Yellowfin Tuna and Artichoke Pasta

Servings: 4
Artichokes:
- Cold water
- 12 small, fresh artichokes or 2 cans artichoke hearts in water
- 2 lemons
- 3 tablespoons extra-virgin olive oil
- salt, to taste
- pepper or red pepper, to taste
Pasta:
- Water
- 2 cans (5 ounces each) Genova Yellowfin Tuna in Olive Oil
- 2 tablespoons extra-virgin olive oil
- 4 tablespoons butter, cut into tabs
- 4 cloves garlic, chopped
- 1 teaspoon crushed red pepper (optional)
- salt, to taste
- 1/2 cup white wine, chicken stock or vegetable stock
- 1 pound spaghetti or linguine
- 1 lemon, juice only
- 1 cup grated Pecorino Romano cheese
- 1/4 cup chopped fresh Italian parsley, divided
- 1 small handful fresh mint, chopped, divided
- 1/4 cup toasted pistachios or pine nuts, chopped
- To make artichokes: Preheat oven to 425 F.
- Fill bowl with cold water and juice of one lemon.
- If using fresh artichokes, trim tops of artichokes and tougher outer leaves. Using vegetable peeler or small paring knife, trim stems. Once prepped, cut fresh artichokes in half. If using canned artichokes, drain well and quarter lengthwise.
- Place artichokes in lemon water.
- Let soak 2-3 minutes, drain and pat dry with kitchen towel.
- In casserole or baking dish, arrange artichokes and add juice of remaining lemon, quarter lemon and add lemon wedges to dish.
- Add olive oil and salt and pepper, to taste.
- Roast 25-30 minutes, or until tender.
- To make pasta: Bring large pot of water to boil.
- While water is coming to boil, place large skillet over medium heat and add olive oil and butter. Add garlic; red pepper, if desired; and salt, to taste, and swirl 1 minute. Add white wine or stock and let reduce by half.
- When water comes to boil, salt water, add pasta and cook 1 minute less than directions. Reserve 1/2 cup pasta water before draining.
- Add artichokes to large skillet with tuna with its oil and gently break up with back of wooden spoon or paddle.
- Add lemon juice and reserved pasta water to skillet along with drained pasta, cheese and half the parsley, mint and pistachios. Toss to combine, top with remaining parsley, mint and pistachios and serve.

- 1 jar (16 ounces) mild or hot giardiniera, drained, liquid reserved
- 1 jar (12 ounces) roasted red peppers, drained and chopped
- 1 can (6 ounces) chopped green olives, drained and diced
- 1/2 cup celery, diced
- 1/4 cup minced fresh parsley
- 1 round loaf Italian bread (2 pounds)
- 8 ounces sliced provolone cheese
- 8 ounces sliced Genoa salami
- 8 ounces sliced mozzarella cheese
- 3 packages (9.4 ounces each) Fresh Express Caesar Chopped Salad Kits
- 8 ounces sliced mortadella
- In bowl, combine giardiniera, red peppers, olives, celery, parsley and 2 tablespoons reserved giardiniera liquid; mix well.
- Cut bread in half horizontally; tear out some bread, leaving about 1/2-inch to create bowl. Fill bottom bread bowl with olive salad. Layer with provolone cheese, salami and mozzarella cheese.

Sweet Italian Sausage Polenta

- 1 package Carando Sweet Italian Sausage
- 8 cups chicken stock
- 2 cups dry polenta
- 8 tablespoons unsalted butter
- 1/2 cup Parmesan cheese, grated
- 3 tablespoons olive oil
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 medium yellow onion, julienned
- 1 tablespoon fresh garlic, minced
- 1/4 cup white wine
- 1/4 cup red wine vinegar
- 2 tablespoons honey
- 2 teaspoons oregano
- Heat grill to medium-low. Grill sausages 15-20 minutes, using tongs to turn frequently; reserve.
- In heavy-bottomed pot, whisk stock and polenta; bring to boil. Cook, stirring frequently, about 15 minutes, or until thick and creamy.
- Remove polenta from heat and whisk in butter and cheese. Reserve until ready to serve.
- Heat pan over medium-high heat. Add olive oil, peppers, onions and garlic; and saute until vegetables soften and just begin to color.
- Deglaze pan with white wine and reduce by half. Add vinegar, honey and oregano; cook until reduced by half.
- Add sausages to pan to warm.
- When sausages are warm, place polenta on large platter then top with sausages, peppers and onions.

