Creamy Pumpkin Soup with Mini Pierogies

Prep time: 5 minutes
Total time: 40 minutes
Servings: 4

  • 1 large shallot
  • 1 large Honeycrisp apple (or 1 1/2 cups)
  • 5 garlic cloves
  • olive oil
  • 2 cups low-sodium chicken or vegetable broth, divided
  • 2 cups canned pumpkin puree
  • 2 teaspoons maple syrup
  • pepper, to taste
  • salt, to taste
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • 2 tablespoons heavy cream
  • fresh thyme, to taste
  • 1 box Mini 4 Cheese Medley Mrs. T's Pierogies
  1. Slice shallot, peel and cube apple and crush garlic.
  2. In pot over medium-low heat, add drizzle of olive oil and saute shallots, garlic and apple 20 minutes, covered.
  3. Let mixture slightly cool then add to blender with 1/2 cup broth and blend until fully combined.
  4. In pot, add pumpkin puree; blended shallot mixture; maple syrup; salt, to taste; pepper, to taste; nutmeg; cinnamon; remaining broth; heavy cream; and thyme, to taste. Bring to low boil then add frozen pierogies. Boil 3 minutes.

Cinnamon Chocolate Popcorn

Yield: 3 quarts

  • 3          quarts popped popcorn
  • butter-flavored nonstick cooking spray
  • 9          tablespoons powdered cocoa mix (cocoa sweetened with sugar or sugar substitute)
  • 3          teaspoons cinnamon
  1. Place popcorn in large bowl and lightly spray with nonstick cooking spray.
  2. Sprinkle cocoa mix and cinnamon on popcorn. Toss to coat evenly. Serve immediately.

  • 1          can (15 ounces) sweet corn
  • 1          can (15 ounces) black beans
  • 1          bunch cilantro
  • 3          Roma tomatoes
  • 2          jalapenos
  • 1/2       red onion
  • bell peppers (mix of green, red, orange and yellow, as desired)
  • tortilla chips, for serving

Dressing:

  • 1/3       cup olive oil
  • 1/3       cup red wine vinegar
  • 1          tablespoon honey
  • 1          tablespoon paprika
  • 1          lime, juice only
  • salt, to taste
  • pepper, to taste
  1. Drain and rinse corn and black beans; dry well.
  2. Finely chop and dice cilantro, tomatoes, jalapenos, onion and bell peppers.
  3. To make dressing: Combine olive oil, red wine vinegar, honey, paprika and lime juice. Season with salt and pepper, to taste.
  4. Mix vegetables with dressing. Serve with tortilla chips.

  5. Top with blue cheese crumbles and chopped green onion.

  • 1 pound ground beef
  • 1 package (1 ounce) taco seasoning
  • 1/4 cup water
  • 2 tablespoons minced cilantro
  • 1 can (16 ounces) refried beans, zesty salsa flavor
  • 1 jar (16 ounces) thick and chunky salsa, medium or hot
  • 2 cups guacamole
  • 1/2 cup sour cream
  • 3 packages (5 ounces each) Fresh Express Butter Supreme
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup tomatoes, chopped
  • 1 can (2 1/4 ounces) sliced black olives, drained
  • 1 package (14 ounces) tortilla chips
  1. In skillet over medium-high heat, cook beef 5 minutes, or until no longer pink. Sprinkle with taco seasoning; mix well. Add water; cook 2 minutes, or until water is absorbed. Transfer to bowl; cool to room temperature. Add cilantro; mix well.
  2. In 9-inch pie plate, evenly spread refried beans; top with seasoned ground beef and salsa. Add spoonfuls of guacamole across top of salsa then carefully spread to smooth.
  3. Place sour cream in small resealable bag; cut off corner. Pipe sour cream to create football shape on guacamole.
  4. Put pie plate in center of 15-by-18-inch tray. Arrange salad blend around pie plate. Top with cheddar cheese, tomatoes and olives. Serve with tortilla chips.

