2-3 minutes. Remove from heat.
- Ladle about 1/2 cup broth from saucepan into small bowl. Add miso paste and 1/4 teaspoon salt; whisk to combine. Return mixture to soup, add sesame oil and stir to combine. Add additional salt, to taste. Cover to keep warm.
- Remove eggs from ice bath; peel then cut in half lengthwise. Ladle 2 cups soup into four serving bowls. Top each portion with one egg and 1/2 cup sprouts. Drizzle with chili garlic sauce and additional sesame oil, to taste. Top each serving with 1/4 cup shredded carrot and 1 tablespoon crushed peanuts.

- 5 slices (4 ounces) no-sugar- added bacon
- 5 large eggs
- 3 ounces cream cheese
- 2 tablespoons feta cheese
- 1 tablespoon hot sauce
- 1/2 teaspoon kosher salt, plus additional, to taste, divided
- 4 1/2 ounces broccolini (5-7 stalks), stalks and florets thinly sliced
- 1 tablespoon water
- 1 1/2 cups baby arugula
- 1 tablespoon lemon juice
- 1 tablespoon extra-virgin olive oil
- freshly ground black pepper, to taste
- 1 cup fresh blueberries
- Preheat oven to 350 F. Lightly coat eight silicone egg-bite mold cups or eight cups of standard nonstick muffin tin with nonstick cooking spray and set in large baking pan.
- In large nonstick skillet, cook bacon over medium heat until golden, about 5 minutes per side. Transfer to paper towel-lined plate to drain. Chop bacon into small pieces.
- In blender, puree eggs, cream cheese, feta cheese, hot sauce and 1/4 teaspoon salt until smooth.
- Pour off all but 1 tablespoon fat from skillet. Add broccolini, water and 1/4 teaspoon salt. Cook over medium-high heat, stirring frequently, until broccolini is tender, 3-5 minutes. Remove from heat.
- Fill each egg cup with 1 teaspoon bacon and 1 tablespoon broccolini. Top with egg mixture, filling cups to about 1/8 inch from top. Add just enough boiled water to baking pan to come halfway up sides of molds.
- Bake egg bites until set, 20-25 minutes. Take pan from oven then take molds from water bath. Let egg bites cool then remove from molds.
- In medium bowl, toss arugula, lemon juice, oil and salt and pepper, to taste. Place 3/4 cup salad, two egg bites and 1/4 cup blueberries on four plates and serve.

- 1 teaspoon flaky sea salt
- Set oven racks in upper- and lower-third positions. Preheat oven to 350 F. Line two cookie sheets with parchment paper.
- In medium bowl, use handheld electric mixer on medium speed to beat peanut butter, stevia, baking soda and salt, scraping down sides if needed, until well combined, about 1 minute. Reduce speed to low, add egg and vanilla extract; beat until combined.
- Shape dough into 24 balls (about 1 tablespoon each) and place 2 inches apart on prepared cookie sheets. Using tines of fork, carefully flatten each ball, creating crisscross pattern.
- Bake, rotating cookie sheets from top to bottom and back to front halfway through, until edges begin to brown and cookies are set, 7-9 minutes. Cookies should not be browned. Let cool 10 minutes on cookie sheets then carefully transfer to cooling rack to cool completely.
- In small microwave-safe bowl, add chocolate chips and microwave on high in 20-second increments, stirring after each, until melted, about 1 minute.
- Dip dry fork into chocolate then drizzle over cookies. Sprinkle with sea salt.