- 1 pound ground lamb

- 1 large egg, lightly beaten
- 3/4 teaspoon kosher salt

Feta-Olive Oil Sauce:
- 1/2 pound feta cheese, crumbled
- 2 tablespoons Carapelli Unfiltered Extra Virgin Olive Oil
- 2 tablespoons plain Greek yogurt
- To make Lamb Meatballs: Heat oven to 375° F. Line large rimmed baking sheet with parchment paper.
- In large bowl, mix lamb, olive oil, panko bread crumbs, pine nuts, raisins, egg, salt and pepper. Use hands to mix all ingredients together.
- Roll mixture into approximately 36 meatballs about 1 inch in diameter and place on baking sheet.

Roasted Mushrooms:
- 2 pounds Portobello mushrooms

Agrodolce:
- 1/2 cup red wine vinegar

- To make Roasted Mushrooms: Clean and destem mushrooms, cutting large mushroom caps in half.
- In large bowl, toss mushrooms with olive oil, fresh sage and fresh rosemary. Let mushrooms marinate 1 hour, tossing occasionally to absorb oil.
- Heat oven to 400° F. Line two large baking sheets with parchment paper.
- Spread marinated mushrooms on baking sheets, making sure mushrooms are in single layer and not crowded. Sprinkle lightly with salt and pepper.
- Roast 30 minutes until mushrooms are crisped and golden brown at edges.
- To make Agrodulce: In small saucepan over medium-low heat, bring vinegar and honey to simmer, stirring occasionally until honey dissolves.
- Continue simmering 15-20 minutes until vinegar is reduced by half and is thick and syrupy.
- To serve, place roasted mushrooms on platter and drizzle generously with Agrodolce and olive oil. Serve with choice of side.
Rustic Tuscan Potato Leek Soup with Olive Oil Pesto

Potato Leek Soup:
- 3 medium-large leeks
- 2 tablespoons Carapelli Unfiltered Extra Virgin Olive Oil
- 1 large garlic clove, coarsely chopped
- 1/2 teaspoon kosher salt, plus additional, to taste (optional)
- 2 pounds Yukon gold potatoes, peeled and diced into 2-inch cubes
- 6 cups chicken or vegetable broth
Pesto:
- 1 packed cup fresh basil
- 1 packed cup flat-leaf parsley
- 1 medium-large garlic clove, roughly chopped
- 3 tablespoons pine nuts or 1/4 cup walnuts
- 1/2 teaspoon kosher salt
- 1/4 cup Carapelli Unfiltered Extra Virgin Olive Oil
- To make Potato Leek Soup: Trim bulb ends and tough, dark green stems off leeks. Slice tender white and light green stems in half lengthwise then soak in cold water 10-15 minutes to remove dirt. Drain leeks, rinse well and slice into thick half-moons.
- In large Dutch oven or stockpot over medium-low heat, heat olive oil. Add leeks, garlic and salt. Cook, stirring occasionally, until leeks are soft, about 10 minutes.
- Add potatoes and broth. Cover and increase heat to medium. Bring soup to simmer then uncover and continue cooking 30 minutes.
- Using immersion blender, puree soup until smooth, or carefully ladle into standing blender to puree in batches. Taste and add more salt, if desired.
- To make Pesto: In food processor, pulse basil, parsley, garlic, pine nuts, salt and olive oil to make chunky herb sauce.
- To serve, ladle soup into bowls and spoon Pesto on top of each serving.

- Heat oven to 400° F. Line 12-cup muffin pan with large paper liners.
- In large bowl, whisk flour, baking powder, salt and pepper. In separate bowl, whisk 1/4 cup pesto, olive oil, milk, sugar and egg; stir into flour mixture until moistened. Fold in zucchini and green onions.
- Divide half the batter evenly among muffin cups; place cube of fontina on top of batter. Top each with 1 teaspoon remaining pesto; top with remaining batter.
- Bake 15-20 minutes, or until golden brown and top of muffin springs back when pressed lightly. Let cool slightly; serve warm.
Tip: To make extra savory, add 1/2 cup cooked and crumbled bacon.
Chicken Caprese Stuffed Spaghetti Squash

- 2 small spaghetti squash

- 12 ounces boneless, skinless chicken breast, cut into 1/2-inch cubes
- 1 small onion, finely chopped

