Irish Sláinte Stew
- Oil, for drizzling
- 1 pound stew meat
- 1-2 pinches salt, plus additional to taste, divided
- 1-2 pinches pepper
- 3 tablespoons flour
- 48 ounces beef broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 3cups potatoes, diced
- 1/2 onion, diced
- 2 tablespoons garlic pepper
- 1 tablespoon dried thyme
- 1/2 tablespoon dried rosemary
- 1 tablespoon dried chives
- 1 bottle Irish draught beer of choice
- crusty bread, for serving
- In Dutch oven over medium heat, drizzle oil and brown stew meat with salt and pepper. Sprinkle flour over meat.
- Add beef broth, carrots, celery, potatoes, onion, garlic pepper, thyme, rosemary and chives. Add Irish draught beer.
- Bring to boil, stirring, 5 minutes. Simmer 2 hours, stirring occasionally.
- Serve with crusty bread.
Irish Apple Cake
Cake:
- 3 cups self-rising flour
- 1/2 tablespoon cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1 stick butter, cubed
- 3/4 cup sugar
- 4 apples of choice, peeled and cubed
- 2 eggs
- 1 cup half-and-half
Topping:
- 1/2 stick butter
- 3/4 cup flour
- 1 cup brown sugar
Custard:
- 6 large egg yolks
- 6 tablespoons sugar
- 1 1/2 cups half-and-half
- 2 teaspoons vanilla
- Preheat oven to 375 F. Grease and flour 9-inch round springform pan.
- To make cake: In large bowl, sift flour with cinnamon, cloves, nutmeg and ginger. Using fork, cut butter until mixture resembles crumbs. Add sugar and apples; mix well. Stir in eggs and half-and-half until mixture reaches thick, dough-like batter. Pour batter into prepared pan.
- To make topping: In bowl, mix butter, flour and sugar to create crumbled mixture. Sprinkle on top of batter in pan. Bake 1 hour. Check with toothpick to make sure middle is completely done. If not, bake 5-10 minutes. Let cool on rack.
- To make custard: Whisk egg yolks and sugar. In saucepan, bring half-and-half to boil. Add one spoonful half-and-half at a time to egg mixture, whisking while adding. Once whisked together, return to saucepan and stir over medium heat until thickened, about 4 minutes. Remove from heat and whisk in vanilla.
- Serve custard over cake.

Mint Chocolate Chip Cookies
Servings: 24-32
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1 1/4 cups sugar
- 2 eggs
- 30 drops green food coloring
- 1 teaspoon peppermint extract
- 1 package (12 ounces) chocolate chips
- Heat oven to 375 F.
- In large bowl, mix flour, baking soda and salt until blended. Set aside.
- In medium bowl, beat butter and sugar until combined. Add eggs, food coloring and peppermint extract; beat until combined.
- Add wet ingredients to dry ingredients; beat until combined. Stir in chocolate chips. Drop spoonfuls of cookie dough onto baking sheet.
- Bake 11-14 minutes, or until edges are lightly browned.
- Cool on wire racks.

Irish Potato Bread
- 2 medium or large russet potatoes
- 1 egg
- 1 egg white
- 1/3 cup canola oil
- 3/4 cup milk
- 2 tablespoons green onion, minced
- 1/2 teaspoon caraway seeds
- 3 1/4 cups all-purpose flour, plus additional for dusting and kneading
- 1 1/2 tablespoons baking powder
- 1 teaspoon salt
- Heat oven to 375° F.
- Peel potatoes. Slice one potato and boil in saucepan 15 minutes, or until tender. Remove potato from saucepan into large bowl. Mash potato then set aside.
- Grate second potato onto cloth. Wring potato in cloth to remove excess water. Add grated potato to mashed potato in large bowl. Add egg, egg white, oil, milk, onion, caraway seeds, 3 1/4 cups flour, baking powder and salt. Stir with wooden spoon until mixture is soft and sticky.
- Turn dough onto floured surface. Adding flour as needed, knead dough to form 8-inch round shape with slight dome. Place dough onto baking sheet lined with parchment paper. Cut large “X” on top of dough about 1/2 inch deep.
- Bake 55 minutes until golden brown. Cool on wire rack 1 hour before serving.

- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 1 1/4 cups sugar
- 2 eggs
- 1–1 1/2 teaspoons McCormick Green Food Color
- 1 teaspoon McCormick Pure Peppermint Extract
- 1 1/2 cups semi-sweet chocolate chips
- Preheat oven to 375°F. Mix flour, baking soda and salt in medium bowl. Set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, food color and peppermint extract; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in chocolate chips.
- Drop by heaping tablespoons about 2 inches apart onto ungreased baking sheets.
- Bake 10–12 minutes or until edges are lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
Savory Irish Cheese Soda Bread
- 2 1/2 cups flour
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons McCormick Caraway Seed
- 1 teaspoon McCormick Garlic Powder
- 1/4 teaspoon McCormick Red Pepper, Ground
- 1/2 cup shredded Irish Cheddar cheese
- 2 eggs
- 1 1/4 cups buttermilk
- Preheat oven to 350°F. Mix flour, sugar, baking powder, baking soda, salt and seasonings in large bowl. Stir in cheese. Set aside. Mix eggs and buttermilk in medium bowl. Add to dry ingredients; stir until well blended. Spread in lightly grease 9-inch round cake pan.
- Bake 30–40 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan. Cool completely on wire rack.
Tip: Make muffins instead of bread. Prepare dough as directed and divide among 12 greased muffin cups. Bake 20–25 minutes or until toothpick inserted in center comes out clean.
Slow Cooker Corned Beef and Cabbage
- 8 small red potatoes
- 2 cups baby carrots
- 1 small onion, quartered
- 1 corned beef brisket (4 pounds), rinsed and trimmed
- 2 tablespoons McCormick Mixed Pickling Spice
- 1 teaspoon McCormick Minced Garlic
- 1/2 head cabbage, cored and cut into wedges
- Place potatoes, carrots and onion in slow cooker. Place corned beef brisket over vegetables. Sprinkle with pickling spice and minced garlic. Add enough water (about 8 cups) to just cover meat. Cover.
- Cook 7 hours on high. Add cabbage. Cover. Cook 1–2 hours on high or until cabbage is tender-crisp.
- Remove corned beef brisket to serving platter. Slice thinly across grain. Serve with vegetables.
Tip: For best results, do not remove cover while cooking in slow cooker.

Family Festivities for St. Patrick’s Day

Every year in March, families celebrate the annual Irish tradition of St. Patrick’s Day with a variety of celebrations. Whether it’s attending a parade or preparing and enjoying an elaborate Irish meal, everyone has their own favorite ways to celebrate the holiday. Set your own unique traditions and rituals with some ideas below.
Pass Along the Luck
Have kids put together lucky treat bags to pass along to neighbors. These treat bags could include cut-out, decorated and customized four-leaf clovers, chocolate coins and other goodies. Then, on St. Patrick’s Day, walk around as a family and surprise neighbors with these bags.
Treasure Hunt
Set up a treasure hunt for family and friends by placing chocolate gold coins around the house. Give them a series of clues and riddles to help them figure out where to look for the coins. Equip each “hunter” with their own pot or basket for collecting the gold coins. At the end of the hunt, reward them for their hard work with some festive brownies. These delicious Chocolate Mint Brownies can be decorated with green gumdrops formed into shamrocks or other holiday candies. Use a shamrock-shaped cookie cutter to make these treats even more festive.
Chocolate Mint Brownies
Prep Time: 25 minutes
Start to Finish: 3 hours 25 minutes
Makes: 32 brownies
Brownie Base
- 1 box Betty Crocker® Original Supreme brownie mix (with chocolate syrup pouch) water, vegetable oil and eggs called for on brownie mix box
Filling
- 3 1/2 cups powdered sugar
- 1/4 cup butter or margarine, softened
- 1/4 cup whipping cream
- 1 package (3 ounces) cream cheese, softened
- 1/4 teaspoon mint extract
- 4 drops green food color
Topping
- 1/2 cup whipping cream
- 1 bag (12 ounces) semisweet chocolate chips (2 cups)
- 1/2 cup butter (do not use margarine)
- Heat oven to 350°F. Grease only bottom of 13 x 9-inch pan with shortening or cooking spray. Make and bake brownie mix as directed on box for 13 x 9-inch pan, using water, oil and eggs. Cool completely, about 1 hour.
- In large bowl, beat filling ingredients with electric mixer on medium speed until smooth. Spread over cooled brownies. Refrigerate about 1 hour or until set.
- Meanwhile, in 2-quart nonstick saucepan, heat topping ingredients over medium-low heat, stirring constantly, until melted and smooth. Cool about 10 minutes or until lukewarm.
- Pour topping over filling; spread to cover. Refrigerate uncovered about 2 hours or until set. Before cutting into bars, let stand 10 minutes at room temperature. For bars, cut into 8 rows by 4 rows. For easier cutting, cut brownies with a wet knife. Store covered in refrigerator.

American Irish Stew

- 1 tablespoon extra-virgin olive oil
- 1 1/4 pounds beef, top round, cut into 3/4-inch pieces
- 3 cloves garlic, minced
- salt, to taste
- pepper, to taste
- 1 medium onion, coarsely chopped
- 3 medium carrots, peeled and cut into 3/4-inch pieces
- 2 medium parsnips, cut into large chunks (optional)
- 3 cups low-fat, reduced-sodium beef broth
- 4 medium russet potatoes, peeled and cut into large chunks
- 1 tablespoon chopped fresh rosemary
- 1 leek, coarsely chopped
- 2 tablespoons chopped fresh parsley
- In large pot over medium-high heat, heat oil. Add beef and garlic. Cook, gently stirring until meat is evenly browned. Season with salt and pepper.
- Add onion, carrots and parsnips. Cook 3-4 minutes. Stir in broth and bring to a boil. Reduce heat to low and simmer about 75 minutes, or until meat is tender.
- Stir in potatoes and simmer another 30 minutes. Add rosemary and leeks. Continue to simmer, uncovered, until potatoes are tender. To avoid potatoes falling apart, do not overcook.
- Serve hot and garnish with parsley, if desired.