  3. In medium bowl, combine flour, paprika, garlic powder, salt and pepper.
  4. Coat both sides of wings in flour mixture then evenly space among butter cubes on baking sheet.
  5. Bake wings 30 minutes.
  6. Turn wings over and bake 15 minutes, or until crispy and fully cooked.
  7. Serve with dipping sauces and sprinkle with fresh parsley, if desired.

Asparagus, Bacon and Egg Salad

  • 6          bacon slices
  • 1          pound fresh Michigan asparagus, ends trimmed
  • 1/3       cup olive oil
  • 2          tablespoons champagne vinegar
  • 1          tablespoon honey
  • 1          tablespoon Dijon mustard
  • 1/4       teaspoon salt
  • 1/2       teaspoon black pepper
  • 4          hard-boiled eggs, peeled and quartered
  • 2/3       cup halved cherry tomatoes
  • 1/4       cup sliced green onion
  1. In skillet, cook bacon until crisp. Remove from pan. Set aside.
  2. Cut asparagus into four pieces. Add asparagus to same skillet used to cook bacon. Cook until fork tender, about 4 minutes, depending on thickness of asparagus.
  3. While asparagus cooks, prepare dressing. Whisk oil, vinegar, honey, mustard, salt and pepper. Set aside.
  4. Chop bacon.
  5. Remove asparagus from pan and place on platter. Top with chopped bacon, eggs, tomatoes and green onion. Pour dressing over top.

Chipotle Chicken Flatbread

  • 2          flatbreads
  • 2          cups shredded mozzarella cheese
  • 1          clove garlic, diced
  • 4          chicken tenders, cooked and cubed
  • 1          pint cherry tomatoes, quartered
  • salt, to taste
  • pepper, to taste
  • 1/2       cup ranch dressing
  • 1 1/2    teaspoons chipotle seasoning
  • 2          tablespoons cilantro leaves, chopped
  1. Preheat oven to 375 F.
  2. Place parchment paper on baking sheet and add flatbreads. Sprinkle cheese on flatbreads. Top with garlic, chicken and tomatoes. Season with salt and pepper, to taste. Bake 16 minutes until cheese is melted.
  3. In small bowl, mix ranch and chipotle seasoning.
  4. Drizzle ranch dressing on flatbread and sprinkle with cilantro leaves.

Jalapeno Bacon and Salsa Biscuit Bites

Yield: 16 biscuit bites

  • 1          tube biscuit dough (8 biscuits total)
  • 7          ounces grated mozzarella cheese
  • 1/4       cup jarred jalapenos, chopped
  • 8          slices cooked bacon, chopped
  • 1          cup Fresh Cravings Restaurant Style Salsa
  • nonstick cooking spray
  1. Preheat air fryer to 350-360 F.
  2. Divide each biscuit in half by pulling apart in centers. Use hands to flatten each biscuit into circles. Set aside.
  3. In bowl, mix mozzarella cheese with chopped jalapenos, bacon and salsa.
  4. Add heaping spoonful into each flattened biscuit and pinch each together tightly to form balls. Top each with small amount of salsa mixture.
  5. Spray nonstick cooking spray in air fryer and, working in batches, cook biscuit bites 6-9 minutes until golden brown.
  6. Serve warm.

Note: If air fryer access is unavailable, biscuit bites can be baked 8-10 minutes at 400 F in oven, or until golden brown.

Prune, Mozzarella and Basil Skewers

Prep time: 5 minutes
Servings: 5

  • 5          pieces prosciutto, halved lengthwise (optional)
  • 10        California Prunes
  • 10        basil leaves
  • 10        cherry-size mozzarella balls
  1. If using prosciutto, fold each half in half lengthwise so width of prune is wider than width of prosciutto. Starting at one end of prosciutto, wrap one prune; repeat with remaining prosciutto. Set aside.
  2. Wrap one basil leaf around each mozzarella ball then thread onto skewer. Thread one prune or prosciutto-wrapped prune onto each skewer.