- 1 1/2 cups halved cherry tomatoes
- 8 ounces fresh mozzarella cheese, sliced
- 2 tablespoons chopped fresh basil
- Heat oven to 400° F. Halve spaghetti squash lengthwise and scrape out seeds; drizzle cut sides with 1 tablespoon olive oil and season with 1/4 teaspoon each salt and pepper. Bake, cut sides down, on parchment paper-lined baking sheet 45-50 minutes, or until tender. Let cool slightly. Using fork, scrape strands of squash into bowl; reserve squash shells.
- In skillet, heat remaining oil over medium-high heat; cook chicken, onion and remaining salt and pepper about 5 minutes, or until chicken is browned. Stir in pesto; bring to simmer. Cook about 5 minutes, or until chicken is cooked through. Stir in cherry tomatoes; cook about 1 minute, or until slightly softened.
- Toss spaghetti squash with chicken mixture; divide among reserved squash shells. Top with mozzarella cheese; broil 1-2 minutes, or until cheese melts. Sprinkle with chopped basil.
Tip: For a more savory dish, add chopped black olives or jarred artichokes, if desired.
Tomato and Tortellini Soup

- In large saucepan over medium heat, heat oil; cook onion, garlic, carrot and celery about 5 minutes, or until softened. Add pesto, basil, oregano and chili flakes; cook 1 minute. Add tomatoes, chicken broth, salt and pepper; bring to boil. Reduce heat and simmer about 20 minutes, or until slightly thickened.
- In blender or using immersion blender, puree tomato mixture; return to pan and bring to simmer. Add tortellini; cook 8-10 minutes, or until tender. Sprinkle with parsley and Parmesan.
Tip: Dried basil can be substituted for 1 tablespoon chopped fresh basil, if desired.

- 1 pound broccoli rabe, stems removed and leaves cut into 2-inch pieces
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon fine sea salt, divided
- freshly ground black pepper, to taste
- 6 oil-cured black olives, pitted and diced (optional)
- 1/3 cup all-purpose flour
- 4 chicken cutlets (about 1 pound total)
- 1 egg, beaten
- 1/2 cup bread crumbs, toasted
- 8 slices bread, toasted
- 4 slices provolone cheese (optional)
- In 10-inch saute pan, heat 2 tablespoons olive oil over medium heat; saute onion 3 minutes, or until translucent. Stir in broccoli rabe and red pepper flakes; cover and cook over medium heat 2-3 minutes, or until broccoli rabe is wilted. Sprinkle with 1/4 teaspoon salt and pepper, to taste; stir in olives, if desired. Transfer mixture to bowl; cover and keep warm.
- In small paper or plastic bag, combine flour and remaining salt. One at a time, add chicken cutlets; shake to coat each cutlet in flour then transfer to plate. Dip cutlets in egg then bread crumbs and return to plate. Set aside.
- In skillet over medium-high heat, heat remaining olive oil. Working in batches, brown chicken, cooking 2-3 minutes, or until golden on each side and no longer pink inside.
To serve: Top each bread slice with one chicken cutlet; spread with broccoli rabe mixture. Top with slices of provolone, if desired. Top with remaining bread.
Cast-Iron Skillet Pizza

Makes: Two 9-to-10-inch pizzas
- 1 pound store-bought pizza dough, at room temperature
- 1 ripe tomato, thinly sliced
- 1/4 pound fresh mozzarella cheese, diced
- coarse sea salt
- 2 tablespoons Filippo Berio Extra Virgin Olive Oil
- 1/2 cup shredded fresh basil
- Heat well-oiled cast-iron or nonstick 10- or 12-inch frying pan over medium heat 5 minutes.
- Divide dough in half; roll one half into round 1 inch smaller than diameter of pan. Cook dough in hot pan until dough begins to rise and bottom starts to brown. Using metal spatula, turn carefully. Layer half the tomato slices over dough; scatter half the mozzarella over top. Lower heat to medium-low; cook until mozzarella melts.
- Using metal spatula, transfer pizza to cutting board. Sprinkle with salt; drizzle with half the olive oil. Cut into wedges; sprinkle half the basil over top.
- Repeat with remaining ingredients.
Caprese Zucchini Noodle Bowl

- 4 medium zucchini, spiralized (instructions at right)
- 1/4 cup Filippo Berio Delicato Extra Virgin Olive Oil
- 2 tablespoons white balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 1/2 cups heirloom cherry tomatoes, halved
- 1/4 cup packed chopped fresh basil
- 1 ball (8 ounces) burrata cheese, torn
- Toss together zucchini, oil, vinegar, salt and pepper; let stand 10 minutes, or until zucchini starts to soften.
- Gently stir in tomatoes and basil. Divide salad among four bowls. Top with cheese.
How to Spiralize Zucchini
- Use zucchini at least 2 inches in diameter for best results. Trim ends of zucchini.
- Place spiralizer on smooth surface, such as a countertop, pushing down to adhere suction cups onto surface and secure machine for spiralizing.
- Place desired blade into spiralizer. Turn zucchini into long strands, trimming with clean kitchen shears as needed.