- 8 egg yolks
- 1 cup raw honey
- 1 tablespoon coconut flour
- 3 cans (13 2/3 ounces each) full-fat coconut milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon lemon zest
Sugar Cookie Crust:
- 1/2 cup coconut oil, plus additional for greasing
- 1/2 cup palm shortening
- 1 cup coconut palm sugar
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1/4 teaspoon salt
- 3 egg yolks
- 1⁄2 teaspoon vanilla extract
- 1 cup blanched almond flour
- 1⁄4 cup coconut flour
- 2 tablespoons arrowroot starch
Toppings:
- 2 kiwis, peeled and sliced
- 1 mango, peeled, pitted and sliced into 1/2-inch strips
- 1/2 cup raspberries
- 1/2 cup blackberries
- 1/2 cup blueberries
- 1/2 cup red grapes
- 1 cup strawberries, thinly sliced
- fresh mint leaves, for garnish
- To make custard: In saucepan, whisk egg yolks and honey until smooth. Mix in coconut flour.
- In medium saucepan over medium heat, combine coconut milk, vanilla extract and lemon zest; bring to boil then remove from heat.
- Pour hot milk mixture into egg yolk mixture, stirring while pouring. Over low heat, simmer 5 minutes, stirring constantly.
- Remove from heat and let cool, continuing to stir occasionally. Once cooled to room temperature, pour into individual custard cups. Chill in refrigerator 30 minutes, or until serving.
- To make crust: Heat oven to 350° F. Line bottom of pie pan with parchment paper and grease with coconut oil.
- In large mixing bowl using electric mixer on high, beat coconut oil and palm shortening 30 seconds. Add coconut palm sugar, baking soda, cream of tartar and salt; beat until combined, scraping sides of bowl occasionally. Beat in egg yolks and vanilla until combined. Beat in almond flour, coconut flour and starch. Chill dough in refrigerator 15 minutes.
- Press chilled cookie dough into bottom of pie pan and 2 inches up sides. Bake 12 minutes, or until crust is golden and browned on top and edges. Remove from oven and cool 10 minutes. Place cooled crust in refrigerator 30 minutes or overnight before assembling.
- To assemble fruit tarts: Spread custard over chilled crust. Decorate top in circular pattern with kiwis, mango strips, raspberries, blackberries, blueberries, grapes and strawberries.
- Before serving, chill at least 30 minutes or freeze 1 hour to help keep toppings in place.
- Remove from freezer and set out at room temperature 20 minutes before slicing. Garnish with mint leaves.

- 3 tablespoons coconut oil, melted
Caramel Layer:
- 1/2 cup coconut palm sugar

- 2 tablespoons coconut oil
- 1 pinch sea salt
- 1 tablespoon vanilla extract
- 1/2 teaspoon baking soda
Chocolate Layer:
- 2 cups stevia-sweetened chocolate chips
- 2 tablespoons coconut oil

- 1/3 cup dry roasted macadamia nuts, chopped
- coarse sea salt
- To make cookie layer: Place large skillet over medium heat. Spread pecans over skillet and toast, stirring often, 8-10 minutes until golden. Remove from heat.
- Transfer toasted pecans to food processor and pulse until fine. Add dates, almond flour, coconut flour, sea salt, sweetener and coconut oil; pulse until dough forms.
- To make caramel layer: In skillet over medium heat, combine coconut palm sugar, sweetener, coconut milk, coconut oil, sea salt and vanilla extract; bring to boil. Once boiling, decrease heat to low and cook 5 minutes, stirring often.
- Remove skillet from heat; whisk in baking soda. Return pan to low heat and cook 2 minutes, stirring often.
- Remove caramel from heat and let cool and thicken 5 minutes.
- To make chocolate layer: In double boiler, melt chocolate chips and coconut oil. Stir until mixture is smooth then remove from heat.
- To assemble salted caramel bars: Line bottom and sides of 9-by-9-inch baking pan with parchment paper, leaving some hanging over sides. Lightly rub parchment paper with coconut oil.
- Press cookie dough into bottom of pan to create even layer. Place in freezer 5 minutes to harden.
- Pour caramel over cookie layer and spread to coat evenly. Place in freezer 5 minutes. Pour chocolate over caramel and spread to cover evenly. Sprinkle with macadamia nuts and coarse salt. Place in freezer 10 minutes until chocolate sets.
- Use overhanging parchment paper to ease set mixture out of pan. Transfer to cutting board and slice into bite-size bars.
